A very nicely balanced cup of coffee. A little hint of acidity upfront providing some floral and soft fruit at the lighter roasts, balanced with a semi-sweet nutty chocolaty factor. Super light roasts risk a little grassy/herbal but it straightens out at a city+ (medium) and holds up as dark as you want to take it. The darker you go, the more body and edgy chocolate the cup will pick up, once you hit 2nd crack, expect some smoke and roasty tones to compliment the nutty/chocolaty factor.

This is one unique coffee! We have carried only a few of these Fruit Fermentations coffees in the past, some have loved them, some have not, but a very fun and definitely unique offering for home roasters. Part high quality Colombian coffee, part melon science experiment. Flavored enough by the crazy processing that the crowd will be split on this one but we found much joy drinking it. Be ready for coffee that tastes and smells like varying levels of melon depending on the roast level.If you love melon, this coffee will be pretty awesome. Two of our tasters love melon tastes and picked this one as the favorite. The melon tones stick right out and balance nicely with the Colombian coffee profile. Lighter roasts were interesting, some may want to try it here, the cup is bright and clean but be warned, the aromatics and flavor of the melon is very strong, it balances with a very sweet, nutty, buttery textured tone. Pretty much a guarantee one will have not tasted flavors like this in coffee before, but will be a limited crew that likes the light roast point best. We did like lighter roasts better than the pineapple offering, but all in all the cup lacked balance with some normal coffee tones. Medium roasts push the tastes much higher in our book, a little hint of citric acidity, some classic Colombian nuttiness, good body with a clear sweet melon tones, a little stronger in the aromatics but also clear in the tastes. Still unique but links more to traditional coffee tastes. Darker roasts close to second crack present nicely, but into second crack more than a pop or two did pick up a little bitter contrast.

Be ready for coffee that tastes and smells like varying levels of passionfruit depending on the roast level.
Recommendation of a lighter medium to borderline dark roast to present this best. I unfortunately have not eaten a ton of passionfruit so this was harder for me to link directly to the fruit itself, where the other two strike home. More floral and citric fruity comparatively to the other two, a bit more delicate, the aromatics and fruitiness balanced best out of the three with the coffee tones but no missing the unique fruity/fermentation tones.

Recommendation of a strong medium to borderline dark roast to present this best. Just might be my personal favorite of the three, the Pineapple tones stick right out and balance nicely with the Colombian coffee profile. Lighter roasts were interesting, some may want to try it here, the cup is clean & the aromatics and flavor of the pineapple is very strong, balances with a very sweet, nutty, buttery textured tone. Pretty much a guarentee one will have not tasted flavors like this in coffee before, but will be a limited crew that likes the light roast point best. Medium roasts push the tastes much higher in our book, a little hint of citric acidity, some classic Colombian nuttiness, good body with a clear pineapple note in the smell and aftertaste. Still unique but links more to traditional coffee tastes. Darker roasts close to second crack present nicely, but into second crack more than a pop or two did pick up a little bitter contrast.

We thought it best within the light to medium roast levels. Jazzy citric acidity, a little floral some would say, a hint of soft fruit providing a sweet edge along with some wonderful darker toned balance, on the walnut/almond side. Light roasts themselves will be a bit citric, the cup is very clean and handles the roast level well, but needs a longer setup and a tongue that doesn’t mind a bit of acidity. Medium roasts are great daily drinkers and promote a little hint of caramel in the nuttier cup profile, retains just a pinch of citric acidity upfront but it really helps with the depth of flavors. Good body with a smooth mouthfeel. Dark roasts were equally as tasty but it loses the cool crisp citric, and soft fruit, that shows at lighter roasts. Full bodied with stronger nutty and chocolate like tones, a bit of roastiness but it compliments the cup nicely.

