A fresh and classic African natural, a wonderful example of what natural processing can do without all the fermenty overly fruity notes. One can detect hints of the natural processing in the taste but the dominant tones are still classic Burundi. This cup has a pleasant but restrained acidity, closer to a Brazil than to a bright African, balanced by a sweet cacao base with notes of melon and a subtle hint of green tea. At a lighter roast it shows fresher and more aromatic; from medium to dark the acidity settles and the cacao takes the center, with more body and sweetness. It is a medium bodied cup, smooth and slightly creamy, with a clean finish. An easy to roast Burundi natural from 289 smallholder farmers on the Nkuba hill.

A wonderfully fresh microlot: 100% Gesha natural processed from Finca Las Brisas in El Rosario, Acevedo, Huila, Colombia. The farm belongs to Lisandro Cárdenas, a second-generation producer who grew up around coffee, trained in coffee production through Colombia’s National Learning Service (SENA), and started his own farm roughly a decade ago. Alongside Caturra, he grows Gesha and Pink Bourbon across his 5-hectare farm (4.5 hectares in coffee) in the volcanic, sandy-loam soils typical of the area. Gesha is widely regarded as one of the world’s most coveted varieties, and the natural process here amplifies its trademark florals and fruit.

A fully washed lot from 7 small producers in the municipality of Caldono, in the department of Cauca, Colombia. Each producer works their own micro-mill, carefully harvesting, depulping, fermenting, washing and drying the parchment before the coffee is gathered and exported through Banexport, a Colombian export company that provides warehousing, milling and technical support so growers can reinvest in their farms. The trees grow between 1400 and 1750 masl on clay-rich soils, the variety is Castillo and it comes in as a clean, fresh AA grade. Lighter roasts show a bright citrusy acidity with nectarine, raspberry and a touch of white tea; medium roasts settle into a balanced, classic Colombian profile with rounder fruit and a syrupy sweetness; and darker roasts build body and lean toward sweet, chocolaty tones. An easy roasting, versatile single origin that performs well light to dark.

A bold Pacamara microlot given an anaerobic natural fermentation, grown at Finca Patio Bonito in Caldono, Cauca. The farm is run by the Trujillo family founder Carlos Arturo Trujillo, who has grown coffee for nearly 50 years, alongside his daughter Paola, a former cupper and buyer who returned home in 2022 to refine their washed and natural processes with thermal-shock and anaerobic techniques. Across 11 hectares they cultivate 13 different varieties. Pacamara is a large-bean variety already prized for its complex, intense cup, and the sealed anaerobic ferment pushes it even further toward fruit and wine. This one is loaded with cherry, raspberry, dried lavender, and hibiscus, carried by bright winey acidity and a syrupy, almost jammy sweetness that closes on a perfumed floral finish. Keep the roast light to medium to preserve its clarity and aromatics.

Familia Monge natural from Finca La Esperanza in La Esperanza de Tarrazu, San Jose, grown between 1500 and 1700 masl with Catuai and Caturra varieties and dried on raised beds. To see it shine, go light to medium: light roasts give medium acidity, a lighter body and a delicate, sweet cup with strong red fruit (orange to strawberry), plus citric, floral and candied almond notes. At medium those tones turn into a rich chocolaty factor with cane sugar and dulce de leche; towards a dark roast it gets more oaky at the expense of the fruity spark.

A naturally processed microlot of Catuai and Caturra from Finca El Analia, milled at the Los Madrigal Micromill in Costa Rica’s celebrated Tarrazú region. The mill is run by Diego Armando Madrigal Ureña, who, together with his brother, inherited the family’s farms from their grandfather when they were just 11 and 13 years old. Three farms totaling around 25 hectares deliver ripe cherry to the mill, which dries its coffee on expansive raised African beds, and the brothers are deeply committed to reforestation and sustainable growing. Grown at a lofty 1,800 meters, this lot bursts with jammy passion fruit, perfumey hibiscus, and dried raspberry, all lifted by sparkling acidity and a clean, fruit-like sweetness. As with most expressive naturals, a light-to-medium roast best preserves its bright, floral character and at this price, it’s a whole lot of cup for the money.

This is a quality cup in and out. Lots of cool tones to play with in the roaster. A bit higher acidity with a strong floral aspect, balanced with a full bodied nutty and chocolaty undertone. Slightly fruit forward but not a fruit bomb. The black honey processing really leave a crazy complex cup with tones ranging from lemongrass to red fruit to nutty/chocolaty and smoky undertones. Super light roasts lean the cup to lemony/floral and will be loaded with more citric lighter tones, not very balanced but very punchy and clean. Darker roasts lean it towards nutty/chocolaty more stout like features with fruity highlights. In the middle, one gets layers of all the lovely flavors in the cup. Crisp and clean lemony floral balanced with sweet and smooth chocolaty undertones than linger on the nuttier side. Hints of fruit will pop out but not hit you over the head.

One sniff of this coffee and you know you have something special. Jasmine floral and sweet aromatics, something you will only get out of Ethiopian coffee or Ethiopian strains. Best on the light to medium roasts but a wonderful cup at almost any roast level. Light to medium you get those wonderful aromatics that come through in the taste, peachy acidity, with hints of soft fruit balancing with rich defined black tea like spice notes a. A cup like this is why washed processed Ethiopians are one of the hottest coffees on the market. Darker roasts burn out a bunch of the acidity/floral/fruity but still a nice cup, strong tea spice and semi-sweet chocolaty factor.

