A wonderful mix of tones, great from light to dark! The cup profile is mostly down the malty side but these beans have some awesome jazz. Lighter roasting will show some more winy citric attributes and soft fruit tones, adds some great sweetness to the cup, hints of a nutty and malty undertone can be found but a little faint. Medium roasts really pull together a tasty treat, sweet hints of floral mixing with smooth nutty malty features. A cup we are more than willing to drink all day. Dark roasts lose the smoother cup but really accentuate the dark malt tone. Guatemalans almost always hold dark roasts nicely for adding a little sweet malty note to the smoky and roasty tones is a tasty mix.

A much cleaner cup this season than the previous small bean lots, a great year for FVH. Tasty from light to dark. Lighter roasts do have some acidity, not over the top but noticeable. A little lemony winy factor up until a strong medium roast. Light roasts are a bit higher acidity and more floral, has some winy soft fruit complexities like traditional Guats but to most will come off more citric. The malty undertones are present at the lighter roasts but overpowered by the more citric/winy character. As one pushes towards a medium roast, the cup really builds some good body and rich dark tones, retaining just a hint of citric that adds some good sweetness and depth to the cup. A great cup of Guatemalan coffee! Medium to low acidity with a sweet edge. Good from light to dark.Lighter roasts show off the more winy floral acidity and aromatics that will comingle with a malty & herbal undertones, a little longer setup will help the more herbal spice blossom into more complex nutty/caramel like notes.
Medium roasts, our favorite roast point, have a nice sweet edge upfront; medium bodied, lower acidity, retains some floral aromatics but loses the crisper tones in taste. Balanced with clean and defined malty darker tones with a little spice, hints of fruitiness as the cup cools.
The beans hold a dark roast very nicely, touching 2nd crack did not introduce too much smoky or roasty tones, still sweet and much stronger, a touch of winy floral mixing with darker chocolate and malt.

A great cup of Guatemalan, a bit lower acidity than most, a real sweet edge to this cup. We thought it best in the medium to dark roast range. Light roasts are sweet upfront but do not develop the creamy malty notes one expects from a nice Huehue. Medium roasts have a nice sugary sweetness upfront, medium bodied, low acidity with more of a creamy malty tone that lingers on the tongue. Although the sweetness hits right upfront, the tastes fade into a more dry and complex malty tone. Very smooth and drinkable at the medium roast level but may be too mild for some. A very clean and smooth cup. Lighter roasts get a very sweet and nutty tone right upfront, almost like a walnut dusted with a hint of powdered sugar. The nuttiness fades into a more traditional malty tone in the aftertaste. Floral in its aromatics but not in the cup, the acidity comes through as just a little hint of sweet lemon accentuated as the cup cools. Our preferred roast was a city + roast (medium roast) bring out much more of a smooth and defined malty tone with a hint of soft fruit, just a hint of lemony acidity. A cup we could drink all day everyday.

A top notch and exotic cup of Guatemalan coffee. Light roasts are where this cup will shine and be easily identifiable as a lovely Geisha coffee. The first thing to hit is the very jasmine and floral like aromatics whose spice notes will come through in the cup character. Very lemony floral upfront at the lighter roasts balanced with a lovely dark tea undertone reminiscent of of a Darjeeling or English breakfast tea. Medium roasts drop the lemony floral tones quite a bit in the cup and bring forth a bit of semi-sweet chocolate mixing with the more tea like spice. Darker roasts are very pleasant but kill most of the exotic-ness of the cup, very easy to drink and smooth chocolate tones with a bit of a smoky factor.

A very clean and rich cup of Guatemalan coffee. Although a Pacamara, this coffee does not follow the earthiness that often accompanies the strain. Lighter roasts show good soft fruit tones upfront while not being overly acidic, a little hint of a lemony floral and balanced with a nice malty cup profile. A bit sweeter than average for sure and a nice clean tasting cup. Medium roasts bring the best balance accentuating the darker tones in the cup slightly and reducing a little bit of the more acidic fruitiness of the cup. Darker roasts get real full bodied but does not retain the cool sweeter soft fruit tones, smoky, malty and strong.

A solid cup from light to dark, but for most drinking, a medium roast will be the way to go. Sweet with just a pinch of citric upfront, medium bodied, good mouthfeel, just a pinch of fruitiness and ends with a nice malty undertone. Lighter roast get a bit brighter and slightly more fruity but can risk a little grassy, medium roasts present great balance to the flavors and was very easy drinking, darker roasts retain a lot of sweetness and hefty malty tones, but will get pretty roasty/smoky. If drinking for drip/pour-over, medium roasts are where to go. A beautiful cup from light to dark roasts. A very sweet cup with fruity highlights, good body and medium acidity. Being a high rated bean, it is very clean at lighter roasts, which we thought presented it best, but found darker roast points with its mix of stronger malty dark tones with a pinch of fruit in the aftertaste, quite tasty as well. Light roasts are delicate, sweet and clean. Will have a little citric crispness upfront, a bit of fruitiness and some lovely malty contrast. A fruit note for sure, but not overly fermented like many, a bean for every coffee fan.

Best served light to medium roasted. This is the brightest Guatemalan offering out of the bunch, crisp with sweet citrus, floral and soft fruit upfront, balancing with a nutty and malty darker tone. The Tabi strain brings a more “rustic” malty tones compared to traditional Guatemalan strains, but is not earthy like many hybrid coffees. Medium roasts build a little body and mellow the citric/fruit notes, less sharp of a cup with a stronger malty tone, the more exotic fruit tones and layers of tastes still come right through in taste but are muted slightly compared to lighter roast points.
