A very fresh and tasty Brazil! Lighter roasts show lemon, floral & soft fruit contrasted by a nuttier (almond like) undertone, a sweet edged cup. The two combine for a hints of caramel, quite tasty for you light roast fans. Medium roasts are richer, more of a developed chocolaty tone and decently less nutty; mutes up the soury floral edge, retains a little hint of soft fruit as the cup cools. Fairly neutral tasting and very chuggable. Brazil Premium FAF Bob-O-Link – Espírito Santo – Washed Processed
Great cup from light to dark roasts. We liked it best on the lighter side of a medium roast, good shot at a hint of caramel (sweet and nutty) in the cup. Hints of citric acidity comingle with a nutty/caramel like tone with a sweet edge, reminiscent of a nice Honduran coffee. Clean cup, a bit brighter with a pinch of soft fruit at the lighter roasts, the contrasting nuttiness can come off a bit dry but smooths out with a longer setup. Much more chocolaty at the darker roasts with a noticeable increase in the body of the cup, still very sweet with a bit of roasty nuttiness in the aftertaste.

Burundi Premium Ngozi – Gihere Natural
A very fun & tasty African natural. To see it shine, keep it in the light to medium roast range, although it’s a tasty cup from light to dark. Light roasts themselves have a stronger lemony floral tone right upfront. For an African it would not be considered high acidity but will be clearly noticeable in the taste. Behind the brighter floral notes lies a nice semi-sweet stone-fruit tone, similar to cascara or to some, strawberry’ish. The fruit and floral will quickly fade into a more robust chocolate note with some traditional spice notes kicking in mostly in the aftertaste. Medium roasts will mute the floral/fruity tones to just a hint over-top of the more robust chocolate & spice darker tones. Still exotic due to the processing but promotes more traditional Burundi like tones the darker you roast. Dark roasts themselves retain a much sweeter edge than the washed processed Burundi and one can see just a touch of fruitiness as the cup cools.

A nice clean cup tasty from light to dark roasts. Fuller bodied cup jazzed up with some pleasant acidity, balanced with the classic Colombian toasted walnut and baker’s chocolate like darker tones. What separates it from average is a bit of clean acidity upfront which gives great depth of flavors; producing a sweeter, floral and slightly fruity contrast to the classic Colombian profile. Light to medium roasts are clean, sweet, floral, nutty, slightly citric and have a chance at a caramel like note developing after a longer setup. Medium to dark roasts are far less acidic, more semi-sweet thicker walnut like tones with a little spice in the aftertaste.

A complex cup focused on lemon, floral and sweet tones that will pull some balance with a tea like spice note. Lighter roasts accentuate the more lemony floral acidic tones of the cup but also bring out cool soft fruit notes and the lovely jasmine spice; a nutty and dry black tea spice will linger on the tongue. Can risk a little grassy note if not quite through first crack, good to get a little development past first crack for the lighter roasts. A medium roast reduces the acidity and balances the cup with a more traditional Colombian chocolaty factor, still plenty of identifiable as exotic but not as punchy as the lighter roasts. A great clean decaf coffee! Good from light to dark. Lighter roasting will show a little lemony crispness, rare for a decaf. Sweeter edged with a little herbal chocolate contrast. Medium roasts cut out most of the lemony crispness and rid the cup of its herbal edge. Smooth and rich, medium bodied, with a more pronounced chocolate tone; a bit floral and sweet in the aromatics, adds to the drinking experience but doesn’t come through in the tastes. Darker roasts are robust and strong, semi-sweet and very chocolaty with a roasty edge.

