A very nicely balanced cup of coffee. A little hint of acidity upfront providing some floral and soft fruit at the lighter roasts, balanced with a semi-sweet nutty chocolaty factor. Super light roasts risk a little grassy/herbal but it straightens out at a city+ (medium) and holds up as dark as you want to take it. The darker you go, the more body and edgy chocolate the cup will pick up, once you hit 2nd crack, expect some smoke and roasty tones to compliment the nutty/chocolaty factor.

Best served light to medium roasted. Crisp, clean, slightly fruity and sweet: a more exotic cup with higher acidity than the washed processed offerings. Lighter roasts show sweet lemony floral brightness, with just a hint of soft fruit, balanced with a little herbal/nutty tone. Great body and mouthfeel especially for the roast point. This honey processed shined best at the lighter roast points out of all three Bolivian offerings, a great sign of quality. Medium roasts still provide a bit of crisp sweet citric upfront and soft fruit tones as the cup cools, but will develop more of the classic South American profile of creamy and smooth, nutty/chocolaty like tones.

A great light to medium roast coffee. Delicate, balanced, clean, fruity and sweet. This is not a ferment bomb, the natural tones are delicate and well balanced, not hitting you over the head. An easy drinking lighter roast coffee: sweet, smooth, hints of lemony floral acidity and soft fruit, balanced with a defined chocolate like tone. Good body and mouthfeel, medium to low acidity. A more exotic cup that everyone will love. Medium roasts will start to roast the fruitiness out of the cup but still leave it very sweet, accentuate the body and mouthfeel.

Great Buy! Regular Price $6.60/Lb
A very fresh and tasty Brazil! Lighter roasts show lemon, floral & soft fruit contrasted by a nuttier (almond like) undertone, a sweet edged cup. The two combine for a hints of caramel, quite tasty for you light roast fans. Medium roasts are richer, more of a developed chocolaty tone and decently less nutty; mutes up the soury floral edge, retains a little hint of soft fruit as the cup cools. Fairly neutral tasting and very chuggable. Darker promotes a thicker body and introduces a slightly bitter contrast that works very well for espresso.Price:Price: $5.59$6.60/lb$5.59/lb -

A very fruit forward and floral exotic Colombian. All sorts of cool unique flavors can be found in this cup from the slow dry natural processing and boutique fermentation. The brighter tones tend to range from a lemon citric component at the lighter roasts to strong stone fruit in the medium roast range. The acidity is pretty high at the lighter roasts but mellows greatly at a strong medium to dark roast. The balance of the cup comes from an almost cola-like tone that turns a bit nuttier into the darker roasts. Medium bodied, super clean with some far from traditional Colombian tones.

Great from light to dark roasts. Lighter roast points are very jazzy with brighter features, citric mixing with a little sweet hint of a fruit tone, pulling some balance with a bit of nuttiness. Medium roasts get fuller bodied and smoother, slightly chocolaty with less crisp citric/floral tones than the lighter roast points. Darker roasts will kill most of the crisp acidity but will retain a little hint of fruit as the cup cools. Much more chocolaty and robust at the darker roast points.

A good cup from light to dark but to showcase what makes these beans special, light to medium roasts will be the way to go. Light roast points are very jazzy, citric/floral acidity mixing with a little soft fruit tone, pulling some balance with a sweet edged nuttiness. With the red fruit and more citric components, it makes us think pink lemonade upfront, but some were more down the tart raspberry alley. Medium roasts get fuller bodied and smoother, good nutty/chocolate like undertones with less crisp citric/floral acidity. Darker roasts will kill most of the brightness but will retain a little hint of fruit as the cup cools. Much more chocolaty and robust at the darker roast points, potent brew, can have a little stout like bitter aftertaste but will hit the tongue on the sweeter side.

