A lovely coffee from light to dark. Your personal tastes will dictate what level to roast these beans to, if in doubt, a nice medium roast provides the best balance and depth of flavors. Light roasts will have a lemony citric crispness balancing with a sweet edged nutty/caramel/chocolate/spice like undertone. Takes a longer setup for lighter roasts to shine but for those who like sweetness and brighter notes in coffee will enjoy the lighter roast levels. Medium roasts build the darker tones and mute a bunch of the citric, a chocolaty cup with a burnt sugar kick, just a pinch of crisp citric that will disappear as the coffee sets up. Hints of nuttiness and spice pop out more one can see a little hint of caramel. Darker roasts turn the cup more into a semi-sweet chocolate bomb with a little spice in the aftertaste, much flatter but very tasty with a splash of milk or for espresso/cold-brew.

A nice clean cup tasty from light to dark roasts. Fuller bodied cup jazzed up with some pleasant acidity, balanced with the classic Colombian toasted walnut and baker’s chocolate like darker tones. What separates it from average is a bit of clean acidity upfront which gives great depth of flavors; producing a sweeter, floral and slightly fruity contrast to the classic Colombian profile. Light to medium roasts are clean, sweet, floral, nutty, slightly citric and have a chance at a caramel like note developing after a longer setup. Medium to dark roasts are far less acidic, more semi-sweet thicker walnut like tones with a little spice in the aftertaste.

A complex cup focused on lemon, floral and sweet tones that will pull some balance with a tea like spice note. Lighter roasts accentuate the more lemony floral acidic tones of the cup but also bring out cool soft fruit notes and the lovely jasmine spice; a nutty and dry black tea spice will linger on the tongue. Can risk a little grassy note if not quite through first crack, good to get a little development past first crack for the lighter roasts. A medium roast reduces the acidity and balances the cup with a more traditional Colombian chocolaty factor, still plenty of identifiable as exotic but not as punchy as the lighter roasts. A very nice light to dark roast decaf. Lighter roasts are sweeter and more delicate, a little unique spice with a bit of nuttiness and just a pinch of floral. Medium roasts are a smoother cup, a little sweet edge, nutty, with a touch of chocolate. Has a little floral overtone that makes it a bit interesting. Fuller bodied with a richer chocolate tone closer to 2nd crack. Some smokiness at second crack or into but retains its smooth and rich character. Decaf Mexican is always one of my favorite beans to get a nice and strong chocolaty note in the decafs. Crisp, clean and exotic. Great aromatics: nothing like grinding a fresh Ethiopian with its floral, jasmine and spice notes to tickle your nose. Lighter roasts are filled with new crop acidity and floral notes, mostly citric but a little peachy soft fruit tone can be found. The balance of the cup comes from a semi-tea-like chocolate factor. I tend to think of it as chocolate spice notes but many tongues can pick up a little black tea note. Medium roasts have just a pinch of citric acidic, builds a thicker body and brings forth more of the chocolaty cup profile, reducing the acidity slightly. Darker roasts are always tasty for those who like fuller roasts. This is how they would traditionally serve these beans in Ethiopia. Smooth, rich, delicate and clean, a wonderful example of a top notch Guatemalan. The aroma has great sweet notes. Hazel and hickory nuts, caramel, and milk chocolate. The body is light/medium and has a very silky texture on the malty side. The aroma comes through in the taste to create a wonderful balance of tones. Medium to low acidity, the brightness reduces the darker you roast. The finish is very smooth and clean with a lingering sweetness.

A great super fresh example of Antigua coffee, follows those wonderful floral versus chocolaty notes that made the region so famous. Medium roasts are recommended but good from light to dark. Lighter roasts will accentuate the lemony floral tones of the cup, the chocolaty factor will be just a hint but noticeable and smooth, a bit of nuttiness will linger in the aftertaste not present in further roast levels. Medium roasts are very clean and balanced – not too acidic, not too bitter – sweet edged and will have wonderful mix of tones. Blooms into a more traditional Guat. chocolaty cup as you push into the medium to dark roast levels. The darker you go the less winy and acidic the cup will taste. Around a medium roast, the perceived acidity drops and creates a rich, fuller bodied, chocolaty cup with a smooth and sweet edge. A hint of floral mixing it to keep it crisp. A lovely coffee. Low acidity, medium body with rich and robust darker tones ringing throughout the cup. Medium to dark roasts are where these beans shine. Lighter roasting without much acidity will leave the cup a bit nutty and lacking but clean. Starting at about a medium roast the cup builds a wonderful chocolate note with some smoky and malty overtones. A bit on the sweeter smoother side, a tasty treat. Darker roasts, close to touching 2nd crack and where the much more robust tones pop out of the cup, reminiscent of a nice Haitian cigar.