A very nice light to dark roast decaf. Lighter roasts are sweeter and more delicate, a little unique spice with a bit of nuttiness and just a pinch of floral. Medium roasts are a smoother cup, a little sweet edge, nutty, with a touch of chocolate. Has a little floral overtone that makes it a bit interesting. Fuller bodied with a richer chocolate tone closer to 2nd crack. Some smokiness at second crack or into but retains its smooth and rich character. Decaf Mexican is always one of my favorite beans to get a nice and strong chocolaty note in the decafs. Best from the lighter side of a medium roast to as dark as you want to go. A bit cleaner tasting but slightly less fruity than previous seasons. Lighter roasting presents some nice honey processed features: citric, floral, soft fruit with an almost oak/peat like finish, sweet & complex but does risk some underdeveloped tones if you nail it a little too light. Medium roasts were our favorite, still balanced and complex but will develop the traditional chocolate and smoky tones for which Dominican coffees are known for – to balance out those more exotic fruity and citric tones. Unlike its Grade 1 cousins, this cup is much darker toned. Shines at a medium to dark roast and is full of complex chocolaty and tea like spice notes. Being natural processed, it does have some soft red fruit tones but they are mostly covered up by the tea like spice and more rustic chocolaty factor. One will be able to detect them in the aftertaste, otherwise they tend to pop out as the cup cools. Light to medium roasts can come off a bit earthy, the tea like spice is well defined but the chocolaty factor comes off pretty grassy at traditional light roasts. One really has to build up the chocolaty factor by progressing the roast closer to 2nd crack. Great for cold brew or blending at a nice medium roast, for a single origin drinker, we recommend fuller roasts.

Crisp, clean and exotic. Great aromatics: nothing like grinding a fresh Ethiopian with its floral, jasmine and spice notes to tickle your nose. Lighter roasts are filled with new crop acidity and floral notes, mostly citric but a little peachy soft fruit tone can be found. The balance of the cup comes from a semi-tea-like chocolate factor. I tend to think of it as chocolate spice notes but many tongues can pick up a little black tea note. Medium roasts have just a pinch of citric acidic, builds a thicker body and brings forth more of the chocolaty cup profile, reducing the acidity slightly. Darker roasts are always tasty for those who like fuller roasts. This is how they would traditionally serve these beans in Ethiopia. The body is light/medium and has a very silky texture on the malty side. The aroma comes through in the taste to create a wonderful balance of tones. Medium to low acidity, the brightness reduces the darker you roast. The finish is very smooth and clean with a lingering sweetness.

A great super fresh example of Antigua coffee, follows those wonderful floral versus chocolaty notes that made the region so famous. Medium roasts are recommended but good from light to dark. Lighter roasts will accentuate the lemony floral tones of the cup, the chocolaty factor will be just a hint but noticeable and smooth, a bit of nuttiness will linger in the aftertaste not present in further roast levels. Medium roasts are very clean and balanced – not too acidic, not too bitter – sweet edged and will have wonderful mix of tones. A solid cup from light to dark, but for most drinking, a medium roast will be the way to go. Sweet with just a pinch of citric upfront, medium bodied, good mouthfeel, just a pinch of fruitiness and ends with a nice malty undertone. Lighter roast get a bit brighter and slightly more fruity but can risk a little grassy, medium roasts present great balance to the flavors and was very easy drinking, darker roasts retain a lot of sweetness and hefty malty tones, but will get pretty roasty/smoky. If drinking for drip/pour-over, medium roasts are where to go. A little higher acidity than average, balanced with some developing malt like tones. A bit acidic light roasted but easy to enjoy if you classically like lighter roasts. Blooms into a more traditional Guat. chocolaty cup as you push into the medium to dark roast levels. The darker you go the less winy and acidic the cup will taste. Around a medium roast, the perceived acidity drops and creates a rich, fuller bodied, chocolaty cup with a smooth and sweet edge. A hint of floral mixing it to keep it crisp. A lovely coffee. Low acidity, medium body with rich and robust darker tones ringing throughout the cup. Medium to dark roasts are where these beans shine. Lighter roasting without much acidity will leave the cup a bit nutty and lacking but clean. Starting at about a medium roast the cup builds a wonderful chocolate note with some smoky and malty overtones. A bit on the sweeter smoother side, a tasty treat. Darker roasts, close to touching 2nd crack and where the much more robust tones pop out of the cup, reminiscent of a nice Haitian cigar.

