Best at the light to medium roast levels. Light roasts themselves have a very sweet citric upfront, hints of floral in the aromatics with a little hint of darker toned contrast, nutty/cocoa/spice. A pinch of fruit as the cup cools but more down the citric alley. A little lighter bodied, complex and balanced. A very jazzy, sweet and delicate lighter roast bean with wonderful aromatics. Medium roasts reduce the citric and floral, smoother cup building a bit more body and showing more of what we classically think of Asian coffees, bolder with some spice notes. Assuming you are on the lighter side of a medium roast, you still get nice balance of tones in the cup, a strong medium roast to dark roast points, the coffee is much flatter, strong semi-sweet chocolate with herbal spice.

Super light roasts risk a little grassy/herbal but it straightens out at a city+ (medium) and holds up as dark as you want to take it. This is the most traditional lot of the three, a bit more neutral tasting but just as clean and tasty. Turns a bit more chocolaty and smooth as one pushes the roast into the medium to dark roast level. A nice sweet edge to the cup regardless of roast level. A great cup from light to dark roasts. We thought it shined best on the lighter side of a medium roast, a city+ most would say. The sweet and nutty tones give a hint of caramel with a little setup. Shows some citric acidity upfront but would be considered a lower acidity cup overall. The brighter features comingle with a medium bodied nutty/cocoa undertone and a sweeter edge. Reminds me of a nice Honduran coffee more so than a traditional Brazil, a bit nuttier. Medium to dark roasts mute the brighter characteristics providing a very smooth cup that works a little better for daily drinking or espresso. Turns much more chocolaty the darker you roast, still retains a little nuttiness in the aftertaste, a bit roasty if you touch or go into second crack but it compliments the beans characteristics.

A very fresh and tasty Brazil! Lighter roasts show lemon, floral & soft fruit contrasted by a nuttier (almond like) undertone, a sweet edged cup. The two combine for a hints of caramel, quite tasty for you light roast fans. Medium roasts are richer, more of a developed chocolaty tone and decently less nutty; mutes up the soury floral edge, retains a little hint of soft fruit as the cup cools. Fairly neutral tasting and very chuggable. Darker promotes a thicker body and introduces a slightly bitter contrast that works very well for espresso.

Lighter roasts will have strong citric floral notes with some red fruit highlights. Hints of chocolate herbal spice will pull a little balance between the light and dark tones. Light roasts will pop out the more exotic tones in these beans, they will get more classic Colombian character the darker you roast. Medium roasts are more balanced, reducing the stronger citric component, pronouncing the red fruit and bringing forth a thicker body with more traditional rich nutty & chocolaty Colombian tones. Darker roasts into 2nd crack are a little edgy, semi-sweet chocolate and spice tones will pack a punch, the roasty & smoky tones will compliment the darker tones nicely, a hint of a fruity tone can be found in the aftertaste but just a hint.

A very tasty Colombian. Moving to a solid medium roast, the cup leans toward milk chocolate and light toffee, with a subtle citrus note, shows some hints of fruit as the cup cools but pretty minor. As one pushes into the darker roasts, notes of dark chocolate and caramelized sugar move to the foreground, a stronger less delicate cup. A good balance of flavors that can accommodate anyone’s personal tastes, dependent on roast level. Lighter roasts are brighter, sweeter and more floral, balanced with hints of dryer, nutty undertones. Medium roasts had the best balance, smooth with a slight chocolaty edge and pronounced nuttiness in the aftertaste, just a hint of crispness to the cup. Dark roasts turn fuller bodied and semi-sweet, accentuating the nutty and chocolate tones even more but will lose its floral and crisp sweeter edge.

A very nice light to dark roast decaf. Lighter roasts are sweeter and more delicate, a little unique spice with a bit of nuttiness and just a pinch of floral. Medium roasts are a smoother cup, a little sweet edge, nutty, with a touch of chocolate. Has a little floral overtone that makes it a bit interesting. Fuller bodied with a richer chocolate tone closer to 2nd crack. Some smokiness at second crack or into but retains its smooth and rich character. Decaf Mexican is always one of my favorite beans to get a nice and strong chocolaty note in the decafs. Lower acidity and fuller bodied, pretty hefty in its semi sweet bakers chocolate tone at fuller roasts.

Lighter roasting presents some nice honey processed features: citric, floral, soft fruit with an almost oak/peat like finish, sweet & complex but does risk some underdeveloped tones if you nail it a little too light. Medium roasts were our favorite, still balanced and complex but will develop the traditional chocolate and smoky tones for which Dominican coffees are known for – to balance out those more exotic fruity and citric tones. New 2024/25 Crop! A very cool, very exotic cup of coffee. One can tell this is a slow dry natural processed coffee with its strong ripe red fruit tones upfront. Lighter roasting presents a ton of floral and fruit with an almost oak/peat boozy finish, very sweet with just a ton going on but does risk some underdeveloped tones with its two-toned roasting. Medium roasts were our favorite, still plenty wild but develop enough of the chocolate and smoky tones – which most Dominican coffees are known for – to balance all those more exotic fruity and citric tones. Darker roasts will burn out most of what distinguishes this cup, the washed processed handles those roast level much better; interesting and still exotic but strong and edgy, it will retain some fruity factor with very strong and less sweet, smoky, tobacco and bakers chocolate type notes.

