This Ethiopian cup is a bit more delicate and complex than your average Ethiopian. Light & medium roasts are where this cup will shine.
Decent brightness, stronger lemony/floral tone, some soft fruit accents down the peach and grapefruit alley. Stellar aromatics, jasmine & lavender with a little spice note, I love grinding awesome Ethiopians. The lighter tones pull some balance with spice/tea chocolate undertones, traditional for a bean from the Yirgacheffe region.
Medium roasts really mellow out the acidity and reduce the fruit tone, create a bit more body and a much more recognizable chocolaty factor. A very smooth, balanced and rich cup with exotic highlights. Darker roast burn out all the fruity and acidic notes, gets a little smoky roasty with strong bakers chocolate, unique aromatics but much more plain tasting cup.

A very cool washed Ethiopian from one of the more renowned mills. This Ethiopian cup is a super clean; an awesome example of a high end washed processed Ethiopian. Jasmine aromatics with wild more lemon/tropical fruit acidity, balanced with a chocolaty spiced undertone. Lighter roasts will have some citric acidity and a nice more tropical fruity factor balanced with a faint tea like chocolaty undertone. Medium roasts really mellow out the acidity and reduce the fruit tone but create a bit more body and a much more recognizable chocolaty factor. A very smooth, balanced cup with exotic highlights. A very smooth, super clean top lot that is bound to impress Ethiopian fans. Wonderful aromatics with hints of soft fruit and jasmine. Lighter roasts show decent peachy acidity and can be quite floral balanced with a nice and smooth chocolaty undertone, very little tea like spice in this cup at lighter roasts, which most will love! A bit reminiscent of a Guji top lot like the stellar Kayon Mountain washed we had earlier in the season. Medium roast are lower acidity and a bit smoother defining the chocolate richness and adding a couple hint of spice notes. A great example of a washed processed Yirg! Lighter roasts show decent lemony floral acidity with some jasmine aromatics balanced with a smooth and clean black tea (spice) undertone. Medium roasts get smooth and a little fuller bodied, a bit more chocolaty than straight tea like spice with gentle lower acidity floral tones, just a hint, retains those awesome aromatics. Light to medium roasting recommended but a tasty cup from light to dark. Lighter roasts will have some decent brightness, lemony with some peachy like citric tones. A floral cup with some awesome hints of jasmine in the aromatics. The lighter tones pull some balance with the classic tea (herbal/spice) like darker tones, traditional darker notes from the Yirgacheffe region.Medium roasts really mellow out the acidity and reduce the citric & floral tastes, creates a bit more body and a much more recognizable chocolaty factor. A very smooth, balanced and rich cup with exotic highlights. Darker roasts are fuller bodied and dark toned: roasty, bakers chocolate with some unique spice and rich aromatics.

A wonderful example of a top grade washed Ethiopian. Best served in the light to medium roast range, a very delicate and sweet cup. Hints of citrus and soft fruit comingle with floral, chocolate and tea like spice. Heirloom Ethiopian strains have a taste like no other and offerings like this one showcase their uniqueness. For acidity fans, a light roast ending real close to 1st crack will have a stronger lemony citric edge, covers up a bit of the delicate floral/fruit but crisp, clean and sweet. We personally liked it better just a shade or two darker, splitting the difference between light and medium. It will mellow the citric tones popping out the sweet floral, while building a bit more darker tea like contrast. Crisp but not overly acidity. A wonderful light to medium roast coffee. The cup is complex, sweet, fuller bodied, with rich darker tones. A rare find, most Ethiopians are much thinner and delicate, with more of the taste emphasis on the acidic (citric/floral) notes. Tea like spice will dominate the tastes with just a hint of lemony/floral crispness upfront (unless you hit the darker roast points). Hints of jasmine in the aromatics provide a wonderful depth to the cup.

A great first new crop arrival for 2020. Very crisp, clean and exotic. Great aromatics filled with jasmine spice and soft fruit. Lighter roasts are filled with new crop acidity and floral notes, mostly citric but a little soft fruit tone can be found. The balance of the cup comes from a semi-tea-like chocolate factor. I tend to think of it as chocolate spice notes but many tongues can pick up a little black tea note. Medium roasts still have a bit of citric acidic, build a good body and bring forth more of the chocolate spice note, reducing the acidity slightly so even more of the exotic tones of this cup can be found. Darker roasts are always tasty for those who like fuller roasts. This is how they would traditionally serve these beans in Ethiopia. Almost a shame, for it loses the cool spice and lighter note balance, but will still make for a good exotic smoky and chocolaty cup.

Clean and sweet; this Ethiopian cup is a bit more delicate than most. Lower acidity and best in the medium roast range, will work for darker roast fans as well. We would avoid super light roasts, blooms into a well defined treat at city+ to full city+ roast levels. Wonderful aromatics and a nice floral tone without too much citric in the cup. Medium roasts produce a nice and chocolaty cup with floral highlights and a sweet edge, hints of tea like spice in the aftertaste. Smooth, balanced and rich cup with exotic highlights. Darker roasts are less smooth but even more chocolaty, a bit semi-sweet with some complimenting roasty attributes and stronger tea like spice notes. Clean, rich and exotic. Ethiopian beans are always a wonderful treat. Being a high rated super fresh top lot, this cup is loaded with brighter citric, floral and fruity tones (think green grape, not natural processed red-fruit). Wonderful aromatics with delicate tea like chocolaty undertones. Very dependent on roast but hard to find a bad cup at any roast level. If you are an Ethiopian fan, lighter roasting is the way to go. If you don’t know or traditionally roast a bit darker, start at a fuller roast point. Best presented at the light to medium roasts to see the Ethiopian attributes but will be unmatched at the darker roasts, hefty tea like spice with floral aromatics and rich semi-sweet smoky dark tones.
