A great cup from light to dark roasts. We thought it shined best on the lighter side of a medium roast, a city+ most would say. The sweet and nutty tones give a hint of caramel with a little setup. Shows some citric acidity upfront but would be considered a lower acidity cup overall. The brighter features comingle with a medium bodied nutty/cocoa undertone and a sweeter edge. Reminds me of a nice Honduran coffee more so than a traditional Brazil, a bit nuttier. Medium to dark roasts mute the brighter characteristics providing a very smooth cup that works a little better for daily drinking or espresso. Turns much more chocolaty the darker you roast, still retains a little nuttiness in the aftertaste, a bit roasty if you touch or go into second crack but it compliments the beans characteristics.

A naturally processed microlot of Catuai and Caturra from Finca El Analia, milled at the Los Madrigal Micromill in Costa Rica’s celebrated Tarrazú region. The mill is run by Diego Armando Madrigal Ureña, who, together with his brother, inherited the family’s farms from their grandfather when they were just 11 and 13 years old. Three farms totaling around 25 hectares deliver ripe cherry to the mill, which dries its coffee on expansive raised African beds, and the brothers are deeply committed to reforestation and sustainable growing. Grown at a lofty 1,800 meters, this lot bursts with jammy passion fruit, perfumey hibiscus, and dried raspberry, all lifted by sparkling acidity and a clean, fruit-like sweetness. As with most expressive naturals, a light-to-medium roast best preserves its bright, floral character and at this price, it’s a whole lot of cup for the money.

This is a quality cup in and out. Lots of cool tones to play with in the roaster. A bit higher acidity with a strong floral aspect, balanced with a full bodied nutty and chocolaty undertone. Slightly fruit forward but not a fruit bomb. The black honey processing really leave a crazy complex cup with tones ranging from lemongrass to red fruit to nutty/chocolaty and smoky undertones. Super light roasts lean the cup to lemony/floral and will be loaded with more citric lighter tones, not very balanced but very punchy and clean. Darker roasts lean it towards nutty/chocolaty more stout like features with fruity highlights. In the middle, one gets layers of all the lovely flavors in the cup. Crisp and clean lemony floral balanced with sweet and smooth chocolaty undertones than linger on the nuttier side. Hints of fruit will pop out but not hit you over the head.

Best from the lighter side of a medium roast to as dark as you want to go. A bit cleaner tasting but slightly less fruity than previous seasons. Lighter roasting presents some nice honey processed features: citric, floral, soft fruit with an almost oak/peat like finish, sweet & complex but does risk some underdeveloped tones if you nail it a little too light. Medium roasts were our favorite, still balanced and complex but will develop the traditional chocolate and smoky tones for which Dominican coffees are known for – to balance out those more exotic fruity and citric tones. Darker roasts are a little more complex than on the washed processed version, but not as smooth and rich.

A great medium to dark roast coffee: robust, fuller bodied, lower acidity and complex. Rich and smooth with nutty, chocolate, earthy and spice tones. On the lighter roast spectrum there is a little jazzy citric note that presents the cup a little sweeter, on the darker roast spectrums it will have some roasty and smoky notes that we found quite pleasant.

A lovely slightly-exotic daily drinker. Light to medium roasts are preferred with our favorite roast being right in the middle of the cracks. Lighter roasts have a hint of floral/citric acidity with just a touch of sweet and delicate red fruit coming from the honey processing. A bit on the nutty/chocolaty side for its balance, starts as a dry nutty at very light roasts, turns more chocolaty as the roast gets darker.
A little front loaded with the more acidic and fruity tones at traditional light roasts. Medium roasts have better balance between light an dark tones cutting out some acidity; smooth, rich and sweet edged. Dark roast loses the more exotic acidity and fruity edge but turns very thick, nutty, semi-sweet chocolaty with smoky accents.

A great medium to dark roast coffee. Full bodied, low acidity, great mouthfeel, robust and strong coffee with hints of a exotic spice. Lighter roasts get a cool semi-floral sweet tone upfront but will pull more towards grassy caramel with a slight hint of herbal spice. As one progresses towards the darker roasts it gets much fuller bodied and creamy with clean chocolate/malt like tastes, a little hint of floral acidity at the full city roast level. Into 2nd crack adds some complimenting roasty/smoky tones that with the fuller body and malty profile, will be quite the tasty treat.

Awesome cup this season, good from light to dark. Darker roasts which are more traditional for Haitian coffee, come off robust and strong with a floral islandy sweet edge and a smoky aftertaste. Bigger bodied and on the chocolaty spicy side of things. Being a little cleaner, this cup is very good at light to medium roasts as well; sweet with a more nutty/caramel tone, can come off a little herbal too light so tread lightly. A little acidity but not enough to push folks away. A lovely daily drinking cup. Heavier bodied and lower acidity, semi-sweet hints of floral and caramel, balanced with a nice strong earthier chocolate note. Darker roasting makes for a pretty bold cup with some added smoky factors.

I always love the Kona profile. We thought these beans to shine from a medium to dark roast. Lighter roasting will produce hints of a fruity island acidity balanced with a chocolaty/nutty undertone, jazzed up with a hint of herbal spice in the aftertaste. As the roast progresses the cup gets pretty low acidity and the nutty and chocolaty factor will get accentuated. Close or into 2nd crack you will get some added smoky and roasty notes that will compliment the sweeter cup profile.

