A great daily drinker! Lovely cup from light to dark roasts; a nice solid medium roast was our favorite. Nutty, chocolaty, fuller bodied, rich and smooth! The cup is pretty nutty lighter roasted, pretty chocolaty darker roasted. Light roasts have a bit of lemony floral crispness upfront, lighter bodied with pretty strong nutty tones. A faint hint of a fruitiness. Medium to dark roasts are fuller bodied, semi-sweet and very chocolaty with some nuttier accents. Still a very smooth cup up until French Roast (decently into 2nd crack). A great daily drinker! Very nice and chocolaty cup of coffee with some nutty accents and a hint of caramel with a little luck on the roast. A clean lemony crispness upfront at the light to medium roasts especially as the cup cools. We liked it best medium to dark, can show a little grassy tone too light. A very nice dark roast candidate for those who love some complimenting roasty notes, big bodied and very chocolaty. Assuming you roast it a little closer to 2nd crack, it will develop a medium body and far reduced acidity but won’t loose its sweeter edge. A couple pops into 2nd crack produce still very clear and smooth chocolaty tones without adding over-the-top roasty notes.

A great daily drinker! Good from light to dark but we recommend a medium roast for most. Very smooth and rich, chocolaty cup of coffee.
Lighter roasts will have a stronger lemony crispness upfront, a little risk of herbal/veg if you roast too quickly or don’t let it setup, but dialed in, has a tasty balance between lemony floral & hints of nutty caramel.
Medium roasts are balanced and smooth, takes the more soury edge and floral notes out of the cup and heads it more towards a rich semi-sweet chocolaty cup with some nuttier accents. The body and mouthfeel of the cup get much thicker making this a wonderful daily drinker. Smooth and fairly neutral with some cool darker toned complexities.
Darker roasts getting close to, or touching 2nd crack make a wonderful espresso shot. Very chocolaty cutting right through a little milk. Works nicely for pour overs or drip as well but will accentuate a little roasty factor. Compliments the chocolaty notes but kills some of balance.

Great from medium to dark roasts. The cup is full bodied and lower acidity mainly nutty and chocolate like tones with just a hint of lemon/floral crispness upfront. A wonderful example of darker toned, thicker Mexican coffee. Medium roasts are sweet, smooth, more nutty than chocolaty, while darker roasts are strong with semi-sweet cocoa notes. Shines at a medium to dark roast, low acidity, medium bodied with a clean and sweet edge. Light roasts will work for some, but will come off a bit more dry nutty with a citric edge, the cup builds really nice chocolaty tones with a hint of caramel and floral as one pushes into the medium roast range, a cup everyone would like. Darker roasts get pretty bold and also bring out a stronger nutty tone balanced with smoky bakers chocolate, medium bodied and low acidity.

A great daily drinker! Works well from light to dark roasts. Very sweet and chocolaty cup of coffee with some lemony/floral crispness upfront. Light roasts will show stronger citrus mixing with a nuttier darker tone, small hint of caramel will show with a little longer setup. Could be a bit acidic for some, but presents nicely for those who like a little citric hit. Medium roasts smooth out the cup and move the darker tones to more along the chocolate like alley, far less noticeable citric tones. Likely the best roast for daily drinking, but much is personal preference. A great daily drinker! A clean cup, works well from light to dark. Lighter roasts show some nice citric acidity with hints of caramel, some nuttiness, and fade more into a bittersweet chocolaty tone. Too light though and those caramel tones can come off a little woody, so it’s good to get it around a city +. Medium roasts are an easy sweet spot, a bit more chocolaty with lower acidity. Medium to just before 2nd crack will produce smooth defined and balanced cups.
