Fantastic example of an Ethiopian Natural. Keep this one light to medium roasted. Too dark and the awesome crisp and clean fruit/floral notes dissapear. A mellow cup on the sweeter side with nice red fruit tones popping right out. The cool natural tones balance with a tea like spice note, a sign of its roots, Yirgs are known for their more tea like dark tones. Many would call it a chocolaty undertone with a jazzy spice note but we like the tea reference and most will agree. A bit more delicate of a cup with a little lower acidity than the other Ethiopian lots. Depending on what you like this can be a real perk, fruity and sweet without risking high acidity or overly sour tones at the lighter roast points. A little easy to roast out the fruitiness, so don’t let it get too dark!

This is the first year we have actually seen some highly rated (industry wise) beans from Haiti. Crisp clean acidity at the lighter roasts with very little risk underdevloped tones. Even though this cup is clean enough to roast light; most will want to get close to 2nd crack for this cup. Fuller bodied and chocolaty with just a little hint of floral acidity at the full city roast. Great balance and a lovely cup!

This cup is nice and chocolaty, lower acidity and medium bodied. A little sweeter edge to it except for super dark roasts. Besides a chocolaty factor one will get some nutty/caramel/floral like tones at the medium roast points, gives it some nice complimenting depth without being too exotic. We all thought it was at its best right around a full city – smooth without too much of a roasty note and great chocolaty tones.

Year in to year out, this is always one of our most popular coffees, at times we have trouble keeping it in stock!Mysore coffees are the best known and the most popular of all Indian coffees, they posses good body and snappy acidity. The overall taste profile is very unique, with spicy overtones. These spicy overtones come from the cinnamon, cardamom, nutmeg, cloves and pepper that grow alongside the coffee trees.
This lot is full bodied, with a rich full taste and moderate acidity. Very interesting and exotic, I like to roast this coffee a little darker, just into the second crack.

A very rich, clean, and smooth cup. A cousin to Sumatra or Sulawesi coffee; Blue Moon always is a bit smoother without as much earthiness. A little hint of sweet acidity balanced with a nice chocolaty molasses undertone. Medium to full bodied with low acidity, a nice daily cup. Hints of slight smoky tones and soft fruit can be found, especially in a darker roast.

A very fun & tasty African natural. To see it shine, keep it in the light to medium roast range, although it’s a tasty cup from light to dark.
Light roasts themselves have a stronger lemony floral tone right upfront. For a Kenyan, would not be considered high acidity but will be clearly noticeable in the taste. Behind the brighter floral notes lies a nice semi-sweet stone-fruit tone, similar to cascara or to some, strawberry’ish. The fruit and floral will quickly fade into a more robust chocolate note with some traditional Kenya spice kicking in mostly in the aftertaste.
Medium roasts will mute the floral/fruity tones to just a hint over-top of the more robust chocolate & spice darker tones. Still exotic for a Kenya but promotes more traditional Kenyan like tones the darker you roast. Dark roasts themselves retain a much sweeter edge than the washed processed Kenyans and one can see just a touch of fruitiness as the cup cools.

Lighter roasts add accentuate the crisp floral but risk some underdeveloped notes if way light. Medium to just before 2nd crack will produce smooth defined and balanced cups, the sweet spot as they say. Half Pound Nicaraguan Premium Selva Negra – Geisha Washed Processed
Great light to medium roast coffee. Although we have carried the San Felipe lot for years, having the Geisha separate this season has brought a ton of new tastes. East to tell the difference when compared to the other strains Selva Negra grows. Best at the light to medium roast level, these beans have a bit more acidity than anything else from Selva Negra. The cup is very floral and citric especially at lighter roasts. Not quite jasmine floral, a little more traditional citric, but very tasty; delicate and sweet edged. Where one can see the prime Geisha attributes is in the darker tones of the cup, black tea spice jumps right out. Light roasts are heavy on the citric and floral balanced just a touch of tea like spice with herbal overtones. Medium roasts are where most will want to shoot, defined tea like spice with some sweet crisp floral upfront. Darker roasts turn a bit plain, still very drinkable but not much uniqueness.

A very nice and super fresh batch of their traditional farm aggregate. A little hint of citrus floral upfront balanced with nice complex malty tones. Great everyday drinker at a medium roast, balanced with a sweet edge. A nice and clean cup of Peru coffee! Lighter roasts show a bit of lemony acidity and floral notes, a bit on the sweeter side but balanced nicely. Medium roasts mute up a decent chunk of the lemony floral tones and the cup gets much more chocolaty and a little fuller bodied, a little nutty tone in the aftertaste. Darker roasts are still very smooth but become much more semi-sweet and smoky with dark chocolate lingering in the aftertaste.

A very fresh and tasty African. Enjoyable at any roast level; a medium to dark roast was our favorite. Medium roast points you get a smooth cup on the nutty/chocolaty side, sweet tea flavors and a hint of citric. A little herbal spice lingers in the aftertaste but very mild comparatively to most Africans. Darker roasts add complimenting roasty notes, a sweet and smoky chocolaty cup that is jazzed up with a little spice, lower acidity and fuller bodied. One can take it lighter if you want to boost the acidity and citric/floral tones but it does risk a little vegital note right at first crack.

These exotic unroasted coffee beans result in a nice clean and balanced cup, medium bodied and lower acidity for an African. Lighter roasts will still be a little citric and floral balanced with a bakers chocolaty undertone with very little of that traditional African spice note. Medium roasts mute up the acidity and leave a little hint of a floral and developing a little soft fruit tone mixing with a smoother but still semi–sweet chocolate tone. Darker roasts pick up some nice complimentary roasty tones mixing with more of a bakers chocolate semi-sweet note.

This is the large bean screen of the Mokka. They still look small for a 16 screen but are generally plumper beans and noticeably larger than the other two offerings. Fuller bodied, low acidity with a complex chocolaty factor and some floral aromatics. One can see a little African like herbal spice note in the cup especially at the darker roasts. Light roasts get a little acidity but underdeveloped chocolaty tones, so this guy is pretty much a medium to dark roast Hawaiian. Medium roasts get just a hint more floral upfront, a little sweeter and smoother cup but most will want to shoot for right at 2nd crack – big bodied and a very nice chocolaty spice tone.
