Great from light to dark roasts. Lighter roast points are very jazzy with brighter features, citric mixing with a little sweet hint of a fruit tone, pulling some balance with a bit of nuttiness. Medium roasts get fuller bodied and smoother, slightly chocolaty with less crisp citric/floral tones than the lighter roast points. Darker roasts will kill most of the crisp acidity but will retain a little hint of fruit as the cup cools. Much more chocolaty and robust at the darker roast points.

A very fresh crisp and clean Colombian coffee arrival. These coffee beans are good from light to dark but a nice solid medium roast was what won us over on this lot. Stronger more spicy cup profile. Lighter roasts have very crisp and clean acidity, a sweet lemony floral, with hints of a black tea like spice, some dry nuttier tones in the aftertaste. Just a little development past first crack is a good sweet spot for lighter roasting. Medium roasts are richer with less lemony floral, more traditional nutty/chocolate like tones and some lingering spice in the aftertaste. Darker roasts are full of bakers chocolate notes, more semi-sweet smoky with nutty accents. A tasty sister lot to the SMBC Sierra Nevada we just ran out of. Very similar tasting but a touch gentler with the acidity. Lighter roasts have clean medium level acidity, a bit lemony, some floral with hints of a fruit tone but depending on how light can get a little grassy and nutty as the balance. Just a little development past first crack is a good sweet spot. Medium roasts are clean with a bit of the acidity muted, sweeter edged and more traditional nutty/chocolaty factor. Darker roasts are a bit thinner than most Colombians but full of bakers chocolate notes. Surprisingly just a hint of smokiness out of the cup, didn’t pick up too many roasty notes.

Very complex lemony floral and sweet tones with a hint of orange in the aftertaste. Real light roasts get a little more lemony floral with just a hint of soft fruit. Caramel tones start to develop at a medium roast along with the orangish sparkle and continue until close to 2nd crack when it turns a little more bakers chocolaty. A super cool mix of floral, soft fruit, caramel, and chocolate tones. Very sweet upfront regardless of roast level.

Fuller bodied and a bit higher acidity (more buzzy than citric), this is a great medium roast coffee. Tasty from light to dark but smack in the middle was our favorite. Although semi-fruity, this is not like an open air natural, its a bit more subtle, more grape skin like than traditional red-fruit. Pulls some balance with a sweet classic Colombian nutty/chocolate darker tone with some exotic spice accents, reminiscent of bergamot tea (which is usually an Ethiopian descriptor). On the sweeter side, one can get a little hit of caramel between the sweet nutty, chocolaty and fruit like tones. Lighter roasts are a little thinner with lots of floral/fruit tones, A nice medium roast pulled great balance between fruity and chocolate spice, buzzy acidity and a sweet edge. Great and very lively red fruit tones, a bit of floral, a little hint of citrus all combining with a traditional Huila undertone (jammy, nutty and chocolaty). Great medium to borderline dark roast coffee. Lighter roasting will really promote the more floral aspects of this cup along with the red fruit and acidity. As one pushes closer to 2nd crack, the acidity mellows considerably, the body gets much larger and its more jammy bodied qualities come out with plenty of fruit tones retained.

An awesome exotic Colombian, tasty from light to dark. Brighter, sweeter and thinner bodied than you average Colombian. Full of floral, soft fruit and chocolate like tones.Lighter roasts will have strong citric floral notes with some red fruit highlights. Hints of chocolate herbal spice will pull a little balance between the light and dark tones. Light roasts will pop out the more exotic tones in these beans, they will get more classic Colombian character the darker you roast. Medium roasts are more balanced, reducing the stronger citric component, pronouncing the red fruit and bringing forth a thicker body with more traditional rich nutty & chocolaty Colombian tones. Darker roasts into 2nd crack are a little edgy, semi-sweet chocolate and spice tones will pack a punch, the roasty & smoky tones will compliment the darker tones nicely, a hint of a fruity tone can be found in the aftertaste but just a hint.

A great cup from light to dark roasts. Lighter roasts will front-load the cup tastes with floral buzzy acidity and fruit tones. Heavier on the citric, but some red fruit will shine through. Pulls a little balance with a sweet nuttier undertone. Medium roasts bring out more of a chocolaty aspect, muting the citric components; pops out the red fruit a bit more and provides a fuller bodied cup. Smooth, rich, sweet and balanced, a great starting point for most unless you love a very bright cup. This cup has just about everything I personally love in a Colombian. A little soft fruit tone upfront with just a little hint of sweet acidity balanced with a nice nutty caramel tone and finishing with a little bakers chocolaty factor. Smoother than most and without that very dry nutty and herbal tone that one commonly sees out of Colombia. Clean, smooth and rich coffee; a great everyday drinker.

A top notch coffee; crisp, clean and sweet. Tasty light to dark but we thought a nice medium roast presents it best.
Lighter roasts accentuate the crisp lemony acidity with a stronger red fruit tone. Pulls a little balance with some classic Colombian walnut/chocolate, but its pretty faint. Lighter roasts produce a pretty front loaded cup (full of lighter fruity/floral tones), but is where the honey processing notes will really shine.
Most will likely want to start with a medium roast; gives a more traditional cup with less citric and fruit tones, bringing the more nutty/chocolate tones to the foreground and moving the exotic fruity/floral to hints in the aftertaste. A good roast if you generally do not like lighter roast points.
Dark roasts work, gets a little exotic fruit tone still in the cup, especially as it cools, but a shame to an extent, much cheaper Colombians will taste just as good if not better at the into second crack roast points.

All sorts of cool unique flavors can be found in this cup. The brighter tones tend to range from a lime/lemon citric component at the lighter roasts to more of a grape skin with a limey aftertaste in the medium roast range. The acidity is pretty high at the lighter roasts but mellows greatly at a strong medium to dark roast. The balance of the cup comes from an almost cola like tone that turns a bit nuttier into the darker roasts. Medium bodied, super clean with some far from traditional Colombian tones.

A very nice fruit forward coffee of coffee. Lighter roasts have nice sweet lemony acidity with strong red fruit tones accompanied with some tea like spice. Pretty front loaded cup at the light roasts, not much for chocolaty or nutty tones but a wonderful tasty, clean and exotic cup as long as you like some acidity. Medium roasts give much more of a jammy body and less citric tones leaving the red fruit notes to shine through, a bit of darker toned balance can be found, more of a chocolaty cup with some dry nuttiness in the aftertaste. A good roast if you generally do not like lighter roast points. Dark roasts burn out most of the fruit tones but not quite all (which is a bit rarer for dark roast) for a rich, roasty and chocolaty cup.
