Best from the lighter side of a medium roast to as dark as you want to go. A bit cleaner tasting but slightly less fruity than previous seasons. Lighter roasting presents some nice honey processed features: citric, floral, soft fruit with an almost oak/peat like finish, sweet & complex but does risk some underdeveloped tones if you nail it a little too light. Medium roasts were our favorite, still balanced and complex but will develop the traditional chocolate and smoky tones for which Dominican coffees are known for – to balance out those more exotic fruity and citric tones. A very cool, very exotic cup of coffee. One can tell this is a slow dry natural processed coffee with its strong ripe red fruit tones upfront. Lighter roasting presents a ton of floral and fruit with an almost oak/peat boozy finish, very sweet with just a ton going on but does risk some underdeveloped tones with its two-toned roasting. Medium roasts were our favorite, still plenty wild but develop enough of the chocolate and smoky tones – which most Dominican coffees are known for – to balance all those more exotic fruity and citric tones. Darker roasts will burn out most of what distinguishes this cup, the washed processed handles those roast level much better; interesting and still exotic but strong and edgy, it will retain some fruity factor with very strong and less sweet, smoky, tobacco and bakers chocolate type notes.

Light to dark you will find a tasty cup. Light roasting will have some acidity, tastes will start with a sweet citric/winy crispness upfront and balance out with a malty/nutty/caramel darker tone, a hint of herbal spice in the aftertaste. A lovely balance of tones and our favorite roast point. Medium roasts reduce the citric/winy tones and herbal spice, promoting the malt like taste. Increases the body and smoothness, but will reduce the depth of flavors a bit. If looking to impress, light roasts are where it shines. For daily drinking, medium roasts are the way to go. A candidate for dark roasts, fuller bodied, low acidity with the malty and roasty tones mix nicely.

Awesome cup this season, good from light to dark. Darker roasts which are more traditional for Haitian coffee, come off robust and strong with a floral islandy sweet edge and a smoky aftertaste. Bigger bodied and on the chocolaty spicy side of things. Being so clean this cup is great at light to medium roasts as well; hints of lemony floral, crisp, sweet with a more nutty/caramel tone. A great medium to dark roast coffee. Full bodied, low acidity, great mouthfeel, robust and strong coffee with hints of a exotic spice. Lighter roasts get a cool semi-floral sweet tone upfront but will pull more towards grassy caramel with a slight hint of herbal spice. As one progresses towards the darker roasts it gets much fuller bodied and creamy with clean chocolate/malt like tastes, a little hint of floral acidity at the full city roast level. A good example of a wild honey processed coffee. We thought best around a medium roast, pulls greater flavor depth without being too strong or acidic. A little fruity, buzzy acidity, rich and sweet nutty/chocolate like tones. Can go lighter or darker dependent on personal taste preference. Lighter roasts will be bright and frontloaded with fruity/floral/citric tastes, darker roasts flip the tastes, a stronger semi-sweet and robust chocolate/smoky tone with some fruity highlights as the cup cools.

At light roasts it will have some lemony acidity and a sweet edge, pulls some balance with a more peanut like nuttiness. Medium roasts introduce a more chocolaty than nutty tone and mute up some of the citric making it a bit smoother of a cup but also less complex, good daily drinking territory. A great cup! Super clean in its cup characters. Very bright and somewhat fruity at the lighter roasts; citrus, floral and red fruit balanced with just hint of a herbal nutty/caramel factor. Medium roasts get more balanced, not as citric, building a bigger bodied darker tone. The citric turns a little grapefruit like and the nuttiness turns a bit more chocolaty, maintains a lot of depth between the acidity and herbal chocolate/nutty floral notes . Darker roasts get very strong and semi-sweet, think bakers chocolate with herbal accents. Wonderful light to dark roast beans. Too see it shine, we do recommend a light to medium but there are reasons we can think of to take it darker. A bit thicker and lower acidity for a prime Kenya offering. Lighter roasts are sweet and clean, medium bodied with a smooth mouthfeel. A pinch of citric accompanied with bolder chocolate notes, a hint of spice in the aftertaste. Medium roasts are full bodied and very rich tasting, lots of complexity to the darker tones, starts picking up some complimenting roasty tones as one gets closer to 2nd crack. Into second crack roasts promotes a bittersweet edge with strong bakers chocolate and dry malt overtones.

Always one of our favorite Mexican coffees. Good from light to dark. Although Natural processed, this is not a fruit bomb like many other natural processed coffees, has slightly fruity overtones that balance great with some citric, malt and nutty undertones. Its a little fuller bodied cup than most Terruno lots with well above average sweetness. Lighter roasting will have noticeable citric crispness upfront and will accentuate the fruitiness. Medium roasts balance the tones nicely and smooth out (reduce) the citric brightness. Darker roasts turn much more chocolaty and get pretty roasty and smoky, retains a sweet edge and shows hints of fruitiness as the cup cools. A cool cup of Mexican coffee with unique (to Mexico) processing: nor your average Mexican tastes. We liked it best medium to dark roasted: nice and sweet cup upfront with wonderful aromatics, fuller bodied and less acidic. Small hints of a fruitiness especially at lighter roasts. Bakers chocolate, malt, smoke and a bit of nuttiness comprise the darker tones. Very dependent on roast level, lighter roasts will be filled with more fruity and citric notes balancing with a nuttier, dryer, chocolaty undertone. Medium roasts are balanced and bring forward the more nutty and chocolaty character, muting the fruity and lemony/floral tones, they are still there in the cup, just more in the aftertaste than the first thing to hit your taste buds.

Similar to the Sigri coffee these beans are pretty low acidity in the cup, very clean in its profile. Smooth, rich and chocolaty with some spice note accents. Most would call it a pretty sweet chocolaty cup with a bit of spice. Very smooth cupping this year with no herbal tones or earthiness. Medium bodied with a sweeter edge, a cup almost anyone would enjoy. Kind of like a Sumatra coffee without all the earthy funk.