A little hint of acidity at the medium roast point really creates a nicely balanced cup with a broad flavor profile. Touching 2nd crack builds some body and will add some smoky and roasty notes that can compliment the classic Colombian profile.Price:Price: $5.49$6.79/lb$5.49/lb -

To see this cup shine, light to medium roasts are the way to go! Medium acidity, lighter bodied, delicate, sweet cup with strong red fruit tones (strawberry like). Hints of citric and floral jump right out with the fruitiness. Pulls some balance with a little nutty/tea like tones at lighter roasts giving it some awesome depth. Holds up well as one pushes towards second crack, turns the nutty/herbal tones into a rich chocolaty factor with fruity highlights. A bit rougher of a dark tone close to the dark roast mark, touching or into second crack, but everyone still liked it. Touching or into second crack gets a bit bitter with more of an oaky barrel aged tone than sweet red fruit.Price:Price: $6.75$7.79/lb$6.75/lb -

This is a quality bean in and out, best served in the light to medium roast level. Lots of cool tones to play with in the roaster. Higher acidity, very sweet, with some floral tones popping out, just like a high rated Costa should be. A fruit forward offering, slight red fruit but most will pick it up as a grape skin like fruitiness when mixing with the higher acidity. All these lighter tones balance with some nuttiness than will lean on the chocolaty side, especially as/if you push the roast a little darker. Super light roasts lean the cup to lemony/floral and will be loaded with more citric lighter tones, not very balanced but punchy and clean. Darker roasts lean it towards nutty/chocolaty with more stout like features & fruity highlights. In the middle, one gets layers of all the lovely flavors in the cup. Crisp and clean lemony floral balanced with sweet and smooth chocolaty undertones than linger on the nuttier side. Hints of fruit will pop out but not hit you over the head.

A more delicate fruit forward refined cup of coffee. Very clean, sweet with dominate fruit (cascara/strawberry) and floral tones balanced with hints of nutty and chocolaty undertones. Traditional light roasts will have some crisp acidity while fresh leaning it a little more towards floral notes, we would call it front loaded but tasty, not much balance with any darker tones and can end a little dry, but plenty wild upfront to make natural processed fans happy. Medium roasts will be best for most, medium to low acidity, hints of floral and fruit balanced with smooth and sweeter darker tones. A very sweet and fruit forward bean. Clean cup, medium to full bodied with higher acidity. Light to medium roasts are where this bean will shine. Being a brighter natural processed it has some great sweetness and a stronger winy/citric and red fruit tone upfront, which balance with classic Costa nutty and slightly chocolate like darker tones. A fun bean to play with roast level: tip the scales either lighter and fruitier or darker toned nutty/chocolate like. Very light roasts (with a longer setup) can introduce a little toasted grainy note giving a comparable to jellied toast like tastes, but with a lemony citric kicker. Medium roasts build great body and mouthfeel, cut out much of the citric but still overlays the nutty & chocolate like tones with a wonderful and sweet fruitiness. Darker roasts are strong and have a bit of bittersweet contrast. It keeps the sweetness and will still be slightly fruity, but contrasts with stronger bakers chocolate (slightly bitter) like tones with some roasty/smoky accents.

A very nice medium to dark roast decaf. Medium roasts are a much smoother cup, a little sweet edge, nutty, with a touch of chocolate. Has a little floral overtone that makes it a bit interesting. Fuller bodied with a richer chocolate tone closer to 2nd crack. Some smokiness at second crack or into but retains its smooth and rich character. Decaf Mexican is always one of my favorite beans to get a nice and strong chocolaty note in the decafs. Lower acidity and fuller bodied, pretty hefty in its semi sweet bakers chocolate tone at fuller roasts.

