A very fresh and tasty Brazil! Lighter roasts show lemon, floral & soft fruit contrasted by a nuttier (almond like) undertone, a sweet edged cup. The two combine for a hints of caramel, quite tasty for you light roast fans. Medium roasts are richer, more of a developed chocolaty tone and decently less nutty; mutes up the soury floral edge, retains a little hint of soft fruit as the cup cools. Fairly neutral tasting and very chuggable. A top notch coffee; crisp, clean and sweet. Tasty light to dark but we thought a nice medium roast presents it best.
Lighter roasts accentuate the crisp lemony acidity with a stronger red fruit tone. Pulls a little balance with some classic Colombian walnut/chocolate, but its pretty faint. Lighter roasts produce a pretty front loaded cup (full of lighter fruity/floral tones), but is where the honey processing notes will really shine.
Most will likely want to start with a medium roast; gives a more traditional cup with less citric and fruit tones, bringing the more nutty/chocolate tones to the foreground and moving the exotic fruity/floral to hints in the aftertaste. A good roast if you generally do not like lighter roast points.
Dark roasts work, gets a little exotic fruit tone still in the cup, especially as it cools, but a shame to an extent, much cheaper Colombians will taste just as good if not better at the into second crack roast points.

A crisp, clean and semi-exotic Colombian! Great at light to medium roasts but works light to dark. Light roasts themselves are fuller bodied and pull good balance between a sweet citric/floral upfront and a semi-sweet rustic chocolate undertone, hints of nuttiness in the aftertaste. Great mouthfeel at the lighter roasts and clean tastes. Medium roasts turn the cup more chocolaty and robust. A hint of buzzy acidity in the medium roast range but hardly citric, great depth to the darker toned cup. Would consider it a smooth and rich cup until one hits the darker roast points. Dark roasts are smoky and roasty but very chocolaty and semi-sweet.

We thought it best within the light to medium roast levels. Jazzy citric acidity, a little floral some would say, a hint of soft fruit providing a sweet edge along with some wonderful darker toned balance, on the walnut/almond side. Light roasts themselves will be a bit citric, the cup is very clean and handles the roast level well, but needs a longer setup and a tongue that doesn’t mind a bit of acidity. Medium roasts are great daily drinkers and promote a little hint of caramel in the nuttier cup profile, retains just a pinch of citric acidity upfront but it really helps with the depth of flavors. Good body with a smooth mouthfeel. Dark roasts were equally as tasty but it loses the cool crisp citric, and soft fruit, that shows at lighter roasts. Full bodied with stronger nutty and chocolate like tones, a bit of roastiness but it compliments the cup nicely.

The aroma is floral and sweet like honey. A nice medium bodied, smooth & creamy cup of coffee with little stronger floral aspect, medium to low acidity. It does get a good lemongrass tone at lighter roasts with a soft fruit tone as the cup cools, crisper cup with a slight nutty tone. Turns much more chocolaty into the medium or dark roasts. The cup finishes with a pleasantly surprising spiciness. A very nice medium to dark roast decaf. Medium roasts are a much smoother cup, a little sweet edge, nutty, with a touch of chocolate. Has a little floral overtone that makes it a bit interesting. Fuller bodied with a richer chocolate tone closer to 2nd crack. Some smokiness at second crack or into but retains its smooth and rich character. Decaf Mexican is always one of my favorite beans to get a nice and strong chocolaty note in the decafs. Lower acidity and fuller bodied, pretty hefty in its semi sweet bakers chocolate tone at fuller roasts.

A very cool, very exotic cup of coffee. One can tell this is a slow dry natural processed coffee with its strong ripe red fruit tones upfront. Lighter roasting presents a ton of floral and fruit with an almost oak/peat boozy finish, very sweet with just a ton going on but does risk some underdeveloped tones with its two-toned roasting. Medium roasts were our favorite, still plenty wild but develop enough of the chocolate and smoky tones – which most Dominican coffees are known for – to balance all those more exotic fruity and citric tones. Darker roasts will burn out most of what distinguishes this cup, the washed processed handles those roast level much better; interesting and still exotic but strong and edgy, it will retain some fruity factor with very strong and less sweet, smoky, tobacco and bakers chocolate type notes.