Great medium to dark roast beans. Nice and clean for a Sumatra. Fuller bodied and darker toned, low acidity with a predominately earthy/chocolaty cup profile. Very classic tasting, stout like Sumatra. A little sweet floral upfront and smoky in the aftertaste. Gets strong into the very dark roasts turning the cup semi-sweet chocolate like with smoky notes. Our favorite roast was just touching 2nd crack.

A lovely example of Kenya coffee. Good from light to dark, we recommend a nice medium roast to showcase it. Very bright, punchy and complex at lighter roasts, a bit front loaded with citric/floral but very clean with some balance. A bit hoppy some will say with some spice notes popping out. The lighter tones will pull some balance with a semi-sweet chocolate edge but easily overpowered by the higher acidity when light roasted. Medium roasts build much better balance between the acidity (citric/floral/fruit) and the dark tones (nutty/cocoa/spice) making it less blasty of a cup, easier to drink all day. If you don’t like higher acidity, this is where to start with your roasts. Darker roasts have there place, but will kill some of what separates this cup from “average” Kenyan. Strong and semi-sweet, think bakers chocolate with herbal accents. A little smoky and roasty but presents nicely for a more exotic dark roast.

A lot from the Rukira Factory (Othaya FCS), Nyeri County, Kenya, grown between 1700 and 1890 masl with SL28, SL34, Ruiru 11 and Batian varieties, washed and dried on raised beds. A clean, expressive AA: at light roast it is bright and citric (grapefruit, red fruit, floral); at medium it balances toward orange, brown sugar and chocolate; at dark it turns strong and semi-sweet with baker’s chocolate. Classic Kenyan coffee with lively acidity and solid structure across the whole roast curve.

This green coffee is from La Hammonia, which is part of the Selva Negra Estate in Matagalpa. Grown at an altitude of approximately 4,400 feet in a shaded environment with volcanic soils. These conditions foster slower bean development, resulting in a cup with a more intense and well-structured flavor profile. It is produced using the Parainema variety, a lineage of Arabica that has yielded excellent results in Nicaragua and, specifically at Selva Negra. The coffee is notable for its large bean size. In the cup, it is very clean and sweet coffee with a medium-to-full body and a mere hint of acidity. At lighter roast levels, it offers a more delicate, somewhat floral profile with a chocolate/caramel foundation and notes of herbal spices; at a medium roast, it becomes rounder, smoother, and more chocolatey, featuring a well-developed sweetness and a slight malty finish; and at darker roast levels, it gains body and strength, taking on a sweet, malty, and slightly smoky character.

A very clean and fresh batch from Selva Negra. A little citric & floral acidity upfront, balanced with nice complex nutty & malty undertones. Light roasts are going to be a little front loaded with the brighter characteristics, a higher rated cup meaning one will notice some decent crisp acidity at the light-medium roasts. Will give great depth of flavor but may be a little sharp for some. Our favorite roast and a great everyday drinker was in the medium roast ballpark, builds more of a smooth and creamy cup with a sweet edge, reducing that perceived acidity to just a pinch. Turns much stronger, a robust cup most would say, into the darker roasts but shined nicely; fuller bodied with strong malty and smoky tones, still a sweeter edge to it which darker roast fans will love.

We thought best from medium to dark roasts but works from light to dark. A clean, sweet and smooth daily drinking cup! A little fuller bodied at the light-medium roast level with a great balance between the slight winy/floral notes & nutty/malty darker tones. Similar to Guatemalan coffee. Some acidity at lighter roasts but just a hint, medium to dark roasts would be marked as low acidity. As one pushes it into the medium roast range, the very sweet nutty tones come off a bit caramel like. Still plenty malty, it will linger on the tongue. Dark roasts turn pretty strong with the sweeter malty cup profile mixing nicely with smoky and roasty notes.

Similar to the Sigri coffee but with just a pinch of brightness and no fruitiness, very clean in its profile. Smooth, rich and chocolaty with some spice note accents. Most would call it a pretty sweet chocolaty cup with a bit of spice. Very smooth cupping this year with minimal herbal tones or earthiness. Medium bodied with a sweeter edge, a cup almost anyone would enjoy. Kind of like a Sumatra coffee without all the earthy funk. Best served in the medium to dark roast levels but some will find joy at lighter roast points with a longer setup.

We liked it best from a medium to dark roast, but with a little longer setup, light roast fans can find joy with these beans. Definitely a chocolaty cup profile with some cool nutty and herbal/spice accents. If you roast before 2nd crack, which is preferred, one can balance in some melon and fruit acidity into the mix which is a big plus to the depth of flavor. Cup starts sweet at lighter roasts but will turn semi-sweet as you pushing into medium or dark roasts.

An interesting and complex single-cultivar Tanzania (SL-28), best at light to medium roasts, though it works darker as well. At lighter roasts it grabs your attention from the first sip with a vibrant, juicy acidity a touch higher than usual with hints of sweet orange and lemon. The clean cup carries plenty of lively depth: deep chocolate and cocoa, a classic African spice note, and an herbal nuance clearly reminiscent of black tea that, far from clashing, makes for a really appealing interplay of flavors. It has a medium body that fills in and turns denser as it cools, with a background of fruity sweetness, praline, and a slight hint of amaretto for a very balanced cup. Pushed into darker roasts, it trades some acidity for more body and deeper chocolate.
