The aroma is very nutty and sweet. There was a surprising hint of smoke on the palate. Full bodied and low acidity – this is a traditional tasting Brazil – thick, creamy, nutty and semi-sweet. At the darker roasts a very sweet first taste, almost a little fruity, and then quickly turns darker-toned with a bakers chocolate and slightly toasted walnut flavor. Great blend base for espresso or adding body with darker tones although many will love it as an single origin drinker.

Primary cues of baker’s chocolate and cedar/soft spice, with a round, calmly sweet finish Monsoon character minus the caffeine “edge.” As roast deepens, expect more cocoa/wood and a touch of malt. Unlike its caffeinated cousin, there is some earthiness but its not over the top, the decaf monsooned is more rich and chocolate/earth with some lingering spice.

Decaffeination is done using the Swiss Water Process (water only, no solvents), in a circuit where primarily the caffeine is extracted, and then the coffee is re-dried to prepare it for roasting.

This Mexican Altura EP Decaf (Royal Select, water process) is a very versatile “homegrown decaf”: smooth, low in acidity, and easy to enjoy via filter or espresso. It comes from Chiapas and Oaxaca (900–1500 meters above sea level), mountainous regions in the south where the coffee typically comes from small producers and is sun-dried on patios before decaffeination. In the cup, it ranges from sweet and delicate in light roasts (with hints of spice/nut and a floral nuance), to rounder in medium roasts (chocolate and a soft sweetness), and deeper and denser towards medium-dark roasts, with more intense chocolate and greater body.

A great clean decaf coffee! Good from light to dark. Lighter roasting will show a little lemony crispness, rare for a decaf. Sweeter edged with a little herbal chocolate contrast. Medium roasts cut out most of the lemony crispness and rid the cup of its herbal edge. Smooth and rich, medium bodied, with a more pronounced chocolate tone; a bit floral and sweet in the aromatics, adds to the drinking experience but doesn’t come through in the tastes. Darker roasts are robust and strong, semi-sweet and very chocolaty with a roasty edge.

On the lighter roast spectrum there is a little jazzy citric note that presents the cup a little sweeter, on the darker roast spectrums it will have some roasty and smoky notes that we found quite pleasant.

A wonderful example of a top grade washed Ethiopian. Best served in the light to medium roast range, a very delicate and sweet cup. Hints of citrus and soft fruit comingle with floral, caramel, chocolate and tea like spice. Heirloom Ethiopian strains have a taste like no other and offerings like this one showcase their uniqueness. For acidity fans, a light roast ending real close to 1st crack will have a stronger lemony citric edge, covers up a bit of the delicate floral/fruit but crisp, clean and sweet. We personally liked it better just a shade or two darker, splitting the difference between light and medium. It will mellow the citric tones popping out the sweet floral, while building a bit more sweet caramel/chocolate darker tone with a hint of tea like spice in the aftertaste. Crisp but not overly acidity. Darker roasts go the other way covering up the citric and floral with strong chocolate and herbal tones. The aromatics are fantastic on these beans and will add wonderful floral depth to the tastes.

Ethiopian Yirgacheffe Washed Gr. 2 – Banko Chelchele
Good from light to dark but we thought best at a strong medium to dark roast. A good bean to go after a rich and semi-exotic chocolate tone with some wonderful aromatics and a bit of spice. Light roasts are more citric and floral with wonderful aromatics and a sweet edged, a bit punchy in the citric department and contrasts with a bit of nutty/herbal/grassy undertones. Works well but needs a much longer setup time bring out smooth and clean tastes, sharp and grassy/herbal if drank too soon. Medium roasts will bring some lovely balance to the cup and provides a clean tasting brew without waiting a week to drink it. One starts seeing the chocolate aspect but will still pull some balance with the citric and floral. Less aromatic than the light roasts, but you can still tell you have a nice Ethiopian with one sniff. Darker roasts touching or into second crack are real robust, strong and semi-sweet, more bakers-chocolate like with tea like spice in the aftertaste.

I always love the Kona profile. We thought these beans to shine from a medium to dark roast. Lighter roasting will produce hints of a fruity island acidity balanced with a chocolaty/nutty undertone, jazzed up with a hint of herbal spice in the aftertaste. As the roast progresses the cup gets pretty low acidity and the nutty and chocolaty factor will get accentuated. Close or into 2nd crack you will get some added smoky and roasty notes that will compliment the sweeter cup profile.

Medium roasts introduce a more chocolaty than nutty tone and mute up some of the citric making it a bit smoother of a cup but also less complex, good daily drinking territory. Darker roasts taste nice but will have some roasty/smoky characteristics along with a good body. A rich and sweet cup for dark roast fans.

Besides a chocolaty factor one will get some herbaceous nutty/caramel/floral like tones at the medium to dark roast points, gives it some nice complimenting depth without being too exotic. We all thought it was at its best right around a full city – smooth without too much of a roasty note and great chocolaty tones.