A very nice and clean Costa. Lighter roasts will show that classic Costa sweet floral acidity, a little bit on the lemony side balanced with a little dry nutty/chocolate undertone. As the roasting pushes more into the medium category, the cup develops a bit more body and reduced acidity levels giving a much smoother mouthfeel and more defined chocolaty factor. Creates a wonderful balance of tones. A little lighter floral, a little chocolaty/nutty, very pleasant drinker. Darker roasts hold up nicely as well, turn the cup more stronger and more bakers chocolate like, the roasty notes from darker roasting do compliment the cup. A more delicate fruit forward refined cup of coffee. Very clean, sweet with dominate fruit (cascara/strawberry) and floral tones balanced with hints of nutty and chocolaty undertones. Traditional light roasts will have some crisp acidity while fresh leaning it a little more towards floral notes, we would call it front loaded but tasty, not much balance with any darker tones and can end a little dry, but plenty wild upfront to make natural processed fans happy. Medium roasts will be best for most, medium to low acidity, hints of floral and fruit balanced with smooth and sweeter darker tones. Dark roasts themselves pick up a little bittersweet edge but have wonderful aromatics and good body.

Nutty and chocolate tones dominate the cup profile, hints of a green tea like spice at lighter roasts. Smoky, slightly roasty tones poke out at the darker roasts. More nutty than chocolaty light-medium roasted, more chocolaty than nutty medium to dark roasted.

Medium to dark roasts are hard to tell as decaf, creamy with a retained sweeter edge , a little soft fruit tone that pops out and a little complimenting smoky tone if you hit 2nd crack.

A wonderful example of a top grade washed Ethiopian. Best served in the light to medium roast range, a very delicate and sweet cup. Hints of citrus and soft fruit comingle with floral, chocolate and tea like spice. Heirloom Ethiopian strains have a taste like no other and offerings like this one showcase their uniqueness. For acidity fans, a light roast ending real close to 1st crack will have a stronger lemony citric edge, covers up a bit of the delicate floral/fruit but crisp, clean and sweet. We personally liked it better just a shade or two darker, splitting the difference between light and medium. It will mellow the citric tones popping out the sweet floral, while building a bit more darker tea like contrast. Crisp but not overly acidity. Crisp, clean and sweet; this Ethiopian cup is a bit more delicate than most. Light to medium roasting recommended but a tasty cup from light to dark. Lighter roasts will have some decent brightness, lemony with some grapefruit like citric tones. A floral cup with some awesome hints of jasmine in the aromatics. The lighter tones pull some balance with the classic tea like chocolaty undertone, traditional darker notes from the Yirgacheffe region.
Medium roasts really mellow out the acidity and reduce the citric/floral tone, creates a bit more body and a much more recognizable chocolaty factor. A very smooth, balanced and rich cup with exotic highlights. Darker roast burn out all the fruity and acidic notes, gets a little smoky roasty with strong bakers chocolate & spice tones.

Lovely nutty & malty darker tones to balance the brightness. Hints of a fruitiness as the cup cools with “before 2nd crack” roast levels. Will handle lighter or darker roasts as well. Light roasts will be brighter, a bit more lemony with the malty tones just peeking out, a sweeter edge to lighter roasts but not as balanced nor malty. Darker roasts promote the strong malt tones, accentuating the mouthfeel and semi-sweet malt tones, a smoky edge.

Light roasting will have some acidity, tastes will start with a sweet citric/winy crispness upfront and balance out with a malty/nutty/caramel darker tone, a hint of herbal spice in the aftertaste. A lovely balance of tones and our favorite roast point. Medium roasts reduce the citric/winy tones and herbal spice, promoting the malt like taste. Increases the body and smoothness, but will reduce the depth of flavors a bit. If looking to impress, light roasts are where it shines. For daily drinking, medium roasts are the way to go. A candidate for dark roasts, fuller bodied, low acidity with the malty and roasty tones mix nicely.

A lovely coffee. Low acidity, medium body with rich and robust darker tones ringing throughout the cup. Medium to dark roasts are where these beans shine. Lighter roasting without much acidity will leave the cup a bit nutty and lacking but clean. Starting at about a medium roast the cup builds a wonderful chocolate note with some smoky and malty overtones. A bit on the sweeter smoother side, a tasty treat. Darker roasts, close to touching 2nd crack and where the much more robust tones pop out of the cup, reminiscent of a nice Haitian cigar.

Bigger bodied and on the chocolaty spicy side of things. Being so clean this cup is great at light to medium roasts as well; hints of lemony floral, crisp, sweet with a more nutty/caramel tone. A little acidity but not enough to push folks away. A lovely daily drinking cup.