Great for light to medium roasting. Light roasts are sweet, clean and exotic. Stronger fruit, citric and slightly floral tastes balance with chocolate/nutty/earthy darker tones. A bit higher acidity with good body and mouthfeel. The fruitiness comes off almost grape like when comingling with a little acidity. Medium roasts cut out the crisper edge, and increase the body of the cup, smooth and easy drinking with nutty and darker chocolate like tastes, fruity highlights, a bit of “barrel aged” spice note popping out in the aftertaste and as the cup cools.

A clean and mild mannered natural. A sweet cup that will pick up hints of fruitiness at the light-medium roast levels. Not crazy over fermented like many naturals these days, the fruitiness pulls nice balance with classic Central American nutty and chocolate like tones. Reminded us of the El Sal Cerro Las Ranas Honey, just one notch fruitier. Light roasts accentuate the fruitiness of the cup and will lean the balance towards a nuttier cup profile. Not too acidic or citric at lighter roasts, presents a nice balance between light and dark tones, will not develop the richer chocolate tones present at fuller roast levels. Medium roasts are where the more chocolaty aspect comes in, semi-sweet cocoa with a slightly fruity overtone, smooth cup with a milky mouthfeel. Medium bodied with low acidity. Darker roasts greatly accentuate the chocolate note but comes off a little bittersweet. An excellent roast level for espresso, or if you enjoy a splash of milk/cream. Hard to detect fruitiness at darker roasts but does pick up a some oaky complexity that will let one know it’s a slower dry natural processed.

Crisp, clean and sweet; this super fresh Ethiopian cup is a bit punchier. A bit of raised acidity and stronger tastes. Light to medium roasting recommended but a tasty cup from light to dark. Lighter roasts will have some decent brightness, lemony with just a pinch of peachy like fruitiness. The aromatics are wonderful, floral with some awesome hints of classic Ethiopian jasmine. The lighter tones pull some balance with the classic tea (herbal/spice) like darker tones. Medium roasts really mellow out the acidity and reduce the citric & floral tastes, creates a bit more body and a much more recognizable chocolaty factor. A very smooth, balanced and rich cup with exotic highlights. Darker roasts are fuller bodied and dark toned: roasty, bakers chocolate with some unique spice and rich aromatics.

This Ethiopian cup is a super clean; an awesome and unique example of a high end Ethiopian. Best served at the light to medium roast levels; jasmine aromatics with wild more lemon/floral acidity, balancing with a rustic chocolate and tea like spiced undertone. There is a little hint of fruit in the cup but its pretty faint, gives the cup great sweetness and depth of flavor. Reminiscent of a Yemen or Harrar coffee. Lighter roasts will have some citric acidity and stronger floral tones balanced with a faint tea like chocolaty undertone, a little fruit note pops out as the cup cools. Medium roasts really mellow out the acidity and promote the chocolaty cup profile, adds a little jazzy spice note in the aftertaste. A very smooth, balanced cup with exotic highlights. Fantastic example of an Ethiopian Natural. Keep this one light to medium roasted. Too dark and the awesome crisp and clean fruit/floral notes disappear. A mellow cup on the sweeter side with nice darker fruit tones popping right out. The cool natural tones balance with a tea like spice note, a sign of its roots, Yirgs are known for their more tea like dark tones. Many would call it a chocolaty undertone with a jazzy spice note but we like the tea reference and most will agree. A bit more delicate of a cup with a little lower acidity. Depending on what you like this can be a real perk, fruity and sweet without risking high acidity or overly sour tones at the lighter roast points. A little easy to roast out the fruitiness, so don’t let it get too dark!

A lovely coffee from light to dark with a medium roast being our favorite, a staple offering on our list, great stuff every year. This year the cup is a little less acidic and fuller bodied, small hints of fruit at lighter roasts but more about the chocolate and spice notes. Light roasts are clean with a little citric upfront, a small hint of a sweet berry note comingling with an almond like nuttiness and a bit of tea like spice in the aftertaste. Medium roasts brought a fuller body and more chocolate like tones, lower acidity, uncovered a bit of floral upfront, lingering spice in the aftertaste. Darker roasts complimented the cup, a little more rough and tumble but a strong chocolate and spice profile many will love, good for cold brew or espresso.

