A fresh and classic African natural, a wonderful example of what natural processing can do without all the fermenty overly fruity notes. One can detect hints of the natural processing in the taste but the dominant tones are still classic Burundi. This cup has a pleasant but restrained acidity, closer to a Brazil than to a bright African, balanced by a sweet cacao base with notes of melon and a subtle hint of green tea. At a lighter roast it shows fresher and more aromatic; from medium to dark the acidity settles and the cacao takes the center, with more body and sweetness. It is a medium bodied cup, smooth and slightly creamy, with a clean finish. An easy to roast Burundi natural from 289 smallholder farmers on the Nkuba hill.

A fully washed lot from 7 small producers in the municipality of Caldono, in the department of Cauca, Colombia. Each producer works their own micro-mill, carefully harvesting, depulping, fermenting, washing and drying the parchment before the coffee is gathered and exported through Banexport, a Colombian export company that provides warehousing, milling and technical support so growers can reinvest in their farms. The trees grow between 1400 and 1750 masl on clay-rich soils, the variety is Castillo and it comes in as a clean, fresh AA grade. Lighter roasts show a bright citrusy acidity with nectarine, raspberry and a touch of white tea; medium roasts settle into a balanced, classic Colombian profile with rounder fruit and a syrupy sweetness; and darker roasts build body and lean toward sweet, chocolaty tones. An easy roasting, versatile single origin that performs well light to dark.

This is a quality cup in and out. Lots of cool tones to play with in the roaster. A bit higher acidity with a strong floral aspect, balanced with a full bodied nutty and chocolaty undertone. Slightly fruit forward but not a fruit bomb. The black honey processing really leave a crazy complex cup with tones ranging from lemongrass to red fruit to nutty/chocolaty and smoky undertones. Super light roasts lean the cup to lemony/floral and will be loaded with more citric lighter tones, not very balanced but very punchy and clean. Darker roasts lean it towards nutty/chocolaty more stout like features with fruity highlights. In the middle, one gets layers of all the lovely flavors in the cup. Crisp and clean lemony floral balanced with sweet and smooth chocolaty undertones than linger on the nuttier side. Hints of fruit will pop out but not hit you over the head.

A very cool washed Ethiopian from one of the more renowned mills. This Ethiopian cup is a super clean; an awesome example of a high end washed processed Ethiopian. Jasmine aromatics with wild more lemon/tropical fruit acidity, balanced with a chocolaty spiced undertone. Lighter roasts will have some citric acidity and a nice more tropical fruity factor balanced with a faint tea like chocolaty undertone. Medium roasts really mellow out the acidity and reduce the fruit tone but create a bit more body and a much more recognizable chocolaty factor. A very smooth, balanced cup with exotic highlights. Darker roast burn out all the fruity and acidic notes, gets a little smoky roasty with strong bakers chocolate tones.

A great super fresh example of Antigua coffee, follows those wonderful floral versus chocolaty notes that made the region so famous. Medium roasts are recommended but good from light to dark. Lighter roasts will accentuate the lemony floral tones of the cup, the chocolaty factor will be just a hint but noticeable and smooth, a bit of nuttiness will linger in the aftertaste not present in further roast levels. Medium roasts are very clean and balanced – not too acidic, not too bitter – sweet edged and will have wonderful mix of tones. Darker roasts and smooth and semi-sweet, low acidity and very chocolaty.

These beans shine best in the light to medium roast range but works well from light to dark. Very fresh and clean tasting cup: well rounded with a medium body and medium brightness levels. At lighter roast points it offers a bright orange zest that quickly shifts into a hint of red fruit, balances with a nutty/caramel/malty note, great flavor depth. Pushing more into the medium roasts, it is a smooth cup and wonderful daily drinker, reducing the sharper citric/fruit note. When roasted slightly darker, the caramel deepens into soft chocolate and malt like tones, while the citrus note remains lively enough for balance. With further roasting, into second crack, the profile moves toward smokey and roasty dark chocolate notes with a bit of nuttiness, complemented by subtle dried-fruit undertones as the cup cools.

A very clean and brighter cup, silky-smooth mouthfeel that shines from the first whiff of honey sweetness to the final sip of bolder spice. Best served at light-to-medium roasts. A brighter, full flavored cup with great depth of flavor. Upon first sip, one will see a vibrant burst of lemon/orange citric comingling with a slight red fruit, quickly balanced by a creamy cocoa undertone with a little gentle black-tea like spice in the aftertaste. Underlying notes of roasted nuts and cocoa anchor the profile. As the cup cools the acidity softens and a deeper chocolate note swells, yet the honey aromatics persist, making every temperature stage deliciously consistent.

