Yemen coffees are the rare cup where you can occasionally see a “banana” like fruit tone – don’t worry though, its a little bit of a reach for banana, its not like eating a banana or banana flavored coffee, although with developed tongue, most can pick it up. Red fruit and rustic bakers chocolate are the dominate tones – fruit is accentuated with lighter roasts, chocolaty with darker roasts. Classic Yemen coffee – slight fruitiness and smooth rich chocolate tone with some stronger spice notes in the aftertaste. Medium to low acidity with good body. Some nice red fruit versus chocolate contrast in the cup. A couple picked up a hint of caramel on the roast just before 2nd crack. The fruity factor is accentuated with lighter roasts, chocolaty with darker roasts. A lovely super complex old world natural.

A great example of Yemeni coffee. Chocolaty and fruity, kind of a Mocca/Java blend as a single origin coffee. Medium bodied and clean enough to drink on the lighter side if you don’t mind a little lemony acidity and semi-earthy chocolate notes. Medium to just before 2nd crack is the sweet spot for balance, great developed chocolaty notes with some awesome red fruit highlights. Darker will also appease many but burned out a little too much sweetness and soft fruit to be the winning roast, strong spice chocolaty tones with a smoky accent.

Medium roasts mute some of the fruitier aspects, reducing the acidity, bringing forth complex chocolaty spice to the foreground. Light roasts have strong citric acidity upfront that fades into just a hint of that lovely natural processed red fruit tone, a bit potent with an herbal/veg contrast. Exotic and fun to try lighter roasted. Medium roasts are where we thought it shined; better body, still plenty of acidity/floral/fruit like tones balanced with a more pronounced chocolaty undertone. Darker roasts get smoky and strong with low acidity, more reminiscent of the washed processed but with a little hints of the natural processing as the cup cools.

Light roasts have a pretty citric acidity upfront that fades into a fruity factor with just a little hint of its chocolaty undertone, clean enough to drink here but be ready for the more floral and acidic front loaded cup profile. Medium roasts are where we thought it shined; jammy body, lots of red fruit like tones balanced with a chocolaty undertone, exotic and sweet. Right around 2nd crack works but burns out much of the fruity and acidic notes that separate this cup from the Washed or Honey processed.

We thought this cup was best between a medium roast to just before 2nd crack roasts. Good bit of citrus crispness with pretty floral aromatics balancing with a bit of bakers chocolate and spice. Similar to the washed processed but a little fuller bodied with a little different acidity. Lighter roasts get very jazzy acidity with strong citric notes but can come off a little earthy, a longer setup helps with light roasts. Dark roasts get even fuller bodied but burn out the more floral tones (low acidity) which balance the cup so nicely, adds in some toasty smoky notes which some will like.
