We thought it best right around a medium roast; balanced and sweet. Hints of sweet citric floral upfront comingle with smooth defined malt like tones, just the tiniest hint of a fruity factor in the aftertaste. Lighter roasts get much crisper, dominated with more floral citric fruit tones, lemony most would say but does still show a little malty undertone. Darker roasts cut out the more floral aspect of the cup and are very rich and smooth, more semi-sweet but still very malty, into second crack adds some complimenting smoky tones. Hard to find a bad roast point with these beans.

A beautiful Geisha top lot. This cup has a lot of layers of complexity which will mostly be shown off at the light to medium roast level. Lots of floral fruity notes with layers of spice ranging from jasmine to bergamot balanced with a sweeter Panamanian malty tone. Real light roasts are strong with the acidity and will be very floral and front loaded hiding some of the delicate soft fruit tones, they tend to pop out with a little setup, wonderful aromatics but a little frontloaded with the acidity. City + to Full City roasts are the sweet spot, light/medium to strong/medium.

A clean, sweet and smooth cup of coffee one can drink all day long! A little fuller bodied at the light-medium roast level with a great balance between the lighter winy/floral notes & nutty/malty darker tones. Similar to Guatemalan coffee. Some acidity at lighter roasts but just a hint, medium to dark roasts would be marked as low acidity. As one pushes it into the medium roast range, the very sweet nutty tones come off a bit caramel like. Still plenty malty, it will linger on the tongue. Dark roasts turn pretty strong with the sweeter malty cup profile mixing nicely with smoky and roasty notes.

Wow, super tasty but you can tell it is something unique. Definitely still a light roast coffee and very high scoring: very floral with higher acidity and a ton of fruitiness. You can see the Ethiopian heritage is how floral this cup gets upfront the addition of all the sweet stone fruit tones combine wonderfully. Where this cup differs from say a Geisha coffee, the darker tones to this cup are almost more Java like, rustic chocolate spice. Great from light to dark. Light roasts will show great depth of flavor and produce a very clean cup. Some acidity, which brings lemony and floral tones to the front end of the tastes, balances them with a sweet edged nutty/malty undertone, hints of a vegetal spice. As one pushes the roast a little darker, the body increases, as the acidity and vegetal spice dissipated. Made for a very lovely daily drinker in the medium roast range; sweet, smooth & complex. Pushing the beans darker, the citric and floral acidity drops nicely to a crisp hint or none at all, the malty tones can turn quite robust as you approach or touch 2nd crack. Lighter roasts are where this cup is best served, good clean acidity, very sweet and floral, a bit of jasmine especially in the aromatics with clearly noticeable and very clean stone fruit tones balanced with a bit of tea like spice. Really an amazing soft and refined fruit tone for a washed processed coffee. Wonderful how the cup breaks what most think of washed processed coffees. With those Geisha floral and spice notes popping right out even at light roast points, a cup you Geisha fans will not want to miss. If you are used to washed processed Geisha, keep in mind this coffee tastes almost like a super clean rich honey processed coffee, it is not dark toned and loaded with some bergamot like many washed Geishas.Price: $39.99/lb - 38.79/lbPrice: $39.99 -

This Mokka has the best story and rating out of all the “super premium” Panamas we sourced this year. A Panama Mokka, a true Mokka strain coffee. The Best Of Panama competition did a decent writeup on the sister chop to these beans which ended up going for $142.50/lb! Boy are we glad we bought this lot well before the auction, what a gem.
From light to dark you are in for a tasty treat. This cup is filled with unique floral and fruit tones throughout the roast levels that balance with a wonderfully spicy chocolaty undertone. A very clean coffee, a bit higher acidity especially at the lighter roast points. Although this is one heck of a tasty treat for most, if you do not like fruitier, sweet and floral coffees, this might not be for you. We found medium to border line dark roasts to have a sugary sweetness comingling with layers of soft fruit and a dryer complex semi-smoky chocolaty spice, layers and layers of goodness. If it were not for the price, easily a cup we would drink everyday….

A clean, sweet and smooth cup of coffee one can drink all day long! Lighter roasts will show some acidity, bringing some lemony and floral tones to the front end of the cup and balance with a little sweeter edged nutty/malty undertone. A little fuller bodied at the light-medium roast level which made it very easy to drink. As one pushes it into the medium roast range, the acidity drop nicely to just a crisp hint, the nutty tones turn into hints of caramel and accentuate the malty cup profile, becoming the predominate tone. Dark roasts turn pretty strong but the nice sweeter malty cup profile mixes nicely with smoky and roasty notes.

A very tasty Panamanian coffee assuming you are not expecting a fruit bomb of a cup (like many of the other Panama Naturals). Lighter roasting gets a little lemony floral upfront, fuller bodied, with complex dry malty spice tones already starting to pop out. Can come off a little herbal super light but will setup out of the taste after about 3-4 days. Got to be a little patient if you love the lighter roasts. Medium roasts were our favorite, a bit smoother, clean and well defined even right out of the roaster. Low acidity with more of a creamy mouthfeel. Great cup from medium to dark roasts. Unlike many of the other Panama offerings, this is a lower acidity cup, fuller bodied and on the malty/herbal side. We like it best at a strong medium roast; smooth, semi-sweet & rich with a complex dark tone. It will turn itself into a roasty and strong malty/baker-chocolate like cup once you hit 2nd crack. A very jazzy cup of coffee with a strong natural processed spin. Lighter roasting points (before 2nd crack) are where this cup will shine. Light roasts themselves will be fairly bright with pretty strong citrus floral and fruit tones, very tasty if you like such things. The fruitiness is wild, ranging from grape to more traditionally red fruit. The cup will be pretty front loaded at the light roast points but a little chocolaty factor can be found when the cup cools. Medium roasts bring much more balance to the cup with some darker tones but tone it down a bit, which is good for some, bad for others. Too close to 2nd crack and the acidity and fruit is almost removed from the cup, still tasty but a shame to lose those exotic winy/fruity and floral tones.
