A clean, smooth and exotic cup with some awesome complexities. The aroma hits that dark fruit note on the head – smells like floral blueberries and blackberries. Its body is smooth, rich and clean. A little lower on the citric acidity makes this a nice lighter roast coffee. Sweet and fruit forward with a slight tea like spice note balanced with a chocolate undertone. The balance of this cup is fun to play with, accentuate the fruit and citric by taking it lighter or accentuate the chocolaty spice by taking it darker. The flavor has many layers of lemon-grass, berries, chocolate, and spice. This is a prime example of a washed Yirg. Great tea like spice notes dominate the cup with very peachy/citrus acidity upfront. Clean enough to hold a light roast and retain some good balance but will have good brightness upfront. The brighter characteristics will be pretty mellow close to 2nd crack and into the dark roast marks. Turns very strong and chocolaty, more of a bakers chocolate and smoky into the dark roasts.

The floral will quickly fade into strong and diverse red fruit tones, more pronounced as the cup cools. The floral/fruit will pull some balance with a chocolaty cup profile as you push into the medium roast levels, just a hint of classic Yirgacheffe tea like spice in the aftertaste.

This Ethiopian cup is a super clean; an awesome and unique example of a high end Ethiopian. Best served at the light to medium roast levels; jasmine aromatics with wild more lemon/floral acidity, balancing with a rustic chocolate and tea like spiced undertone. There is a little hint of fruit in the cup but its pretty faint, gives the cup great sweetness and depth of flavor. Reminiscent of a Yemen or Harrar coffee. Lighter roasts will have some citric acidity and stronger floral tones balanced with a faint tea like chocolaty undertone, a little fruit note pops out as the cup cools. Medium roasts really mellow out the acidity and promote the chocolaty cup profile, adds a little jazzy spice note in the aftertaste. A very smooth, balanced cup with exotic highlights. Darker roast burn out all the fruity and acidic notes, gets a little smoky roasty with strong bakers chocolate tones.

A wonderful exotic single origin drinker. Tasty from light to dark but best at a light roast point. Fruity and floral, sweet edged, pulls a little balance with a chocolaty tone. The fruitiness comes off a bit more tropical than red fruit although depending on roast point, one can taste either. The Aromatics are wonderful, nothing like a stellar Ethiopian Natural to give the nose some joy. Got to keep it pretty light to see these awesome more fruity tones, even at a stronger medium roast they mute up quite quickly. Medium to dark is far less exotic but still makes a mighty fine cup, more semi-sweet chocolate and spice with hints of buzzy acidity and a slightly smoky finish.

A very tasty offering; nice fruit forward cup on the sweeter side. These beans taste and roast more similar to a gr. 1 than our last couple of gr. 3 offerings. Smooth and delicate cup, a little citric/floral at the lighter roast points but quickly turning into more of a red/stone fruit tone especially as the cup cools. Those lovely fruit tones are balanced nicely up until the darker roast points with a smooth chocolaty note, pretty faint at the lighter roasts but the predominate tone as one pushes close to 2nd crack. Into 2nd crack it turns much edgier and burns out the sweeter delicate tones.

A little sweeter than average and well tastier than most grade 3 offerings. Grade 3 naturals overlap taste/rating wise with grade 1’s, but will roast more two toned and have stronger, thicker, more rustic chocolaty notes, wild red fruit and usually stronger citric tones.A little sweeter than average and well tastier than most grade 3 offerings. Light roasts show some citric acidity that quickly fades into sweeter red fruit notes balanced with a nice stronger semi-rustic chocolaty tone. Hints of classic tea like spice pop out and will be accentuated the dark you roast.
Wonderful aromatics to this cup help add some depth of flavor, one sniff and you know you have something special. Medium roasts reduce the acidity a bit and turn the tones mostly chocolaty with just a little hint of soft fruit. Dark roasts get bittersweet and much more reminiscent of smoky baker’s chocolate, strong and exotic cup dark roasted.

A super good example of what a Natural Ethiopian should be. Fruity upfront with stellar aromatics – a shot at that blueberry tone with a lucky roast and setup, but its faint. This is the cup of coffee you cannot wait to grind up just so you can smell it. A little citrus acidity upfront, a little floral and lots of ferment and fruit ranging from red fruit to that famed darker fruit blueberry. The cup is nicely balanced with a smooth chocolate undertone and a jammy body, tea like spice in the aftertaste. A very sweet edge upfront to this cup. If you like Natural Ethiopians, be sure not to miss this cup.

Lighter roasts show crisp floral acidity with hints of red fruit and a nice and spicy chocolaty undertone that is pretty tea like, which is what the Yirgacheffe region is known for. The aromatics are wonderful and a bit stronger in the fruitiness but only a hint comes through in the tastes. Medium roasts were a bit more chuggable with a bit less acidity and much richer and smoother more developed chocolaty tones. Darker roasts work equally as well, hardly fruity but robust semi-sweet more bakers chocolate tones with the tea like spice and a smoky finish. A clean, fresh and semi-fruity Ethiopian. Lower acidity with great sweetness making it a wonderful light to medium roast bean for every tongue. Although not a fruit bomb, it has noticeable red fruit tones upfront that balance with the classic Ethiopian chocolate and spice notes. Light roast have just a pinch of citric and floral upfront that quickly fade into the fruitiness, hints of the chocolate and spice notes but mostly in the aftertaste. Medium roasts accentuate the more chocolaty aspect pushing the fruity and floral tones to the background, very smooth, sweet & balanced cup with exotic highlights. Darker roast into or touching 2nd crack will hide almost all of the fruity and floral, just detectable in the aftertaste as the cup cools, very chocolaty but a bit more semi-sweet.

Lighter roasts will have a little citrus floral acidity upfront but medium roasts and darker will be pretty low acidity. The cup is a little fuller bodied than average with that nice sweeter red fruit tone fading into a bit of a chocolaty cup. A lovely coffee from light to dark with a medium roast being our favorite, a staple offering on our list, great stuff every year. This year the cup is a little less acidic and fuller bodied, small hints of fruit at lighter roasts but more about the chocolate and spice notes. Light roasts are clean with a little citric upfront, a small hint of a sweet berry note comingling with an almond like nuttiness and a bit of tea like spice in the aftertaste. Medium roasts brought a fuller body and more chocolate like tones, lower acidity, uncovered a bit of floral upfront, lingering spice in the aftertaste.