Lighter roasts get a cool semi-floral sweet tone upfront but will pull more towards grassy caramel with a slight hint of herbal spice. As one progresses towards the darker roasts it gets much fuller bodied and creamy with clean chocolate/malt like tastes, a little hint of floral acidity at the full city roast level. At light roasts it will have some lemony acidity and a sweet edge, pulls some balance with a more peanut like nuttiness. Medium roasts introduce a more chocolaty than nutty tone and mute up some of the citric making it a bit smoother of a cup but also less complex, good daily drinking territory. Darker roasts taste nice but will have some roasty/smoky characteristics along with a good body. A rich and sweet cup for dark roast fans.

Best medium to dark roast, a great everyday drinker. This cup is nice and chocolaty with some nutty accents, just like a good Honduras should be. Lower acidity and medium bodied, a sweeter edge assuming its not roaster super dark. Clean, rich and smooth cup with nutty and chocolate tones. Medium roasts were our favorite but might be a little mild for some. One can put a little heft and stronger bakers chocolate tone by touching or going slightly into second crack.

A great cup from light to dark. Lighter roasts are sweet and have a little fruitiness, hints of citric and will pull some balance with a nutty/caramel like undertone. A little hint of spice lighter roasted but pretty faint. Medium roasts are a bit fuller bodied and smoother: cuts out the citric tones. A bit more spice noticeable in the cup making its Indian roots more apparent. Dark roasts are much bolder and pronounce the spice and chocolate tones, tasting a bit more like the Mysore Nuggets.

Indian Mysore Nuggets has been a favorite of Burman Coffee and customers for many years and this crop does not disappoint. The aroma is nutty, woody, and some slight smokiness. Many of the notes in the aroma come through in the flavor like walnuts and some smoke. There’s dark fruit, oak, licorice, and some vanilla spice, like a good dry red wine. The finish has a subdued brightness to it with just hints of lemon zest at lighter roast points. The body is medium to full depending on roast and brew. There’s a reason people keep coming back to this bean. It’s a smooth all around great stronger cup of coffee.

Wonderful light to dark roast beans. Too see it shine, we do recommend a light to medium but there are reasons we can think of to take it darker. A bit thicker and lower acidity for a prime Kenya offering. Lighter roasts are sweet and clean, medium bodied with a smooth mouthfeel. A pinch of citric accompanied with bolder chocolate notes, a hint of spice in the aftertaste. Medium roasts are full bodied and very rich tasting, lots of complexity to the darker tones, starts picking up some complimenting roasty tones as one gets closer to 2nd crack. Into second crack roasts promotes a bittersweet edge with strong bakers chocolate and dry malt overtones.

A clean, fresh and bright Kenya coffee. Light to dark this will make a tasty cup. Full of citric and floral tones with small hints of a fruitiness, good body with some buzzy acidity that will tingle your tongue. Lighter roasts do have some lemony goodness but it’s crisp and defined, not quite mouth puckering. Hints of black tea spice with a small herbal chocolaty factor are present even at lighter roasting and balance out the cup nicely. Sweet edged with some hints of a fruity factor between the lemony floral front end and chocolaty herbal spice undertones. Medium roasts and smooth and accentuate the chocolaty factor, muting up most of the acidity, a very easy to drink cup. Light roasts will work for some, but will come off a bit more dry nutty with a citric edge, the cup builds really nice chocolaty tones with a hint of caramel and floral as one pushes into the medium roast range, a cup everyone would like. Darker roasts get pretty bold and also bring out a stronger nutty tone balanced with smoky bakers chocolate, medium bodied and low acidity.

A very clean and fresh batch from Selva Negra. A little citric & floral acidity upfront, balanced with nice complex nutty & malty undertones. Light roasts are going to be a little front loaded with the brighter characteristics, a higher rated cup meaning one will notice some decent crisp acidity at the light-medium roasts. Will give great depth of flavor but may be a little sharp for some. Our favorite roast and a great everyday drinker was in the medium roast ballpark, builds more of a smooth and creamy cup with a sweet edge, reducing that perceived acidity to just a pinch. Turns much stronger, a robust cup most would say, into the darker roasts but shined nicely; fuller bodied with strong malty and smoky tones, still a sweeter edge to it which darker roast fans will love.

