*A very unique Colombian. If you are a traditional Colombia fan, this may not be the cup for you. For you Natural Processed and slow dry fans, a very cool new arrival. Sweet and floral with some strong fruit forward notes. Old world natural, high chaff and uneven roasting.
Lighter roasts have some good acidity, strong lemony floral fading into a wild less refined fruity factor. Traditional light roasts can pull some grassy if you don’t flick a bean or two. If you like a sizzling cup, going light and flicking any beans still golden in color will be a tasty treat. Medium roasts are much easier to achieve and require no flicking, they do not risk the grassy tones, builds good balance with a little chocolaty nutty factor lessoning the acidity and fruitiness just a touch, no matter where you roast this will be a fruit forward cup. Good body with a pronounced toasted walnut and bakers chocolate undertone. A bit of acidity upfront at lighter roast makes it an interesting cup at almost any roast point. Lighter roast promote a bit of herbal spice between the citrus and chocolaty factor – on the sweeter side. Strong medium to dark roasts mute up almost all of the spice notes (the stronger chocolaty tones cover it up) and the cup becomes big bodied and bakers chocolaty.

Very complex lemony floral and sweet tones that settle a bit more on the tea end of the Geisha cups. Lighter roasts accentuate the more lemony floral acidic tones of the cup but also bring out cool soft fruit and jasmine spice; cups will end almost like a top end black tea, leaving complex and dry tones lingering. Can risk a little grassy nutty right at first crack. Good to get a little development past first crack for the lighter roasts. A medium roast reduces the acidity and balances the cup with a more traditional Colombian chocolaty factor, still plenty of identifiable exotic tones. Our favorite roast level across the board. A little less exotic than the light roasts but very drinkable all day while gently reminding you that this is something exotic. Roasts close to or into 2nd crack will turn it a bit more semi-sweet baker’s chocolaty.

A wonderful fresh and clean Colombian offering. Smoother and sweeter than most with a buttery textured body and rich chocolate and walnut overtones; reminiscent of a nice Huila. Lighter roast will have some floral lemony acidity balancing in the cup but we would consider a bit lower acidity all together. Medium roasts one can get a little soft fruit tone balancing with the nutty and chocolaty factor to create a great everyday drinker. Low acidity and fuller bodied this cup shows the classic spirit of Colombian coffee. A little hint of acidity at the light roast points but risks some grassy tones. Medium roasts are great and contain that classic dry toasted walnut tone with a little jazzy spice note. Darker roasts turn a bit more bakers chocolate versus smoky with just a hint of a nutty accent.

Classically toned as some would say. If you touch or go into second crack, one does get some complimenting roasty and smoky tones that turn the cup more chocolaty than nutty. Before 2nd crack, more nutty than chocolaty.

The aroma fantastic, sweet smelling with some nutty/chocolaty and fruity overtones, some of which follow through in the cup nicely. The body is medium/full and has a mild and pleasant acidity. The flavor is very dependent on the roast. Lighter roasts are the brightest and on the dryer side, a bit more of a soft fruit tone comes out in the cup which can be quite tasty but also a bit of citric without much of a chocolaty or nutty undertone. At a Medium Roast, which we though best, you will enjoy more developed notes of walnut, spice with some sweeter red fruit overtones. Darker roasts will bring out more caramel sweet flavors and hints of a dried dark fruit.

A good everyday drinker – this Huila coffee is very smooth, lower acidity with a sweeter than average edge. Medium bodied cup with good mouthfeel, on the nutty/chocolaty side with a hint of fruitiness as the cup cools. Works from light to dark but we liked a strong medium roast the best; rich cup with an emphasis on the smooth nutty/chocolate tones. Lighter roasting accentuates a little lemony crispness and more noticeable fruitiness. A very nice and clean Colombian following the traditional cup profile. A bit fuller bodied with a nice balance of floral versus toasted walnut and bakers chocolate like tones. Light roasts have a bit of crisp acidity upfront with a dry nutty finish. Medium roasts are much more balanced and smooth with the body increasing and the acidity dropping off, more of a chocolaty undertone with an accent of toasted walnut. Darker roasts drop off all the acidity and turn pretty strong down the bakers chocolaty and nutty alley with some added smoky and roasty notes.

This coffee is best enjoyed from a medium to dark roast point. Smooth, rich and buttery textured, lower acidity and a fuller body. Lovely nutty tones combining with a bit of maltiness, some spice accents in the aftertaste with a sweet edge. At lighter points you get some lemony acidity combined with the classic Colombian nuttiness but the malty edge comes off a bit herbal.

Good body and a fairly clean cup. Semi-sweet spicy cocoa tones with some a bit of brightness at the lighter roast points. Lighter roasts are a bit front loaded with floral acidity with a cool soft fruit tone but gets a bit of underdeveloped tastes as well (a little grassy earthy instead of chocolaty). Medium roasts start bringing a more developed and balanced cup to the table. It will retain a bit of the acidity upfront, a cup African coffee fans should appreciate. As one nears 2nd crack, the acidity virtually disappears and one is left with a nice exotic spice and chocolate profile with some hints of a smoky factor.