Best from the lighter side of a medium roast to as dark as you want to go. A bit cleaner tasting but slightly less fruity than previous seasons. Lighter roasting presents some nice honey processed features: citric, floral, soft fruit with an almost oak/peat like finish, sweet & complex but does risk some underdeveloped tones if you nail it a little too light. Medium roasts were our favorite, still balanced and complex but will develop the traditional chocolate and smoky tones for which Dominican coffees are known for – to balance out those more exotic fruity and citric tones. Darker roasts are a little more complex than on the washed processed version, but not as smooth and rich.Price: $8.69/lb - 7.49/lbPrice: $8.69 -

A very cool, very exotic cup of coffee. One can tell this is a slow dry natural processed coffee with its strong ripe red fruit tones upfront. Lighter roasting presents a ton of floral and fruit with an almost oak/peat boozy finish, very sweet with just a ton going on but does risk some underdeveloped tones with its two-toned roasting. Medium roasts were our favorite, still plenty wild but develop enough of the chocolate and smoky tones – which most Dominican coffees are known for – to balance all those more exotic fruity and citric tones. Darker roasts will burn out most of what distinguishes this cup, the washed processed handles those roast level much better; interesting and still exotic but strong and edgy, it will retain some fruity factor with very strong and less sweet, smoky, tobacco and bakers chocolate type notes.

A great tasting, super feel good coffee! Not a fruit bomb of a cup, but definitely can tell its natural processed roots, sweet and complex with some highlights of a fruitiness throughout the roast range. Best served in the light to medium roast range for drip brew, showcases its great balance and sweeter semi-fruity tastes. Turns into a chocolate bomb at the darker roasts, more on the dark chocolate side, which would work wonderfully for espresso or cold brew. Light roasts has a pinch of citric acidity and wonderful aromatics, hints of red fruit that balance with a bit of semi-nutty tea like spice.

Clean, bright, sweet with a very diverse flavor set. Stone and darker fruit, citrus & floral, and spiced chocolate tones are the main flavors one can see in this cup, either accentuated or muted depending on roast level. Nice jammy body will be seen in the medium to borderline dark roast mark. Very dependent on roast – lighter roasting gives much more of the citrus, red-fruit with just a hint of a spicy chocolaty factor, a much dryer finish. Darker roasts produce much more of a bakers chocolate cup with a hint of a strawberry like fruit note and good sweetness, far less acidic. A very enjoyable cup from light to dark.

Best at light to medium roasts, a great example of Ethiopian coffee. Clean with some good brightness behind it, balanced with spicier black tea like undertones. Lighter roasts have a lemony/floral crispness with hints of a peachy soft fruit tone, pulling balance with a chocolaty herbal note. Medium roasts build a little more body and reduce that lemony floral to a hint, crisp but not overly sour. Dark roasts are bold and semi-sweet, thicker dark tea tones and spice dominate the cup with a little smoky accent. Tasty but a shame to lose those floral and fruity tones that differentiate these Ethiopians over other origins.Price:Price: $5.59$6.60/lb$5.59/lb -

Light roasts put off a sweet lemon acidity that fades into a nice red-fruit note, balanced with a tea-like dry chocolate undertone. A longer setup will help smooth it out and pronounce the fruit note. If shooting real light, make sure to flick out any beans not through first crack. Medium roasts are a bit more tame, no flicking required. Cup will get a richer chocolaty note with just a pinch of floral acidity and fading into a soft fruit note. Medium roasts are slightly reminiscent of the Yemen but perhaps still a bit brighter. Darker roasts are cool with these beans, as you touch 2nd crack you still have some nice medium roasted beans in the mix, a good balance of tones between the smoky chocolaty roasty and fruity citric tea notes.

Being a high rated super fresh top lot, this cup is loaded with brighter citric, floral and fruity tones (think green grape, not natural processed red-fruit). Wonderful aromatics with delicate tea like chocolaty undertones. Very dependent on roast but hard to find a bad cup at any roast level. If you are an Ethiopian fan, lighter roasting is the way to go. If you don’t know or traditionally roast a bit darker, start at a fuller roast point. Best presented at the light to medium roasts to see the Ethiopian attributes but will be unmatched at the darker roasts, hefty tea like spice with floral aromatics and rich semi-sweet smoky dark tones.

