Best served in the light to medium roast range. A top shelf, rare example of traditional Huehue coffee. Lighter roasts are full of white wine like acidity and floral tones. Pulls some balance with a complex malty undertone, but just a hint. Lighter roasts will be all about the more acidic “lighter” toned components. We have not seen a clean Guat this sizzling or winy for quite some time. A great roast level but not for everyone. If you do not like more acidic/floral cups, bring it to a medium roast for much a smoother example. It will cut out the more blasty features and accentuate the richer darker tones. Best served in the light to medium roast range. A top shelf, rare example of traditional Huehue coffee. Lighter roasts are fuller bodied and loaded with buzzy acidity along with nutty, malty and spice like character. A great sweetness to the cup lingers on the tongue. Little hints of a woody/caramel tone and a touch of red fruit can be found especially with a little setup. Medium roasts smooth out the cup nicely, a bit less buzzy acidity but also a bit less complex. A sweet and smooth cup that everyone will love. Great depth of flavor within the nutty/malty/chocolate darker tones. A great year for FVH. Best around a medium roast but a fun tasty coffee from light to dark. Lighter roasts do have some acidity, not over the top but noticeable. A citric winy factor up until a strong medium roast. Light roasts risk a little grassy note right at first crack but will develop into rich nutty/malty/chocolaty tones as you approach a medium roast. The malty undertones are present at the lighter roasts but overpowered by the more citric/winy character. The cup builds some good body and rich dark tones the darker you go. Exotic for a Huehue. It has a sweet fruit note in the aromatics but just a hint in the cup. The hint is a little tropical fruit note at the light roasts along with winy/citrus factor. Wilder in its tones, gets a little spice and herbal tone mixing in with the classic malt back end. Way cool but very dependent on roasts. I liked it best around a full city, built good body and muted some of the acidity for an easy drinking cup. From light to dark, this cup will make fans! and smoky.

A very tasty cup and a fun one to play around with the roast. A very rounded clean cup with a bit of soft brightness to it. Lighter roasts get more of a red fruit semi-ferment tone upfront and bit of acidity balancing with a dry malt tone. Interesting here but most will want to roll it into a medium to border line dark roast where its gets a little fuller bodied, sweet, with just a hint of acidity upfront. Super dark roasts can get a bit edgy and roasty without the fruit tone coming through.

A great cup of Guatemalan, a bit lower acidity than most, a real sweet edge to this cup. We thought it best in the medium to dark roast range. Light roasts are sweet upfront but do not develop the creamy malty notes one expects from a nice Huehue. Medium roasts have a nice sugary sweetness upfront, medium bodied, low acidity with more of a creamy malty tone that lingers on the tongue. Although the sweetness hits right upfront, the tastes fade into a more dry and complex malty tone. Very smooth and drinkable at the medium roast level but may be too mild for some. The beans hold a dark roast very nicely, touching 2nd crack did not introduce too much smoky or roasty tones, still sweet but much stronger, hints of a winy floral aspect mixing with darker chocolate and malty-ness.

A very classic and clean “Huehue” coffee. Malty and winy are the first notes to hit the tongue. If you shoot a little lighter in your roasting, you get citrus and soft fruit acidity mixing with the winy factor. A clean enough cup to roast light for sure but will be front-loaded with acidity. Medium roasts really bring forth the balance in the cup and develop a little sweeter edge. Dark roast cut most of the acidity and winy tones out of the cup and gets much fuller bodied malty and smoky.

Lighter roasts get a very cool tea like spice note upfront with hints of soft fruit balanced with a complex malty/chocolaty tone. Medium roasts hold the best balance of tones but works nicely lighter or darker. In the middle tends to retain a little acidity upfront without being too much and develops the malty tones of the cup, which every Guatemalan fan tends to love. Works very nicely at the darker roast points as well, much fuller bodied with very low acidity. Great malty complexity with some smokiness.

Very clean, rich and bright. Geisha coffees are known for their floral, spice and soft fruit tones and that would be a perfect descriptor to this cup. A bit on the lemony floral side, the depth to the bright notes is well above what one would normally see out of the “usual” Guatemalan strains. Great jasmine spice aromatics that can only be compared to other Geisha coffee or something like a stellar Ethiopian washed processed. Especially if you push the medium to strong medium roast mark, you will see a little balance with the more classic malty/winy tones that a Huehue normally brings to the table.

We split the lot with Edwin (Finca Vista Hermosa) and some of his other buddies. Got 132 pounds but some of our local coffee shops wanted some, so about 70 pounds up for grabs. A very cool opportunity for those who love Guatemalan coffee.

A very clean and smooth cup. Lighter roasts get a very sweet and nutty tone right upfront, almost like a walnut dusted with a hint of powdered sugar. The nuttiness fades into a more traditional malty tone in the aftertaste. Floral in its aromatics but not in the cup, the acidity comes through as just a little hint of sweet lemon accentuated as the cup cools. Our preferred roast was a city + roast (medium roast) bring out much more of a smooth and defined malty tone with a hint of soft fruit, just a hint of lemony acidity. A cup we could drink all day everyday.
