A very clean traditional Sumatra cup. Best from medium to dark roasts. Fuller bodied with some nice exotic incense spice notes intermingled with a bakers chocolate and smoky cup profile. Light roast are not recommended (for almost all Indo coffees). Medium roasts were nice and balanced, a little lemony acidity upfront mixing with a bunch of spice and hints of an earthy slightly peaty chocolaty factor; a decent roast point for pour-overs or drip. A very nice fresh crop arrival. Full bodied with a creamy mouthfeel, low acidity and spot on tastes from a traditional Mandheling Sumatra; peat moss, smoky, chocolaty and strong. A clean enough cup to get a decent medium roast, gives a smoother mouthfeel and has a bit of sweetness upfront, darker roasts will turn thicker but also edgier and promote the smokier side of the profile.

Light roasting on these wet-hulled coffees will result in a bit of nutty/earthy like qualities, they bloom into wonderful chocolaty tones into the fuller roast levels. Not super smoky until you hit second crack.

Some of the exotic tones from this cup comes from the awesome bean preparation. Normally Sumatra coffees are very low acidity but many times this is due to inferior processing. In the case of these beans, lighter roast points will show some citric floral character. Like most Sumatra’s, light roast are generally not the way to present the cup, for the roast has not built up (developed) those wonderful chocolaty tones. The acidity and cleanliness this cup shows at the lighter roasts really proves the quality of the beans and enhances the flavors at the fuller roast levels. A strong medium roast is where this cup shines, a hint of crispness, full bodied, lower acidity with pronounced chocolaty spice notes.

A great, fresh traditional Sumatra offering. Great medium to dark roast coffee. Very thick and creamy, a predominately darker toned lower acidity cup of coffee. Good prep for a Sumatra semi-washed. Very clean in its taste profile but will have some classic Sumatra semi-earthy terroir. One will get lots of chocolaty tones (ranging from smooth to bakers chocolate) mixing with that classic Sumatra earthy spice and a bit of smoky tones at the fuller roasts. Good as a single origin or blend component. Sumatra coffees are basically the chocolate stouts of the coffee world, dark toned, semi-sweet, thick with more chocolaty/earthy/spicy notes. Hints of peat like a nice scotch or whiskey.

A very cool cup! Best medium to dark but will hold lighter roasts much better than most Sumatra coffees. Lighter roasts have a little cool lemony acidity upfront, with some soft fruit tones giving it some jazz, but balanced with a dry more earthy chocolaty factor. As you push into the medium roasts, it will get much fuller bodied and become a lower acidity cup cutting out the more lemony floral tones. Still a slight crispness even at these roasts giving a lot to the depth of flavors present. Darker roasts will turn more into a chocolaty spice noted treat. Surprising for a Sumatran coffee, this cup is tasty from light to dark. These unroasted coffee beans are very clean for a Sumatra, which generally are all about the hefty more rustic and strong dark tones; which usually takes darker roasts to see. Although most Sumatra fans will still want to go to a strong medium or dark roast, lighter roasts but can be quite interesting with delicate, sweet and decently smoother features. Light roasts themselves have a little lemony crispness, good body, a sweet edge, with hints of an earthy chocolate factor and lingering, fairly strong black tea like spice notes. Medium roasts remove the lemony crispness and provide a more neutral chocolaty base note with the lovely spicy accents.
