A wonderfully clean and semi-exotic Colombian, washed processed coffee, so not exotic by means of overly fruity or ferment, but picks up some spice notes not usually seen in Colombians. Versatile from light to dark, we thought best at the lighter roast levels. Crisp, clean, sweet, with a ton of flavor depth. The cup has a little fuller body and in mainly a nutty and chocolate like cup. Medium acidity, gives a little citric/fruit twist at lighte roast levels. Some unique tea like spice notes mainly in the aftertaste. Be sure to hit a medium to dark roast if you do not like a little crispness in the cup. Lighter roasts promote a sweeter more delicate cup, a touch of fruitiness among the citrus/floral, while a medium to dark roast accentuate the spice tones and turn the cup more semi-sweet bakers chocolate like.

Super light roasts risk a little grassy/herbal but it straightens out at a city+ (medium) and holds up as dark as you want to take it. The darker you go, the more body and edgy chocolate the cup will pick up, once you hit 2nd crack, expect some smoke and roasty tones to compliment the nutty/chocolaty factor.

A great cup from light to dark roasts. We thought it shined best on the lighter side of a medium roast, a city+ most would say. The sweet and nutty tones give a hint of caramel with a little setup. Shows some citric acidity upfront but would be considered a lower acidity cup overall. The brighter features comingle with a medium bodied nutty/cocoa undertone and a sweeter edge. Reminds me of a nice Honduran coffee more so than a traditional Brazil, a bit nuttier. Medium to dark roasts mute the brighter characteristics providing a very smooth cup that works a little better for daily drinking or espresso. Turns much more chocolaty the darker you roast, still retains a little nuttiness in the aftertaste, a bit roasty if you touch or go into second crack but it compliments the beans characteristics.

The two combine for a hints of caramel, quite tasty for you light roast fans. Medium roasts are richer, more of a developed chocolaty tone and decently less nutty; mutes up the soury floral edge, retains a little hint of soft fruit as the cup cools. Fairly neutral tasting and very chuggable. Darker promotes a thicker body and introduces a slightly bitter contrast that works very well for espresso.

Lighter roasts will have strong citric floral notes with some red fruit highlights. Hints of chocolate herbal spice will pull a little balance between the light and dark tones. Light roasts will pop out the more exotic tones in these beans, they will get more classic Colombian character the darker you roast. Medium roasts are more balanced, reducing the stronger citric component, pronouncing the red fruit and bringing forth a thicker body with more traditional rich nutty & chocolaty Colombian tones. Darker roasts into 2nd crack are a little edgy, semi-sweet chocolate and spice tones will pack a punch, the roasty & smoky tones will compliment the darker tones nicely, a hint of a fruity tone can be found in the aftertaste but just a hint.

Medium roasts cut out most of the lemony crispness and rid the cup of its herbal edge. Smooth and rich, medium bodied, with a more pronounced chocolate tone; a bit floral and sweet in the aromatics, adds to the drinking experience but doesn’t come through in the tastes. Darker roasts are robust and strong, semi-sweet and very chocolaty with a roasty edge.

Lighter roasting presents a ton of floral and fruit with an almost oak/peat boozy finish, very sweet with just a ton going on but does risk some underdeveloped tones with its two-toned roasting. Medium roasts were our favorite, still plenty wild but develop enough of the chocolate and smoky tones – which most Dominican coffees are known for – to balance all those more exotic fruity and citric tones. Darker roasts will burn out most of what distinguishes this cup, the washed processed handles those roast level much better; interesting and still exotic but strong and edgy, it will retain some fruity factor with very strong and less sweet, smoky, tobacco and bakers chocolate type notes.

Lighter roasts have a hint of floral/citric acidity with just a touch of sweet and delicate red fruit coming from the honey processing. A bit on the nutty/chocolaty side for its balance, starts as a dry nutty at very light roasts, turns more chocolaty as the roast gets darker.
A little front loaded with the more acidic and fruity tones at traditional light roasts. Medium roasts have better balance between light an dark tones cutting out some acidity; smooth, rich and sweet edged. Dark roast loses the more exotic acidity and fruity edge but turns very thick, nutty, semi-sweet chocolaty with smoky accents.