Regular Price $6.99/Lb
Great example of classic Guatemalan coffee. Best in the medium roast ballpark. Clean, rich & sweet cup; medium bodied with a little new crop winy acidity upfront. Lovely nutty & malty darker tones to balance the brightness. Hints of a fruitiness as the cup cools with “before 2nd crack” roast levels. Will handle lighter or darker roasts as well. Light roasts will be brighter, a bit more lemony with the malty tones just peeking out, a sweeter edge to lighter roasts but not as balanced nor malty. Darker roasts promote the strong malt tones, accentuating the mouthfeel and semi-sweet malt tones, a smoky edge.Price:Price: $5.99$6.99/lb$5.99/lb -

Light to dark you will find a tasty cup. Light roasting will have some acidity, tastes will start with a sweet citric/winy crispness upfront and balance out with a malty/nutty/caramel darker tone, a hint of herbal spice in the aftertaste. A lovely balance of tones and our favorite roast point. Medium roasts reduce the citric/winy tones and herbal spice, promoting the malt like taste. Increases the body and smoothness, but will reduce the depth of flavors a bit. If looking to impress, light roasts are where it shines. For daily drinking, medium roasts are the way to go. A candidate for dark roasts, fuller bodied, low acidity with the malty and roasty tones mix nicely.

A solid cup from light to dark, but for most drinking, a medium roast will be the way to go. Sweet with just a pinch of citric upfront, medium bodied, good mouthfeel, just a pinch of fruitiness and ends with a nice malty undertone. Lighter roast get a bit brighter and slightly more fruity but can risk a little grassy, medium roasts present great balance to the flavors and was very easy drinking, darker roasts retain a lot of sweetness and hefty malty tones, but will get pretty roasty/smoky. If drinking for drip/pour-over, medium roasts are where to go. If using for blending, espresso or cold brew, light or dark roasts can produce some really tasty results.

Best served light to medium roasted. This is the brightest Guatemalan offering out of the bunch, crisp with sweet citrus, floral and soft fruit upfront, balancing with a nutty and malty darker tone. The Tabi strain brings a more “rustic” malty tones compared to traditional Guatemalan strains, but is not earthy like many hybrid coffees. Medium roasts build a little body and mellow the citric/fruit notes, less sharp of a cup with a stronger malty tone, the more exotic fruit tones and layers of tastes still come right through in taste but are muted slightly compared to lighter roast points.

Best served at light roasts. One can roast out the sweet floral and fruit pretty quickly so be a little careful not to get this one too dark. Hard to get a bad roast on these beans but will be far less distinctive at fuller roast levels. Light roasts are delicate, sweet and balanced. Hints of citric/floral and fruit balance nicely with a fuller bodied dark tone, on the malty side with tea (spice) like accents in the aftertaste. Unlike many light roast coffees, the acidity and tones are gentle and balanced. Medium roasts promote the tea like spice but cut out the sweet floral pretty quicky. Turns the cup low acidity with mostly darker toned complexity.

Best served light to medium roasted. Light roasts are very sweet and will showcase the fruity, floral and citric. Tastes will be mostly brighter acidic tones, a more potent cup. Clean & exotic but not much for darker toned contrast, it will be the preferred roast level for higher acidity fans. Although one has orange on the mind with the name, the fruitiness and acidity will produce a more orange like sparkle versus more traditional red fruits that many naturals get. Medium roasts are equally as nice and a bit tamer, generally where we would recommend roasting this one. Develops a richer mouthfeel and fuller body with some lovely darker toned balance. Still plenty of citric and fruit to keep the cup jazzy, but shouldn’t be too sour or frontloaded for most tongues.

