A very nicely balanced cup of coffee. A little hint of acidity upfront providing some floral and soft fruit at the lighter roasts, balanced with a semi-sweet nutty chocolaty factor. Super light roasts risk a little grassy/herbal but it straightens out at a city+ (medium) and holds up as dark as you want to take it. The darker you go, the more body and edgy chocolate the cup will pick up, once you hit 2nd crack, expect some smoke and roasty tones to compliment the nutty/chocolaty factor.

Great from light to dark; this is the fruitiest of the two lots with higher than average acidity for Brazil, highlighting some citric & red fruit like tones in the cup, sweet and a bit more wild. Comparatively to many Anaerobic Naturals, this cup is milder and much more balanced with traditional coffee tastes. Fruity but not crazy ferment & boozy. Lighter roasts show a fruit forward cup, sweet edged, just a hint of lemony acidity with a slightly nutty finish. Shines at the light/medium roast points but tasty from light to dark. As one pushes the roast darker, it builds stronger nutty tones and starts introducing hints of semi-sweet chocolate in the aftertaste, a bit smoky if you get too close or into 2nd crack. Retains hints of the fruitiness throughout the roast spectrum but more in the background/after-tastes with medium to dark roasts.

The two combine for a hints of caramel, quite tasty for you light roast fans. Medium roasts are richer, more of a developed chocolaty tone and decently less nutty; mutes up the soury floral edge, retains a little hint of soft fruit as the cup cools. Fairly neutral tasting and very chuggable. This is one exotic coffee even for natural fans. A wonderful example of strong anaerobic fermentation, but keep in mind, strong fermentation is not for everyone. A high rated, super complex cup: fruit, booze, spice, oak, nut, cocoa. Best served at the light to medium roast level. Sweet edged, fuller bodied with a creamier mouthfeel and unlike most naturals, it’s fairly low acidity. Nothing can quite prepare the tongue for the tastes on strong natural processed coffees, but if your a fan, do not miss this one. Very complex cup and not as overly fruity/winy as the open air natural. The lighter you roast, the more wild this cup gets. If you want to lean the cup towards the fruity and sweet tones, keep it on the lighter side. This is one exotic coffee even for natural fans. Best served in the light to medium roast range. A bit milder than the last lot but in the same ballpark. Pretty winy, fruity and floral upfront with a bit of acidity, balancing with a chocolate & spice like undertone, kind of similar to Indian coffees except with all the wild and sweet ferment and fruit notes upfront. Lighter roasting accentuated the red wine like attributes, hints of citric with a very fruity edge: sweet, oaky, nutty, a little boozy in the finish. Medium roasts tame the cup a bit, still plenty winy and fruity but presents a smoother, less wilder version of the lighter roast points. Spice notes clearly pop out in the medium roast level starting to give some spiced rum like tastes in the background. A crisp, clean and semi-exotic Colombian! Great at light to medium roasts but works light to dark. Light roasts themselves are fuller bodied and pull good balance between a sweet citric/floral upfront and a semi-sweet rustic chocolate undertone, hints of nuttiness in the aftertaste. Great mouthfeel at the lighter roasts and clean tastes. Medium roasts turn the cup more chocolaty and robust. A hint of buzzy acidity in the medium roast range but hardly citric, great depth to the darker toned cup. Would consider it a smooth and rich cup until one hits the darker roast points. Dark roasts are smoky and roasty but very chocolaty and semi-sweet.