A great medium to dark roast coffee. Full bodied, low acidity, great mouthfeel, robust and strong coffee with hints of a exotic spice. Lighter roasts get a cool semi-floral sweet tone upfront but will pull more towards grassy caramel with a slight hint of herbal spice. As one progresses towards the darker roasts it gets much fuller bodied and creamy with clean chocolate/malt like tastes, a little hint of floral acidity at the full city roast level. Into 2nd crack adds some complimenting roasty/smoky tones that with the fuller body and malty profile, will be quite the tasty treat.

As the roast progresses the cup gets pretty low acidity and the nutty and chocolaty factor will get accentuated. A wonderful tasting Kona grown from a unique to Kona strain: Red Bourbon. Much sweeter and slightly more floral than the traditional Typica strain, gentle winy acidity upfront balancing with soft and smooth nutty and chocolate like tones. A hint of caramel if you get lucky on the roast. A little higher acidity than the Hala Tree Extra Fancy Typica, but would still be considered a medium to low acidity coffee. The cup is best at the light-medium roast levels: clean, sweet and balanced. A very clean well balanced cup good from light to dark roasts. Crisp acidity with a small hint of soft fruit, comingle with a more chocolaty cup profile with floral accents. Can be roasted from light to dark but our favorite was a nice medium roast. Lighter roasts: the acidity & floral tones are accentuated and will be the first tastes your tongue will notice, a pinch of an island fruit tone but pretty faint, balances with a little green-tea, chocolate & spice dark tone. From a medium roast on, the acidity is very gentle and balanced with a smooth to rough chocolaty cup profile, milk chocolate before 2nd crack, bakers chocolate and smoky into 2nd crack. Medium bodied and lower acidity, these beans as well as other Kona’s are mild cups comparatively to many other origins, be in for a delicate and tasty cup with layers of goodness.

Besides a chocolaty factor one will get some nutty/caramel/floral like tones at the medium roast points, gives it some nice complimenting depth without being too exotic. We all thought it was at its best right around a full city – smooth without too much of a roasty note and great chocolaty tones.

A great daily drinker from a medium to dark roast. A very chocolaty cup of coffee, fuller bodied with low acidity, with some nutty & herbal accents. Light to medium roasts are crisp & sweet: Hints of citric balance with a nutty & woody undertone, a pinch of herbal spice in the aftertaste. With a longer setup time, assuming not too lightly roasted, that woody edge tends to produce a bit of a caramel twist which is quite tasty. Although good at semi-lighter roasts, we really enjoyed the medium to dark roasts better, fuller bodied and creamy. Semi-sweet chocolate and nutty tones dominate the cup with just a pinch of an herbal note in the aftertaste, a little complimenting roasty/smoky note into second crack. Great daily drinker from medium to dark roasts. Good body and lower acidity, nice and strong semi-sweet malty tones with a hint of spice in the aftertaste. At the light to medium roasts it will show just a pinch of crispness and a hint of earth, not super citric but will leave a dryness to the tongue, a bit floral in its aromatics but not in the cup. Just before to touching 2nd crack gets rid of almost all signs of any acidity and adds some complimenting smokiness to the cup profile. A very smooth cup from a medium roast to just before 2nd crack. Into 2nd crack will get some edgy strength that dark roast fans will like.

Similar to the Sigri coffee but with just a pinch of brightness and no fruitiness, very clean in its profile. Smooth, rich and chocolaty with some spice note accents. Most would call it a pretty sweet chocolaty cup with a bit of spice. Very smooth cupping this year with minimal herbal tones or earthiness. Medium bodied with a sweeter edge, a cup almost anyone would enjoy. Kind of like a Sumatra coffee without all the earthy funk. Best served in the medium to dark roast levels but some will find joy at lighter roast points with a longer setup.