Sweet with just a pinch of citric upfront, medium bodied, good mouthfeel, just a pinch of fruitiness and ends with a nice malty undertone. Lighter roast get a bit brighter and slightly more fruity but can risk a little grassy, medium roasts present great balance to the flavors and was very easy drinking, darker roasts retain a lot of sweetness and hefty malty tones, but will get pretty roasty/smoky. If drinking for drip/pour-over, medium roasts are where to go. If using for blending, espresso or cold brew, light or dark roasts can produce some really tasty results.

Good from light to dark although we thought it best at a nice medium roast. Crisp tones, slight citrus/fruit note and a fuller bodied rustic chocolaty factor to balance it off. Sweet and clean, this is a stronger cup of a coffee! Just a bit of the classic Indo earthiness, I might link this coffee closer to an exotic Colombian than an Indo (which is way cool). Very nice rich chocolate tones (a little sweet malt/caramel as it cools) adds to the mix of delicate flavors present in this cup. A slight smoky aftertaste can be picked up at the darker roast points. This is a must try for anyone who likes a real full bodied complex cup of joe!

Unlike almost any other wet-hulled coffees, this is actually quite tasty at the light to medium roast levels. The jasmine aromatics shine at any roast point, but will be more delicate in taste, especially at fuller roast levels. No missing the co-ferment tones but comparatively to many co-ferment offerings, this has more delicate flavors, might be for its Jasmine instead of a more punchy fruit note. Light roasts have some sweet and clean lemon/citric and fruit tones right upfront that quickly fade into a nice jasmine kick. The tones balance nicely with a little earthy/herbal/cocoa dark tone that will compliment the jasmine. A semi-sweet cup overall with a ton of complexity. While piping hot, reminded me of jasmine tea, but with a fuller body, more creamy mouthfeel and a bit more kick in the aftertaste. Medium to dark roasts promote the more rustic dark chocolate roots from Indonesia and the wet-hulling, reducing the more citric/floral tones from lighter roasts. Gets a little hint of a barrel aged ferment complexity and highlights with the jasmine floral note.

Very bright, punchy and complex at lighter roasts, a bit front loaded with citric/floral but very clean with some balance. A bit hoppy some will say with some spice notes popping out. The lighter tones will pull some balance with a semi-sweet chocolate edge but easily overpowered by the higher acidity when light roasted. Medium roasts build much better balance between the acidity (citric/floral/fruit) and the dark tones (nutty/cocoa/spice) making it less blasty of a cup, easier to drink all day. If you don’t like higher acidity, this is where to start with your roasts. Darker roasts have there place, but will kill some of what separates this cup from “average” Kenyan. Strong and semi-sweet, think bakers chocolate with herbal accents. A little smoky and roasty but presents nicely for a more exotic dark roast.

Very fresh and tasty from light to dark roasts. Too see them shine, we do recommend a light to medium but there are reasons we can think of to take it darker. A complex, full flavored cup, which is why many think of Kenya as the top origin for high class beans. Lighter roasts are bright with stronger citric notes and hints of fruit, will pull a darker toned balance with a semi-herbal, green tea like component. Medium bodied, higher acidity with awesome depth of flavor. Medium roasts tame some of the bright characteristics, not as citric, promotes the body of the cup and turns the darker tones more chocolaty than herbal. Still retains good balance and depth but is not nearly as punchy with its tastes. We found this cup best from medium to dark roasts. Medium roasts have a sweet and nutty tone, mixing with a pinch of crispness and semi-roasty chocolate factor. Creates a cool burnt sugar, or roasted caramel like tone. Medium bodied and lower acidity, very easy drinking coffee with a bit of uniqueness behind it. Very different from the Gesha offering, a fun contrast. Strong medium to dark roasts bring out some wonderful spice notes within the richer nutty & chocolate notes. A bit reminiscent of Indian coffee, but smoother and sweeter. A more potent brew on the roasty tasting side as you touch or go into second crack but all the tastes roll together nicely including some smokiness.

A great daily drinker from a medium to dark roast. A very chocolaty cup of coffee, fuller bodied with low acidity, with some nutty & herbal accents. Light to medium roasts are crisp & sweet: Hints of citric balance with a nutty & woody undertone, a pinch of herbal spice in the aftertaste. With a longer setup time, assuming not too lightly roasted, that woody edge tends to produce a bit of a caramel twist which is quite tasty. Although good at semi-lighter roasts, we really enjoyed the medium to dark roasts better, fuller bodied and creamy. Semi-sweet chocolate and nutty tones dominate the cup with just a pinch of an herbal note in the aftertaste, a little complimenting roasty/smoky note into second crack. Wonderful for classic espresso or for those who use a splash of milk or creamer.

Always one of our favorite Mexican coffees. Good from light to dark. Although Natural processed, this is not a fruit bomb like many other natural processed coffees, has slightly fruity overtones that balance great with some citric, malt and nutty undertones. Its a little fuller bodied cup than most Terruno lots with well above average sweetness. Lighter roasting will have noticeable citric crispness upfront and will accentuate the fruitiness. Medium roasts balance the tones nicely and smooth out (reduce) the citric brightness. Darker roasts turn much more chocolaty and get pretty roasty and smoky, retains a sweet edge and shows hints of fruitiness as the cup cools. A great daily drinker! Works well from light to dark roasts. Very sweet and chocolaty cup of coffee with some lemony/floral crispness upfront. Light roasts will show stronger citrus mixing with a nuttier darker tone with slightly herbal accents, small hint of caramel will show with a little longer setup. Could be a bit acidic for some, but presents nicely for those who like a little citric and a nuttier cup profile. Medium roasts smooth out the cup and move the darker tones to more along the chocolate like alley, far less noticeable citric tones. Likely the best roast for daily drinking, but will be personal preference.