A wonderful very clean and smooth, sweet edged Colombian. Great from light to dark, our favorite was a nice medium roast, pulled the best balance between light and dark tones and was super easy to drink. A very chug-able cup. A little hint of nuttiness showing its Colombian roots, but all in all the cup leans more towards chocolate like, a hint of a soft fruit tone at the light to medium roasts which adds good sweetness without being too acidic. Good body and fairly low acidity. Darker roasts will get more robust and semi-sweet, but if looking for strong and dark, we would look at the other Colombians. We thought it best within the light to medium roast levels. Jazzy citric acidity, a little floral some would say, a hint of soft fruit providing a sweet edge along with some wonderful darker toned balance, on the walnut/almond side. Light roasts themselves will be a bit citric, the cup is very clean and handles the roast level well, but needs a longer setup and a tongue that doesn’t mind a bit of acidity. Medium roasts are great daily drinkers and promote a little hint of caramel in the nuttier cup profile, retains just a pinch of citric acidity upfront but it really helps with the depth of flavors. Good body with a smooth mouthfeel. Dark roasts were equally as tasty but it loses the cool crisp citric, and soft fruit, that shows at lighter roasts. Full bodied with stronger nutty and chocolate like tones, a bit of roastiness but it compliments the cup nicely.

Sweet upfront with a hint of crispness balanced with a stronger toasted walnut/chocolaty undertone. A little hint of acidity at the medium roast point really creates a nicely balanced cup with a broad flavor profile. Touching 2nd crack builds some body and will add some smoky and roasty notes that can compliment the classic Colombian profile.

A lovely, crisp, and clean, not overly fruity natural processed. We thought it best right around the medium roast ballpark but will make fans lighter or darker depending on your personal taste preference. Lighter roasting is a bit higher acidity, lemony and floral with some grape skin like fruitiness coming through. A bit more herbal spice right at first crack, needs a longer setup time to shine but will provide delicate chocolaty notes with much wilder acidity and fruity tones. Medium roasts were tasty without the wait! Balanced, tasty, and clean after 24 hours. A pronounced chocolaty factor, medium bodied, hints of crisp acidity backed with a little soft fruit tone and spice. Wonderfully smooth and delicate for a Congo coffee. Dark roasts were tasty right off the bat as well, roasty and stronger but with a sweeter then average edge. To see this cup shine, light to medium roasts are the way to go! Medium acidity, lighter bodied, delicate, sweet cup with strong red fruit tones (strawberry like). Hints of citric and floral jump right out with the fruitiness. Pulls some balance with a little nutty/tea like tones at lighter roasts giving it some awesome depth. Holds up well as one pushes towards second crack, turns the nutty/herbal tones into a rich chocolaty factor with fruity highlights. A bit rougher of a dark tone close to the dark roast mark, touching or into second crack, but everyone still liked it. Touching or into second crack gets a bit bitter with more of an oaky barrel aged tone than sweet red fruit.

A very sweet and fruit forward bean. Clean cup, medium to full bodied with higher acidity. Light to medium roasts are where this bean will shine. Being a brighter natural processed it has some great sweetness and a stronger winy/citric and red fruit tone upfront, which balance with classic Costa nutty and slightly chocolate like darker tones. A fun bean to play with roast level: tip the scales either lighter and fruitier or darker toned nutty/chocolate like. Very light roasts (with a longer setup) can introduce a little toasted grainy note giving a comparable to jellied toast like tastes, but with a lemony citric kicker. Medium roasts build great body and mouthfeel, cut out much of the citric but still overlays the nutty & chocolate like tones with a wonderful and sweet fruitiness. Darker roasts are strong and have a bit of bittersweet contrast. It keeps the sweetness and will still be slightly fruity, but contrasts with stronger bakers chocolate (slightly bitter) like tones with some roasty/smoky accents.

The cup contains traditional Colombian tones (nutty and chocolaty) with a little spice in the aftertaste. Hints of a soft fruit tone as the cup cools. A little thinner bodied than the MWP. Darker roasts will deliver a much stronger bakers chocolate tone with a smoky accent.

