A fairly neutral cup best from medium to dark roasts. Low acidity, medium bodied, a touch of sweetness. Lighter roasting shows some vegetal/spice characteristics, a little earthy chocolaty note and just a touch of floral. Medium roasts have a little chocolaty edge with some herbal spice. Darker roasts get smoky and full of bakers chocolate tones, roasty some would say. A bit edgier bringing some less neutral characteristics to the cup.

A very pleasant cup of Joe, a bit stronger and less fruity/floral than many of the gr. 1 coffees. A hint of peachy acidity upfront, slight floral and citrus fading into a more potent chocolaty cup profile with a lingering herbal spice note that sticks in the aftertaste. Turns a bit higher acidity at the very light roasts and is more citric and fruity but will bring out the earthier side of the chocolaty notes. A lovely cup of certified Ethiopian. Lemony and floral upfront balanced with a chocolatey/herbal/spice dark tone reminiscent of black tea. Ethiopian Yirgacheffe Worka – Halo Fafate – Washed Gr. 1
A tasty coffee from light to dark but if you want to see it shine, keep it in the light to medium ballpark. Jasmine, floral and peachy aromatics that come though in the cup tones. Very clean and defined at light roast points, a sweet edge, light to medium boded, with a smooth chocolaty balance, just a touch of a spice note. Darker roasts get a bit fuller bodied, semi-sweet with more robust chocolate notes, hints black tea spice. Gets a little roasty but compliments the more chocolaty aspect. Although the recommendation is to roast this one lighter, traditionally in Ethiopia they tend to roast very dark. Light to medium roasts make a stellar drip or pour over, if an espresso head, good to go a little fuller on the roast.

Good from light to dark but we thought best at a strong medium to dark roast. Light roasts are more citric and floral with wonderful aromatics a sweet edged, a bit punchy in the citric department and very little of that wonderful chocolate tone that fuller roasts will bring. Medium roasts will bring some lovely balance to the cup, less aromatic than the light roasts, but you can still tell you have a nice Ethiopian with one sniff. A pinch of crispness upfront on top of a well developed chocolaty base tone. A unique spice note pops out, a stretch for some, but we would say slightly minty. Darker roasts are real robust, strong and semi-sweet, more bakers-chocolate like with tea like spice in the aftertaste.

A lovely coffee from light to dark. This was a good offering last season and a fantastic one this season. This year the cup has a bit stronger of a fruit factor and less more rustic tea notes. Shines at a light to medium roast and is full of floral/fruit and complex chocolaty spice notes. Light to medium roasts can come off a bit crisp and lemony, accentuating the fruity/floral tones, with just a little balance with dry chocolaty spice. One can really build up the chocolaty factor by progressing the roast closer to 2nd crack but its will mute up some sweet fruity notes that many will love.
