A very cool strain of coffee with Ethiopian roots, coming from an award winning Panama farm. The pre-ship samples were quite fantastic but the actual arrival came in a bit earthier. Instead of rejecting it, we worked a fantastic deal. Quite drinkable but not the super premium offering that we were anticipating.
Best from medium to dark roasts. A nice and sweet edge, good body and mouthfeel, a little hint of a citric sparkle with a chocolate/earthy contrast. Hints of floral/fruit at lighter roasts but also more earthy.

Very clean, rich and fuller bodied cup with pretty low acidity. A nice sweet tone upfront giving off a little soft fruit tone balancing with a smooth malty/chocolaty tone. Light roasts have amazing body for the roast point, a little lemony acidity balancing with a dryer chocolate note, a little hint of caramel with proper setup. Medium roasts are where this cup shine, low acidity and very smooth, good creamy body with a little soft fruit and chocolaty factor. Darker roasts were the weakest roast point, burned out most of the cool jazzy tones, reduced the body of the cup a bit and added some roasty notes. A awesome cup for light/medium roast fans.

A very cool cup for you natural processed fans. Lighter roasts show some good citric acidity fading quickly into delicate red-fruit notes balanced with a tea like chocolaty factor. As one pushes it into the more “medium” roast ballpark, the acidity reduces a bit and creates a more pronounced sweet spice note with fruity overtones. A little hint of caramel can be found in the medium roast level. Dark roasts are not recommended.

As the roast progresses towards or into 2nd crack the acidity dissipates quickly but the soft fruit tone will retain giving nice and tasty balance at the fuller roasts. A clean, sweet and smooth cup of coffee one can drink all day long! A little fuller bodied at the light-medium roast level which made it very chuggable. Some crisp floral at lighter roasts but just a hint, medium to dark roasts would be marked as low acidity. Lighter roasts pull some nice balance sweet nutty and floral. As one pushes it into the medium roast range, the more nutty tones turn into hints of caramel and accentuate the malty cup profile. Dark roasts turn pretty strong but the nice sweeter malty cup profile mixes nicely with smoky and roasty notes.

Best at a light to medium roast. High acidity and very fruity with a ton of candied lemony floral right upfront. The more citric floral notes quickly fade into a very fruit forward cup of coffee which pulls some balance with hints of jasmine and bergamot, which the Geisha strain is known for. A wonderful example and very easy to tell upon first sip that you have something special. Great from light to dark. Medium acidity, smooth and creamy, nice spicy more nutty/malty tones with a hint of floral in the aftertaste. A little crisper and more floral if you shoot for lighter, a little more robust and smoky if you go darker, a flexible bean but for smooth and rich, medium roasts are where its at. One can get a little caramel at the light to medium roasts and hints of soft fruit as the cup cools, adding a cool sweet edge to the mix.

This cup has a little more of that classic “red fruit” note than the other Panama coffees, but by no means over ferment, it presents very nicely and is well balanced with all the other flavors present. Lighter roasts show some nice and sweet lemony acidity, a bit floral in its character balancing with a bit of a nutty/malty undertone. A nice and clean cup that works well for those lighter roast fans. Medium roasts drop the acidity a bit but retains its sweeter edge and builds up the body a bit producing a very chug-able cup of coffee. A little hint of soft fruit to be found especially as the cup cools. Although similar to the Typica, this Catuai is a more potent cup, stronger acidity with more complex darker tones (a little along the lines of African coffees). Light roasts themselves will be brighter with crisp lemony floral notes and more noticeable fruit tones, nutty tones to balance out the cup. Medium roasts bring a smoother and richer cup, develop the nuttiness into more of a malty/chocolate like taste, reduces the fruitiness but keeps the sweetness, still a bit lemony upfront but has a much more noticeable malt like tone with a bit of spice to balance it out. Darker roasts pull a little bitter/malty contrast but it goes well with the roasty and smoky tones and retains a sweet edge. A little longer setup sees a smooth a sweet darker roast.

A very jazzy cup of coffee with a pretty strong natural processed spin. Lighter roasting points (before 2nd crack) are where this cup will shine. Light roasts themselves will be fairly bright with pretty strong citrus floral and fruit tones. The fruitiness is almost winy and more reminiscent of a red grape-skin; complex with a little astringency upfront. The cup will be pretty front loaded at the light roast points but will have a little herbal chocolaty balance that is accentuated the darker you roast. Medium roasts bring much more traditional darker tones to the cup and are where anyone who doesn’t like too much acidity should start, still a bit lemony upfront but fades quickly into soft fruit tones and more potent spicy malty/chocolaty notes. Dark roasting is almost a shame, gets a bit roasty and tends to lose those exotic winy and floral tones. Darker roasts into 2nd crack taste good but mostly full of smoky semi-sweet chocolate tones.
