One sniff of this coffee and you know you have something special. Jasmine floral and sweet aromatics, something you will only get out of Ethiopian coffee or Ethiopian strains. Best on the light to medium roasts but a wonderful cup at almost any roast level. Light to medium you get those wonderful aromatics that come through in the taste, peachy acidity, with hints of soft fruit balancing with rich defined black tea like spice notes a. A cup like this is why washed processed Ethiopians are one of the hottest coffees on the market. Darker roasts burn out a bunch of the acidity/floral/fruity but still a nice cup, strong tea spice and semi-sweet chocolaty factor.

Very cool cup – although a washed processed, that extended time in the cherry really brings forth a bit more body and hints of a little red fruit. Medium to low acidity, this cup will only have strong citrus and floral at the super light roast, which are not recommended. A nice medium to dark roast is the way to go with this guy. Personally, we would cool it out before 2nd crack for sure. This creates a nice jammy body, just a hint of a floral aspect, nice sweet fruity notes; a little peach with spicy jasmine like aromatics. A very cool mix of tones. Dark roasts will get a little edgy and bitter and lose some of the cool soft fruit, but some will really like it as well.

A great example of a Washed Guji coffee. These coffee have differentiated themselves from a Washed Yirgacheffe more and more each year. Although they do carry a similar floral versus chocolate profile, the Guji coffees get much more of a “peachy” acidity upfront, less herbal/tea in the cup profile and in general produce a much juicier cup profile. A wonderful exotic cup. Light roasts produce stronger acidity with a fruity accent beyond the traditional “lemony” acidity, can be a little strong at the light roasts for some, balances nicely though with hint of spicy herbal chocolate. Medium roasts bring better balance to the cup and more of a juicy body to it, still very nice and complex with great spice in the aromatics. Darker roasts still have some exotic tones but burn out the fruit and acidity in the cup, potent dark chocolate with an herbal spin, a bit smoky.

A little milder example of an top notch Ethiopian; a good everyday drinker. Lighter roasts are not overly acidic. Smooth, clean and a little fuller bodied. The red fruit is clear in the cup but a little masked by the lemony floral acidity. Hints of the chocolaty undertone can be seen at light roasts but the cup finishes a little more herbal tea like in the aftertaste, not over the top and a good compliment to the floral and fruity tones. Lighter roasts definitely have a lemony floral aspect up front with some good dark tone contrast, comes off a bit tea like, complex and dry. Medium roasts build a little more body and reduce that lemony floral to a level acceptable for most, crisp but not overly sour. Smaller soft fruit tones start popping out at the medium roasts but that lemony acidity overpowers them super light. Dark roasts are bold and semi-sweet, thicker dark tea tones and spice dominate the cup with a little smoky accent. A super good example of what a Natural Ethiopian should be. Very fruity upfront, great dark fruit notes and aromatics – a shot at that blueberry tone with a lucky roast and setup. This is the cup of coffee you cannot wait to grind up just so you can smell it. A little citrus acidity upfront, a little floral and lots of ferment and fruit ranging from red fruit strawberry to that famed darker fruit blueberry. The cup is nicely balanced with a smooth chocolaty undertone and a jammy body. A very sweet edge upfront to this cup. If you like Natural Ethiopians, be sure not to miss this cup.

Bright, sweet with a very diverse flavor set. Soft fruit, citrus, herbal, chocolate, malt and smoke are just a few of the main flavors one can see in this cup. Very dependent on roast – lighter roasting gives much more of the citrus, tropical like fruit with just a hint of a chocolaty factor. Darker roasts produce much more of a chocolaty factor with a bit of a strawberry fruit note and good sweetness, far less acidic and very enjoyable.

This coffee is put together by Grima Edema who has more than 20 years of experience exporting coffee from the Kercha district within the Guji zone in the Oromia region of Ethiopia. Coffee producers deliver their ripe cherries to Grima’s washing station where the cherries are sorted an immediately placed on raised beds and dried over a period of 15 to 20 days. The raised drying beds are carefully constructed to ensure proper air circulation and temperature control for an optimal drying process.

A wonderful high rated cup best served at the light to medium roast level. Very sweet, floral and delicate, this cup produces some awesome jasmine like aromatics that come through as hints in the taste. Only Ethiopians and real high end Geisha coffees achieve this; most will love it, a little tea like for sure but a wonderfully complex and exotic attribute. Light roasts are a bit higher acidity and more front loaded with floral and soft fruit tones, a little lemony and peachy with just a small pinch of a darker tone popping out. Medium roast very nicely balanced and bring an easier to drink all day cup, but slightly less exotic. A lovely cup of Ethiopian with an uncommon processing method. Lots of lemon/lime and floral upfront balanced with darker chocolate, herbal & spice notes, reminiscent of black tea.Although this cup has some more acidic features, medium to dark roasts get a bit more buzzy than citric. Even lower acidity fans will find joy at fuller roasts. We thought best from medium to dark, very clean high rated coffee so still a candidate lighter roasting, but pretty potent and sharp. A little slower roast will benefit this bean, building more robust and jazzy dark tones in the cup while muting some of the more acidic notes.
Light to medium roasts one will accentuate crisp more citric fruit tones. Darker accentuates the tea like spice and more chocolaty accents. Best for drip or pour-over methods, we found it a bit too sharp and sour for most single origin espresso heads, would work nicely in a blend though to add some sweat and floral tones.
