A very nicely balanced cup of coffee. A little hint of acidity upfront providing some floral and soft fruit at the lighter roasts, balanced with a semi-sweet nutty chocolaty factor. Super light roasts risk a little grassy/herbal but it straightens out at a city+ (medium) and holds up as dark as you want to take it. The darker you go, the more body and edgy chocolate the cup will pick up, once you hit 2nd crack, expect some smoke and roasty tones to compliment the nutty/chocolaty factor.

Best served light to medium roasted. Crisp, clean, slightly fruity and sweet: a more exotic cup with higher acidity than the washed processed offerings. Lighter roasts show sweet lemony floral brightness, with just a hint of soft fruit, balanced with a little herbal/nutty tone. Great body and mouthfeel especially for the roast point. This honey processed shined best at the lighter roast points out of all three Bolivian offerings, a great sign of quality. Medium roasts still provide a bit of crisp sweet citric upfront and soft fruit tones as the cup cools, but will develop more of the classic South American profile of creamy and smooth, nutty/chocolaty like tones.

A great light to medium roast coffee. Delicate, balanced, clean, fruity and sweet. This is not a ferment bomb, the natural tones are delicate and well balanced, not hitting you over the head. An easy drinking lighter roast coffee: sweet, smooth, hints of lemony floral acidity and soft fruit, balanced with a defined chocolate like tone. Good body and mouthfeel, medium to low acidity. A more exotic cup that everyone will love. Medium roasts will start to roast the fruitiness out of the cup but still leave it very sweet, accentuate the body and mouthfeel.

Best at a light to medium roast. This is a very showy, bright and fruit forward coffee that is just slightly milder than the natural processed. Light roast themselves have a crisp lemony brightness that quickly fades into sweet and winy fruit notes (somewhere between red fruit & blueberry), balancing with a little hint of the spiced chocolate darker tones seen across the board on the Yunnan coffees. A bit sharp but very sweet and fruity. Turns a bit oaky/boozy as the cup cools. Medium roasts build good body and mouthfeel, muting most of the citric tones but not the fruitiness, it cuts right through the more noticeable chocolate and spice tones. Darker roasts are not highly recommended, gets a bit roasty, sweet, with strong spice tones but leaves the cup a bit swampy tasting with the comingled fruit tones.

Beautiful prep on the beans & a good cup from light to dark. Our favorite was right in the middle, a nice medium roast won everyone over. A good daily drinker with an exotic spin. Lighter roasts will show some crisp lemony acidity, a sweet edge and will pull a little balance with an herbal/spice chocolate note. Medium roasts (our favorite) were smooth and rich, a bit fuller bodied, just a spec of that sweet citrus upfront, low acidity with predominantly chocolate/malt like tastes, a little spice pokes out in the aftertaste. Great from light to dark roasts. Lighter roast points are very jazzy with brighter features, citric mixing with a little sweet hint of a fruit tone, pulling some balance with a bit of nuttiness. Medium roasts get fuller bodied and smoother, slightly chocolaty with less crisp citric/floral tones than the lighter roast points. Darker roasts will kill most of the crisp acidity but will retain a little hint of fruit as the cup cools. Much more chocolaty and robust at the darker roast points.

This is a quality bean in and out, best served in the light to medium roast level. Lots of cool tones to play with in the roaster. Higher acidity, very sweet, with some floral tones popping out, just like a high rated Costa should be. A fruit forward offering, slight red fruit but most will pick it up as a grape skin like fruitiness when mixing with the higher acidity. All these lighter tones balance with some nuttiness than will lean on the chocolaty side, especially as/if you push the roast a little darker. Super light roasts lean the cup to lemony/floral and will be loaded with more citric lighter tones, not very balanced but punchy and clean. Darker roasts lean it towards nutty/chocolaty with more stout like features & fruity highlights. In the middle, one gets layers of all the lovely flavors in the cup. Crisp and clean lemony floral balanced with sweet and smooth chocolaty undertones than linger on the nuttier side. Hints of fruit will pop out but not hit you over the head.

Best from the lighter side of a medium roast to as dark as you want to go. A bit cleaner tasting but slightly less fruity than previous seasons. Lighter roasting presents some nice honey processed features: citric, floral, soft fruit with an almost oak/peat like finish, sweet & complex but does risk some underdeveloped tones if you nail it a little too light. Medium roasts were our favorite, still balanced and complex but will develop the traditional chocolate and smoky tones for which Dominican coffees are known for – to balance out those more exotic fruity and citric tones. Turns into a very robust coffee at the fuller roasts. Fuller bodied with low acidity and very complex semi-sweet darker tones; chocolate, tobacco earthiness, molasses and smoky.

