The aroma is very nutty and sweet. There was a surprising hint of smoke on the palate. Full bodied and low acidity – this is a traditional tasting Brazil – thick, creamy, nutty and semi-sweet. At the darker roasts a very sweet first taste, almost a little fruity, and then quickly turns darker-toned with a bakers chocolate and slightly toasted walnut flavor. Best at the light to medium roast levels: there is a little crisp citric upfront, a bit more lime than lemon, a hint of red fruit giving a sweet edge. These lovely lighter tones pull some balance with a nutty/chocolate like undertone with a bit of spice, accentuated as you push the roast darker. Medium bodied, medium brightness levels, small hints of red fruit more noticeable as the cup cools. Light roasts themselves are much more citric, good to give a longer setup if shooting light, mellow out the crispness a bit. Turns much more chocolaty at the darker roasts but will introduce potent bitter, semi-sweet chocolate like notes. Medium roasts present the best balance and would qualify as a jazzy daily drinker.

The stronger chocolate undertones mix very well with the floral sweetness on top to create a lovely balance. Lighter roasts were interesting, pulls a bit of sweet green tea like spice, but for most Central American fans, shooting a bit fuller and creating a more chocolaty cup will be the way to go.

A wonderful cup at lighter roast points. A sweet, delicate, fruity and floral cup. Medium to low acidity, it will have a slight citric tone while very fresh. First note to hit the tongue will be the sweet red fruit note that will fade into a little nutty/chocolate darker note. Unlike its Yirgacheffe cousins, there is not nearly as much herbal/tea like darker note. At lighter roasts it’s distinctly floral, Ethiopians heirloom strains in action, pronounces lime and lemon-zest acidity with a little sweet red fruit tone, strawberry like. At medium roasts it turns smooth and balanced, with a silky body (between light and medium) and pronounced chocolate like backbone that supports the hints of fruitiness well. Pushed darker it gains punch and shifts toward dark/baker’s chocolate and cocoa, while maintaining a medium-soft body. Overall: floral-leaning, sweet, and very clean.

No missing the more wild natural processed tones in this cup. Best served at the light to medium roast levels. A bit of citric crispness upfront that quickly fades into a sweet fruity note, the lighter tones balance with a boozy complexity, think oaky barrel aged like tones, with more traditional nutty/chocolate like tones in the aftertaste. Wonderful depth of flavors and a clean tasting cup from light to dark. With its more potent tastes, a longer setup will help smooth it out the cup and reduce some of the wild tones. Light roasts themselves will show a little higher acidity, lots of citric and fruitiness, balances more on the nutty side of things. Medium roasts promote a bit more chocolaty factor, reducing some of the citric acidity, bringing out more of the barrel aged darker toned complexity with fruity highlights. Dark roasts are interesting but can get a bit bitter as you enter second crack, assuming you like stronger edgier coffee, can be a unique treat for dark roast fans.

Best at the light to medium roast levels. Very crisp, clean and exotic. Great aromatics filled with jasmine spice and soft fruit. Lighter roasts are filled with new crop acidity and floral notes, mostly citric but a little soft fruit tone can be found. The balance of the cup comes from a semi-tea-like chocolate factor. I tend to think of it as chocolate spice notes but many tongues can pick up a little black tea note. Medium roasts still have a bit of citric acidic, build a good body and bring forth more of the chocolate spice note, reducing the acidity slightly so even more of the exotic tones of this cup can be found. Darker roasts are always tasty for those who like fuller roasts. This is how they would traditionally serve these beans in Ethiopia. Almost a shame, for it loses the cool spice and lighter note balance, but will still make for a good exotic smoky and chocolaty cup.

This coffee is a prime example of the classic “Huehue” profile: it’s exceptionally bright, sweet, and clean. It leads with a lovely orange fragrance that carries into the cup, with bright citrus orange notes supported by a little red fruit and a malty undertone. A fantastic daily-drinker Guatemala. Coffee is part of this families blood – Finca El Diamante is owned by one of the Villatoro family members; Florencio. In the same family are the owners of Finca Esperanza, Finca Villaure and Finca Rosma (as well as a few more). These are some of the best farms and the most well known in all of Guatemala. Most of the brothers and their farms have won the cup of excellence.

Awesome cup this season, good from light to dark. Darker roasts which are more traditional for Haitian coffee, come off robust and strong with a floral islandy sweet edge and a smoky aftertaste. Bigger bodied and on the chocolaty spicy side of things. Being a little cleaner, this cup is very good at light to medium roasts as well; sweet with a more nutty/caramel tone, can come off a little herbal too light so tread lightly. A little acidity but not enough to push folks away. A lovely daily drinking cup. Heavier bodied and lower acidity, semi-sweet hints of floral and caramel, balanced with a nice strong earthier chocolate note. Darker roasting makes for a pretty bold cup with some added smoky factors.