Good from light to dark but we thought best at a strong medium to dark roast. A good bean to go after a rich and semi-exotic chocolate tone with some wonderful aromatics and a bit of spice. Light roasts are more citric and floral with wonderful aromatics and a sweet edged, a bit punchy in the citric department and contrasts with a bit of nutty/herbal/grassy undertones. Works well but needs a much longer setup time bring out smooth and clean tastes, sharp and grassy/herbal if drank too soon. Medium roasts will bring some lovely balance to the cup and provides a clean tasting brew without waiting a week to drink it. One starts seeing the chocolate aspect but will still pull some balance with the citric and floral. Less aromatic than the light roasts, but you can still tell you have a nice Ethiopian with one sniff. Darker roasts touching or into second crack are real robust, strong and semi-sweet, more bakers-chocolate like with tea like spice in the aftertaste.

A wonderful example of a darker toned, lower acidity Ethiopian. We thought best from medium to dark roasts but it will still find fans at lighter roast points. Lighter roasts will have some buzzy acidity and just a hint of lemon/floral balanced with smooth and rich herbaceous spice notes. A bit more on the bergamot/dark-tea like Yirgacheffe profile. Medium roasts turn the herbaceous notes towards the chocolaty side moving the herbal/tea like tones to the aftertaste. A bit fuller bodied, lower acidity with complex darker tones. Dark roasts turn semi-sweet and even more chocolaty, the spice is readily noticeable and the body picks up a bit of a creamy factor, the roasty/smoky notes mix well with the darker toned profile of this bean but will not hold its sweet edge like most Ethiopians.

The core is nutty, down the almond alley, supported by a chocolate/caramel underpinnings that round the cup. Good to let light roasts setup a bit longer or risk a little herbaceous tone. Medium to dark roasts bring out the larger body and reduce the brighter characteristics, making the dominate taste malty and nutty tones, medium roasts will have a pinch of citric for balance, dark roasts will not. Sweet with just a pinch of citric upfront, medium bodied, good mouthfeel, just a pinch of fruitiness and ends with a nice malty undertone. Lighter roast get a bit brighter and slightly more fruity but can risk a little grassy, medium roasts present great balance to the flavors and was very easy drinking, darker roasts retain a lot of sweetness and hefty malty tones, but will get pretty roasty/smoky. If drinking for drip/pour-over, medium roasts are where to go. If using for blending, espresso or cold brew, light or dark roasts can produce some really tasty results.

Unlike almost any other wet-hulled coffees, this is actually quite tasty at the light to medium roast levels. The jasmine aromatics shine at any roast point, but will be more delicate in taste, especially at fuller roast levels. No missing the co-ferment tones but comparatively to many co-ferment offerings, this has more delicate flavors, might be for its Jasmine instead of a more punchy fruit note. Light roasts have some sweet and clean lemon/citric and fruit tones right upfront that quickly fade into a nice jasmine kick. The tones balance nicely with a little earthy/herbal/cocoa dark tone that will compliment the jasmine. A semi-sweet cup overall with a ton of complexity. While piping hot, reminded me of jasmine tea, but with a fuller body, more creamy mouthfeel and a bit more kick in the aftertaste. Medium to dark roasts promote the more rustic dark chocolate roots from Indonesia and the wet-hulling, reducing the more citric/floral tones from lighter roasts. Gets a little hint of a barrel aged ferment complexity and highlights with the jasmine floral note.

Light roasts (just after 1st crack) are pretty clean and tasty but more nutty, as one pushes darker the nuttiness turns a bit more caramel/chocolaty like but will mute up the more islandy floral/fruitiness. How much you like a sweet nutty tone will be the decider where to roast this one. Darker roasts add a lot of body and dark chocolate smokiness but burn out all the delicate soft fruit and acidity which pushed this cup well beyond average for JBM. This cups taste profile is along the same lines as the Flamstead operation with a bit less lemony acidity.

