Most would consider this a medium to dark roast coffee, but does have some jazz at lighter roast points. Darker toned, semi-sweet coffee with lower acidity and a fuller body. Filled with rich chocolate/nutty/herbal/spice like tones. Great depth of flavor without all that citric and fruity that often comes with higher rated cups these days.Lighter roasting promotes the more nutty/herbal, darker roasting chocolate & spice. Lighter roasting took 4-5 days after roasting to get tasty, medium to dark roasts were tasty from day 1.

Great from light to dark. Lighter roasts will show some floral acidity and soft fruit tones comingling with a little nutty/caramel like darker note. Crisp, clean, sweet and balanced. Medium roasts mute up most of the floral attributes, gains a little body and thicker mouthfeel, just a pinch of a sweet fruity upfront quickly dominated by nutty and chocolate like tones. Darker roasts get a bit smoky and move the soft fruit tone to the aftertaste, mostly noticeable as the cup cools, a stronger nutty/chocolatey/smoky profile.

A good cup from light to dark but to showcase what makes these beans special, light to medium roasts will be the way to go. Light roast points are very jazzy with stronger citric/floral acidity mixing with a little soft fruit tone, pulling some balance with a sweet edged nuttiness. With the red fruit and more citric components, it makes us think pink lemonade upfront, but some were more down the tart raspberry alley. Medium roasts get fuller bodied and smoother, good nutty/chocolate like undertones with less crisp citric/floral acidity. Darker roasts will kill most of the brightness but will retain a little hint of fruit as the cup cools. Much more chocolaty and robust at the darker roast points, potent brew, can have a little stout like bitter aftertaste but will hit the tongue on the sweeter side.

A very fresh crisp and clean Colombian arrival. Good from light to dark but a nice solid medium roast was what won us over on this lot. Stronger more spicy cup profile. Lighter roasts have very crisp and clean acidity, a sweet lemony floral, with hints of a black tea like spice, some dry nuttier tones in the aftertaste. Just a little development past first crack is a good sweet spot for lighter roasting. Medium roasts are richer with less lemony floral, more traditional nutty/chocolate like tones and some lingering spice in the aftertaste. Darker roasts are full of bakers chocolate notes, more semi-sweet smoky with nutty accents. Good from light to dark! A wonderful clean supremo screen. The aroma is sweet, freshly cut cedar, spicy, with a touch of cocoa. The body is medium/full and has a mild and pleasant acidity. The flavor is very dependent on the roast. Light roasts are a bit citric and sweet, hints of a melon fruitiness comingle with a little nutty and chocolaty factor. At a medium roast, you will enjoy soft notes of walnut, cedar, and spice, a little crispness, with more of a caramel like finish. Darker roasts will stronger chocolate tones and hints of spice and dried dark fruit.

A lovely, crisp, and clean, not overly fruity natural processed. We thought it best right around the medium roast ballpark but will make fans lighter or darker depending on your personal taste preference. Lighter roasting is a bit higher acidity, lemony and floral with some grape skin like fruitiness coming through. A bit more herbal spice right at first crack, needs a longer setup time to shine but will provide delicate chocolaty notes with much wilder acidity and fruity tones. Medium roasts were tasty without the wait! Balanced, tasty, and clean after 24 hours. A pronounced chocolaty factor, medium bodied, hints of crisp acidity backed with a little soft fruit tone and spice. Wonderfully smooth and delicate for a Congo coffee. Dark roasts were tasty right off the bat as well, roasty and stronger but with a sweeter then average edge. A wonderfully clean and exotic cup. Not nearly as herbal spice noted as its Yirgacheffe cousins. A bit of lemony floral acidity upfront quickly fading into nice red fruit notes and balancing with a smooth chocolate undertone that lingers in the aftertaste. Light roasts will promote much more citrus acidity but also leave the most red fruit tones in the cup. A longer setup helps with the lighter roasts for the citric tones will fade over time allowing more of the fruitiness and darker tones of the cup to shine. Medium roasts really bring forth the cleaner chocolaty tones in the cup reducing the fruit and citric tones to just a hint. Darker roasts burn out the fruit and acidity leaving a strong slightly edgy bakers chocolate cup with smoke smokier highlights.

Best served in the light to medium roast range for drip brew for it will show its best balance and promote a hint of fruity/floral. Turns into a chocolate bomb at the darker roasts, more on the dark chocolate side, which would work wonderfully for espresso or cold brew. A clean, fresh and semi-fruity Ethiopian. Lower acidity with great sweetness making it a wonderful light to medium roast bean for every tongue. Although not a fruit bomb, it has noticeable red fruit tones upfront that balance with the classic Ethiopian chocolate and spice notes. Light roast have just a pinch of citric and floral upfront that quickly fade into the fruitiness, hints of the chocolate and spice notes but mostly in the aftertaste. Medium roasts accentuate the more chocolaty aspect pushing the fruity and floral tones to the background, very smooth, sweet & balanced cup with exotic highlights. Darker roast into or touching 2nd crack will hide almost all of the fruity and floral, just detectable in the aftertaste as the cup cools, very chocolaty but a bit more semi-sweet.

A great example of a top rated and clean Yirg coffee. Bright, citrus, floral and soft fruit versus a chocolaty spice note, a bit tea like at lighter roast points. Very dependent on roast, one can accentuate or hide the attributes of this cup depending on roast level. Washed Ethiopians are always way fun to play around with. Lighter quicker roasts are front loaded floral and citrus with a little hint of a chocolaty tone (pretty faint), dark roasts are hefty, a bit fuller bodied with strong bakers chocolate tone and some smokiness.