The boldest tasting of the three peaberries, still silky smooth and clean tasting, fuller bodied with a creamy mouthfeel but with a bit of sweet spice in the cup. Lower acidity chocolaty cup profile with a sweet edge. We liked it best from a medium to dark roast, but with a little longer setup, light roast fans can find joy with these beans. Definitely a chocolaty cup profile with some stronger nutty and herbal/spice accents. If you roast before 2nd crack, which is preferred, one can balance in a hint of soft fruit acidity (similar to the Sigri) into the mix which is a big plus to the depth of flavor. Cup starts sweet at lighter roasts but will turn semi-sweet as you pushing into medium or dark roasts.

Good from light to dark. In general, the more neutral offering out of the three, smooth, big bodied & creamy with semi-sweet chocolate notes, nutty accents and a bit of lingering spice in the aftertaste. Lighter roasting will show hints of acidity, a sweeter almond/nougat/brown-sugar comingling with more herbal spice notes. Medium roasting gets the fuller body and more chocolate/malt with hints of spice. Darker roasting gets hefty bakers chocolate note with complimenting roasty-ness. Lower acidity cup overall but will show some crisp citric notes at lighter roasts, some floral characteristics as well. A little roasty/smoky tone into second crack but it will compliment the more chocolaty and nutty profile. A nice medium roast for drip brew, darker for espresso and cold brew. Lighter roasting will appeal to some for the sweet vs bold tones similar to African coffees.

Good from light to dark. In general, the strongest offering out of the three, smooth, big bodied & creamy with semi-sweet chocolate notes, nutty accents and a bit of lingering spice in the aftertaste. Lighter roasting will show some stronger citric acidity comingling with stronger herbal notes, a hint of chocolate, good depth of flavors but will be a bit sharp and herbal for most. Medium roasting gets the fuller body and more chocolaty toned cup with a hint of spice, unlike the other two, this will still have a little hint of citric, leaving it a bit sweeter tasting. Darker roasting gets hefty bakers chocolate note with complimenting roasty notes, no signs of the brighter cup profile at lighter roasts. Although its the brighter of the PNG coffees, it has medium to low acidity comparatively to other origins.

This cup is nice and clean, a little fuller bodied and smooth with a sweeter edge. A great year for Peru coffees; the cup starts just a little citric, fairly low acidity only detectable at the lighter roast points, a little hint of soft fruit but mainly a pretty chocolaty cup profile with some nutty accents. Lighter roasts one can find a hint of caramel if you get lucky, and leans on the nuttier side, little citric will poke out. A nice medium roast will make anyone happy and provide good balance and smooth chocolate tones, low acidity – a good daily drinker. Darker roasts work good but burn out a bit of the sweetness, the chocolaty factor sure compliments the toastier smoky tones of the dark roasts.

Stand up beans good from light to dark, but we thought best at the fuller roast levels. Medium to full bodied, lower acidity, clean and chocolaty with some nice fruity overtones. Lighter roasts will have a little citric/floral tone with a sweet and herbal edge, a hint of soft fruit. Medium roasts get much more chocolaty and less herbal providing a balanced cup, works nicely for all taste buds; smooth and rich. A nice and clean taste, good from light to dark. Mostly these beans will appeal to medium-dark roast fans but being an exceptionally clean cup, it has some lovely balance and is quite tasty at lighter roasts. Similar to its Indonesian cousins (except washed processed), it gets real hefty into the dark roasts promoting smoky and chocolaty tones with stronger spice notes. Lighter roasting it is more delicate and floral, slightly fruity with some detectable lemony crispness, sweet edged, medium bodied with hints of a chocolaty factor.

A wonderful season for the Zambia washed. Good clean cup profile making it pretty tasty from light to dark roasts. We found the lighter side of a medium roast to be our favorite. Fuller bodied cup with a sweet lemony crispness balanced with a chocolaty dark tone, hints of nuttiness and spice in the aftertaste. Similar to a Rwanda/Burundi/Kenya but with a bit more body and less herbal spice. Lighter roasts accentuate the brighter more floral/fruity tones, a bit more showy of a cup with its brighter characteristics but not as chuggable, can pull a little herbal balance. If you cannot tolerate a bit of citric crispness, darker roasts are the way to go, mutes up most of the brighter cup features presenting a real big bodied, smoky, complex and very dark toned cup of coffee.Price: $8.79/lb - 7.59/lbPrice: $8.79
