A great example of Ecuador coffee. Best from medium to dark roasts. Sweet edged, medium to low acidity, wonderful floral tones and a very clean cup. Hints of soft fruit can be found but are pretty minor, accentuates a little as the cup cools. The lighter tones of the cup mix well with a pretty classic nutty & chocolaty undertones. Darker roasts close to, or into second crack are smooth & creamy with smoky accents; fuller bodied, semi-sweet with a lovely robust chocolaty tone. Regular Price $5.99/Lb Similar to the Pacamara but a bit mellower and more gentle of a cup. Lighter roasts have a little hint of acidity upfront, nice crisp citric and floral tone, not too strong to scare most away. Balanced with a smooth and nutty chocolaty factor. Closer to 2nd crack and the cup gets a little thicker but retains is nice and smooth body, very low acidity and a nice sweet edge to it. Great everyday drinker.

A very nice and clean Ecuador coffee. A little brightness upfront at the light to medium roasts, citric and floral, balanced with a smooth nutty/chocolaty tone. For a Pacamara, the sweeter edge is there but the earthy contrast is almost non-existent, a hint of very light roasts. Great medium roast coffee but also works well for you darker roast fans. Gets very thick and creamy with dark chocolaty and nutty tones along with roasty notes when into 2nd crack.

A lovely more new wave coffee. This coffee is best in the light to medium roast range, sweet edged, medium acidity, wonderful floral tones and a very clean cup. Hints of soft fruit can be found but are pretty minor, accentuates a little as the cup cools. The lighter tones of the cup mix with a pretty classic nutty/chocolaty undertone, what separates these beans from most South American offerings, they are wonderfully developed at the lighter roast points and mix very nicely with the more floral fruity aspects of the cup. Darker roasts close to into second crack are also tasty but much more traditional, fuller bodied with a pretty simple nutty/chocolaty tone, much more similar to Peru/Honduran coffees at fuller roasts.

Best medium to dark roasted. The cup is full bodied, rich and smooth, just a hint of crisp floral at the light to medium roasts. Stronger nutty/chocolaty tones comingle with some nice herbal/vegetal spice, a buzzy acidity that keeps your tongue jazzed. A hint of caramel and soft fruit can be coaxed out of the beans in the light to medium roast range with some setup. If we had to compare, we pop it somewhere between a Peru and Costa Rican coffee, a very tasty combo. Dark roasts will mute almost all of the floral aspect and promote roasty nutty tones similar to a Colombian. Some added spice notes in the linger in the aftertaste.

Light roasts are fruity, sweet and floral with a little hint of a nutty/herbal undertone, well balanced with just the right amount of crispness. Medium roasts cut off the crisper edge, a very nice and smooth cup full of sweet nutty and chocolaty tones, a little fruit tone pops out mostly in the aftertaste or as the cup cools. Darker roast stay very sweet but turns it a little roasty/chocolaty/smoky, which covers up the awesome depth of flavor these beans produce.

A wonderful honey processed El Salvador coffee. Light roasts are full of lemony floral tones, on the sweet side, just a hint of a fruit tone balanced with a dry nutty/chocolaty undertone. A bit front loaded, the lighter tones dominate the cup with just hints of the dry nutty lingering in the aftertaste. Medium roasts develop the darker tones nicely turning it much more chocolaty muting a decent chunk of the floral front end. Many will like the medium roast best for its sweet and smooth while maintaining hints of exotic floral and fruit. Darker roasts drop out most of the acidity but still retain a bit of the more floral factor especially in the aromatics.

Light roasts get a little lemony citric tone upfront adding stronger floral but not an overly acidic cup, fades into a bit of red fruit with just a hint of a dry chocolaty dark-tone in the aftertaste. Medium roasts develop the darker tone and bring it into the dominate tastes, hints of floral and red fruit move to the background and the cup is smooth and lower acidity. Great from light to dark. These beans bring forth the softer nutty and chocolaty tones that many consider the “go to” for daily drinking. A sweet edge to the cup, lower acidity, medium bodied and would be considered on the chocolaty side; depending on roast level, nutty/floral/fruity/smoky like tones can be found as well.Light roasts are a little sharp and risk a little hint of herbal but will also bring out a wonderful balance with an orangish fruit tone, a bit more exotic but sharper. Medium roasts were smooth and clean, our favorite roast point. Darker roasts work well for those looking for a stronger and semi-sweet cup with a smoky finish.

A lovely slightly-exotic daily drinker. Light to medium roasts are preferred with our favorite roast being right in the middle of the cracks. Lighter roasts have a hint of floral/citric acidity with just a touch of sweet and delicate red fruit coming from the honey processing. A bit on the nutty/chocolaty side for its balance, starts as a dry nutty at very light roasts, turns more chocolaty as the roast gets darker.
A little front loaded with the more acidic and fruity tones at traditional light roasts. Medium roasts have better balance between light an dark tones cutting out some acidity; smooth, rich, sweet edged. Dark roast loses the more exotic acidity and fruity edge but turns very thick, nutty, semi-sweet chocolaty with smoky accents.

Super clean and bright; soft fruit, citrus and floral tones are right upfront and on the stronger side. The slow dry honey process does add a little fruitier tone to the cup but its mellow and by no means ferment like the Ethiopians. By taste I would think this to be a washed coffee, by the looks, a natural processed. The slow dry really give this cup a sweet front end to it and awesome complexities. With the little higher acidity, this is a great coffee to play around with roast level.
