A tasty coffee from light to dark but if you want to see it shine, keep it in the light to medium ballpark. Jasmine, floral and peachy aromatics that come though in the cup tones. Very clean and defined at light roast points, a sweet edge, light to medium boded, with a smooth chocolaty balance, just a touch of a spice note. Darker roasts get a bit fuller bodied, semi-sweet with more robust chocolate notes, hints black tea spice. Gets a little roasty but compliments the more chocolaty aspect. Although the recommendation is to roast this one lighter, traditionally in Ethiopia they tend to roast very dark. Light to medium roasts make a stellar drip or pour over, if an espresso head, good to go a little fuller on the roast.

Clean, sweet, and floral with some stronger tea like attributes. Works well light to dark. Lighter roasting does have some acidity giving the cup a citric edge and sweeter floral/fruit notes but will not develop the depth to the darker tones that we loved with fuller roast levels. Hints of a black tea like dark tone and a soft fruit tone will pop out especially with some setup and as the cup cools. Medium to dark roasts will mellow the brightness considerably turning the cup darker toned with a fuller body, more about the spice notes and chocolaty factor. Smooth and easy drinking in the medium roast range while still maintaining hints of exotic acidity. This Ethiopian cup is a bit more delicate and complex than your average Ethiopian. Lighter roasts will have some decent brightness, lemony with some soft fruit tones, peach and grapefruit like accents. A pretty floral cup with some awesome jasmine like aromatics. The lighter tones pull some balance with the classic tea like chocolaty undertone, traditional darker notes from the Yirgacheffe region. Medium roasts really mellow out the acidity and reduce the fruit tone, create a bit more body and a much more recognizable chocolaty factor. A very smooth, balanced and rich cup with exotic highlights. Darker roast burn out all the fruity and acidic notes, gets a little smoky roasty with strong bakers chocolate tones.

Fantastic example of an Ethiopian Natural. Keep this one light to medium roasted. Too dark and the awesome crisp and clean fruit/floral notes dissapear. A mellow cup on the sweeter side with nice red fruit tones popping right out. The cool natural tones balance with a tea like spice note, a sign of its roots, Yirgs are known for their more tea like dark tones. Many would call it a chocolaty undertone with a jazzy spice note but we like the tea reference and most will agree. A bit more delicate of a cup with a little lower acidity than the other Ethiopian lots. Depending on what you like this can be a real perk, fruity and sweet without risking high acidity or overly sour tones at the lighter roast points. A little easy to roast out the fruitiness, so don’t let it get too dark!

If you don’t love bright and fruity, you will likely want to shoot for at least a Medium roast, a less extreme and smooth cup with pretty exotic accents. Develops the more tea like undertones and smooths out a lot of the crisp acidity. The fruity/floral factor reduces to just a hint but still comes off more tropical fruit noted, which everyone here loved. Still slightly floral and after a little setup almost seemed a bit more dark grape skin tone that lingers in the aftertaste.
Darker roasts are fun but have a more limited audience. A bit more semi-sweet and a little edgy and smoky, retains the strong spice notes and brings a bakers chocolaty factor into play with lingering smoky tones in the aftertaste. For those that like a hint of milk or cream in coffee, or espresso heads looking for something more exotic, darker roasted Ethiopians can be a nice cup/shot to change up the game a bit.

Opposite of the other gr. 1 naturals these beans are best from medium to dark roasts. Reminiscent of the old world Harrar type cup. Filled with darker chocolate notes and tea like spice. A bit of sweetness upfront from the natural processing but not a ton of fruit in the taste. Medium to low acidity, a little fuller bodied; the cup starts with just a hint of floral & fruit, mostly in the aromatics balanced with an earthy dark chocolate, lingering tea like spice in the aftertaste. A clean, smooth and exotic cup with some awesome complexities. The aroma hits that dark fruit note on the head – smells like floral blueberries and blackberries. Its body is smooth, rich and clean. The flavor has many layers of lemon-grass, berries, chocolate, and orange peel. A delicate cup – mostly going after those fruity floral and sweet tones but does have that classic Yirgacheffe spice note not always present in the naturals. We do not recommend roasting this dark by any means. Super light roasts are clean but much more citric, city + (light to medium) really brings forth the berry notes, a jammier body but still retains a little orange-ish acidic sparkle note. Strong medium roasts are pretty fantastic as well, balances the cup nicely, still delicate and sweet as can be but without that citric edge to it.

This is a prime example of a washed Yirg. Great tea like spice notes dominate the cup with very peachy/citrus acidity upfront. Clean enough to hold a light roast and retain some good balance but will have good brightness upfront. The brighter characteristics will be pretty mellow close to 2nd crack and into the dark roast marks. Turns very strong and chocolaty, more of a bakers chocolate and smoky into the dark roasts.

This Ethiopian cup is a super clean; an awesome and unique example of a high end Ethiopian. Best served at the light to medium roast levels; jasmine aromatics with wild more lemon/floral acidity, balancing with a rustic chocolate and tea like spiced undertone. There is a little hint of fruit in the cup but its pretty faint, gives the cup great sweetness and depth of flavor. Reminiscent of a Yemen or Harrar coffee. Lighter roasts will have some citric acidity and stronger floral tones balanced with a faint tea like chocolaty undertone, a little fruit note pops out as the cup cools. Medium roasts really mellow out the acidity and promote the chocolaty cup profile, adds a little jazzy spice note in the aftertaste. A very smooth, balanced cup with exotic highlights. A wonderful exotic single origin drinker. Tasty from light to dark but best at a light roast point. Fruity and floral, sweet edged, pulls a little balance with a chocolaty tone. The fruitiness comes off a bit more tropical than red fruit although depending on roast point, one can taste either. The Aromatics are wonderful, nothing like a stellar Ethiopian Natural to give the nose some joy. Got to keep it pretty light to see these awesome more fruity tones, even at a stronger medium roast they mute up quite quickly. Medium to dark is far less exotic but still makes a mighty fine cup, more semi-sweet chocolate and spice with hints of buzzy acidity and a slightly smoky finish.

A very pleasant and bit milder cup of Joe (at least for an Ethiopian). A peachy like acidity upfront, slight floral and citrus fading into a more chocolaty cup profile with a little lingering herbal spice note that sticks in the aftertaste. Turns a bit higher acidity at the very light roasts and is more citric and fruity but will bring out the earthier side of the chocolaty notes. Darker roasts will mute up the fruit tones and acidity leaving a bit thicker bakers chocolate note and roasty tones with a hint of that classic Yirg spice.