A little different than last years batch with the higher acidity levels but just as tasty in my mind. Lighter roasts are front loaded with the floral and fruit tones; tasty but you have to like acidity. A very nice example of a fruit forward natural. Clean enough cup for lighter roasts, where the tastes tend to shine. Stronger citric acidity, a medium body, plenty of red fruit notes and hints of a nutty/chocolaty undertone. Medium roasts will mellow the acidity and accentuate the chocolaty factor, less extreme and easier to drink but not as punchy of a cup. A bit easier cup to achieve roasting wise. Darker roasts are still very interesting with the two-tones of roast level. One still gets hints of acidity (very small) and a bit of fruity factor but also a ton of bitter-sweet smoky and chocolaty notes.

Lighter roasts have a little cool lemony acidity upfront, with some soft fruit tones giving it some jazz, balanced with a dry earthy chocolaty herbal factor with some incense like spice. As you push into the medium roasts, it will get fuller bodied with a creamy mouthfeel cutting out the more lemony floral tones, turns the cup much more chocolaty and gives depth to the exotic spice notes. Darker roasts will turn more stout like and semi-sweet. A very clean, exotic and balanced cup of coffee. Although still considered a higher acidity cup, this offering is more about the fuller body and complex darker tones. Especially at lighter roasts, one will see a more citric style acidity, comingling with a green tea like spice, clean as a whistle, but may be a little sharp for some. Medium roasts bring a more potent chocolaty cup with some floral highlights, lingering spice in the aftertaste. Darker roasts get much thicker and semi-sweet, would put in on the bakers chocolate side of things with some soft fruit and spice lingering on the tongue, a little smoky if you go real dark.

A very clean, bright and balanced cup. Best at the light to medium roast levels. At lighter roasts; one will see sweet and strong citric tones comingling with chocolate and herbal darker notes, classic premium Kenya. As the cup sets up longer one can see some greater complexity pop out with hints of soft fruit, nutty and caramel like tones. Pushing into the medium roast levels, the thickness increases and the chocolate/herbal factor will be the dominate tone in the cup hiding much of the citric and floral. Hitting 2nd crack cuts out most of the citric and will turn the cup more bakers chocolate, increasing the strength, but loosing sweetness.

A nice tasting coffee from light to dark. We thought it best right around a medium roast for daily drinking but depending on what you like, holds up well lighter or darker. Light roasts one can see the linkage to Kenya; citric and floral upfront, a sweet edge, thicker chocolate/spice undertones, hints of caramel with a little setup in the aftertaste. Not as punchy as most Kenyan offerings, but along the same line of tastes. Medium roasts really mellow the cup. Smooth most would say, a bit more neutral with just a hint of the floral and spice seen at the lighter roasts. Reminded us of a cross between the Mysore Nuggets and a nice Costa Rican coffee. Great for daily drinking. Darker roasts touching or into second crack retain the sweet edge and put a more malty/smoky taste into play with some lingering spice in the aftertaste.

Great daily drinker from medium to dark roasts. Good body and lower acidity, nice and strong semi-sweet malty tones with a hint of spice in the aftertaste. At the light to medium roasts it will show just a pinch of crispness and a hint of earth, not super citric but will leave a dryness to the tongue, a bit floral in its aromatics but not in the cup. Just before to touching 2nd crack gets rid of almost all signs of any acidity and adds some complimenting smokiness to the cup profile. A very smooth cup from a medium roast to just before 2nd crack. Into 2nd crack will get some edgy strength that dark roast fans will like.

At lighter roasts, a little acidity can be found which brings small notes of nutty, caramel and floral tones but will have an earthier terroir. Anything even into the medium roast range is very chocolaty and smooth with just a pinch of a spice note. Darker roasts get a bit fuller bodied and roasty with some nice smoky accents.

Good from light to dark, very different tasting dependent on roast level. If you are a very fruit forward natural fan, sticking in the light to medium roast level is recommended. Contrary to many naturals, these beans rock at the fuller roast levels as well, touching or into second crack produces a very lively cup, not super roasty with incredible depth of flavor and good balance between light and dark tones.

This cup is nice and clean, a little fuller bodied and smooth with a sweeter edge. A great year for Peru coffees; the cup starts just a little citric, fairly low acidity only detectable at the lighter roast points, a little hint of soft fruit but mainly a pretty chocolaty cup profile with some nutty accents. Lighter roasts one can find a hint of caramel if you get lucky, and leans on the nuttier side, little citric will poke out. A nice medium roast will make anyone happy and provide good balance and smooth chocolate tones, low acidity – a good daily drinker. A nice and clean taste, good from light to dark. Mostly these beans will appeal to medium-dark roast fans but being an exceptionally clean cup, it has some lovely balance and is quite tasty at lighter roasts. Similar to its Indonesian cousins (except washed processed), it gets real hefty into the dark roasts promoting smoky and chocolaty tones with stronger spice notes. Lighter roasting it is more delicate and floral, slightly fruity with some detectable lemony crispness, sweet edged, medium bodied with hints of a chocolaty factor.

Yemen coffees are the rare cup where you can occasionally see a “banana” like fruit tone – don’t worry though, its a little bit of a reach for banana, its not like eating a banana or banana flavored coffee, although with developed tongue, most can pick it up. Red fruit and bakers chocolate are the dominate tones – fruit is accentuated with lighter roasts, chocolaty with darker roasts. A lovely super complex old world natural.