The Guatemalan soil and natural processing add a bit of maltiness and fruit flavors on top, but you can definitely tell this is a robusta coffee. This would make a good high caffeine blender/espresso component. Similar tasting to many European style coffees. Although Robusta is more rare in the USA, it is still commonly used and drank overseas. A great super fresh and clean micro lot from our friends at Finca De Dios. Awesome prep, one can tell a lot of care went into these beans. A great medium to as dark as you want to go bean type. Hints of floral mixing with smooth nutty & malty features. Will show some winy citric and fruit acidity in the light to medium roast spectrum but all in all a medium to low acidity brew with a medium body.
Smooth, clean and sweet edged, a cup we are more than willing to drink all day. Guatemalans almost always hold dark roasts nicely for adding a little sweet malty note to the smoky and roasty tones is a tasty mix.

A beautiful cup from light to dark roasts. A very sweet cup with fruity highlights, good body and medium acidity. Being a high rated bean, it is very clean at lighter roasts, which we thought presented it best, but found darker roast points with its mix of stronger malty dark tones with a pinch of fruit in the aftertaste, quite tasty as well. Light roasts are delicate, sweet and clean. Will have a little citric crispness upfront, a bit of fruitiness and some lovely malty contrast. A fruit note for sure, but not overly fermented like many, a bean for every coffee fan.

A lovely coffee. Low acidity, medium body with rich and robust darker tones ringing throughout the cup. Medium to dark roasts are where these beans shine. Lighter roasting without much acidity will leave the cup a bit nutty and lacking but clean. Starting at about a medium roast the cup builds a wonderful chocolate note with some smoky and malty overtones. A bit on the sweeter smoother side, a tasty treat. Darker roasts, close to touching 2nd crack and where the much more robust tones pop out of the cup, reminiscent of a nice Haitian cigar.

A very clean, well balanced cup; crisp floral acidity and soft fruit tones comingle with a more tea like chocolaty finish. Can be roasted from light to medium but to see the strain shine, keep it pretty light. At lighter roasts, the acidity is a bit lemony upfront but will quickly fade into a rocking jasmine floral tone, one can smell it after grinding as well, these beans have wonderful aromatics. From a medium roast on, the acidity is very gentle and balanced with a smooth more tea like chocolaty note, just a hint of sweet floral as the cup cools. Medium acidity levels, light to medium bodied, very sweet and floral, a very cool offering for Kona fans.

Lighter roasts: the acidity is a bit citrus upfront but will quickly fade into a slight island fruit tone, balances with a little herbal/chocolate contrast. From a medium roast on, the acidity is very gentle and balanced with a smooth to rough chocolaty cup profile, milk chocolate before 2nd crack, bakers chocolate and smoky into 2nd crack. Medium bodied and lower acidity, these beans as well as other Kona’s are mild cups comparatively to many other origins, be in for a delicate and tasty cup with layers of goodness.

Tasty from medium to dark. We preferred it a bit on the darker side. Lighter roasting is wild and decently fruit forward, sweet with a little acidity upfront; winy and brandy like with some lingering dry nutty/earthy tones, a bit of floral in the aftertaste, good but not chocolaty enough for us. Medium roasts mellow the cup a bit, turning it more chocolaty, fuller bodied and refining the fruitiness, making it a cup everyone will love, not just natural processed fans. Reminiscent of a nice Yemen Mokka but a bit more brandy like. Smooth and easy drinking. Dark roasts worked exceptionally well. Chocolaty but not overly roasty, sweet with just a pinch of fruit in the aftertaste. Crisp, clean and fresh, a great coffee from light to dark. A less acidic Kenya with great balance, mouthfeel and depth of flavors. At light roasts it will still have some brighter citrus qualities but will not pucker ones mouth. Kenyan coffees in general can be pretty strong. It has hints of chocolate, fruit & herbal spice along with the citrus and floral. Medium roasts bring the best balance to the cup accentuating the chocolaty tones and reducing the brighter notes just a hint. Darker roasts make that classic Kenya herbal tone pop right out and is more down the potent bakers chocolate alley. Very clean with increasing body as the roast gets darker. A great balance between citrus, floral, herbal and chocolate. Always one of our favorite Mexican coffees. Good from light to dark but our favorite was a medium roast. Medium to full bodied, medium to low acidity. Lighter roasting will promote a sweet citric edge balancing with a bit nutty/woody undertones. Has a hint of caramel after a couple days setup but risks keeping a little woody tone if too light. Medium roasts are pretty bullet proof, full bodied with rich chocolaty notes, a little nuttiness and vanilla like spice in the aftertaste. A clean cup with just a hint of citric crispness upfront. Darker roasts pick up a bit of roastiness but it compliments the very chocolaty profile, thick with no real hints of brightness. A cool cup of Mexican coffee with unique (to Mexico) processing: nor your average Mexican tastes. We liked it best medium to dark roasted: nice and sweet cup upfront with wonderful aromatics, fuller bodied and less acidic. Small hints of a fruitiness especially at lighter roasts. Bakers chocolate, malt, smoke and a bit of nuttiness comprise the darker tones. Very dependent on roast level, lighter roasts will be filled with more fruity and citric notes balancing with a nuttier, dryer, chocolaty undertone. A sweet and fruity cup; best at a light to medium roast. Light roasts are lemony and floral upfront which fade to stronger red fruit and balances with a hint of rustic chocolaty darker tones. Medium roasts clean up the more rustic chocolaty tones which many will like but also reduce the sweetness and fruity factor of the cup, becomes a little fuller bodied with low acidity with good mouthfeel, fruity factor pops out more as the cup cools. Darker roasts get a bit edgy with semi-sweet smoky and roasty notes, finishes with almost a bit of an oaky barrel aged tone.

