This is a quality cup in and out. Lots of cool tones to play with in the roaster. A bit higher acidity with a strong floral aspect, balanced with a full bodied nutty and chocolaty undertone. Slightly fruit forward but not a fruit bomb. The black honey processing really leave a crazy complex cup with tones ranging from lemongrass to red fruit to nutty/chocolaty and smoky undertones. Super light roasts lean the cup to lemony/floral and will be loaded with more citric lighter tones, not very balanced but very punchy and clean. Darker roasts lean it towards nutty/chocolaty more stout like features with fruity highlights. In the middle, one gets layers of all the lovely flavors in the cup. Crisp and clean lemony floral balanced with sweet and smooth chocolaty undertones than linger on the nuttier side. Hints of fruit will pop out but not hit you over the head.

A stellar fruit forward cup of coffee. Similar to last season, this cup is smoother and a little more delicate but contains much of the same flavors our Lajas natural fans are used to. Super clean, medium bodied with some decent acidity and strong fruity and boozy tones.Lighter roasts are higher acidity with a strong fruitiness. Citric, floral and fruit will dominate the lighter roast tastes. Gives the cup some great sweetness and pops right out those natural processed tones many love. Pulls just a pinch of balance with a malty, oak like darker tone. Medium roasts smooth out the wild fruity and acidic tones, builds more of a malty/chocolaty tone in the cup with the fruit/floral highlights. The cup retains a more refined tart red fruit note (think cranberry) up until 2nd crack. A bit of a barrel aged taste as the cup cools throughout the roast points.

This is a quality cup through and through. A little mellower acidity than last year’s red honey offering but just as tasty if not a bit tastier! Lots of cool tones to play with in the roaster. Buzzy lemony acidity, often seen in very highly rated lots. Super clean, works great for those lighter roast points – sweet hints of soft fruit; good body and almost a nutty/toffee-like cup profile. As the roast progresses the body gets a bit heavier with good sweetness in the background. The aromatics get stronger and the chocolate factor really comes out. Usually with these super highly rated guys I don’t recommend going into 2nd crack but with this cup – we still loved it. A bit rougher on the chocolaty side but the soft cherry note still popped right out and the complexity was astonishing for a dark roast.

Medium roasts reduce some of the wild fruity aspect of the cup along with reducing the more acidic notes but builds much more of a malty chocolaty tone. The cup retains a more refined tart red fruit note (think cranberry) up until 2nd crack.

This is a quality bean in and out, best served in the light to medium roast level. Lots of cool tones to play with in the roaster. Higher acidity, very sweet, with some floral tones popping out, just like a high rated Costa should be. A fruit forward offering, slight red fruit but most will pick it up as a grape skin like fruitiness when mixing with the higher acidity. All these lighter tones balance with some nuttiness than will lean on the chocolaty side, especially as/if you push the roast a little darker. Super light roasts lean the cup to lemony/floral and will be loaded with more citric lighter tones, not very balanced but punchy and clean. Darker roasts lean it towards nutty/chocolaty with more stout like features & fruity highlights. In the middle, one gets layers of all the lovely flavors in the cup. A very nice co-op production Tarrazu that follows the classic Costa terroir, floral acidity versus nutty and chocolaty tones. A wonderful balance of flavors that can accommodate anyone’s personal tastes, dependent on roast level. Lighter roasts are brighter citrus and floral balanced with hints of chocolaty and nutty undertones, small soft fruit notes pop out at pre-second crack roasts. Clean and rich with a sweet edge, a great daily drinker. As one roasts more towards a strong medium, it mutes up much of the citric and floral bringing out a little hint of caramel within the nuttiness of the cup, although not as citric one can still find cool floral tones throughout the roast spectrum.

A more delicate fruit forward refined cup of coffee. Very clean, sweet with dominate fruit (cascara/strawberry) and floral tones balanced with hints of nutty and chocolaty undertones. Traditional light roasts will have some crisp acidity while fresh leaning it a little more towards floral notes, we would call it front loaded but tasty, not much balance with any darker tones and can end a little dry, but plenty wild upfront to make natural processed fans happy. Medium roasts will be best for most, medium to low acidity, hints of floral and fruit balanced with smooth and sweeter darker tones. Dark roasts themselves pick up a little bittersweet edge but have wonderful aromatics and good body.

A lovely new Costa Rican arrival. Good from light to dark. Medium to low acidity, first notes to hit the tongue are some floral and soft fruit, not too sharp and on the sweeter side, pulls some balance with nutty and chocolaty undertones that gets stronger as you roast darker.A traditional tasting Costa Rican with the classic floral versus chocolaty cup profile that most coffee fans will love, the addition of a little soft fruit tone at light/medium roasts is a nice semi-exotic twist.
Light roasts are a bit sharper showing some raw acidity in the cup, accentuates the floral/fruity. Medium roasts pulled the best balance and quite smooth and defined with a sweeter edge. Darker roasts get a bit hefty and semi-sweet, mostly chocolaty with just a hint of floral in aromatics and as the cup cools.

A very nice and clean Costa. Lighter roasts will show that classic Costa sweet floral acidity, a little bit on the lemony side balanced with a little dry nutty/chocolate undertone. As the roasting pushes more into the medium category, the cup develops a bit more body and reduced acidity levels giving a much smoother mouthfeel and more defined chocolaty factor. Creates a wonderful balance of tones. A little lighter floral, a little chocolaty/nutty, very pleasant drinker. Darker roasts hold up nicely as well, turn the cup more stronger and more bakers chocolate like, the roasty notes from darker roasting do compliment the cup.
