A very nicely balanced cup of coffee. A little hint of acidity upfront providing some floral and soft fruit at the lighter roasts, balanced with a semi-sweet nutty chocolaty factor. Super light roasts risk a little grassy/herbal but it straightens out at a city+ (medium) and holds up as dark as you want to take it. The darker you go, the more body and edgy chocolate the cup will pick up, once you hit 2nd crack, expect some smoke and roasty tones to compliment the nutty/chocolaty factor.

A very fresh and tasty Brazil! Lighter roasts show lemon, floral & soft fruit contrasted by a nuttier (almond like) undertone, a sweet edged cup. The two combine for a hints of caramel, quite tasty for you light roast fans. Medium roasts are richer, more of a developed chocolaty tone and decently less nutty; mutes up the soury floral edge, retains a little hint of soft fruit as the cup cools. Fairly neutral tasting and very chuggable. Darker promotes a thicker body and introduces a slightly bitter contrast that works very well for espresso.

Burundi Bourbon – Mahonda Station – Washed Processed
A good cup from light to dark. A more potent brew, sharing some roots with Kenya coffee. A bit stronger citric tone upfront at lighter roast points. Herbal, chocolate, spice to balance out the bright features. Medium body and creamier mouthfeel, medium acidity with rich chocolate, herbal and spice notes. Lighter roasting will have a noticeable crisp lemony floral edge, balanced with a nutty/herbal/cocoa dark tone. Holds up lighter but needs a longer setup and can risk a little vegetal edge, shows a little hint of caramel and is much sweeter than the fuller roasts. We found it best to push the roast into the medium category to build the richer dark tones, muting up some of the classic African brightness: comes off nice and chocolaty with some herbal/spice balance. Dark roasts are strong and semi-sweet with a full body, complimenting roasty and smoky tones. We couldn’t find a roast we didn’t like with these beans, if you roast lighter, just make sure you do not mind a little stronger citric component.

This is one exotic coffee even for natural fans. A good example of very strong anaerobic fermentation, keep in mind, strong fermentation is not for everyone. A potent brew and a super complex cup: red fruit, citrus, booze, spice, oak, nut, cocoa. Best served at the light to medium roast level. Crisp and sweet edged, fuller bodied with a creamier mouthfeel. Nothing can quite prepare the tongue for the tastes on strong natural processed coffees, but if you’re a fan, do not miss this one. Very complex cup and not as overly fruity/winy as the open air natural, lots of darker tones to these beans. The lighter you roast, the more wild this cup gets. If you want to lean the cup towards the fruity and sweet tones, keep it on the lighter side. For very complex darker tones, boozy rum like spice with oaky complexities, a strong medium to borderline dark roast is the way to go.

Clean, sweet and balanced, this is the Yunnan offerings for most coffee fans. Best at the light to medium roast levels: there is a little crisp citric upfront, a bit more lime than lemon, a hint of red fruit giving a sweet edge. These lovely lighter tones pull some balance with a nutty/chocolate like undertone with a bit of spice, accentuated as you push the roast darker. Medium bodied, medium brightness levels, small hints of red fruit more noticeable as the cup cools. Light roasts themselves are much more citric, good to give a longer setup if shooting light, mellow out the crispness a bit. Turns much more chocolaty at the darker roasts but will introduce potent bitter, semi-sweet chocolate like notes. Medium roasts present the best balance and would qualify as a jazzy daily drinker.

A very fruit forward and floral exotic Colombian. All sorts of cool unique flavors can be found in this cup from the slow dry natural processing and boutique fermentation. The brighter tones tend to range from a lemon citric component at the lighter roasts to strong stone fruit in the medium roast range. The acidity is pretty high at the lighter roasts but mellows greatly at a strong medium to dark roast. The balance of the cup comes from an almost cola-like tone that turns a bit nuttier into the darker roasts. Medium bodied, super clean with some far from traditional Colombian tones.

This is Sabastian’s family coffee (a wonderful Burman Coffee employee), small batch production shipped in by airplane to give our customers some of the freshest coffee poddible. Processed in early August.
Green coffee from a family farm in Miraflores, Gigante municipality (Huila, Colombia): It is a Castillo variety, washed and harvested at altitudes of 1,600–1,900 m, hand-selected. It arrives by air in small batches to preserve its freshness (harvested in late July 2025 and threshed in early August). It presents an exceptionally clean and balanced cup, very versatile depending on the roast: in light coffee, it shows a medium body with caramel and nuts, an intense floral aroma and orange-like citrus with slight herbal and spicy nuances; in medium coffee, it gains structure, with chocolate and a subtle hint of lemon predominating, with a lingering nutty note, lively acidity, and balanced sweetness; in dark coffee, it offers a robust body with deep cocoa and a hint of black tea, while maintaining moderate acidity.