Lighter roasts get a cool semi-floral sweet tone upfront but will pull more towards grassy caramel with a slight hint of herbal spice. As one progresses towards the darker roasts it gets much fuller bodied and creamy with clean chocolate/malt like tastes, a little hint of floral acidity at the full city roast level. Into 2nd crack adds some complimenting roasty/smoky tones that with the fuller body and malty profile, will be quite the tasty treat.

A wonderful tasting Kona grown from a unique to Kona strain: Red Bourbon. A very clean well balanced cup good from light to dark roasts. Crisp acidity with a small hint of soft fruit, comingle with a more chocolaty cup profile with floral accents. Can be roasted from light to dark but our favorite was a nice medium roast. Lighter roasts: the acidity & floral tones are accentuated and will be the first tastes your tongue will notice, a pinch of an island fruit tone but pretty faint, balances with a little green-tea, chocolate & spice dark tone. From a medium roast on, the acidity is very gentle and balanced with a smooth to rough chocolaty cup profile, milk chocolate before 2nd crack, bakers chocolate and smoky into 2nd crack. Medium bodied and lower acidity, these beans as well as other Kona’s are mild cups comparatively to many other origins, be in for a delicate and tasty cup with layers of goodness.

One tasty Indonesian bean for you natural processed fans. A hint of citric brightness comingles with stronger fruit tones, balancing with some classic Indonesian chocolate and earth notes. Very sweet for a Indo but will be fruity enough where traditional wet-hulled fans may not like it. Unlike its wet-hulled cousins, fruity naturals shine at the light to medium roast levels. Crisp, clean, sweet, balanced and exotic. The darker one goes, the more traditional Indonesian tones in the cup but there will be no missing the natural processed fruitiness, comes off a bit boozy and oaky at the fuller roasts giving great depth for some but can turn a little bitter/sweet if you touch 2nd crack or go darker. Still tasty for an Indo fan but the lovely light-medium roasts are where most will think it best.

Low acidity, thick and creamy, with small hints of fruit balancing with a strong earthy chocolaty undertone. Quite the tasty treat and surprisingly for an Indonesian, the best roast we found on this one was in the strong medium roast range. Smooth, clean, balanced and exotic: mostly a chocolaty cup with a sweet edge, slight hints of fruit and earth. Lighter roasts show just a hint of citric crispness with a little herbal chocolate contrast, accentuates the fruitiness but it is not over the top, too light can come off a bit grassy, make sure the beans are through first crack to just past. The darker roasts were less sweet and smooth, more potent, rough and tumble, bakers chocolate with roasty accents, not fruity and more similar to a Sumatra.

With a longer setup time, assuming not too lightly roasted, that woody edge tends to produce a bit of a caramel twist which is quite tasty. Although good at semi-lighter roasts, we really enjoyed the medium to dark roasts better, fuller bodied and creamy. Semi-sweet chocolate and nutty tones dominate the cup with just a pinch of an herbal note in the aftertaste, a little complimenting roasty/smoky note into second crack. At the light to medium roasts it will show just a pinch of crispness and a hint of earth, not super citric but will leave a dryness to the tongue, a bit floral in its aromatics but not in the cup. Just before to touching 2nd crack gets rid of almost all signs of any acidity and adds some complimenting smokiness to the cup profile. A very smooth cup from a medium roast to just before 2nd crack. Into 2nd crack will get some edgy strength that dark roast fans will like.

