A wonderful example of a fruity natural! Lighter roasts are where this cup will shine. Hints of lemony floral acidity comingle with tropical edged red fruit tones, what a combination! A chocolate like undertone to balance off the cup. Not much for the traditional African herbal/vegetal spice note which many Central or South American coffee fans will love, but may come off as a more delicate cup to African fans. Medium roasts get much more chocolaty and smooth, retains the red fruit tone nicely. Darker roasts pick up some stronger roasty tones, compliments the more chocolaty aspects of the cup, especially as it cools, the fruitiness will jump right out even at darker roast points.

A lovely coffee from medium to dark roasts. A chocolate bomb cup (similar to Tanz Peaberry) at the fuller roast levels. Lower acidity, medium bodied, with a strong semi-sweet chocolate note. Hardly any traditional African herbal notes, which made me like this cup even more, smooth and on the more neutral side. If you roast it a bit lighter, you can see some brightness, a hint of lemon and a slightly more floral note popping out, but will not be nearly as chocolaty. Medium roasts build the darker tones and mute a bunch of the citric brightness, a semi-sweet chocolaty cup with a burnt sugar kick, just a pinch of crisp citric that will disappear as the coffee sets up. Hints of nuttiness is the aftertaste with a more milky mouthfeel. Darker roasts (into 2nd crack) turn the cup more robust, a semi-sweet chocolate bomb with a little roasty spice in the aftertaste, much flatter but very tasty with a splash of milk or for espresso/cold-brew.

A nice clean cup, tasty from medium to dark roasts. Fuller bodied cup with some pleasant acidity. Classic Colombian, toasted walnut and baker’s chocolate like darker tones comingle with soft acidity and medium sweetness levels. Light roasts can be a little acidic, stronger on the citric notes with just a pinch of soft fruit. A longer setup time is nice on light roasts to mellow it out a bit. Medium roasts accentuate the semi-sweet thicker nutty/walnut like tones with a little spice in the aftertaste, still has a gentle brightness upfront but brings nice balance and a little sweeter edge to the cup. Darker roasts accentuate the semi-sweet tones, turns a bit roasty tasting but works with its fuller body with a creamy mouthfeel, a good roast point if you use a splash of cream.

The aroma of this coffee is very nice; sweet with with a little spice & floral notes. Best at a medium to borderline dark roast. Sweet upfront with a hint of crispness balanced with a stronger toasted walnut/chocolaty undertone. A little hint of acidity at the medium roast point really creates a nicely balanced cup with a broad flavor profile. Touching 2nd crack builds some body and will add some smoky and roasty notes that can compliment the classic Colombian profile.

Great floral and soft fruit tones upfront with a bit of brightness, not too overwhelming or potent like some Africans, delicate sweetness balanced with a little chocolaty spice. Smooth with almost a brown sugar hint at a strong medium roast. Pretty much everyone will love this coffee, a great everyday drinker. Strong savory with panela and burnt sugar flavors. Juicy acidity and sugary sweetness.

The stronger chocolate undertones mix very well with the floral sweetness on top to create a lovely balance. Lighter roasts were interesting, pulls a bit of sweet green tea like spice, but for most Central American fans, shooting a bit fuller and creating a more chocolaty cup will be the way to go.

Unlike its caffeinated cousin, there is some earthiness but its not over the top, the decaf monsooned is more rich and chocolate/earth with some lingering spice.

A great clean decaf coffee! Good from light to dark. Lighter roasting will show a little lemony crispness, rare for a decaf. Sweeter edged with a little herbal chocolate contrast. Medium roasts cut out most of the lemony crispness and rid the cup of its herbal edge. Smooth and rich, medium bodied, with a more pronounced chocolate tone; a bit floral and sweet in the aromatics, adds to the drinking experience but doesn’t come through in the tastes. Darker roasts are robust and strong, semi-sweet and very chocolaty with a roasty edge.