Great light to medium roast coffee. Although we have carried the San Felipe lot for years, having the Geisha separate this season has brought a ton of new tastes. East to tell the difference when compared to the other strains Selva Negra grows. Best at the light to medium roast level, these beans have a bit more acidity than anything else from Selva Negra. The cup is very floral and citric especially at lighter roasts. Not quite jasmine floral, a little more traditional citric, but very tasty; delicate and sweet edged. Where one can see the prime Geisha attributes is in the darker tones of the cup, black tea spice jumps right out. Light roasts are heavy on the citric and floral balanced just a touch of tea like spice with herbal overtones. Medium roasts are where most will want to shoot, defined tea like spice with some sweet crisp floral upfront. Darker roasts turn a bit plain, still very drinkable but not much uniqueness.

A crisp, bright, very clean and balanced cup. This is an awesome example of washed processed Panama coffee. A hefty cup full of floral, citric and sweet tones, malty, nutty and chocolate like tones to contrast. Soft fruit tones can be found somewhere between the two but not like a natural, delicate and more citric/peachy. Lighter roasts push the tones towards the more acidic side but these beans are clean enough to handle the lighter roasting. The most jazzy roast point but may come off a little too acidic for some. Medium roasts are the best starting point for medium-low acidity fans, it balances the cup out nicely with traditional darker tones. A wonderful mix of floral and malty/chocolaty without being too sour upfront. Darker roast get much heftier, good for the stronger coffee fans.

We thought it best right around a medium roast; balanced and sweet. Hints of sweet citric floral upfront comingle with smooth defined malt like tones, just the tiniest hint of a fruity factor in the aftertaste. Lighter roasts get much crisper, dominated with more floral citric fruit tones, lemony most would say but does still show a little malty undertone. Darker roasts cut out the more floral aspect of the cup and are very rich and smooth, more semi-sweet but still very malty, into second crack adds some complimenting smoky tones. Hard to find a bad roast point with these beans.

A clean, sweet and smooth cup of coffee one can drink all day long! A little fuller bodied at the light-medium roast level with a great balance between the lighter winy/floral notes & nutty/malty darker tones. Similar to Guatemalan coffee. Some acidity at lighter roasts but just a hint, medium to dark roasts would be marked as low acidity. As one pushes it into the medium roast range, the very sweet nutty tones come off a bit caramel like. Still plenty malty, it will linger on the tongue. Dark roasts turn pretty strong with the sweeter malty cup profile mixing nicely with smoky and roasty notes.

As one pushes the roast a little darker, the body increases, as the acidity and vegetal spice dissipated. Made for a very lovely daily drinker in the medium roast range; sweet, smooth & complex. Pushing the beans darker, the citric and floral acidity drops nicely to a crisp hint or none at all, the malty tones can turn quite robust as you approach or touch 2nd crack. Lighter roasts are where this cup is best served, good clean acidity, very sweet and floral, a bit of jasmine especially in the aromatics with clearly noticeable and very clean stone fruit tones balanced with a bit of tea like spice. Really an amazing soft and refined fruit tone for a washed processed coffee. Wonderful how the cup breaks what most think of washed processed coffees. With those Geisha floral and spice notes popping right out even at light roast points, a cup you Geisha fans will not want to miss. Medium roasts and beyond produce a smooth and rich cup, more chocolaty than nutty, pulls a dryer peanut brittle like tone (some may say hint of caramel), more peanut than brittle but we all thought it to be a good descriptor. A cool cup from medium to dark. There are some sweet island floral tones upfront at the lighter roasts, a sweet edge with unique spice; somewhere between a woody cinnamon to more peppery/clove. Wonderful aromatics accompany lighter roasts but could be a little too grassy/sharp for some. Medium roasts are more chocolaty, balancing with the spice nicely, less woody, more bold semi-sweet clove like spice. Darker roasts get smooth and creamy retaining those exotic spice notes to compliment the roasty and smoky darker chocolate cup.

A very crisp, complex and clean cup of coffee. Similar cup to a nice Burundi or Kenya, the cup presents the classic African tones nicely. Lemony floral notes upfront giving the cup a nice sweet crispness at the lighter roast points, a little bit of a fruity overtone. Semi-sweet chocolate spice notes balance the cup out, a bit on the herbal/tea side super light roasted but will develop into a plethora of tones as one pushes the roast towards medium or borderline dark, very full flavored coffee. Dark roasts themselves get real low acidity and fuller bodied while maintaining a smoothness not often found in some dark roasts.