Low acidity, smooth body, and a clean, mellow sweetness. Best from medium to dark roasts. Primary cues of baker’s chocolate and cedar/soft spice, with a round, calmly sweet finish Monsoon character minus the caffeine “edge.” As roast deepens, expect more cocoa/wood and a touch of malt. Unlike its caffeinated cousin, there is some earthiness but its not over the top, the decaf monsooned is more rich and chocolate/earth with some lingering spice.

Lighter roasting presents some nice honey processed features: citric, floral, soft fruit with an almost oak/peat like finish, sweet & complex but does risk some underdeveloped tones if you nail it a little too light. Medium roasts were our favorite, still balanced and complex but will develop the traditional chocolate and smoky tones for which Dominican coffees are known for – to balance out those more exotic fruity and citric tones. New 2024/25 Crop! A very cool, very exotic cup of coffee. One can tell this is a slow dry natural processed coffee with its strong ripe red fruit tones upfront. Lighter roasting presents a ton of floral and fruit with an almost oak/peat boozy finish, very sweet with just a ton going on but does risk some underdeveloped tones with its two-toned roasting. Medium roasts were our favorite, still plenty wild but develop enough of the chocolate and smoky tones – which most Dominican coffees are known for – to balance all those more exotic fruity and citric tones. Darker roasts will burn out most of what distinguishes this cup, the washed processed handles those roast level much better; interesting and still exotic but strong and edgy, it will retain some fruity factor with very strong and less sweet, smoky, tobacco and bakers chocolate type notes.

Clean, bright, sweet with a very diverse flavor set. Stone and darker fruit, citrus & floral, and spiced chocolate tones are the main flavors one can see in this cup, either accentuated or muted depending on roast level. Nice jammy body will be seen in the medium to borderline dark roast mark. Very dependent on roast – lighter roasting gives much more of the citrus, red-fruit with just a hint of a spicy chocolaty factor, a much dryer finish. Darker roasts produce much more of a bakers chocolate cup with a hint of a strawberry like fruit note and good sweetness, far less acidic. A very enjoyable cup from light to dark.

Best on the light to medium roasts but a wonderful cup at almost any roast level. It will have some decent brightness, lemony with just a pinch of peachy or tropical like fruitiness. The aromatics are unique being overly floral with some classic Ethiopian hints of lavender/jasmine. The lighter tones pull some balance with the classic tea (herbal/spice) like darker tones. Medium roasts really mellow out the acidity and reduce the citric & floral tastes, creates a bit more body and a much more recognizable chocolaty factor. A mellow cup on the sweeter side with nice darker fruit tones popping right out. The cool natural tones balance with a tea like spice note, a sign of its roots, Yirgs are known for their more tea like dark tones. Many would call it a chocolaty undertone with a jazzy spice note but we like the tea reference and most will agree. A bit more delicate of a cup with a little lower acidity. Depending on what you like this can be a real perk, fruity and sweet without risking high acidity or overly sour tones at the lighter roast points. A great cup from city+ to full city roasts. Light medium to dark medium some would say. Although a natural, this is not a super fruity coffee, will show hints at lighter roasts along with some citric. These beans are more about the complex chocolate and spice notes, the sweet fruit highlights are just a little perk and balance the cup nicely. At lighter roasts it’s distinctly floral, Ethiopians heirloom strains in action, pronounces lime and lemon-zest acidity with a little sweet red fruit tone, strawberry like. These lighter tones comingle with a rustic chocolate and spice, slightly herbaceous at lighter roasts. At medium roasts it turns smooth and balanced, with a silky body (between light and medium) and a rustic chocolate like backbone that supports the hints of fruitiness well. Pushed darker it gains punch and shifts toward dark/baker’s chocolate and cocoa, while maintaining a medium-soft body. Overall: floral-leaning, sweet, and very clean.

Good from light to dark but we thought best at a strong medium to dark roast. A good bean to go after a rich and semi-exotic chocolate tone with some wonderful aromatics and a bit of spice. Light roasts are more citric and floral with wonderful aromatics and a sweet edged, a bit punchy in the citric department and contrasts with a bit of nutty/herbal/grassy undertones. Works well but needs a much longer setup time bring out smooth and clean tastes, sharp and grassy/herbal if drank too soon. Medium roasts will bring some lovely balance to the cup and provides a clean tasting brew without waiting a week to drink it. One starts seeing the chocolate aspect but will still pull some balance with the citric and floral. Less aromatic than the light roasts, but you can still tell you have a nice Ethiopian with one sniff. Darker roasts touching or into second crack are real robust, strong and semi-sweet, more bakers-chocolate like with tea like spice in the aftertaste.