A wonderful example of a top grade washed Ethiopian. Best served in the light to medium roast range, a very delicate and sweet cup. Hints of citrus and soft fruit comingle with floral, caramel, chocolate and tea like spice. Heirloom Ethiopian strains have a taste like no other and offerings like this one showcase their uniqueness. For acidity fans, a light roast ending real close to 1st crack will have a stronger lemony citric edge, covers up a bit of the delicate floral/fruit but crisp, clean and sweet. We personally liked it better just a shade or two darker, splitting the difference between light and medium. It will mellow the citric tones popping out the sweet floral, while building a bit more sweet caramel/chocolate darker tone with a hint of tea like spice in the aftertaste. Crisp but not overly acidity. Darker roasts go the other way covering up the citric and floral with strong chocolate and herbal tones. The aromatics are fantastic on these beans and will add wonderful floral depth to the tastes.

Good from light to dark but we thought best at a strong medium to dark roast. A good bean to go after a rich and semi-exotic chocolate tone with some wonderful aromatics and a bit of spice. Light roasts are more citric and floral with wonderful aromatics and a sweet edged, a bit punchy in the citric department and contrasts with a bit of nutty/herbal/grassy undertones. Works well but needs a much longer setup time bring out smooth and clean tastes, sharp and grassy/herbal if drank too soon. Medium roasts will bring some lovely balance to the cup and provides a clean tasting brew without waiting a week to drink it. One starts seeing the chocolate aspect but will still pull some balance with the citric and floral. Less aromatic than the light roasts, but you can still tell you have a nice Ethiopian with one sniff. Darker roasts touching or into second crack are real robust, strong and semi-sweet, more bakers-chocolate like with tea like spice in the aftertaste.

A great super fresh and clean micro lot from our friends at Finca De Dios. Awesome prep, one can tell a lot of care went into these beans. A great medium to as dark as you want to go bean type. Light roasts produce a lot of floral brightness and light fruit notes (almost reminiscent of a nice Costa) mixing with a subtle yet very sweet malty chocolaty note but can be a little more challenging to roast to a light roast – a great morning brew – darker roasts will produce more body similar to the Huehues – very clean non-roasty dark-roast beans – you get a lot of the sweet malty tones and very smooth even into 2nd crack – a very stand up bean at almost any roast level.

Roast-wise, it shines light to medium for florals and citrus; pushing darker turns it more chocolate-forward with lower perceived acidity.

Many of the notes in the aroma come through in the flavor like walnuts and some smoke. There’s dark fruit, oak, licorice, and some vanilla spice, like a good dry red wine. The finish has a subdued brightness to it with just hints of lemon zest at lighter roast points. The body is medium to full depending on roast and brew. This washed Kenya AA comes from Iveti, Machakos County, via the Ngomano Factory, the washing station of the Ngomano Farmer Cooperative Society (FCS), which comprises 1,115 smallholder farmers (part of the Machakos Cooperative Union). Grown at 1700–1800 meters above sea level (varieties SL-28, SL-34, Ruiru 11, and Batian), this is a fly crop (secondary harvest) lot that arrives exceptionally fresh out of season. In the cup, it offers a clean and balanced Kenyan profile, with bright lemon citrus and a subtle hint of red fruit upfront, settling into a sweet chocolate and nutty undertone, finishing with a black tea-like herbal spice; it has medium acidity for a Kenyan coffee and a medium to full body, and performs well with light to dark roasts (darker roasts bring out more chocolate/caramel notes).

Similar to it’s AA cousin, a great cup from light to dark. We preferred it at a nice medium roast, toned down the brightness a bit without burning out any flavor depth. A brighter cup with a medium to full body. Although this cup does have some acidic components, all in all, it would be considered a medium/low acidity Kenya, sometimes they are just teeth chattering. Starts with a lemony crispness, a little hint of red fruit, balances with a nice chocolate and herbal dark tone, just a speck of nuttiness in the aftertaste. A clean, balanced, and full flavored cup. A great example of a traditional Kenya. Darker roast levels get very chocolaty, will shows hints of spice, burnt sugar and nuttiness, turns it a bit thicker tasting, fuller bodied. Although we enjoyed this best at lighter roasts, there are not many dark roast coffees that taste this complex making it wonderful light to dark roasting coffee.

Always one of our favorite Mexican coffees. Good from light to dark but our favorite was a medium roast. Medium to full bodied, medium to low acidity. Lighter roasting will promote a sweet citric edge balancing with a bit nutty undertones. It will pick up a hint of caramel after a couple days setup but risks keeping a little dry nutty tone if too light. Medium roasts are pretty bullet proof, full bodied with rich chocolaty notes, a little nuttiness and vanilla like spice in the aftertaste. A clean cup with just a hint of citric crispness upfront. Darker roasts pick up a bit of roastiness but it compliments the very chocolaty profile, thick with no real hints of brightness. A good coffee for stronger chocolate tones at darker roasts.