A complex, full flavored cup, which is why many think of Kenya as the top origin for high class beans. Lighter roasts are bright with stronger citric notes and hints of fruit, will pull a darker toned balance with a semi-herbal, green tea like component. Medium bodied, higher acidity with awesome depth of flavor. Medium roasts tame some of the bright characteristics, not as citric, promotes the body of the cup and turns the darker tones more chocolaty than herbal. Still retains good balance and depth but is not nearly as punchy with its tastes. This is an excellent classically bright Kenyan; super clean, sweet with good body. One can find all sorts of acidic like notes in this cup ranging from soft fruit to very floral citrus. All the wonderful lighter tones balance with a nice and rich chocolaty undertone, pretty potent, fades into some classic African spice on the tongue (tea like semi-vegetal). Turns pretty dark/bakers chocolate like into the darker roasts. Very fun cup with awesome flavor depth.

A great daily drinker from a medium to dark roast. A very chocolaty cup of coffee, fuller bodied with low acidity, with some nutty & herbal accents. Light to medium roasts are crisp & sweet: Hints of citric balance with a nutty & woody undertone, a pinch of herbal spice in the aftertaste. With a longer setup time, assuming not too lightly roasted, that woody edge tends to produce a bit of a caramel twist which is quite tasty. Although good at semi-lighter roasts, we really enjoyed the medium to dark roasts better, fuller bodied and creamy. Semi-sweet chocolate and nutty tones dominate the cup with just a pinch of an herbal note in the aftertaste, a little complimenting roasty/smoky note into second crack. Wonderful for classic espresso or for those who use a splash of milk or creamer.

Always one of our favorite Mexican coffees. Good from light to dark. Although Natural processed, this is not a fruit bomb like many other natural processed coffees, has slightly fruity overtones that balance great with some citric, malt and nutty undertones. Its a little fuller bodied cup than most Terruno lots with well above average sweetness. Lighter roasting will have noticeable citric crispness upfront and will accentuate the fruitiness. Medium roasts balance the tones nicely and smooth out (reduce) the citric brightness. Darker roasts turn much more chocolaty and get pretty roasty and smoky, retains a sweet edge and shows hints of fruitiness as the cup cools. A great daily drinker! Works well from light to dark roasts. Very sweet and chocolaty cup of coffee with some lemony/floral crispness upfront. Light roasts will show stronger citrus mixing with a nuttier darker tone with slightly herbal accents, small hint of caramel will show with a little longer setup. Could be a bit acidic for some, but presents nicely for those who like a little citric and a nuttier cup profile. Medium roasts smooth out the cup and move the darker tones to more along the chocolate like alley, far less noticeable citric tones. Likely the best roast for daily drinking, but will be personal preference. A wonderfully complex light to medium roast coffee. Light roasts are lemony and floral upfront which fades to stronger apple like fruitiness with some red fruit accents, balances with a hint of a chocolaty darker tones. Medium roasts clean up the more rustic chocolaty tones which many will like but also reduce the sweetness and fruity factor of the cup, a little fuller bodied with low acidity with good mouthfeel, fruity factor pops out more as the cup cools. Darker roasts get a bit edgy with semi-sweet smoky and roasty notes, finishes with almost a bit of an oaky barrel aged tone.

A very clean and fresh batch from Selva Negra. A little citric & floral acidity upfront, balanced with nice complex nutty & malty undertones. Light roasts are going to be a little front loaded with the brighter characteristics, a higher rated cup meaning one will notice some decent crisp acidity at the light-medium roasts. Will give great depth of flavor but may be a little sharp for some. Our favorite roast and a great everyday drinker was in the medium roast ballpark, builds more of a smooth and creamy cup with a sweet edge, reducing that perceived acidity to just a pinch.
