Very sweet and super clean with a little fuller body for this type of bean. First notes to hit are the winy, fruity, and floral aspects of the cup – very strong at the lighter roasts and show what a Geisha strain can bring to the table. There is a hint of balance with a little chocolaty note at the lighter roast points but if you roast it light, make sure you like the more acidic fruity tones coffee can bring. Medium roasts brought great balance with that wonderful classic Costa chocolaty factor, a bit less acidic, medium roasts will be a cup anyone would love to drink but retains the honey processed fruit forward note. Darker roasts were also surprising pleasant but much harder to tell the Geisha roots. The fruity tones still pop out of a more bakers chocolate undertone right at second crack, a little smokiness in the finish is just what some will be looking for.

Tasty from light to dark, a great jazzy everyday drinker. Medium bodied with medium to low acidity. This cup has great contrast between the sweet floral and nutty/chocolaty undertones. Lighter roasts are tasty but a little dryer, the floral factor pops right out with just a hint of a lemony acidity and a soft fruit tone. Nutty and chocolaty tones can be found especially as the cup cools. Medium roasts were our favorite roast point, pronounced and smooth darker tones with very floral aromatics and a sweet edge. Works great darker as well but will pick up stronger bittersweet tones.

Light roasts will have a bit of sharp lemony floral acidity and more of a nutty tone than chocolaty, one can see hints of caramel with some setup which is a pleasant treat. Medium roasts really start to shine creating a lovely balance of tones, hints of floral and soft fruit mixing with a more chocolaty than nutty undertone. Dark roasts work nicely as well; low acidity, a bit more semi-sweet chocolaty toned, a bit fuller bodied and not too roasty, a couple complimenting smoky tones.

A very nice co-op production Tarrazu that follows the classic Costa terroir, floral acidity versus nutty and chocolaty tones. Best at medium to dark roasts, a lovely daily drinker. A good balance of flavors that can accommodate anyone’s personal tastes, dependent on roast level. Lighter roasts are brighter, sweeter and more floral, balanced with hints of dryer, nutty undertones. Medium roasts had the best balance, smooth with a slight chocolaty edge and pronounced nuttiness in the aftertaste, just a hint of crispness to the cup. A more delicate fruit forward refined cup of coffee. Very clean, sweet with dominate fruit (cascara/strawberry) and floral tones balanced with hints of nutty and chocolaty undertones. Traditional light roasts will have some crisp acidity while fresh leaning it a little more towards floral notes, we would call it front loaded but tasty, not much balance with any darker tones and can end a little dry, but plenty wild upfront to make natural processed fans happy. Medium roasts will be best for most, medium to low acidity, hints of floral and fruit balanced with smooth and sweeter darker tones. A very sweet and fruit forward bean. Clean cup, medium to full bodied with higher acidity. Light to medium roasts are where this bean will shine. Being a brighter natural processed it has some great sweetness and a stronger winy/citric and red fruit tone upfront, which balance with classic Costa nutty and slightly chocolate like darker tones. A fun bean to play with roast level: tip the scales either lighter and fruitier or darker toned nutty/chocolate like. Very light roasts (with a longer setup) can introduce a little toasted grainy note giving a comparable to jellied toast like tastes, but with a lemony citric kicker. Medium roasts build great body and mouthfeel, cut out much of the citric but still overlays the nutty & chocolate like tones with a wonderful and sweet fruitiness. Darker roasts are strong and have a bit of bittersweet contrast. It keeps the sweetness and will still be slightly fruity, but contrasts with stronger bakers chocolate (slightly bitter) like tones with some roasty/smoky accents.

A very clean classically toned Tarrazu cup. Lighter roasts are a little lemony with good floral qualities and very little earthy or grassy tones; a good sign of higher quality beans. While it is super hot, a bit front loaded on the floral side but as it cools you can pick up hints of a nutty and chocolaty factor. A longer setup helps balance those lighter roasts. Medium roasts build the darker tones nicely and add a little body to the cup also reducing the lemony acidity to just a hint, a great roast point for most. Darker roasts work nicely, still retains a little floral especially in the aromatics, much more bitter-sweet chocolaty tones with a lingering smoky finish.