A nice and clean cup of Peru coffee! Lovely daily drinker. Lighter roasts show hints of lemony acidity and floral notes, on the sweeter side. Pulls some balance with nutty & chocolate tones but fairly faint at the lighter roast points. Medium roasts mute up most of the acidity and floral tones, bringing out much more of a chocolaty cup profile with a little nuttiness in the aftertaste, still a nice sweet edge to it. Very smooth cup with a medium to full body. A fresh arrival great from a medium to dark roast. A good daily drinker. Medium to low acidity, the cup does have some jazzy more floral tones at the lighter roast points, but too light & it will be on the nutty/grassy side of things. Takes a little fuller roast to see the chocolaty side blossom. Medium roasts and beyond produce a smooth and rich cup, more chocolaty than nutty, pulls a dryer peanut brittle like tone (some may say hint of caramel), more peanut than brittle but we all thought it to be a good descriptor. Dark roasts turns the cup pretty chocolaty, retains the sweet edge and a couple tasters even noticed a little floral hint to it.

A cool cup from medium to dark. There are some sweet island floral tones upfront at the lighter roasts, a sweet edge with unique spice; somewhere between a woody cinnamon to more peppery/clove. Wonderful aromatics accompany lighter roasts but could be a little too grassy/sharp for some. Medium roasts are more chocolaty, balancing with the spice nicely, less woody, more bold semi-sweet clove like spice. Darker roasts get smooth and creamy retaining those exotic spice notes to compliment the roasty and smoky darker chocolate cup.

A good cup from light to dark, in the medium roast range was our favorite. Light roasts are clean and bright, medium to full bodied, it will have a pretty strong citric tone upfront that balances nicely a little hint of fruit and spice, on the nuttier side with a little herbal note in the aftertaste. Medium roasts similar to most of the Thailand coffees brings out a nice and more potent chocolate note, reducing the citric and accentuating the classic Asian spice. Still noticeable acidity at the medium roasts but its more buzzy than citric, not an overly sour cup but will leave your tongue a bit dry: provides some great depth of flavor. Not a fruity cup, but one might see some hints as the cup cools. Darker roasts get real hefty with a lower perceived acidity, herbal, chocolate, smoky and roasty. Good body and mouthfeel.

Darker roasts get more like the Dominican with strong bakers chocolate and smoky tones, a hefty cup with very low acidity.

A wonderful very clean example of natural processing, best served in the light to medium roast levels. Medium acidity levels, comes off a bit on the lemon side, medium bodied with a pretty strong red fruit tone upfront, definitely on the sweeter side. Super light, cup picks up a bit of nutty and herbal contrast but this will develop into more spice and chocolate tones just a little after first crack. Thicker and stronger than an Ethiopian Natural, with more of an emphasis on the fruitiness and spice notes. Darker roasts accentuate the spice, pretty similar to the other Asain coffees, would put in on the rustic chocolate side with sweet and fruity overlays and a full body.