Fuller bodied with a richer chocolate tone closer to 2nd crack. Some smokiness at second crack or into but retains its smooth and rich character. Decaf Mexican is always one of my favorite beans to get a nice and strong chocolaty note in the decafs. Best from the lighter side of a medium roast to as dark as you want to go. A bit cleaner tasting but slightly less fruity than previous seasons. Lighter roasting presents some nice honey processed features: citric, floral, soft fruit with an almost oak/peat like finish, sweet & complex but does risk some underdeveloped tones if you nail it a little too light. Medium roasts were our favorite, still balanced and complex but will develop the traditional chocolate and smoky tones for which Dominican coffees are known for – to balance out those more exotic fruity and citric tones. On the lighter roast spectrum there is a little jazzy citric note that presents the cup a little sweeter, on the darker roast spectrums it will have some roasty and smoky notes that we found quite pleasant.

A very cool, very exotic cup of coffee. One can tell this is a slow dry natural processed coffee with its strong ripe red fruit tones upfront. Lighter roasting presents a ton of floral and fruit with an almost oak/peat boozy finish, very sweet with just a ton going on but does risk some underdeveloped tones with its two-toned roasting. Medium roasts were our favorite, still plenty wild but develop enough of the chocolate and smoky tones – which most Dominican coffees are known for – to balance all those more exotic fruity and citric tones. Darker roasts will burn out most of what distinguishes this cup, the washed processed handles those roast level much better; interesting and still exotic but strong and edgy, it will retain some fruity factor with very strong and less sweet, smoky, tobacco and bakers chocolate type notes.

This Ethiopian cup is a super clean; an awesome and unique example of a high end Ethiopian. Best served at the light to medium roast levels; jasmine aromatics with wild more lemon/floral acidity, balancing with a rustic chocolate and tea like spiced undertone. There is a little hint of fruit in the cup but its pretty faint, gives the cup great sweetness and depth of flavor. Reminiscent of a Yemen or Harrar coffee. Lighter roasts will have some citric acidity and stronger floral tones balanced with a faint tea like chocolaty undertone, a little fruit note pops out as the cup cools. Medium roasts really mellow out the acidity and promote the chocolaty cup profile, adds a little jazzy spice note in the aftertaste. A very smooth, balanced cup with exotic highlights. Fantastic example of an Ethiopian Natural. Keep this one light to medium roasted. Too dark and the awesome crisp and clean fruit/floral notes disappear. A mellow cup on the sweeter side with nice darker fruit tones popping right out. The cool natural tones balance with a tea like spice note, a sign of its roots, Yirgs are known for their more tea like dark tones. Many would call it a chocolaty undertone with a jazzy spice note but we like the tea reference and most will agree. A bit more delicate of a cup with a little lower acidity. Depending on what you like this can be a real perk, fruity and sweet without risking high acidity or overly sour tones at the lighter roast points. A little easy to roast out the fruitiness, so don’t let it get too dark!

A lovely coffee from light to dark with a medium roast being our favorite, a staple offering on our list, great stuff every year. This year the cup is a little less acidic and fuller bodied, small hints of fruit at lighter roasts but more about the chocolate and spice notes. Light roasts are clean with a little citric upfront, a small hint of a sweet berry note comingling with an almond like nuttiness and a bit of tea like spice in the aftertaste. Medium roasts brought a fuller body and more chocolate like tones, lower acidity, uncovered a bit of floral upfront, lingering spice in the aftertaste. Darker roasts complimented the cup, a little more rough and tumble but a strong chocolate and spice profile many will love, good for cold brew or espresso.

A lovely balance of tones and our favorite roast point. Medium roasts reduce the citric/winy tones and soft fruit, promoting a sweet edged malty/chocolate like taste. Increases the body and smoothness, but will reduce the depth of flavors a bit. If looking to impress, light roasts are where it shines. For daily drinking, medium roasts are the way to go. A candidate for dark roasts, fuller bodied, low acidity with the malty and roasty tones mix nicely.

Smooth, clean and sweet edged, a cup we are more than willing to drink all day. Guatemalans almost always hold dark roasts nicely for adding a little sweet malty note to the smoky and roasty tones is a tasty mix.