A crisp, clean, sweet and very floral cup (jasmine like), with some classic Yirgacheffe chocolate and tea-like spice contrast. Light roasts are delicate and pretty bright, accentuating the floral but also the herbal tea like components. Overall the acidity is medium and is perceived more as mandarin orange than sharp lemon; the sweetness is reminiscent of caramel, and as the temperature drops, a cocoa base is felt, adding more body. Subtle fruity notes (blackberry/sweet citrus) and a slight spice note; a silky medium body and a very clean finish with hints of honey and cocoa. A rich and expressive coffee in which, although there is fruit, the floral notes dominate with a tea-like character.

A wonderful example of a darker toned, lower acidity Ethiopian. We thought best from medium to dark roasts but it will still find fans at lighter roast points. Lighter roasts will have some buzzy acidity and just a hint of lemon/floral balanced with smooth and rich herbaceous spice notes. A bit more on the bergamot/dark-tea like Yirgacheffe profile. Medium roasts turn the herbaceous notes towards the chocolaty side moving the herbal/tea like tones to the aftertaste. A bit fuller bodied, lower acidity with complex darker tones. Dark roasts turn semi-sweet and even more chocolaty, the spice is readily noticeable and the body picks up a bit of a creamy factor, the roasty/smoky notes mix well with the darker toned profile of this bean but will not hold its sweet edge like most Ethiopians.

A classic Guatemala with an inviting, straightforward profile. Lighter roasts have a silky mouthfeel and medium body, a pronounced floral/citric brightness, leans toward orange zest. The core is nutty, down the almond alley, supported by a chocolate/caramel underpinnings that round the cup. Good to let light roasts setup a bit longer or risk a little herbaceous tone. Medium to dark roasts bring out the larger body and reduce the brighter characteristics, making the dominate taste malty and nutty tones, medium roasts will have a pinch of citric for balance, dark roasts will not. A sweet cup until you touch second crack, then turns a bit bittersweet. Best tasted hot: at higher temperature the floral and citrus notes shine; as it cools they soften and the almond–chocolate side comes forward, keeping good sweetness and a comforting feel.

Light roasts will highlight the higher rating but will be a little acidic for some. Medium roasts and very smooth and make for a great every day drinker. Darker roasts retain a very sweet edge but will produce a much flatter more potent cup. Lighter roasts have a hint of citric and a red-apple sweetness, supported by a gentle lemon/mandarin brightness that’s lively but not sharp. A light floral lift rides over a chocolate–caramel foundation; as the cup cools the tastes stay together showcasing the cleanliness, adds a soft hint of ripe stone fruit. Balanced, approachable, and versatile across brew methods. Medium roasts build up a bit of body, retaining just a hint of apple like acidity, pronouncing the smooth and nutty, chocolate like tones. Darker roasts get a bit roasty, but still have a nice and sweet edge, the most chocolaty cup profile assuming you don’t mind a bit of roasty/smoky to accompany it.

A very clean and fresh batch from Selva Negra. A little citric & floral acidity upfront, balanced with nice complex nutty & malty undertones. Light roasts are going to be a little front loaded with the brighter characteristics, a higher rated cup meaning one will notice some decent crisp acidity at the light-medium roasts. Will give great depth of flavor but may be a little sharp for some. Our favorite roast and a great everyday drinker was in the medium roast ballpark, builds more of a smooth and creamy cup with a sweet edge, reducing that perceived acidity to just a pinch. Turns much stronger, a robust cup most would say, into the darker roasts but shined nicely; fuller bodied with strong malty and smoky tones, still a sweeter edge to it which darker roast fans will love.

Great light to medium roast coffee. Although we have carried the San Felipe lot for years, having the Geisha separate this season has brought a ton of new tastes. East to tell the difference when compared to the other strains Selva Negra grows. Best at the light to medium roast level, these beans have a bit more acidity than anything else from Selva Negra. The cup is very floral and citric especially at lighter roasts. Not quite jasmine floral, a little more traditional citric, but very tasty; delicate and sweet edged. Where one can see the prime Geisha attributes is in the darker tones of the cup, black tea spice jumps right out. Light roasts are heavy on the citric and floral balanced just a touch of tea like spice with herbal overtones. Medium roasts are where most will want to shoot, defined tea like spice with some sweet crisp floral upfront.
