A very nicely balanced cup of coffee. A little hint of acidity upfront providing some floral and soft fruit at the lighter roasts, balanced with a semi-sweet nutty chocolaty factor. Super light roasts risk a little grassy/herbal but it straightens out at a city+ (medium) and holds up as dark as you want to take it. The darker you go, the more body and edgy chocolate the cup will pick up, once you hit 2nd crack, expect some smoke and roasty tones to compliment the nutty/chocolaty factor.

Best served light to medium roasted. Crisp, clean, slightly fruity and sweet: a more exotic cup with higher acidity than the washed processed offerings. Lighter roasts show sweet lemony floral brightness, with just a hint of soft fruit, balanced with a little herbal/nutty tone. Great body and mouthfeel especially for the roast point. This honey processed shined best at the lighter roast points out of all three Bolivian offerings, a great sign of quality. Medium roasts still provide a bit of crisp sweet citric upfront and soft fruit tones as the cup cools, but will develop more of the classic South American profile of creamy and smooth, nutty/chocolaty like tones.

A great light to medium roast coffee. Delicate, balanced, clean, fruity and sweet. This is not a ferment bomb, the natural tones are delicate and well balanced, not hitting you over the head. An easy drinking lighter roast coffee: sweet, smooth, hints of lemony floral acidity and soft fruit, balanced with a defined chocolate like tone. Good body and mouthfeel, medium to low acidity. A more exotic cup that everyone will love. Medium roasts will start to roast the fruitiness out of the cup but still leave it very sweet, accentuate the body and mouthfeel.

Great from light to dark; this is the fruitiest of the two lots with higher than average acidity for Brazil, highlighting some citric & red fruit like tones in the cup, sweet and a bit more wild. Comparatively to many Anaerobic Naturals, this cup is milder and much more balanced with traditional coffee tastes. Fruity but not crazy ferment & boozy. Lighter roasts show a fruit forward cup, sweet edged, just a hint of lemony acidity with a slightly nutty finish. Shines at the light/medium roast points but tasty from light to dark. As one pushes the roast darker, it builds stronger nutty tones and starts introducing hints of semi-sweet chocolate in the aftertaste, a bit smoky if you get too close or into 2nd crack. A very fresh and tasty Brazil! Lighter roasts show lemon, floral & soft fruit contrasted by a nuttier (almond like) undertone, a sweet edged cup. The two combine for a hints of caramel, quite tasty for you light roast fans. Medium roasts are richer, more of a developed chocolaty tone and decently less nutty; mutes up the soury floral edge, retains a little hint of soft fruit as the cup cools. Colombian Cauca Manos Juntas Micromill – Castillo Natural Processed
A very fruit forward and floral exotic Colombian. All sorts of cool unique flavors can be found in this cup from the slow dry natural processing and boutique fermentation. The brighter tones tend to range from a lemon citric component at the lighter roasts to strong stone fruit in the medium roast range. The acidity is pretty high at the lighter roasts but mellows greatly at a strong medium to dark roast. The balance of the cup comes from an almost cola-like tone that turns a bit nuttier into the darker roasts. Medium bodied, super clean with some far from traditional Colombian tones.

Darker roasts will kill most of the crisp acidity but will retain a little hint of fruit as the cup cools. Much more chocolaty and robust at the darker roast points.

A good cup from light to dark but to showcase what makes these beans special, light to medium roasts will be the way to go. Light roast points are very jazzy, citric/floral acidity mixing with a little soft fruit tone, pulling some balance with a sweet edged nuttiness. With the red fruit and more citric components, it makes us think pink lemonade upfront, but some were more down the tart raspberry alley. Medium roasts get fuller bodied and smoother, good nutty/chocolate like undertones with less crisp citric/floral acidity. Darker roasts will kill most of the brightness but will retain a little hint of fruit as the cup cools. Much more chocolaty and robust at the darker roast points, potent brew, can have a little stout like bitter aftertaste but will hit the tongue on the sweeter side.

Sweet upfront with a hint of crispness balanced with a stronger toasted walnut/chocolaty undertone. A little hint of acidity at the medium roast point really creates a nicely balanced cup with a broad flavor profile. Nutty and chocolate tones dominate the cup profile, hints of a green tea like spice at lighter roasts. Smoky, slightly roasty tones poke out at the darker roasts. More nutty than chocolaty light-medium roasted, more chocolaty than nutty medium to dark roasted.