A lovely slightly-exotic daily drinker. Light to medium roasts are preferred with our favorite roast being right in the middle of the cracks. Lighter roasts have a hint of floral/citric acidity with just a touch of sweet and delicate red fruit coming from the honey processing. A bit on the nutty/chocolaty side for its balance, starts as a dry nutty at very light roasts, turns more chocolaty as the roast gets darker.
A little front loaded with the more acidic and fruity tones at traditional light roasts. Medium roasts have better balance between light an dark tones cutting out some acidity; smooth, rich, sweet edged. Dark roast loses the more exotic acidity and fruity edge but turns very thick, nutty, semi-sweet chocolaty with smoky accents.

Kayon Mountain has become a tradition around here, marks one of our favorite times of the year, new Ethiopian season! Beautiful coffee and screen.Clean, bright, sweet with a very diverse flavor set. Stone and darker fruit, citrus & floral, and spiced chocolate tones are the main flavors one can see in this cup, either accentuated or muted depending on roast level. Nice jammy body will be seen in the medium to borderline dark roast mark. Very dependent on roast – lighter roasting gives much more of the citrus, red-fruit with just a hint of a spicy chocolaty factor, a much dryer finish. Darker roasts produce much more of a bakers chocolate cup with a hint of a strawberry like fruit note and good sweetness, far less acidic. A very enjoyable cup from light to dark.

A wonderful light to medium roast coffee: a delicate cup with a sweet edge. Very complex with wonderful aromatics, floral with hints of jasmine. Not overly acidic, but will have a bit of citric upfront at lighter roasts comingling with the floral overtones, balancing with just a hint of an herbal/spice/chocolate like darker tone. With a little longer setup, one will see the depth of flavor increase adding a slight fruit tone, more noticeable as the cup cools.

Clean, sweet, and floral with some stronger tea like attributes. Works well light to dark. Lighter roasting does have some acidity giving the cup a citric edge and sweeter floral/fruit notes but will not develop the depth to the darker tones that we loved with fuller roast levels. Hints of a black tea like dark tone and a soft fruit tone will pop out especially with some setup and as the cup cools. Medium to dark roasts will mellow the brightness considerably turning the cup darker toned with a fuller body, more about the spice notes and chocolaty factor. Smooth and easy drinking in the medium roast range while still maintaining hints of exotic acidity. Dark roasts promote a smoky edged rich semi-sweet chocolaty factor with tea like spice that lingers on the tongue in the aftertaste.

Crisp, clean and sweet; this Ethiopian cup is a bit more delicate than most. Light to medium roasting recommended but a tasty cup from light to dark. Lighter roasts will have some decent brightness, lemony with some grapefruit like citric tones. A floral cup with some awesome hints of jasmine in the aromatics. The lighter tones pull some balance with the classic tea like chocolaty undertone, traditional darker notes from the Yirgacheffe region.
Medium roasts really mellow out the acidity and reduce the citric/floral tone, creates a bit more body and a much more recognizable chocolaty factor. A very smooth, balanced and rich cup with exotic highlights. Darker roast burn out all the fruity and acidic notes, gets a little smoky roasty with strong bakers chocolate & spice tones.

A solid cup from light to dark, but for most drinking, a medium roast will be the way to go. Sweet with just a pinch of citric upfront, medium bodied, good mouthfeel, just a pinch of fruitiness and ends with a nice malty undertone. Lighter roast get a bit brighter and slightly more fruity but can risk a little grassy, medium roasts present great balance to the flavors and was very easy drinking, darker roasts retain a lot of sweetness and hefty malty tones, but will get pretty roasty/smoky. If drinking for drip/pour-over, medium roasts are where to go. If using for blending, espresso or cold brew, light or dark roasts can produce some really tasty results.

Much cleaner processing this season which is a perk, a point higher rated, but a little less fruity/wild of a cup. Hints of a red fruit at lighter roasts, especially as the cup cools. A bit fuller bodied and on the sweeter side, balanced with the bakers chocolate like earthiness (a good contrast) found in the other Haitian coffees. Lighter roasts will let the exotic profile shine but be a bit punchy with floral and citric tones, risks a grassy tones if you get too close to first crack. Medium roasts were our favorite, better balance with a pronounced chocolaty darker tone along with the more exotic floral and fruit. Darker roasts touching 2nd crack are far less fruity and hold more true to the Haitian profile, a little floral acidity still comes through the cup but strong and smoky with almost no hint of being a slow dry honey processed.

