Similar to many of the other stellar Panama naturals, this cup is pretty winy and floral at the lighter roasts. A rounded cup, meaning medium body and medium acidity at most roasts. The Bourbon strain being a little winy itself comingles very nicely with the more grape-skin fruity factor that Keith’s natural processing leaves on the beans. Some acidity for sure but not over the top, add more floral than citrus. These beans handle the lighter roasts well. Medium roasts start to bring a more semi-sweet malty tone to the front end, gets stronger quickly as you progress the roast, easy to cover up the more delicate features if too close to 2nd crack. Dark roasts get a bit smoky and strong, hard to see the fruity factor until the cup cools but still provides and interesting profile that most of us found tasty.

A lovely lighter roast coffee assuming you like fruity and floral cups. This is not your average Panama bean; lighter roasts will show strong lemony acidity and lots of floral characteristics, strong grape/orange like fruity factor with just a hint of a malty undertone, very sweet edged. Make sure you like fruity naturals if you are going for the lighter roasts. Medium roasts were not as front loaded with the fruity floral but still very noticeable, builds some good body as you push the roast a bit darker. Cups turns much more chocolaty with fruity highlights as you get close to 2nd crack, it will still show some floral lemony character as well providing a lot of sweet crisp tones. Dark roasts are not recommended, they will turn a bit bitter and edgy hiding most of the unique honey processed tones.

A very jazzy cup of coffee with a pretty strong natural processed spin. Lighter roasting points (before 2nd crack) are where this cup will shine. Light roasts themselves will be sizzling bright with strong citrus floral and fruit tones. The fruitiness is almost winy and more reminiscent of a red grape-skin; complex with a little astringency upfront. The cup will be pretty front loaded at the light roast points but will have a little contrast with a unique spice note and malty tones.

A great light roast bean with some strong and bright fruit forward tones balanced with a bit of spice and stellar aromatics. Its always a bit harder to pick out those traditional Geisha tones with the natural processing but if you stick lighter, you definitely get them in the aromatics, some great almost jasmine like Ethiopian aromatics with this cup. Clean as a whistle with very noticeable lemony/floral acidity accompanied with some lovely red fruit tones. Sweet, delicate and well defined at the lighter roasts. A clean, sweet & smooth cup. Best at the lighter roast points but works nicely in the medium roast range as well. Lighter roasts focus the tastes more around the brighter citric/fruit tones: a hint of lemony citric that fades into a fruitiness, balancing with a darker malt like undertone. A good daily drinking lighter roast coffee. Comparatively to the Catuai, the Typica is mild mannered, delicate, less acidic, smoother, but with similar tastes. Medium roasts bring a more traditional cup with better balance. This should be the minimum roast level if you do not want noticeable floral/fruit notes upfront. Still has a bit of jazz upfront but a more pronounced nutty/malty tone to balance it out. Hands down, best at a light roast. Pretty blasting floral acidity, not your normal lemon bomb, the acidity itself comes off a bit candied floral like and is balanced with a sweet dark tea spice tone, from the natural processing one gets just a pinch of a grape/orange fruitiness that will combine with all the other diverse flavors to give a hint of bergamot in the aftertaste. Unique attributes really only seen in the Geisha strain. Making these beans a perfect example of what a Geisha should taste like. The aromatics are similar to jasmine with a touch of fruit. Closer to a washed processed than a natural. A good cup from light to dark, we thought it best right in the middle, a medium roast provided a very well balanced and complex cup. Compared to the washed processed Panama’s, this cup has more floral notes upfront, a bigger body, and more stout like features.
This honey processing does not give a fruity cup, no extended fermentation here. Drying the beans quicker with the pulp still on them definitely increases the crisp floral and body of the cup but leaves more conventional tones than the natural processed. Wonderful malt like tones with some spice accents.
Light roasts will lean the cup towards citric and floral, darker roasts potent semi-sweet malt with a little spice.

Hints of sweet citric floral upfront comingle with smooth defined malt like tones, just the tiniest hint of a fruity factor in the aftertaste. Lighter roasts get much crisper, dominated with more floral citric fruit tones, lemony most would say but does still show a little malty undertone. Darker roasts cut out the more floral aspect of the cup and are very rich and smooth, more semi-sweet but still very malty, into second crack adds some complimenting smoky tones. A crisp, bright, very clean and balanced cup. This is an awesome example of washed processed Panama coffee. A hefty cup full of floral, citric and sweet tones, malty, nutty and chocolate like tones to contrast. Soft fruit tones can be found somewhere between the two but not like a natural, delicate and more citric/peachy. Lighter roasts push the tones towards the more acidic side but these beans are clean enough to handle the lighter roasting. The most jazzy roast point but may come off a little too acidic for some. Medium roasts are the best starting point for medium-low acidity fans, it balances the cup out nicely with traditional darker tones. Best at a light roast, almost a shame to take any darker. Very clean and balanced, even if you traditionally do not like light roasts, this one might impress. An amazing Geisha Natural, the tastes of these beans hit the nail on the head for what a stellar Geisha should taste like. Jasmine like aromatics, sweet overly floral tones with a hint of citric balancing with a little soft fruit and black tea like spice. Great depth of flavor, one can see why Geisha coffees are often all the top coffees in the competitions with a cup like this. One can mellow out a little acidity by pushing into the medium roast range, still tasty but be warned it will mute many of the overly floral and fruity tones. What a beautiful screen of coffee! Luckily the taste is right up there with the appearance. Best on the lighter side of a medium roast. Too light or too dark and those wonderful Gesha attributes can be quite muted. The first test of a nice Gesha, the aromatics. One sniff is usually all it takes to identify this as a Gesha coffee. It picks up those lovely jasmine tea like aromatics, a sweet unique floral aroma only in Gesha offerings, or top notch Ethiopians (where Gesha comes from). A bit higher acidity, medium to full bodied and decently strong on the floral notes. Light roasts themselves do risk a little herbal tone to go along with the sweet lemony floral notes, some will like the contrast but we thought it best to get a little more development and catch it on the verge of a medium roast. Builds a nice malty balance to the sweet floral with hints of a black tea like spice in the finish. Dark roasts are not recommended, burns out the cool aromatics and leaves one with a rich and spicey malty tone, but very little of those sweet jasmine like floral tones.Price: $24.99/lb - 23.64/lbPrice: $24.99
