Clean, rich and semi-sweet, the cup is medium bodied with a little winy/floral acidity upfront. Hints of a fruitiness with “before 2nd crack” roast levels. The crisper, brighter tones commingle with a semi-sweet very malt like dark tone. We thought best served in the medium roast ballpark, it will handle lighter or darker roasts nicely though. Light roasts will be a bit front loaded with brightness, turns the winy factor a bit more lemony and the malty tones a bit dryer, a sweeter edge to it. Darker roasts promote the bittersweet malt tones, heftier cup with a smoky edge. Clean, rich and semi-sweet, the cup is medium bodied with a little new crop winy acidity upfront. Hints of a grape skin like fruitiness with “before 2nd crack” roast levels. The crisper, brighter tones comingle with a semi-sweet very malt like dark tone. We thought best served in the medium roast ballpark, it will handle lighter or darker roasts nicely though. Light roasts will be a bit front loaded with brightness, turns the winy factor a bit more lemony and the malty tones a bit dryer, a sweeter edge to it. Darker roasts promote the bittersweet malt tones, heftier cup with a smoky edge. Great example of classic Guatemalan coffee. Best in the medium roast ballpark. Clean, rich & sweet cup; medium bodied with a little new crop winy acidity upfront. Lovely nutty & malty darker tones to balance the brightness. Hints of a fruitiness as the cup cools with “before 2nd crack” roast levels. Will handle lighter or darker roasts as well. Light roasts will be brighter, a bit more lemony with the malty tones just peeking out, a sweeter edge to lighter roasts but not as balanced nor malty. Darker roasts promote the strong malt tones, accentuating the mouthfeel and semi-sweet malt tones, a smoky edge.

A nice medium roast gives great balance between a sweet floral and mild chocolaty tone; gives off almost a little caramel if you hit the roast right (city + with some setup). As the roast gets darker, the chocolaty factors turn more into a semi-sweet malty tone with far reduced acidity, a little floral but mostly in the aromatics right around 2nd crack but just a hint.Price: $6.60/lb - 6.00/lbPrice: $6.60 -

Tasting Notes: A great classic Huehue coffee. Medium bodied and fairly low acidity, predominately malty toned, a bit sweeter and simpler in this cups case. They can be pretty dry and complex. A little hint of a nice winy acidity only at the light roast points. Much bigger bodied, slightly less sweet with complimenting roasty and smoky notes at the darker roast levels.
Roasting Notes: Easy to roast, a medium to dark roast coffee. Light roasts have a little jazzy acidity but mute up a lot of the sweeter malty tones that make this cup shine. For those who want to keep it a little crisper, try a faster hotter roast. Can be drawn out at lower temps to get it a little more body and dryer more complex darker tones.

A very floral cup of coffee! Light to medium roasts are where it shines. Light roasts themselves are pretty lemony floral and bright, a little heavier body and balance with a more herbal/malty undertone. Tasty and lets you see the more floral geisha attributes nicely but a bit sharp and dry in the finish, a front loaded cup most would call it. Medium roasts develop the tastes better but mute some of those crazy floral tones, tastes more like a higher acidity Guatemalan. Good malty-ness with crisp overly floral tones. Much cleaner cup at a medium roast. Dark roasts worked well but were hard to tell anything Geisha like about the cup. Similar to other high end Guat offerings, stronger with malty and smoky compliments.

Clean and rich with a sweet edge, medium bodied with a little winey acidity upfront. A nice medium roast gives great balance between a sweet floral and a nutty/malty undertone; gives off almost a little caramel if you hit the roast right. Hints of a soft fruit tone can be found especially as the cup cools. As the roast gets darker, the cup turns more chocolaty with reduced acidity, still a little floral but mostly in the aromatics. Touching or into second crack adds a little smoky tone but puts a little more bittersweet edge on the cup.

A very cool, more wild Guatemalan cup, shines from a medium to dark roast. Medium roasts were very drinkable with more gentle acidity, brought forth more of that classic slight winy floral with a semi-sweet chocolate dark tone, will be right down your alley if you’re a classic Guatemalan fan. A decently stronger cup than the Finca Esperanza offerings. Held up very nicely dark roasted, the smoky tones complimenting the big hefty baker’s chocolate factor. Lighter roasting shows decent acidity and floral tones, mixing with an herbal nutty/malty contrast. This would make a good high caffeine blender/espresso component. Similar tasting to many European style coffees. Although Robusta is more rare in the USA, it is still commonly used and drank overseas.
