A great classic Dominican cup with a bit more islandy acidity than we’ve seen in the past. A stronger, fuller bodied cup with a lot of complex darker tones and a slight balance of islandy floral tones. Chocolate, tobacco earthiness, molasses are some of the first tones to hit the tongue and fade into a sweeter floral tone that strikes a bit of that nice islandy characteristic.

A very cool, very exotic cup of coffee. One can tell this is a slow dry natural processed coffee. Strong ripe red fruit tones upfront. Lighter roasting presents a ton of floral and fruit with an oak/peat boozy finish. Very sweet with great depth of flavor. Medium roasts were our favorite, still plenty wild, will develop stronger classic Dominican chocolate and smoky tones – which balance those more exotic fruity and citric tones wonderfully.
Darker roasts will burn out most of what distinguishes this cup, the washed processed handles those roast level much better; interesting and still exotic though but strong and edgy, it will retain some fruity factor with very strong smoky, tobacco and bakers chocolate type notes. Far less sweet and delicate of a cup.

Best from the lighter side of a medium roast to as dark as you want to go. A bit cleaner tasting but slightly less fruity than previous seasons. Lighter roasting presents some nice honey processed features: citric, floral, soft fruit with an almost oak/peat like finish, sweet & complex but does risk some underdeveloped tones if you nail it a little too light. Medium roasts were our favorite, still balanced and complex but will develop the traditional chocolate and smoky tones for which Dominican coffees are known for – to balance out those more exotic fruity and citric tones. Darker roasts are a little more complex than on the washed processed version, but not as smooth and rich.Price: $8.69/lb - 7.49/lbPrice: $8.69 -

A nice islandy acidity pokes through and balances the cup very nicely right at the 2nd crack. Definitely one for dark roast fans looking for something a bit more exotic. Chocolate, tobacco earthiness, molasses and smoky – it is one complex tasting coffee.

A fun tasty bean from light to dark. Clean enough for lighter roasting, a little jazzy acidity upfront, a bit nutty/caramel and floral. A sweet edged and a smooth cup. Turns into a very robust coffee at the fuller roasts. Fuller bodied with low acidity and very complex semi-sweet darker tones; chocolate, tobacco earthiness, molasses and smoky.

A great medium to dark roast coffee: robust, fuller bodied, lower acidity and complex. Rich and smooth with nutty, chocolate, earthy and spice tones. On the lighter roast spectrum there is a little jazzy citric note that presents the cup a little sweeter, on the darker roast spectrums it will have some roasty and smoky notes that we found quite pleasant.

Best medium to dark roasted, the cup is full bodied, rich and clean with just a hint of crisp floral at the light to medium roasts. More dominate nutty/chocolaty tones comingle with some nice spice and floral/buzzy acidity, a hint of caramel and soft fruit can be coaxed out of the beans more in the medium roast range. If we had to compare, we pop it somewhere between a Peru and Costa Rican coffee, a very tasty combo. Dark roasts will mute almost all of the more floral aspects of the cup and promote more darker roast Colombian features of toasted nutty tones with the exception of the hints of spice, which seem much more common in Peru coffee.

Easy to get a good cup but can be a little sharp if you roast quick and shoot light, will limit the audience who loves it. A good bean to drag out a bit in the roaster (Gene or Behmor profiles work great, air-roasters may want to stick at lower temps for longer), develop the depth of flavors and reduce a bit of the brightness. A longer setup also makes a huge difference, most will think best around day 3-4 after roasting. Medium to low chaff and even roasting. To see it shine, start with a medium roast, too light or too dark and much of the subtle tones will be cover up or lost.
