A great medium to dark roast coffee. Full bodied, low acidity, great mouthfeel, robust and strong coffee with hints of a exotic spice. Lighter roasts get a cool semi-floral sweet tone upfront but will pull more towards grassy caramel with a slight hint of herbal spice. As one progresses towards the darker roasts it gets much fuller bodied and creamy with clean chocolate/malt like tastes, a little hint of floral acidity at the full city roast level. This is the first year we have actually seen some highly rated (industry wise) beans from Haiti. Crisp clean acidity at the lighter roasts with very little risk underdevloped tones. Even though this cup is clean enough to roast light; most will want to get close to 2nd crack for this cup. Fuller bodied and chocolaty with just a little hint of floral acidity at the full city roast. Great balance and a lovely cup!

Lighter roasting works well suprisingly well for an Indo coffee, the Bali coffees are always decently clean comparatively to a Sumatra, will have a bit of an earthier finish but a lovely cup with strong red fruit tones and a hint of darker toned nutty contrast. Sweet with a bit of floral in the aftertaste. Medium roasts mellow the cup a bit, turn the nuttier factor more chocolaty and refine the fruitiness. Smoother and a bit easier to drink all day but less wild in your face natural tones. Darker roasts get smoky and strong, much more bakers chocolate like tones with smoky accents, the fruitiness comes through in the aromatics and aftertaste, also as the cup cools.

A lovely coffee, smooth and clean with a bit stronger and more potent and spice tones, especially when compared to most Central American coffees. Reminds me almost of a Kenyan like cup. Lighter roasts show some small hints of a lemony acidity, a little soft fruit tone accompanied with some herbal spice and chocolate tones, a bit exotic but balanced. Light roast African fans will find some joy here but for most, pushing the beans into a medium roast will be preferred. Mellowed the spice tones of the cup creating a much smoother lower acidity cup profile with a little sweeter edge. One can still get the spice complexities especially in the aftertaste or as the cup cools but smooth, rich and not too exotic, a lovely roast point for a daily drinker. Darker roasts picked up stronger smoky and roasty tones but it complimented the darker spice tones and sweeter edge of the cup.

A lovely, crisp, and clean, not overly fruity natural processed. We thought it best right around the medium roast ballpark but will make fans lighter or darker depending on your personal taste preference. Lighter roasting is a bit higher acidity, lemony and floral with some grape skin like fruitiness coming through. A bit more herbal spice right at first crack, needs a longer setup time to shine but will provide delicate chocolaty notes with much wilder acidity and fruity tones. Medium roasts were tasty without the wait! Balanced, tasty, and clean after 24 hours. A pronounced chocolaty factor, medium bodied, hints of crisp acidity backed with a little soft fruit tone and spice. Wonderfully smooth and delicate for a Congo coffee. Dark roasts were tasty right off the bat as well, roasty and stronger but with a sweeter then average edge. The smokiness does compliment the strong chocolaty undertones.

A more delicate fruit forward refined cup of coffee. Very clean, sweet with dominate fruit (cascara/strawberry) and floral tones balanced with hints of nutty and chocolaty undertones. Traditional light roasts will have some crisp acidity while fresh leaning it a little more towards floral notes, we would call it front loaded but tasty, not much balance with any darker tones and can end a little dry, but plenty wild upfront to make natural processed fans happy. Medium roasts will be best for most, medium to low acidity, hints of floral and fruit balanced with smooth and sweeter darker tones. Dark roasts themselves pick up a little bittersweet edge but have wonderful aromatics and good body.

A lovely slightly-exotic daily drinker. Light to medium roasts are preferred with our favorite roast being right in the middle of the cracks. Lighter roasts have a hint of floral/citric acidity with just a touch of sweet and delicate red fruit coming from the honey processing. A bit on the nutty/chocolaty side for its balance, starts as a dry nutty at very light roasts, turns more chocolaty as the roast gets darker.
A little front loaded with the more acidic and fruity tones at traditional light roasts. Medium roasts have better balance between light an dark tones cutting out some acidity; smooth, rich, sweet edged. Dark roast loses the more exotic acidity and fruity edge but turns very thick, nutty, semi-sweet chocolaty with smoky accents.

A very nice and smooth cup good from light to dark. Medium roasts were out favorite, full of softer nutty and chocolaty tones that many consider the “go to” for daily drinking. A sweet edge to the cup, lower acidity, medium bodied, depending on roast level, nutty/floral/caramel/soft-fruit/smoky like tones can be found as well. Light roasts are a little more floral caramel like but can risk a little grassy too close to 1st crack. Medium roasts were smooth and clean, darker roasts also work well, get stronger and semi-sweet with a smoky finish.

A very nice and clean high rated cup. Lighter roasts show very floral tea like character, hints of floral lemongrass, soft fruit and the classic herbal tea like chocolaty factor similar to a Yirgacheffe. The fruitiness is subtle and not over the top, a natural processed pretty much everyone will love. Medium roasts accentuate the more chocolaty cup profile and mute up a bunch of floral and lemony acidity, drawing out the subtle red fruit tone a little more, which is quite tasty. Darker roasts get strong and chocolaty which some may love but are also the roughest tasting roast level, bakers chocolate and smoky tones mixing with hints of soft fruit and spice.

A nice and clean cup of Peru coffee! Lighter roasts show a bit of lemony acidity and floral notes, a bit on the sweeter side but balanced nicely. Medium roasts mute up a decent chunk of the lemony floral tones and the cup gets much more chocolaty and a little fuller bodied, a little nutty tone in the aftertaste. Darker roasts are still very smooth but become much more semi-sweet and smoky with dark chocolate lingering in the aftertaste.

Clean, sweet, and floral with some stronger tea like attributes. Lighter roasting does have higher acidity giving the cup a citric edge and more floral notes. Hints of a black tea like dark tone and a soft fruit tone will pop out especially with some setup and as the cup cools. Medium to dark roasts will mellow the brightness considerably turning the cup much darker toned and more about the spice notes and chocolaty factor. Smooth and easy drinking in the medium roast range while still maintaining hints of exotic acidity. Dark roasts promote a smoky edged rich semi-sweet chocolaty factor with tea like spice that lingers on the tongue in the aftertaste.