Light-medium roasts bring out caramel and a light tropical edge; medium roasts push toward milk chocolate and creamy body; medium-dark roasts add bittersweet chocolate and toasted nut without turning harsh. This green coffee is from La Hammonia, which is part of the Selva Negra Estate in Matagalpa. Grown at an altitude of approximately 4,400 feet in a shaded environment with volcanic soils. These conditions foster slower bean development, resulting in a cup with a more intense and well-structured flavor profile. It is produced using the Parainema variety, a lineage of Arabica that has yielded excellent results in Nicaragua and, specifically at Selva Negra. The coffee is notable for its large bean size. In the cup, it is very clean and sweet coffee with a medium-to-full body and a mere hint of acidity. At lighter roast levels, it offers a more delicate, somewhat floral profile with a chocolate/caramel foundation and notes of herbal spices; at a medium roast, it becomes rounder, smoother, and more chocolatey, featuring a well-developed sweetness and a slight malty finish; and at darker roast levels, it gains body and strength, taking on a sweet, malty, and slightly smoky character.

A very clean and fresh batch from Selva Negra. A little citric & floral acidity upfront, balanced with nice complex nutty & malty undertones. Light roasts are going to be a little front loaded with the brighter characteristics, a higher rated cup meaning one will notice some decent crisp acidity at the light-medium roasts. Will give great depth of flavor but may be a little sharp for some. Our favorite roast and a great everyday drinker was in the medium roast ballpark, builds more of a smooth and creamy cup with a sweet edge, reducing that perceived acidity to just a pinch. Turns much stronger, a robust cup most would say, into the darker roasts but shined nicely; fuller bodied with strong malty and smoky tones, still a sweeter edge to it which darker roast fans will love.

Nicaraguan SHG RFA Selva Negra Geisha is a washed coffee from the San Felipe lot at La Hammonia / Selva Negra in Matagalpa, grown on the farm’s highest parcel. it as a sweet, easy-drinking cup with medium to low acidity and a chocolaty, floral profile that shows best at medium to dark roast levels. As the roast develops, the chocolate character can lean slightly malty, while very light roasts can taste a bit grassy unless given a little more development. The page also notes that this Geisha planting was established on the steep, high-altitude section of San Felipe, with Geisha trees planted alongside Caturra selected for strong performance at elevation.

This is a natural processed lot that stands out not only for its taste, but its fascinating origin: the virgin highlands of the Jiwaka Province. Its cultivation takes advantage of one of the best-preserved Typica variety arabica genetics on the planet, a heritage from the early plantations introduced in the early 20th century. The production of this particular lot is made possible by Monpi Coffee and the Kindeng wet mill, where the finest cherries grown by local smallholders are meticulously sorted and sun-dried for a full month, taking advantage of the cool mountain climate. This is a fully washed Bourbon from Nyamasheke, near Lake Kivu, where the cool, humid conditions influenced by the nearby Nyungwe forest and the region’s volcanic-influenced soils help produce clean, well-structured cups. It’s processed through the Jarama washing station network and typically dried on raised beds at high elevation (around 1700–1900 masl). At a medium roast you’ll usually get a sweet, clean profile with a nutty/chocolate base and a light citrus lift; roasted lighter it leans brighter and more fruit-forward (grape-like), and pushed darker it turns deeper and sweeter with more cocoa and caramelized sugar and less acidity.

Tanzanian peaberry is always high on our list for darker roast beans: rich and chocolaty cups with robust and unique spice notes. This one being fresh as can be works pretty well from light to dark, if too light it can get a little grassy/herbal, but a clean and balanced cup with just a little development past first crack, a city+ roast they would call it. Retains its cleanliness into the darker roast points. Lighter roasts are going to be more acidic, not quite like a Kenya but a pretty clear citric edge balancing with a little hint of chocolate. Hit the roast right and you will see a pinch of caramel sweetness with a longer setup, but get it a bit too light, will have an herbal edge. Medium to dark roasts are pretty bullet proof. Medium will still show a hint of acidity, darker will lose it all. Either roast level will be nice and chocolaty with some spice behind it. If your a cold brew fan, lighter roasts points were pretty awesome, no risk of herbal and it popped out the sweeter caramel note much easier, a lighter bodied and sweeter cup.