A great super fresh example of Antigua coffee, follows those wonderful floral versus chocolaty notes that made the region so famous. Medium roasts are recommended but good from light to dark. Lighter roasts will accentuate the lemony floral tones of the cup, the chocolaty factor will be just a hint but noticeable and smooth, a bit of nuttiness will linger in the aftertaste not present in further roast levels. Medium roasts are very clean and balanced – not too acidic, not too bitter – sweet edged and will have wonderful mix of tones. Darker roasts and smooth and semi-sweet, low acidity and very chocolaty.

These beans shine best in the light to medium roast range but works well from light to dark. Very fresh and clean tasting cup: well rounded with a medium body and medium brightness levels. At lighter roast points it offers a bright orange zest that quickly shifts into a hint of red fruit, balances with a nutty/caramel/malty note, great flavor depth. Pushing more into the medium roasts, it is a smooth cup and wonderful daily drinker, reducing the sharper citric/fruit note. When roasted slightly darker, the caramel deepens into soft chocolate and malt like tones, while the citrus note remains lively enough for balance. With further roasting, into second crack, the profile moves toward smokey and roasty dark chocolate notes with a bit of nuttiness, complemented by subtle dried-fruit undertones as the cup cools.

I always love the Kona profile. We thought these beans to shine from a medium to dark roast. Lighter roasting will produce hints of a fruity island acidity balanced with a chocolaty/nutty undertone, jazzed up with a hint of herbal spice in the aftertaste. As the roast progresses the cup gets pretty low acidity and the nutty and chocolaty factor will get accentuated. Close or into 2nd crack you will get some added smoky and roasty notes that will compliment the sweeter cup profile.

A lovely example of Kenya coffee. Good from light to dark, we recommend a nice medium roast to showcase it. Very bright, punchy and complex at lighter roasts, a bit front loaded with citric/floral but very clean with some balance. A bit hoppy some will say with some spice notes popping out. The lighter tones will pull some balance with a semi-sweet chocolate edge but easily overpowered by the higher acidity when light roasted. Medium roasts build much better balance between the acidity (citric/floral/fruit) and the dark tones (nutty/cocoa/spice) making it less blasty of a cup, easier to drink all day. If you don’t like higher acidity, this is where to start with your roasts. Darker roasts have there place, but will kill some of what separates this cup from “average” Kenyan. Strong and semi-sweet, think bakers chocolate with herbal accents. A little smoky and roasty but presents nicely for a more exotic dark roast.

A wonderfully complex light to medium roast coffee. Light roasts are lemony and floral upfront which fades to stronger apple like fruitiness with some red fruit accents, balances with a hint of a chocolaty darker tones. Medium roasts clean up the more rustic chocolaty tones which many will like but also reduce the sweetness and fruity factor of the cup, a little fuller bodied with low acidity with good mouthfeel, fruity factor pops out more as the cup cools. Darker roasts get a bit edgy with semi-sweet smoky and roasty notes, finishes with almost a bit of an oaky barrel aged tone.

This green coffee is from La Hammonia, which is part of the Selva Negra Estate in Matagalpa. Grown at an altitude of approximately 4,400 feet in a shaded environment with volcanic soils. These conditions foster slower bean development, resulting in a cup with a more intense and well-structured flavor profile. It is produced using the Parainema variety, a lineage of Arabica that has yielded excellent results in Nicaragua and, specifically at Selva Negra. The coffee is notable for its large bean size. In the cup, it is very clean and sweet coffee with a medium-to-full body and a mere hint of acidity. At lighter roast levels, it offers a more delicate, somewhat floral profile with a chocolate/caramel foundation and notes of herbal spices; at a medium roast, it becomes rounder, smoother, and more chocolatey, featuring a well-developed sweetness and a slight malty finish; and at darker roast levels, it gains body and strength, taking on a sweet, malty, and slightly smoky character.

Light roasts are going to be a little front loaded with the brighter characteristics, a higher rated cup meaning one will notice some decent crisp acidity at the light-medium roasts. Will give great depth of flavor but may be a little sharp for some. Our favorite roast and a great everyday drinker was in the medium roast ballpark, builds more of a smooth and creamy cup with a sweet edge, reducing that perceived acidity to just a pinch. Turns much stronger, a robust cup most would say, into the darker roasts but shined nicely; fuller bodied with strong malty and smoky tones, still a sweeter edge to it which darker roast fans will love.

An interesting and complex single-cultivar Tanzania (SL-28), best at light to medium roasts, though it works darker as well. At lighter roasts it grabs your attention from the first sip with a vibrant, juicy acidity a touch higher than usual with hints of sweet orange and lemon. The clean cup carries plenty of lively depth: deep chocolate and cocoa, a classic African spice note, and an herbal nuance clearly reminiscent of black tea that, far from clashing, makes for a really appealing interplay of flavors. It has a medium body that fills in and turns denser as it cools, with a background of fruity sweetness, praline, and a slight hint of amaretto for a very balanced cup.