Being a high rated bean, it is very clean at lighter roasts, which we thought presented it best, but found darker roast points with its mix of stronger malty dark tones with a pinch of fruit in the aftertaste, quite tasty as well. Light roasts are delicate, sweet and clean. Will have a little citric crispness upfront, a bit of fruitiness and some lovely malty contrast. A fruit note for sure, but not overly fermented like many, a bean for every coffee fan.

Best served light to medium roasted. This is the brightest Guatemalan offering out of the bunch, crisp with sweet citrus, floral and soft fruit upfront, balancing with a nutty and malty darker tone. The Tabi strain brings a more “rustic” malty tones compared to traditional Guatemalan strains, but is not earthy like many hybrid coffees. Medium roasts build a little body and mellow the citric/fruit notes, less sharp of a cup with a stronger malty tone, the more exotic fruit tones and layers of tastes still come right through in taste but are muted slightly compared to lighter roast points.

Lighter roasting without much acidity will leave the cup a bit nutty and lacking but clean. Starting at about a medium roast the cup builds a wonderful chocolate note with some smoky and malty overtones. A bit on the sweeter smoother side, a tasty treat. Darker roasts, close to touching 2nd crack and where the much more robust tones pop out of the cup, reminiscent of a nice Haitian cigar.

As one progresses towards the darker roasts it gets much fuller bodied and creamy with clean chocolate/malt like tastes, a little hint of floral acidity at the full city roast level. Stronger citric acidity, a medium body, plenty of red fruit notes and hints of a nutty/chocolaty undertone. Medium roasts will mellow the acidity and accentuate the chocolaty factor, less extreme and easier to drink but not as punchy of a cup. A bit easier cup to achieve roasting wise. Darker roasts are still very interesting with the two-tones of roast level. One still gets hints of acidity (very small) and a bit of fruity factor but also a ton of bitter-sweet smoky and chocolaty notes.

A great cup from light to dark. Lighter roasts are sweet and have a little fruitiness, hints of citric and will pull some balance with a nutty/caramel like undertone. A little hint of spice lighter roasted but pretty faint. Medium roasts are a bit fuller bodied and smoother: cuts out the citric tones. A bit more spice noticeable in the cup making its Indian roots more apparent. Dark roasts are much bolder and pronounce the spice and chocolate tones, tasting a bit more like the Mysore Nuggets.

A sweeter cup for an Indo with malt, chocolate with a little traditional earthy terroir of the wet-hulled Indonesians. Fuller bodied, a little hint of acidity at a medium roast, a definite go to for our strong-medium or dark roasts here at Burman Coffee. Pulls some molasses undertones as ones pushes into second crack roasts. Very fermenty/fruity, lower acidity cup with good body. A wild old world natural processed good from light to dark. A beautiful tasting bean this season: slightly fruitier but still balances with traditional Indonesian character. Hints of acidity with stronger fruitiness at lighter roasts, strong fruit/oak tones on a more nutty/earthy/chocolaty profile at darker roast points. No missing the wild side in this cup. Medium roasts are where one should shoot for their first roast, mutes some nutty tones and pronounces the chocolaty factor for some balance, still plenty of wild fruity natural processed tones in the cup. Dark roasts will introduce some smoky accents but retain great sweetness. Tasty from medium to dark. We preferred it a bit on the darker side. Lighter roasting is wild and decently fruit forward, sweet with a little acidity upfront; winy and brandy like with some lingering dry nutty/earthy tones, a bit of floral in the aftertaste, good but not chocolaty enough for us. Medium roasts mellow the cup a bit, turning it more chocolaty, fuller bodied and refining the fruitiness, making it a cup everyone will love, not just natural processed fans. Reminiscent of a nice Yemen Mokka but a bit more brandy like. Smooth and easy drinking. Dark roasts worked exceptionally well. Chocolaty but not overly roasty, sweet with just a pinch of fruit in the aftertaste.