A higher rated, more acidic and slightly fruity Peru! Best at light to medium roasts. This cup is nice and clean, brighter, with a medium body and a sweeter edge. A great year for Peru coffees. At the light roasts the cup starts on the citric side, which can be a little punchy, but will fade into a hint of soft fruit and balance with a pretty chocolaty cup with some nutty accents. The richer dark tones linger on the tongue more than the brighter fruitier tones, making it easier to drink than many lighter roast, brighter coffees. A nice medium roast will make anyone happy, cutting the more punchy brighter tones but not killing all the wonderful flavor diversity. Good balance and smoother, lower acidity – a good exotic daily drinker. Darker roasts work good but burn out a bit of the sweetness, the chocolaty factor sure compliments the toastier smoky tones of the dark roasts.

A traditional lower acidity, thicker and creamier daily drinker. Best from the medium to dark roasts. At medium roasts, the cup starts just a little citric, fairly low acidity only detectable at the lighter side of a medium roast, a hint of sweet soft fruit note if a dig a little, but mainly a pretty chocolaty cup profile with some nuttier accents. Lighter roasts one can find a hint of caramel if you get lucky, but risks a little herbal note if too light. A nice medium to borderline dark roast will make anyone happy and provide good balance and smooth chocolate tones, low acidity – a good daily drinker. Darker roasts into 2nd crack work well but burn out a bit of the sweetness and gets a little smoky, the more robust chocolaty factor sure compliments the toastier tones of the dark roasts.

Natural processed fans only on this one. It is a very highly rated cup but filled with fruity and ferment tones, pretty wild in its tastes. Best served in the light to medium roast levels. Medium to low acidity, thicker body and more syrupy mouthfeel. Just a small pinch of citric upfront quickly turns into very ripe red fruit notes, very sweet and complex first sip, pulls some balance with a boozy chocolate note that will linger on the tongue. The boozy quality is pretty faint at the lighter roasts but is accentuated as you head into the medium or dark roasts. Medium and beyond I would link it to a barrel aged tone. This is a full flavored cup with a plethora of flavor hints that poke out depending on roast level and setup time.

A great daily drinking Peru! Best right around a medium roast but works well from light to dark. It stands out for being a very clean and sweet cup. At lighter roast levels it has some crisp acidity, not over the top but noticeable, gives a quick hit lemon and floral that will balance with nutty and chocolate like darker tones. Small hints of caramel and dried fruit will pop out with a little setup. At medium roast levels, you get more of a smooth easy drinking cup, less acidity with accentuated nutty/chocolate tones, a hint of spice in the aftertaste, provides the best balance of light/dark tones. Darker roasts are a little flat and roasty, but on the more neutral side, classic darker roast beans: smooth, rich and on the roasty chocolate side of things with a little nuttiness in the aftertaste.

At a medium roast you’ll usually get a sweet, clean profile with a nutty/chocolate base and a light citrus lift; roasted lighter it leans brighter and more fruit-forward (grape-like), and pushed darker it turns deeper and sweeter with more cocoa and caramelized sugar and less acidity.

The listed variety is Timor Hybrid a naturally occurring Arabica × Robusta cross first identified in Timor in the 1920s, widely known for its rust resistance used in many Arabica breeding lines. A hint of soft fruit can be seen at the light to medium roasts but pretty faint, not super noticeable until the cup cools. A bit of peppery spice at the darker roasts with some complimenting roasty and smoky tones. Lighter roasts will show some lemony acidity and can accentuate the fruitiness of the cup but often will come off a bit too dry. These beans are more about the creamy fuller bodied and smooth chocolate and nutty tones which will come out from medium roasts and beyond.

This Rainforest Alliance washed lot is an AA selection of Catimor 129, grown around 1400–1650m, and it’s built to be versatile across roast levels: lighter roasts lean citrus with a soft cocoa edge, mediums bring a smoother chocolate-and-spice balance, and darker roasts deepen body and chocolate while keeping a clean finish with a lingering spicy note.
