Good from light to dark, very different tasting dependent on roast level. If you are a very fruit forward natural fan, sticking in the light to medium roast level is recommended. Contrary to many naturals, these beans rock at the fuller roast levels as well, touching or into second crack produces a very lively cup, not super roasty with incredible depth of flavor and good balance between light and dark tones.Read More:

Lower acidity cup but will show some floral characteristics at the lighter roast points. A little roasty/smoky tone into second crack but it will compliment the more chocolaty and nutty profile.

Most would call it a pretty sweet chocolaty cup with a bit of spice. Very smooth cupping this year with no herbal tones or earthiness. Medium bodied with a sweeter edge, a cup almost anyone would enjoy.

Good cup from light to dark but our favorite roast point was right in the middle, a city+ (medium) roast. The aromatics are very fruity and slightly fermenty, but only hints will come through in the taste. Lighter roasting will have a sweet edge, fuller body & stronger citric acidity accompanied with unique red fruit tones (think hibiscus & fruit skin), balanced with an earthy semi-sweet malt like contrast. Pushing the roast a bit gets more chocolaty and fuller bodied, still incredibly sweet but just a hint of fruit, less sharp and less earthy, cuts out most of the citric edge. Darker roasts have a strong bakers chocolate tone, slightly smoky with an almost cherry like red fruit note popping out as the cup cools.

Medium roasts get more chocolaty and a bit fuller bodied, still incredibly sweet and fruity but less sharp, cutting out most of the citric component. Thick and creamy, low acidity with a pretty strong spicy bakers chocolate tone. Lighter roasts will show some acidity but also risks a little grassy/earthy, similar to its Indonesian cousins. Medium roasts pull the cup together and are pretty sweet and smooth with a developing chocolaty factor and a hint of spice in the aftertaste. Touching second crack seemed like a sweet spot for the coffee, really building the body and dark chocolate tones, gets a little smoky in the aftertaste. Into 2nd crack will get a bit roasty and rough and tumble, a good roast for those who classically like darker roasts.

A great medium to dark roast cup. Medium bodied, low acidity and a clean cup. Perfect example of what a premium PNG should taste like. Not super jazzy but great prep and carries the tastes PNG fans are looking for. Smooth chocolate, bigger body and low acidity. Light roasts will show some brighter characteristics, can get some cool floral notes with just a hint of a chocolaty factor but most will want to go medium and beyond; dropping the crisp tones and accentuating the robust darker and thicker tastes. Medium roasts bring out a bigger body and stronger chocolaty tones, muting most of the acidity, a great daily drinker. Dark roasts get smoky and thicker with a little bitter edge to it.
