This cup very smooth, rich and clean. fuller bodied and lower acidity the main tone is going to be pretty chocolaty – a deep semi-sweet chocolate smokey note balanced with just a hint of a floral aspect. This Honduran is a sweet, balanced, clean coffee with a nice spice note and slight wineyness and a little caramel at the lighter roasts.
A very nice single origin breakfast coffee – smooth, mellow and chocolaty a great cup to wake up to.

Best medium to dark roast, a great everyday drinker. This cup is nice and chocolaty with some nutty accents, just like a good Honduras should be. Lower acidity and medium bodied, a sweeter edge assuming its not roaster super dark. Clean, rich and smooth cup with nutty and chocolate tones. Medium roasts were our favorite but might be a little mild for some. Medium roasts were our favorite but might be a little mild for some. A very nice and clean Honduran offering, great from light to dark roasts. Our favorite roast was on the lighter side of “medium”, too light one gets a pretty strong hit of lemon citric upfront Just a little development past first crack and it turns more nutty/caramel/chocolate like with a mellow citric crispness. As one gets a bit closer to 2nd crack than first, the cup turns much more chocolaty with a little nuttiness in the aftertaste, pretty much all the citric will be gone from the tastes and it will pick up a little hint of roasty/smoky like tones. Touching or into second crack, it is very chocolaty and sweet, with a pretty strong hit of smokiness in the aftertaste, which we thought complimented the cup.

Hints of acidity upfront at the lighter roasts that give a little citrus with soft fruit balanced with a bit of dry semi-sweet chocolate, a bit floral in its aromatics. Medium roasts get much richer and bring good definition to the more chocolaty aspect, reducing acidity to a low acidity offering. A little hint of caramel in the cup especially as the cup cools. One sip is all you need to identify this fruity natural. Wonderfully wild red fruit tones comingle with more citric floral fruit tones to create the more unique feature set of this cup. The fruit tones balance with a classic Honduran nutty/chocolaty that starts as just a dryer hint at light roasts, to becoming very pronounced at darker roasts. Make sure to play around to find your perfect cup.Light roasts front loads the cup profile with the fruity/citric components, will have just a hint of dryer nutty like tones. Medium roasts found the best balance developing a chocolaty factor in the cup along with the fruitiness. The tastes layer nicely with the fruitiness hitting first and the more chocolaty note sticking in the aftertaste, not overwhelmed with citric like the lighter roasts can be. Dark roasts are unique but get a little bitter/sour contrast if decently into second crack, strong bakers chocolate with a bit of soury fruit overtones will definitely be a cup some will love.
