A clean, smooth and exotic cup with some awesome complexities. The aroma hits that dark fruit note on the head – smells like floral blueberries and blackberries. Its body is smooth, rich and clean. The flavor has many layers of lemon-grass, berries, chocolate, and orange peel. A delicate cup – mostly going after those fruity floral and sweet tones but does have that classic Yirgacheffe spice note not always present in the naturals. Fantastic example of an Ethiopian Natural. Keep this one light to medium roasted. Too dark and the awesome crisp and clean fruit/floral notes dissapear. A mellow cup on the sweeter side with nice red fruit tones popping right out. The cool natural tones balance with a tea like spice note, a sign of its roots, Yirgs are known for their more tea like dark tones. Many would call it a chocolaty undertone with a jazzy spice note but we like the tea reference and most will agree. A bit more delicate of a cup with a little lower acidity than the other Ethiopian lots. Depending on what you like this can be a real perk, fruity and sweet without risking high acidity or overly sour tones at the lighter roast points. A little easy to roast out the fruitiness, so don’t let it get too dark!

A lovely coffee from light to dark. This was a good offering last season and a fantastic one this season. This year the cup has a bit stronger of a fruit factor and less more rustic tea notes. Shines at a light to medium roast and is full of floral/fruit and complex chocolaty spice notes. Light to medium roasts can come off a bit crisp and lemony, accentuating the fruity/floral tones, with just a little balance with dry chocolaty spice. One can really build up the chocolaty factor by progressing the roast closer to 2nd crack but its will mute up some sweet fruity notes that many will love. Lighter roasts are very clean and will show stronger floral/citric/fruity tones, which is a perk to many light roast fans, would be considered a front loaded cup but most lighter roast natural fans will like that about these beans, one will get a decent chunk of citric floral with some exotic fruit tones that linger. A couple here put it as a bit more coconut or pina colada than your average “red-fruit”, others found a bit more grape skin like fruitiness.
If you don’t love bright and fruity, you will likely want to shoot for at least a Medium roast, a less extreme and smooth cup with pretty exotic accents. Develops the more tea like undertones and smooths out a lot of the crisp acidity. The fruity/floral factor reduces to just a hint but still comes off more tropical fruit noted, which everyone here loved. Still slightly floral and after a little setup almost seemed a bit more dark grape skin tone that lingers in the aftertaste.
Darker roasts are fun but have a more limited audience. A bit more semi-sweet and a little edgy and smoky, retains the strong spice notes and brings a bakers chocolaty factor into play with lingering smoky tones in the aftertaste. For those that like a hint of milk or cream in coffee, or espresso heads looking for something more exotic, darker roasted Ethiopians can be a nice cup/shot to change up the game a bit.

A bit more tropical fruit than traditional red fruit, creates a wonderful combination mixing with the floral/jasmine aromatics. A little dark tone balance with the tea like spice Yirgacheffe is known for.

A great semi-exotic daily drinker. Best right around a medium to borderline dark roasts. Lighter roasts do show some jazzy acidity but risk a little grassy tone right at first crack, super dark roasts turn a little bittersweet. Anywhere in the middle will be quite tasty.
Just a shade or two after first crack right up until second crack will be the roast window. Fuller bodied for a Yirg with a little less acidity, hints of floral before 2nd crack but mostly a smooth and rich cup, not too sharp but still exotic. A little jasmine in the aromatics and hints of bergamot in the tastes, classic Ethiopian attributes not often found in other coffees. A bit sweeter and smoother than most Ethiopians and more on the chocolaty side of things.

Light to dark a very tasty coffee. Really picks up the terroir of Yirgacheffe; buzzy citric acidity with wonderfully complex darker tea like tones. Jasmine and soft fruit aromatics that only a stellar Ethiopian brings to the table. Hints of a peachy soft fruit tone in the taste especially as the cup cools. To see this cup shine keep it in the light-medium roast range. Darker roasts will have fans as well but turn the cup much more simplistic, dark chocolate with tea like spice ending a little smoky.

Decent brightness, stronger lemony/floral tone, some soft fruit accents down the peach and grapefruit alley. Stellar aromatics, jasmine & lavender with a little spice note, I love grinding awesome Ethiopians. The lighter tones pull some balance with spice/tea chocolate undertones, traditional for a bean from the Yirgacheffe region.
Medium roasts really mellow out the acidity and reduce the fruit tone, create a bit more body and a much more recognizable chocolaty factor. A very smooth, balanced and rich cup with exotic highlights. Darker roast burn out all the fruity and acidic notes, gets a little smoky roasty with strong bakers chocolate, unique aromatics but much more plain tasting cup.

A very smooth, super clean top lot that is bound to impress Ethiopian fans. Wonderful aromatics with hints of soft fruit and jasmine. Lighter roasts show decent peachy acidity and can be quite floral balanced with a nice and smooth chocolaty undertone, very little tea like spice in this cup at lighter roasts, which most will love! A bit reminiscent of a Guji top lot like the stellar Kayon Mountain washed we had earlier in the season. Medium roast are lower acidity and a bit smoother defining the chocolate richness and adding a couple hint of spice notes. Medium roasts get smooth and a little fuller bodied, a bit more chocolaty than straight tea like spice with gentle lower acidity floral tones, just a hint, retains those awesome aromatics. A wonderful example of a top grade washed Ethiopian. Best served in the light to medium roast range, a very delicate and sweet cup. Hints of citrus and soft fruit comingle with floral, chocolate and tea like spice. Heirloom Ethiopian strains have a taste like no other and offerings like this one showcase their uniqueness. For acidity fans, a light roast ending real close to 1st crack will have a stronger lemony citric edge, covers up a bit of the delicate floral/fruit but crisp, clean and sweet. We personally liked it better just a shade or two darker, splitting the difference between light and medium. It will mellow the citric tones popping out the sweet floral, while building a bit more darker tea like contrast. Crisp but not overly acidity.