Indian Mysore Nuggets has been a favorite of Burman Coffee and customers for many years and this crop does not disappoint. The aroma is nutty, woody, and some slight smokiness. Many of the notes in the aroma come through in the flavor like walnuts and some smoke. There’s dark fruit, oak, licorice, and some vanilla spice, like a good dry red wine. The finish has a subdued brightness to it with just hints of lemon zest at lighter roast points. The body is medium to full depending on roast and brew. There’s a reason people keep coming back to this bean. It’s a smooth all around great stronger cup of coffee.

Pulls some molasses undertones as ones pushes into second crack roasts. Hints of slight smoky tone at darker roast.

A beautiful tasting bean this season: slightly fruitier but still balances with traditional Indonesian character. Hints of acidity with stronger fruitiness at lighter roasts, strong fruit/oak tones on a more nutty/earthy/chocolaty profile at darker roast points. No missing the wild side in this cup. Medium roasts are where one should shoot for their first roast, mutes some nutty tones and pronounces the chocolaty factor for some balance, still plenty of wild fruity natural processed tones in the cup. Dark roasts will introduce some smoky accents but retain great sweetness. A great balance of slow dried natural with thick and creamy dark tones all in one cup.

Tasty from medium to dark. We preferred it a bit on the darker side. Lighter roasting is wild and decently fruit forward, sweet with a little acidity upfront; winy and brandy like with some lingering dry nutty/earthy tones, a bit of floral in the aftertaste, good but not chocolaty enough for us. Medium roasts mellow the cup a bit, turning it more chocolaty, fuller bodied and refining the fruitiness, making it a cup everyone will love, not just natural processed fans. Reminiscent of a nice Yemen Mokka but a bit more brandy like. Smooth and easy drinking. Dark roasts worked exceptionally well. Chocolaty but not overly roasty, sweet with just a pinch of fruit in the aftertaste. A bit of bolder spice compliments the more delicate features: great mouthfeel.

Hints of citric crispness and soft fruit with a little sweeter chocolate edge, pulls some balance with some earthy spice (the good kind). Very clean cup for a Sumatra that is drinkable and balanced from a medium roast and beyond. The darker you roast, the fuller the body gets along with reducing any hints of acidity. Into second crack will turn more into a chocolaty spice noted treat but will reduce the sweeter edge. Picks up some complimenting roasty and smoky tones into the more bakers chocolaty cup profile.

A stellar light to medium roast coffee, one of the better batches of Terruno Natural we have had through our doors. Due to the processing this coffee is naturally very sweet, syrupy textured with a medium-full body. Its brightness leans toward citrus, more lemon than acidic lime, with nuances of apple and soft orange. The cup presents notes of peach, plum, and a light floral touch, with a background of chocolate and cocoa and soft undertones of caramel and vanilla. A subtle melon accent is noticeable, especially in lighter roasts. With an intense fruity note, yet firm and balanced; lively without being strident: ideal for everyday drinking with any brewing method.

Lighter roasts are where this cup is best served and will be on the brighter side, good clean acidity, very sweet and floral with decent fruit, a bit of jasmine especially in the aromatics with clearly noticeable tea like spice. Those Geisha floral and spice notes popping right out especially at light roast points, a cup you Geisha fans will not want to miss. Careful with these beans, under or over roasting, although still likely to be a tasty cup, will greatly mute the unique attributes this cup can put off. Just a slight touch past first crack is what to shoot for.

Although similar to the Typica, this Catuai is a more potent cup, stronger acidity with more complex darker tones (a little along the lines of African coffees). Light roasts themselves will be brighter with crisp lemony floral notes and more noticeable fruit tones, nutty tones to balance out the cup. Medium roasts bring a smoother and richer cup, develop the nuttiness into more of a malty/chocolate like taste, reduces the fruitiness but keeps the sweetness, still a bit lemony upfront but has a much more noticeable malt like tone with a bit of spice to balance it out. Darker roasts pull a little bitter/malty contrast but it goes well with the roasty and smoky tones and retains a sweet edge. A little longer setup sees a smooth a sweet darker roast.