Sigri Natural is a very different, crazy unique lot!
Good from light to dark, very different tasting dependent on roast level. If you are a very fruit forward natural fan, sticking in the light to medium roast level is recommended. Contrary to many naturals, these beans rock at the fuller roast levels as well, touching or into second crack produces a very lively cup, not super roasty with incredible depth of flavor and good balance between light and dark tones.
Light roast themselves, are pretty citric, sweet and floral with almost a red wine vinegar herbal like quality. Can tell this is a very slow dry natural. A longer setup rid the cup of more astringent features, takes almost 5-12 days of resting for these funky naturals to mellow. Medium roasts get much more chocolaty with fruity overlays, very tasty. No missing the fruitiness assuming you are pre-second crack. Medium bodied with just a pinch of citric/floral crispness. Although we liked all the roast points, darker roasts were our favorite with its crazy depth of flavors, strong semi-sweet chocolate tones balancing with a barrel aged red fruit.

In general, the more neutral offering out of the three, smooth, big bodied & creamy with semi-sweet chocolate notes, nutty accents and a bit of lingering spice in the aftertaste. Lighter roasting will show hints of acidity, a sweeter almond/nougat/brown-sugar comingling with more herbal spice notes. Medium roasting gets the fuller body and more chocolate/malt with hints of spice. Darker roasting gets hefty bakers chocolate note with complimenting roasty-ness. Lower acidity cup overall but will show some crisp citric notes at lighter roasts, some floral characteristics as well. A little roasty/smoky tone into second crack but it will compliment the more chocolaty and nutty profile. A nice medium roast for drip brew, darker for espresso and cold brew. Lighter roasting will appeal to some for the sweet vs bold tones similar to African coffees.

In general, the strongest offering out of the three, smooth, big bodied & creamy with semi-sweet chocolate notes, nutty accents and a bit of lingering spice in the aftertaste. Lighter roasting will show some stronger citric acidity comingling with stronger herbal notes, a hint of chocolate, good depth of flavors but will be a bit sharp and herbal for most. Medium roasting gets the fuller body and more chocolaty toned cup with a hint of spice, unlike the other two, this will still have a little hint of citric, leaving it a bit sweeter tasting. Darker roasting gets hefty bakers chocolate note with complimenting roasty notes, no signs of the brighter cup profile at lighter roasts. Although its the brighter of the PNG coffees, it has medium to low acidity comparatively to other origins.

This cup is nice and clean, a little fuller bodied and smooth with a sweeter edge. A great year for Peru coffees; the cup starts just a little citric, fairly low acidity only detectable at the lighter roast points, a little hint of soft fruit but mainly a pretty chocolaty cup profile with some nutty accents. Lighter roasts one can find a hint of caramel if you get lucky, and leans on the nuttier side, little citric will poke out. A nice medium roast will make anyone happy and provide good balance and smooth chocolate tones, low acidity – a good daily drinker. Darker roasts work good but burn out a bit of the sweetness, the chocolaty factor sure compliments the toastier smoky tones of the dark roasts.

A stellar new-wave coffee; highly rated and exotic. Full of citric, floral and fruit tones. We thought best served in the light to medium roast range. Higher acidity, fuller bodied with great depth to the flavors. Lighter roasts are a bit sizzling but also the most complex tasting; stronger citric/floral acidity comingle with a very sweet red fruit tone upfront, balancing with just a pinch of the classic Rwanda darker tones of herbal, spice and chocolate. Takes a little longer setup to bring out the small exotic hints in the tastes. Medium roasts build a much creamier cup profile, just a hint of crisp floral upfront that fades into a strawberry like fruitiness, balanced with strong dark semi-sweet dark chocolate like tone. Dark roasts themselves are still very lively cups but can come off a bit sour/bitter comparatively. They are fuller bodied accentuating the robust chocolate and spice notes but not a delicate cup like the light-medium roasts.

Stand up beans good from light to dark, but we thought best at the fuller roast levels. Medium to full bodied, lower acidity, clean and chocolaty with some nice fruity overtones. Lighter roasts will have a little citric/floral tone with a sweet and herbal edge, a hint of soft fruit. Medium roasts get much more chocolaty and less herbal providing a balanced cup, works nicely for all taste buds; smooth and rich.
