This is not your average Colombian cup of coffee. Crazy high rated, best at the light roast points and chocked full of brighter and more fruity characteristics. These green coffee beans are clean and balanced, the first notes to hit the tongue are the pink lemonade style acidity, on the stronger side and provides plenty of sweetness and floral character to go along with it. Although a washed processed coffee, Faiber delayed running the washed processed batch for 2 days, which gives hints of red fruit to the cup, a beautiful addition and not overdone. Mixing with the higher lemony acidity is what actually gives this cup its pink lemonade taste attributes. A cool descriptor being a Pink Bourbon strain. All the lighter tones balance out well with a nutty/caramel/cola darker tone. Faint at the light roasts but gives the cup enough contrast to bring it up to the exceptional level.

A good cup from light to dark but to showcase what makes these beans special, light to medium roasts will be the way to go. Light roast points are very jazzy, citric/floral acidity mixing with a little soft fruit tone, pulling some balance with a sweet edged nuttiness. With the red fruit and more citric components, it makes us think pink lemonade upfront, but some were more down the tart raspberry alley. Medium roasts get fuller bodied and smoother, good nutty/chocolate like undertones with less crisp citric/floral acidity. Darker roasts will kill most of the brightness but will retain a little hint of fruit as the cup cools. Much more chocolaty and robust at the darker roast points, potent brew, can have a little stout like bitter aftertaste but will hit the tongue on the sweeter side.

A wonderful classic example of Huila coffee. Highly rated and tasty from light to dark. Lighter roasting will have some acidity and soft fruit tones, not super lemony, reminiscent of green apple with a bit of sweet nutty and chocolaty balance. Medium roasts are a bit less acidic and fruity, brings forth a thicker body and more pronounced buttery textured nutty and chocolaty tones, smooth and sweet edged. Dark roast get real thick and creamy but turn semi sweet. If taken into 2nd crack gets a little smoky but the more roasty aspects compliment the cup.

A good everyday drinker – this Huila coffee is very smooth with pretty low acidity. A sweeter soft fruit tone at a nice medium roast balancing with a bit of chocolaty nutty factor. Medium bodied at the medium roast mark, a little fuller bodied at the darker roast points. Darker roasts will mute the sweeter fruit tones and deliver a much stronger bakers chocolate tone with a smoky accent.

We thought it best within the light to medium roast levels. Jazzy citric acidity, a little floral some would say, a hint of soft fruit providing a sweet edge along with some wonderful darker toned balance, on the walnut/almond side. Light roasts themselves will be a bit citric, the cup is very clean and handles the roast level well, but needs a longer setup and a tongue that doesn’t mind a bit of acidity. Medium roasts are great daily drinkers and promote a little hint of caramel in the nuttier cup profile, retains just a pinch of citric acidity upfront but it really helps with the depth of flavors. Good body with a smooth mouthfeel. Dark roasts were equally as tasty but it loses the cool crisp citric, and soft fruit, that shows at lighter roasts. Full bodied with stronger nutty and chocolate like tones, a bit of roastiness but it compliments the cup nicely.

A nice and clean cup. Hints of citric acidity at lighter roast points creates a nice mix of nutty/chocolaty and floral tones, well balanced with greater depth of flavor but a little thinner compared to some baseline offerings. The cup gets a bit fuller bodied with more traditional darker tones the fuller you roast. Around a nice medium roast the more citric floral tastes drop out of the cup and are replaced with a slight smoky accent on the heftier more toasted walnut/chocolaty base.

Lighter roasts have very nice and clean acidity, a bit lemony, some floral with hints of a fruit tone but depending on how light can get a little grassy and nutty as the balance. Just a little development past first crack is a good sweet spot. Medium roasts are clean with a bit of the acidity muted, sweeter edged with a more traditional nutty/chocolaty factor. Darker roasts are a bit thinner than most Colombians but full of bakers chocolate notes. A nice clean cup of Colombian coffee! Best from medium to dark roasts. Lighter roasts show some nice characteristics but the coffee really blooms pushing the roast a bit. Light will have a little lemony floral acidity; would still consider it a low acidity bean, balanced with a semi-sweet dryer toasted walnut undertones, a little herbal spice in the after taste. Medium roasts remove the citric edge to the cup, turn it a little creamier, developing the herbal tones into chocolate like notes with nutty accents, a sweet edge. Dark roasts turn heavy bodied and more semi-sweet. Smoke, chocolate and nutty tones will dominate the cup. A very nice cup from light to dark. Will have medium acidity at the lighter roasts but will reduce into a lower acidity cup at the darker roasts. Crisp, clean and sweet with great mouthfeel and depth of flavors. Lighter roasts show a lemony acidity with a fruity accents along with hints of dryer nutty and chocolaty tones. As one pushes into the fuller roast levels, the toasted walnut tone accentuates getting much stronger. Medium roasts we thought best for daily drinking but fun to go lighter or darker depending on the brew method. A bit jazzier on the lighter roasts for pour-overs, perhaps a little darker for espresso to build those toasted nutty and chocolaty tones. A good bean to play around with.

Overall, lower acidity and fuller bodied with some classic Colombian nutty tones in the aftertaste. A little spice in the cup creates wonderful depth of flavor. At lighter points you get some brighter and crisper tones, the hints of fruit with just a pinch of darker notes. Medium to dark roasts are where you get the more classic Colombian cup with a very sweet edge and more nutty/chocolate tones.

A wonderful very clean and smooth, sweet edged Colombian. Great from light to dark, our favorite was a nice medium roast, pulled the best balance between light and dark tones and was super easy to drink. A very chug-able cup. A little hint of nuttiness like a good Colombian should show but all in all the cup leans more towards chocolate like, a hint of a soft fruit tone at the light to medium roasts which adds good sweetness without being acidic. Good body and fairly low acidity. Darker roasts will get more robust and semi-sweet, but if looking for strong and dark, we would look at the other Colombians. A wonderful daily drinking cup!