A beautiful delicate and clean natural processed bean best served at the lighter roast points. Hint of citric acidity upfront are quickly covered up by lovely layers of sweet fruitiness. We put it down the stone (red) fruit alley, similar tasting to Cascara (dried coffee skin tea). There is some lovely darker toned balance: a little almost barrel aged, rustic oak like spice with some nuttiness, and if you push the roast towards medium or dark, turns much more chocolatey. Medium roasts are mellower and smoother but can roast out the fruitiness pretty quickly. Dark roasts will get a bit bitter.

A great cup from light to dark. Medium to full bodied, with medium to low acidity. Lighter roasts are sweet and clean, hints of citric that will pull some balance with a nutty/caramel/spice like darker tone. A bit thicker and more neutral tasting than the regular flat bean. Does have some crisp acidity at the light to medium roast points. Medium roasts are a bit fuller bodied and smoother: cuts out the citric tones. A bit more spice noticeable in the cup making its Indian roots more apparent. Dark roasts are much bolder and pronounce the spice and chocolate tones, tasting a bit more like the Mysore Nuggets.

Medium roasts get more balanced, not as citric, building a bigger bodied darker tone. The citric turns a little grapefruit like and the nuttiness turns a bit more chocolaty, maintains a lot of depth between the acidity and herbal chocolate/nutty floral notes . Darker roasts get very strong and semi-sweet, think bakers chocolate with herbal accents. A lovely example of Kenya coffee. Good from light to dark, we recommend a nice medium roast to showcase it. Very bright, punchy and complex at lighter roasts, a bit front loaded with citric/floral but very clean with some balance. A bit hoppy some will say with some spice notes popping out. The lighter tones will pull some balance with a semi-sweet chocolate edge but easily overpowered by the higher acidity when light roasted. Medium roasts build much better balance between the acidity (citric/floral/fruit) and the dark tones (nutty/cocoa/spice) making it less blasty of a cup, easier to drink all day. If you don’t like higher acidity, this is where to start with your roasts. Darker roasts have there place, but will kill some of what separates this cup from “average” Kenyan. Good from light to dark, very different tasting dependent on roast level. If you are a very fruit forward natural fan, sticking in the light to medium roast level is recommended. Contrary to many naturals, these beans rock at the fuller roast levels as well, touching or into second crack produces a very lively cup, not super roasty with incredible depth of flavor and good balance between light and dark tones.

Great from light to dark but most would consider it a light to medium roast coffee to see it shine. We couldn’t find a roast level or curve we didn’t like; a complex & chocolaty coffee. Lighter roasts will have a crisp lemony/floral acidity, a hint of soft fruit, balanced with a chocolate and spice darker tone; sweet edged, winy, and floral. Light to medium roasts; The first tones to hit you will be a little bit of lemony citrus that quickly fades into some lovely red fruit notes – a little reminiscent of tart cherry but has some classic stone fruit in the cup as well. The lighter tones are balanced with a nice and clean chocolaty factor without too much of that classic African herbal note. Aromatics that will make your mouth water. Dark roasts are not really recommended, turn a bit bittersweet and kill the fruit forward aspects of the cup.

First tones to hit the tongue will be exotic acidity/fruitiness that will vary between citric, tropical and stone fruit; dependent on roast level and setup. Pulls great balance with a chocolatier profile and tons of spice notes. Medium roasts mute some of the fruitier aspects, reducing the acidity, bringing forth complex chocolaty spice to the foreground. Darker roasts are a bold and spicy cup, the roasty tones mix nicely with the unique spice.

Best at the light to medium roast level. Good bit of citrus and red fruit upfront balanced with a thicker chocolate and spice note. Light roasts get very jazzy acidity, with just a hint of a dark tone. Floral and sweet edged, with an emphasis on the fruitiness of the cup. Medium roasting is much more balanced, medium to full bodied and far less sharp than the lighter roasts, but also less fruity. More of a chocolaty cup with fruity highlights. Dark roasts get even fuller bodied but burn out some sweetness, taste like semi-sweet chocolate on the roasty/smoky side, thick with a bit of spice in the aftertaste. A hint of fruitiness as the cup cools but hard to tell its natural processed roots at darker roasts.