Awesome cup this season, good from light to dark. Darker roasts which are more traditional for Haitian coffee, come off robust and strong with a floral islandy sweet edge and a smoky aftertaste. Bigger bodied and on the chocolaty spicy side of things. Being so clean this cup is great at light to medium roasts as well; hints of lemony floral, crisp, sweet with a more nutty/caramel tone. A great medium to dark roast coffee. Full bodied, low acidity, great mouthfeel, robust and strong coffee with hints of a exotic spice. Lighter roasts get a cool semi-floral sweet tone upfront but will pull more towards grassy caramel with a slight hint of herbal spice. As one progresses towards the darker roasts it gets much fuller bodied and creamy with clean chocolate/malt like tastes, a little hint of floral acidity at the full city roast level. Into 2nd crack adds some complimenting roasty/smoky tones that with the fuller body and malty profile, will be quite the tasty treat.Price: $9.99/lb - 8.79/lbPrice: $9.99 -

A good example of a wild honey processed coffee. We thought best around a medium roast, pulls greater flavor depth without being too strong or acidic. A little fruity, buzzy acidity, rich and sweet nutty/chocolate like tones. Can go lighter or darker dependent on personal taste preference. Lighter roasts will be bright and frontloaded with fruity/floral/citric tastes, darker roasts flip the tastes, a stronger semi-sweet and robust chocolate/smoky tone with some fruity highlights as the cup cools.

A very fruit forward, delicate and sweet cup. Best served in the light to medium roast range. At light roasts it hold up well but will be higher acidity and very fruity and winy upfront, only a hint of a darker toned contrast. Medium roasts introduce a more chocolaty balance and mute up some of the acidity making it nice for a lower acidity fan. A great mix of fruit and chocolaty factor where one can play with the balance of tones through roast level. Darker roasts are not recommended, get edgy and smoky with a little hint of fruit coming through.

A very nice and clean Honduran offering, great from light to dark roasts. Our favorite roast was on the lighter side of “medium”, too light one gets a pretty strong hit of lemon citric upfront Just a little development past first crack and it turns more nutty/caramel/chocolate like with a mellow citric crispness. As one gets a bit closer to 2nd crack than first, the cup turns much more chocolaty with a little nuttiness in the aftertaste, pretty much all the citric will be gone from the tastes and it will pick up a little hint of roasty/smoky like tones. Touching or into second crack, it is very chocolaty and sweet, with a pretty strong hit of smokiness in the aftertaste, which we thought complimented the cup.

Assamese whole leaf black tea
Overall relatively mild in flavor, this is an exceedingly refined Assamese tea, with a perfect dryness that lingers on the palate after the initial sweet and malty flavors fade. Detectable in this delicate astringency are grapefruit and almond notes, but mostly you will be charmed by the up-front molasses sweetness and silky malty body of this flawless second flush tippy black tea.

A beautiful delicate and clean natural processed bean best served at the lighter roast points. Hint of citric acidity upfront are quickly covered up by lovely layers of sweet fruitiness. We put it down the stone (red) fruit alley, similar tasting to Cascara (dried coffee skin tea). There is some lovely darker toned balance: a little almost barrel aged, rustic oak like spice with some nuttiness, and if you push the roast towards medium or dark, turns much more chocolatey. Medium roasts are mellower and smoother but can roast out the fruitiness pretty quickly. Dark roasts will get a bit bitter.

A great cup from light to dark. Lighter roasts are sweet and have a little fruitiness, hints of citric and will pull some balance with a nutty/caramel like undertone. A little hint of spice lighter roasted but pretty faint. Medium roasts are a bit fuller bodied and smoother: cuts out the citric tones. A bit more spice noticeable in the cup making its Indian roots more apparent. Dark roasts are much bolder and pronounce the spice and chocolate tones, tasting a bit more like the Mysore Nuggets.

A very cool cup! Best medium to dark but will hold lighter roasts much better than most Sumatra coffees. Lighter roasts have a little cool lemony acidity upfront, with some soft fruit tones giving it some jazz, but balanced with a dry more earthy chocolaty factor. As you push into the medium roasts, it will get much fuller bodied and become a lower acidity cup cutting out the more lemony floral tones. Still a slight crispness even at these roasts giving a lot to the depth of flavors present. Darker roasts will turn more into a chocolaty spice noted treat.