A great light roast bean with some strong and bright fruit forward tones balanced with a bit of spice and stellar aromatics. Its always a bit harder to pick out those traditional Geisha tones with the natural processing but if you stick lighter, you definitely get them in the aromatics, some great almost jasmine like Ethiopian aromatics with this cup. Clean as a whistle with very noticeable lemony/floral acidity accompanied with some lovely red fruit tones. Sweet, delicate and well defined at the lighter roasts. A slight warning though, a fruit forward cup with higher acidity, lighter roasted, is not for everyone.

We found these beans best at the lighter roast points but works well from light to dark. An even heftier cup than the washed processed, full of floral, citric and sweet tones. Contrasting with malty, nutty and rustic chocolate tones. As the cup cools, you can see more of a fruity edge showing its natural processed roots, but it’s delicate and a bit more citric/peachy than traditional red fruit. Lighter roasts have a pretty blasty citric edge, starts lemony but fades to more of a limey tone in the aftertaste. Good to give it a longer setup, mellowing the brightness will allow many little flavors to pop out. Medium roasts are likely the best starting point for most, still plenty crisp but will accentuate the traditional darker tones and require less waiting after roasting. A wonderful mix of floral and malty/chocolaty without being too sour upfront. Darker roasts can pull a little bittersweet edge but are still very complex heftier cups, good for the stronger coffee fans or those looking for a more exotic dark roast.

A crisp, bright, clean and balanced cup. We thought it best light-medium roasted but quite tasty from light to dark. This is an awesome example of washed processed Panama coffee. A hefty full flavored cup: floral, citric and sweet tones contrasting with malty, nutty and rustic chocolate like tones. A hint of soft fruit can be found as the cup cools in the light-medium roast levels. Lighter roasts push the tones towards the more acidic side but these beans are clean enough to handle the lighter roasting, give it a longer setup time after roasting. Lighter roasts are the most jazzy roast point but may come off a little too acidic for some. Medium roasts are the best starting point for medium-low acidity fans, it balances the cup out nicely with traditional darker tones, a creamier body and mouthfeel. A wonderful mix of floral and malty/chocolaty without being too sour upfront. Darker roast get much heftier, good for the stronger coffee fans.

We thought best from medium to dark roasts but works from light to dark. A clean, sweet and smooth daily drinking cup! A little fuller bodied at the light-medium roast level with a great balance between the slight winy/floral notes & nutty/malty darker tones. Similar to Guatemalan coffee. Some acidity at lighter roasts but just a hint, medium to dark roasts would be marked as low acidity. As one pushes it into the medium roast range, the very sweet nutty tones come off a bit caramel like. Still plenty malty, it will linger on the tongue. Dark roasts turn pretty strong with the sweeter malty cup profile mixing nicely with smoky and roasty notes.

Great from light to dark. Light roasts will show great depth of flavor and produce a very clean cup. Some acidity, which brings lemony and floral tones to the front end of the tastes, balances them with a sweet edged nutty/malty undertone, hints of a vegetal spice. As one pushes the roast a little darker, the body increases, as the acidity and vegetal spice dissipated. Made for a very lovely daily drinker in the medium roast range; sweet, smooth & complex. Pushing the beans darker, the citric and floral acidity drops nicely to a crisp hint or none at all, the malty tones can turn quite robust as you approach or touch 2nd crack. A lovely & fresh coffee, our first new crop Peru. Best from medium to dark roasts, a good daily drinker. Medium to low acidity, with a thicker body and mouthfeel. A wonderful more chocolaty cup than shows some nuttiness. Lighter roasting will show just a pinch of citric, which provides nice depth of flavor but be a little careful ligher, too light will show some grassy/herbal tones. Medium roasts and beyond produce a smooth and rich cup, more chocolaty than nutty, pulls a peanut brittle like tone (some may say hint of caramel), not quite candy like, more peanut than brittle but we all thought it to be a good descriptor. Dark roasts turns the cup pretty chocolaty, retains the sweet edge and a couple even noticed a little floral hint to it.

Medium acidity with a citrus profile (more toward lemon) provides brightness without being overpowering. The cocoa base has a nutty undertone (nut/peanut butter) and a fruitier (citric) profile; in light roasts, blueberry notes may emerge along with a slight floral tone. Medium roasts achieve the best balance: soft citrus notes, spiced chocolate, and good structure; in dark roasts, the “baker’s chocolate” cocoa predominates, with a heavier aftertaste and very low acidity.

Medium roasts are where we thought it shined, just a small hint of citric sweetness upfront with a good balance of spicy chocolate notes, unique spice, more like the Indian coffees. Darker roasts get more like the Dominican with strong bakers chocolate and smoky tones, a hefty cup with very low acidity.