Indian Mysore Nuggets has been a favorite of Burman Coffee and customers for many years and this crop does not disappoint. The aroma is nutty, woody, and some slight smokiness. Many of the notes in the aroma come through in the flavor like walnuts and some smoke. There’s dark fruit, oak, licorice, and some vanilla spice, like a good dry red wine. The finish has a subdued brightness to it with just hints of lemon zest at lighter roast points. The body is medium to full depending on roast and brew. There’s a reason people keep coming back to this bean. It’s a smooth all around great stronger cup of coffee.

Hints of citric crispness and soft fruit with a little sweeter chocolate edge, pulls some balance with some earthy spice (the good kind). Very clean cup for a Sumatra that is drinkable and balanced from a medium roast and beyond. The darker you roast, the fuller the body gets along with reducing any hints of acidity. Into second crack will turn more into a chocolaty spice noted treat but will reduce the sweeter edge. Picks up some complimenting roasty and smoky tones into the more bakers chocolaty cup profile.

We did also enjoy this coffee at a light roast; a softer and sweeter cup but will risk a little earthy/nutty/grassy if too light.

This is a washed coffee from the Korgua farm, located on the Kuta Ridge within the Waghi Valley (Western Highlands), the Nebilyer Valley area. Grown at around 1400 meters above sea level, it uses Bourbon and Typica varieties. It’s a lot with a “classic” PNG profile, but with a distinct farm character, linked to the work of Brian Leahy and his Kuta Mill, created as a neutral point so that producers from rival tribes could bring their coffee without conflict. In the cup, it tends to be fuller-bodied and creamier, with low to moderate acidity and a rich mouthfeel. In light roasts, a sharper citrus note emerges, accompanied by hints of dried fruit, caramel, cocoa, a touch of herbal spices, and floral nuances. When roasted to a medium, it becomes especially chocolatey, smooth, and well-rounded.

A great daily drinking Peru! Best right around a medium roast but works well from light to dark. It stands out for being a very clean and sweet cup. At lighter roast levels it has some crisp acidity, not over the top but noticeable, gives a quick hit lemon and floral that will balance with nutty and chocolate like darker tones. Small hints of caramel and dried fruit will pop out with a little setup. At medium roast levels, you get more of a smooth easy drinking cup, less acidity with accentuated nutty/chocolate tones, a hint of spice in the aftertaste, provides the best balance of light/dark tones. Darker roasts are a little flat and roasty, but on the more neutral side, classic darker roast beans: smooth, rich and on the roasty chocolate side of things with a little nuttiness in the aftertaste.

This is a fully washed Bourbon from Nyamasheke, near Lake Kivu, where the cool, humid conditions influenced by the nearby Nyungwe forest and the region’s volcanic-influenced soils help produce clean, well-structured cups. It’s processed through the Jarama washing station network and typically dried on raised beds at high elevation (around 1700–1900 masl). An interesting and complex Tanzania Peaberry, best from light to medium roasts, but works darker as well. At lighter roast points it grabs your attention right from the start with a vibrant and juicy acidity, slightly higher than usual, with hints of sweet orange and lemon. The crisper cup profile gives the cup a lot of lively flavor depth including it more potent deep chocolate and cocoa notes, accompanied by a classic African spice note, an herbal nuance clearly reminiscent of black tea; far from clashing, this herbal touch creates an excellent and highly appealing interplay of flavors in the cup. It has a medium body that accentuates and becomes denser as the temperature drops. In the background, there is a fruity sweetness, praline, and a slight hint of amaretto, resulting in a very balanced cup. Moving into darker roasts, it will lose its acidity, consequently gaining more body and intensifying its chocolate and sweet notes.

Tanzanian peaberry is always high on our list for darker roast beans: rich and chocolaty cups with robust and unique spice notes. This one being fresh as can be works pretty well from light to dark, if too light it can get a little grassy/herbal, but a clean and balanced cup with just a little development past first crack, a city+ roast they would call it. Retains its cleanliness into the darker roast points. Lighter roasts are going to be more acidic, not quite like a Kenya but a pretty clear citric edge balancing with a little hint of chocolate. Hit the roast right and you will see a pinch of caramel sweetness with a longer setup, but get it a bit too light, will have an herbal edge. Medium to dark roasts are pretty bullet proof. Medium will still show a hint of acidity, darker will lose it all. Either roast level will be nice and chocolaty with some spice behind it. If your a cold brew fan, lighter roasts points were pretty awesome, no risk of herbal and it popped out the sweeter caramel note much easier, a lighter bodied and sweeter cup.

The listed variety is Timor Hybrid a naturally occurring Arabica × Robusta cross first identified in Timor in the 1920s, widely known for its rust resistance used in many Arabica breeding lines. In the cup it’s sweet, comforting, and clean, led by plum over a base of almond, caramel, and chocolate, with a smooth, well-rounded profile and gentle sweetness rather than sharp acidity. For roasting, it’s described as easy to work with: light-to-medium keeps the fruity sweetness while building caramel/nut tones, while darker roasts push it toward caramelized sugar and toast just watch development after first crack so you don’t lose the fruit and complexity.
