A very clean high rated cup this season. Lighter roasts show good citric acidity and development. No earthy funk in this cup like so many Congos can have. Floral, hints of soft fruit balanced with a clean and semi-sweet chocolate spice tones. Not a high acidity cup but does have enough at lighter roasts to scare away lower acidity fans (roast it fuller to drop acidity levels). Medium roasts have a lovely balance, a little fuller bodied, just a small hint of crispness. Brings forth a thicker body and accentuates the lovely spice notes. Dark roasts turn the cup much more potent and filled with rough and tumble bakers chocolate and smoky tones, edgy and strong which some will love.

A unique African offering. Reminds me of an Indonesian Sulawesi almost more than other African coffees. Low acidity and full-bodied. It has a very sweet versus earthy contrast. The earthy is more of a mushroom herbal-like tone that balances well with a strong bakers chocolate undertone. As the cup cools, a little pleasant nuttiness comes out in the aftertaste.

A very cool example of Congo coffee. A bit darker toned and lower acidity than most of its African cousins. This cup is full of bakers chocolate, spice and soft fruit tones. Lighter roasting will show some acidity with hints of soft fruit but will not develop those nice rich and potent chocolaty spice tones than many Congo fans love. Medium to dark roasts were the sweet spot for this cup.

A lovely, crisp, and clean, not overly fruity natural processed. We thought it best right around the medium roast ballpark but will make fans lighter or darker depending on your personal taste preference. Lighter roasting is a bit higher acidity, lemony and floral with some grape skin like fruitiness coming through. A bit more herbal spice right at first crack, needs a longer setup time to shine but will provide delicate chocolaty notes with much wilder acidity and fruity tones. Medium roasts were tasty without the wait! Balanced, tasty, and clean after 24 hours. A pronounced chocolaty factor, medium bodied, hints of crisp acidity backed with a little soft fruit tone and spice. Wonderfully smooth and delicate for a Congo coffee. Dark roasts were tasty right off the bat as well, roasty and stronger but with a sweeter then average edge. To see this cup shine, light to medium roasts are the way to go! Medium acidity, lighter bodied, delicate, sweet cup with strong red fruit tones (strawberry like). Hints of citric and floral jump right out with the fruitiness. Pulls some balance with a little nutty/tea like tones at lighter roasts giving it some awesome depth. Holds up well as one pushes towards second crack, turns the nutty/herbal tones into a rich chocolaty factor with fruity highlights. A bit rougher of a dark tone close to the dark roast mark, touching or into second crack, but everyone still liked it. Touching or into second crack gets a bit bitter with more of an oaky barrel aged tone than sweet red fruit.

A more delicate fruit forward refined cup of coffee. Very clean, sweet with dominate fruit (cascara/strawberry) and floral tones balanced with hints of nutty and chocolaty undertones. Traditional light roasts will have some crisp acidity while fresh leaning it a little more towards floral notes, we would call it front loaded but tasty. Not much balance with any darker tones and can end a little dry, but plenty wild upfront to make natural processed fans happy. Medium roasts will be best for most, medium to low acidity, hints of floral and fruit balanced with smooth and sweeter darker tones. Dark roasts themselves pick up a little bittersweet edge but have wonderful aromatics and good body.

A unique and highly rated cup of coffee! Although tasty from light to dark, to see the lovely overly floral and jasmine like attributes of the Gesha strain, you have to keep the roast pretty light or the darker tones of the cup will cover them up. A more “new wave” light roast, fruity and floral coffee.Light roasts will be loaded with fruity, floral and citric tones. Wonderful jasmine like aromatics balanced with just a hint of chocolaty undertone. All about the lighter sweeter tones at this roast point.
Medium roasts are still plenty floral and fruity, as one pushed the roast it will accentuate the more nutty and chocolaty darker undertones, brings better body & balance to the cup but mutes some of the lovely jasmine tea like features of the strain.
Darker roasts some will love, picks up some black tea like spice but turns the darker tones a little bittersweet with a smoky aftertaste. Covers up a decent chunk of the exotic floral and fruitiness.

A stellar fruit forward cup of coffee. Similar to the Black Pearl Processing but a little stronger and more wild in its fruity factor. Super clean, medium bodied with some decent acidity. Lighter roasts are a bit higher acidity giving some great sweetness and a stronger winy grape and red fruit tone balanced with a more malty dark tone, a coffee version of jellied toast. Medium roasts reduce some of the wild fruity aspects of the cup along with reducing the more acidic notes, but build much more of a malty chocolaty tone. The cup retains a more refined tart red fruit note (think cranberry) up until 2nd crack.

This is a quality cup in and out. Lots of cool tones to play with in the roaster. Very buzzy lemony acidity, often seen in very highly rated lots. Super clean, even just barely finishing first crack – sweet hints of soft fruit; good body and almost a lemonade style cup profile. As the roast progress the body gets a bit heavier with good sweetness in the background. The aromatics get stronger and the chocolate factor really comes out. Usually with these super highly rated guys I don’t recommend going into 2nd crack but with this cup – we still loved it. A bit rougher on the chocolaty side but the soft cherry note still popped right out and the complexity was a bit astonishing for a dark roast.

This is a quality cup in and out. Lots of cool tones to play with in the roaster. Very buzzy acidity, often seen in very highly rated lots, acidic but not super citrus – way cool. Very clean, even just barely finishing first crack, no earthy grassy tones – The yellow has a bit less fruit in the cup then the red but a bit brighter with stronger floral Costa tones. This is a quality cup in and out. Lots of cool tones to play with in the roaster. A bit higher acidity with a strong floral aspect balanced with a full bodied nutty and chocolaty undertone. Slightly fruity especially as the cup cools but nothing like the Red Honey or Natural processed. Yellow honeys are decently closer to a washed processed coffee, where Red Honey is closer to a Natural. Super light roasts are very nutty, almost like peanut butter with some floral overtones, nutty coffee fans will love this but its unique but doesn’t quite pull together the balance. City + roasts to Full City roasts are where this cup will shine. Crisp and clean lemony floral balanced with sweet and smooth chocolaty undertones than linger on the nuttier side.
