This Mokka has the best story and rating out of all the “super premium” Panamas we sourced this year. A Panama Mokka, a true Mokka strain coffee. The Best Of Panama competition did a decent writeup on the sister chop to these beans which ended up going for $142.50/lb! Boy are we glad we bought this lot well before the auction, what a gem.
From light to dark you are in for a tasty treat. This cup is filled with unique floral and fruit tones throughout the roast levels that balance with a wonderfully spicy chocolaty undertone. A very clean coffee, a bit higher acidity especially at the lighter roast points. Although this is one heck of a tasty treat for most, if you do not like fruitier, sweet and floral coffees, this might not be for you. We found medium to border line dark roasts to have a sugary sweetness comingling with layers of soft fruit and a dryer complex semi-smoky chocolaty spice, layers and layers of goodness. If it were not for the price, easily a cup we would drink everyday….

A clean, sweet and smooth cup of coffee one can drink all day long! Lighter roasts will show some acidity, bringing some lemony and floral tones to the front end of the cup and balance with a little sweeter edged nutty/malty undertone. A little fuller bodied at the light-medium roast level which made it very easy to drink. As one pushes it into the medium roast range, the acidity drop nicely to just a crisp hint, the nutty tones turn into hints of caramel and accentuate the malty cup profile, becoming the predominate tone. Dark roasts turn pretty strong but the nice sweeter malty cup profile mixes nicely with smoky and roasty notes.

Best at the lighter roast points, this cup is marked by a bit of sweet red fruit which can roast out of the beans if taken too dark. Light roasts are very clean and balanced with a good creamier mouthfeel and medium body, but overall we would call it a bit more delicate of a cup for the Pacamara lineup. Just a hint of a lemony citric note upfront fading into the sweet red fruit and pulling a little contrast with a rustic chocolate note, depending how light you go you can see a little nuttiness in the aftertaste. Medium to borderline dark roasts produce a very smooth and rich cup, mainly chocolate like but some interesting spice notes will pop out a bit, sweet but a little more plain tasting, hints of fruit as the cup cools but not that noticeable when hot. Darker roasts can get a little bitter edge and hide the fruitiness, but will pull a unique and complex slightly boozy quality in the aftertaste, a kind of “barrel aged” quality that we found appealing.Price: $16.99/lb - 15.79/lbPrice: $16.99 -

A very tasty Panamanian coffee assuming you are not expecting a fruit bomb of a cup (like many of the other Panama Naturals). Lighter roasting gets a little lemony floral upfront, fuller bodied, with complex dry malty spice tones already starting to pop out. Can come off a little herbal super light but will setup out of the taste after about 3-4 days. Got to be a little patient if you love the lighter roasts. Medium roasts were our favorite, a bit smoother, clean and well defined even right out of the roaster. Low acidity with more of a creamy mouthfeel. Great cup from medium to dark roasts. Unlike many of the other Panama offerings, this is a lower acidity cup, fuller bodied and on the malty/herbal side. We like it best at a strong medium roast; smooth, semi-sweet & rich with a complex dark tone. It will turn itself into a roasty and strong malty/baker-chocolate like cup once you hit 2nd crack. A very jazzy cup of coffee with a strong natural processed spin. Lighter roasting points (before 2nd crack) are where this cup will shine. Light roasts themselves will be fairly bright with pretty strong citrus floral and fruit tones, very tasty if you like such things. The fruitiness is wild, ranging from grape to more traditionally red fruit. The cup will be pretty front loaded at the light roast points but a little chocolaty factor can be found when the cup cools. Medium roasts bring much more balance to the cup with some darker tones but tone it down a bit, which is good for some, bad for others. Too close to 2nd crack and the acidity and fruit is almost removed from the cup, still tasty but a shame to lose those exotic winy/fruity and floral tones. A super snazzy coffee! This is best in the light to medium roast level. Punchy acidity with a complex grape skin fruity factor coming from the ASD processing. Full of sweet citric, fruit and floral tones that will catch a little balance with a spiced malty undertone. Hints of red fruit can be found especially as the cup cools. A light to medium roast, very jazzy fruit forward offering. Medium bodied with a bit of crisp citric acidity upfront, this is the smoothest of the fruit bomb coffees. The red fruit overlays a nutty and chocolaty undertone wonderfully. Sometimes with this much fruitiness the cup leans towards hints of a boozy character but not with the ASD processing, crisp clean and clear tones. Hints of sweet citric and soft fruit comingle with a very floral cup profile, pulls a little balance with a darker chocolate/malty/tea-like undertone. In our mind, Geisha coffee is all about the overly sweet cups and floral aromatics, these beans nail it. Hints of a tea like undertone can be found especially if you push the roast into the medium/dark category.

Lower acidity and fuller bodied, best from a strong medium to dark roast. The cup has some nice jazzed up malty/chocolaty tones. One can pull some nutty, floral and soft-fruit depending on the roast level, more prone to pop out as the cup cools. Too light on this one and it can get a little earthier terroir and be more on the nutty side, so error a bit darker than lighter. As the roast develops the cup gets buttery textured with rich and smooth more chocolaty notes, hints of a little spice. Kinda like a nice Colombian but less toasted nutty tones. Into second crack can add a little sweet and smoky note that many will love.
