Great from light to dark; this is the fruitiest of the two lots with higher than average acidity for Brazil, highlighting some citric & red fruit like tones in the cup, sweet and a bit more wild. Comparatively to many Anaerobic Naturals, this cup is milder and much more balanced with traditional coffee tastes. Fruity but not crazy ferment & boozy. Lighter roasts show a fruit forward cup, sweet edged, just a hint of lemony acidity with a slightly nutty finish. Shines at the light/medium roast points but tasty from light to dark. As one pushes the roast darker, it builds stronger nutty tones and starts introducing hints of semi-sweet chocolate in the aftertaste, a bit smoky if you get too close or into 2nd crack. Retains hints of the fruitiness throughout the roast spectrum but more in the background/after-tastes with medium to dark roasts.Price:Price: $6.39$7.40/lb$6.39/lb -

A very fresh and tasty Brazil! Lighter roasts show lemon, floral & soft fruit contrasted by a nuttier (almond like) undertone, a sweet edged cup. The two combine for a hints of caramel, quite tasty for you light roast fans. Medium roasts are richer, more of a developed chocolaty tone and decently less nutty; mutes up the soury floral edge, retains a little hint of soft fruit as the cup cools. Fairly neutral tasting and very chuggable. Darker promotes a thicker body and introduces a slightly bitter contrast that works very well for espresso.

Sweet upfront with a hint of crispness balanced with a stronger toasted walnut/chocolaty undertone. A little hint of acidity at the medium roast point really creates a nicely balanced cup with a broad flavor profile. To see this cup shine, light to medium roasts are the way to go! Medium acidity, lighter bodied, delicate, sweet cup with strong red fruit tones (strawberry like). Hints of citric and floral jump right out with the fruitiness. Pulls some balance with a little nutty/tea like tones at lighter roasts giving it some awesome depth. Holds up well as one pushes towards second crack, turns the nutty/herbal tones into a rich chocolaty factor with fruity highlights. A bit rougher of a dark tone close to the dark roast mark, touching or into second crack, but everyone still liked it. A more delicate fruit forward refined cup of coffee. Very clean, sweet with dominate fruit (cascara/strawberry) and floral tones balanced with hints of nutty and chocolaty undertones. Traditional light roasts will have some crisp acidity while fresh leaning it a little more towards floral notes, we would call it front loaded but tasty, not much balance with any darker tones and can end a little dry, but plenty wild upfront to make natural processed fans happy. Medium roasts will be best for most, medium to low acidity, hints of floral and fruit balanced with smooth and sweeter darker tones. A great clean decaf coffee! Good from light to dark. Lighter roasting will show a little lemony crispness, rare for a decaf. Sweeter edged with a little herbal chocolate contrast. Medium roasts cut out most of the lemony crispness and rid the cup of its herbal edge. Smooth and rich, medium bodied, with a more pronounced chocolate tone; a bit floral and sweet in the aromatics, adds to the drinking experience but doesn’t come through in the tastes. Lighter roasts have a lemony/floral crispness with hints of a peachy soft fruit tone, pulling balance with a chocolaty herbal note. Medium roasts build a little more body and reduce that lemony floral to a hint, crisp but not overly sour. Dark roasts are bold and semi-sweet, thicker dark tea tones and spice dominate the cup with a little smoky accent. Great example of classic Guatemalan coffee. Best in the medium roast ballpark. Clean, rich & sweet cup; medium bodied with a little new crop winy acidity upfront. Lovely nutty & malty darker tones to balance the brightness. Hints of a fruitiness as the cup cools with “before 2nd crack” roast levels. Will handle lighter or darker roasts as well. Light roasts will be brighter, a bit more lemony with the malty tones just peeking out, a sweeter edge to lighter roasts but not as balanced nor malty. A very cool cup! Best medium to dark but will hold lighter roasts much better than most Sumatra coffees. Lighter roasts have a little cool lemony acidity upfront, with some soft fruit tones giving it some jazz, but balanced with a dry more earthy chocolaty factor. As you push into the medium roasts, it will get much fuller bodied and become a lower acidity cup cutting out the more lemony floral tones. Still a slight crispness even at these roasts giving a lot to the depth of flavors present. Darker roasts will turn more into a chocolaty spice noted treat. Always one of our favorite Mexican coffees. Good from light to dark. Although Natural processed, this is not a fruit bomb like many other natural processed coffees, has slightly fruity overtones that balance great with some citric, malt and nutty undertones. Its a little fuller bodied cup than most Terruno lots with well above average sweetness. Lighter roasting will have noticeable citric crispness upfront and will accentuate the fruitiness. Medium roasts balance the tones nicely and smooth out (reduce) the citric brightness. Darker roasts turn much more chocolaty and get pretty roasty and smoky, retains a sweet edge and shows hints of fruitiness as the cup cools.
