A great daily drinking Peru! Best right around a medium roast but works well from light to dark. It stands out for being a very clean and sweet cup. At lighter roast levels it has some crisp acidity, not over the top but noticeable, gives a quick hit lemon and floral that will balance with nutty and chocolate like darker tones. Small hints of caramel and dried fruit will pop out with a little setup. At medium roast levels, you get more of a smooth easy drinking cup, less acidity with accentuated nutty/chocolate tones, a hint of spice in the aftertaste, provides the best balance of light/dark tones. Darker roasts are a little flat and roasty, but on the more neutral side, classic darker roast beans: smooth, rich and on the roasty chocolate side of things with a little nuttiness in the aftertaste.

Low acidity cup, one can see a little floral acidity at the lighter roast points, but in general it will be smooth, medium bodied, chocolaty and very low acidity. Most will like these beans from a nice medium roast to a little bit on the darker side. A cup almost everyone will like and a good everyday drinker.

A very clean jazzy Peru offering. This cup has awesome depth of flavor and is solid medium to dark roast coffee. Lighter roasts have some stronger lemony acidity, a bit of soft fruit, some herbal and a bit of nutty caramel with some lingering hints of a chocolaty undertone. Medium roasts develop more of a chocolaty sweet tone with reduced acidity – hint of the nutty/caramel/soft fruit can still be found. A very pleasant medium to dark roast offering. Very chocolaty (semi-sweet) with low acidity and a little soft fruit tone at almost all the roasts. Lighter roasts bring an almost green apple acidity upfront but risks a little herbal grassy note which develops into the chocolaty factor if pushed a little darker. Medium roasts are smooth and balanced, lower acidity, medium bodied, a cup one could drink all day. Darker roasts hitting 2nd crack and/or going into it, will add some complimenting roasty notes and smoky tones into the cup which add some great depth to the more bakers chocolate aspects.

A lovely & fresh coffee from light to dark. A good daily drinker. Medium to low acidity, the cup does have some jazzy more floral tones at the lighter roast points, some chocolaty factor to balance but leans on the more nutty side of things, pleasant to drink and on the crisper side but not overly acidic. Medium roasts and beyond produce a smooth and rich cup, more chocolaty than nutty, pulls a peanut brittle like tone (some may say hint of caramel), not quite candy like, more peanut than brittle we all thought it to be a good descriptor. A nice and clean cup of Peru coffee! Best at the lighter roast points where it will show a decently fruit forward cup of coffee, unique for a washed processed but very tasty. Floral, soft fruit, hints of acidity balanced with a speck of herbal chocolate. Great depth of flavor and well balanced. The fruitiness comes off a bit orangish or grape like, not your traditional red-fruit strawberry tone of a natural processed, a little like a mild red wine almost. Medium roasts bring a more chocolaty cup, less herbal with just hints of a fruitiness, smooth and rich, not as sharp, but also not a fruity. Darker roasts, although tasty, were a shame comparatively. Rougher semi-sweet chocolate tones. Generally Peru coffees hold darker roasts, but this one if for you light to medium roast fans.

A very interesting and unique Peru coffee. Lighter roasts have a bit of acidity upfront that surprisingly tastes similar to a lime versus the traditional lemony brightness. The lighter roasts balance with a bit of soft fruit and spicy herbal chocolate, with proper setup, one can get a little hint of caramel mixing in. Medium roasts become much more chocolaty and fuller bodied reducing the acidity to just a hint and removing the soft fruit tone and herbal spice notes from the cup, very drinkable. Pushing towards second crack the cup turns very bakers chocolate like with a fuller body accompanied with hints of smoke.

A cool cup from medium to dark. There are some sweet island floral tones upfront at the lighter roasts, a sweet edge with unique spice; somewhere between a woody cinnamon to more peppery/clove. Wonderful aromatics accompany lighter roasts but could be a little too grassy/sharp for some. Medium roasts are more chocolaty, balancing with the spice nicely, less woody, more bold semi-sweet clove like spice. Darker roasts get smooth and creamy retaining those exotic spice notes to compliment the roasty and smoky darker chocolate cup.

A stellar new-wave coffee; highly rated and exotic. Full of citric, floral and fruit tones. We thought best served in the light to medium roast range. Higher acidity, fuller bodied with great depth to the flavors. Lighter roasts are a bit sizzling but also the most complex tasting; stronger citric/floral acidity comingle with a very sweet red fruit tone upfront, balancing with just a pinch of the classic Rwanda darker tones of herbal, spice and chocolate. Takes a little longer setup to bring out the small exotic hints in the tastes. Medium roasts build a much creamier cup profile, just a hint of crisp floral upfront that fades into a strawberry like fruitiness, balanced with strong dark semi-sweet dark chocolate like tone. Dark roasts themselves are still very lively cups but can come off a bit sour/bitter comparatively. They are fuller bodied accentuating the robust chocolate and spice notes but not a delicate cup like the light-medium roasts.

A wonderful light to medium roast coffee. Leans a bit more towards a washed processed coffee than natural. A very clean, sweet and delicate cup with medium to low acidity: chocolate, spice, tea and fruit tones comingle nicely at the different roast levels. Lighter roasts show just a small pinch of citric and fruit comingling with complex tea like undertones, a fuller body and sweeter edge. Medium roasts mute much of the tea like spice turning the cup more chocolaty and semi-sweet, hints of fruit as the cup cools but hardly noticeable while hot. Darker roasts are more of a semi-sweet chocolate bomb, could be a bit much without a splash of milk but works wonderfully for espresso or cold brew at the fuller roast levels.
