A very nicely balanced cup of coffee. A little hint of acidity upfront providing some floral and soft fruit at the lighter roasts, balanced with a semi-sweet nutty chocolaty factor. Super light roasts risk a little grassy/herbal but it straightens out at a city+ (medium) and holds up as dark as you want to take it. The darker you go, the more body and edgy chocolate the cup will pick up, once you hit 2nd crack, expect some smoke and roasty tones to compliment the nutty/chocolaty factor.

Colombian Premium Huila Gigante – Miraflores Juanito Family – Washed
This is Sabastian’s family coffee (a wonderful Burman Coffee employee), small batch production shipped in by airplane to give our customers some of the freshest coffee poddible. Processed in early August.
Green coffee from a family farm in Miraflores, Gigante municipality (Huila, Colombia): It is a Castillo variety, washed and harvested at altitudes of 1,600–1,900 m, hand-selected. It arrives by air in small batches to preserve its freshness (harvested in late July 2025 and threshed in early August). It presents an exceptionally clean and balanced cup, very versatile depending on the roast: in light coffee, it shows a medium body with caramel and nuts, an intense floral aroma and orange-like citrus with slight herbal and spicy nuances; in medium coffee, it gains structure, with chocolate and a subtle hint of lemon predominating, with a lingering nutty note, lively acidity, and balanced sweetness; in dark coffee, it offers a robust body with deep cocoa and a hint of black tea, while maintaining moderate acidity.

The stronger chocolate undertones mix very well with the floral sweetness on top to create a lovely balance. Lighter roasts were interesting, pulls a bit of sweet green tea like spice, but for most Central American fans, shooting a bit fuller and creating a more chocolaty cup will be the way to go.

Low acidity, smooth body, and a clean, mellow sweetness. Best from medium to dark roasts. Primary cues of baker’s chocolate and cedar/soft spice, with a round, calmly sweet finish Monsoon character minus the caffeine “edge.” As roast deepens, expect more cocoa/wood and a touch of malt. Unlike its caffeinated cousin, there is some earthiness but its not over the top, the decaf monsooned is more rich and chocolate/earth with some lingering spice.

A great clean decaf coffee! Good from light to dark. Lighter roasting will show a little lemony crispness, rare for a decaf. Sweeter edged with a little herbal chocolate contrast. Medium roasts cut out most of the lemony crispness and rid the cup of its herbal edge. Smooth and rich, medium bodied, with a more pronounced chocolate tone; a bit floral and sweet in the aromatics, adds to the drinking experience but doesn’t come through in the tastes. One sniff of this coffee and you know you have something special. Jasmine floral and sweet aromatics, something you will only get out of Ethiopian coffee or Ethiopian strains. Best on the light to medium roasts but a wonderful cup at almost any roast level. Light to medium you get those wonderful aromatics that come through in the taste, peachy acidity, with hints of soft fruit balancing with rich defined black tea like spice notes a. A cup like this is why washed processed Ethiopians are one of the hottest coffees on the market. Darker roasts burn out a bunch of the acidity/floral/fruity but still a nice cup, strong tea spice and semi-sweet chocolaty factor.

Ethiopian Yirgacheffe Washed Gr. 2 – Banko Chelchele
Good from light to dark but we thought best at a strong medium to dark roast. A good bean to go after a rich and semi-exotic chocolate tone with some wonderful aromatics and a bit of spice. Light roasts are more citric and floral with wonderful aromatics and a sweet edged, a bit punchy in the citric department and contrasts with a bit of nutty/herbal/grassy undertones. Works well but needs a much longer setup time bring out smooth and clean tastes, sharp and grassy/herbal if drank too soon. Medium roasts will bring some lovely balance to the cup and provides a clean tasting brew without waiting a week to drink it. One starts seeing the chocolate aspect but will still pull some balance with the citric and floral. Less aromatic than the light roasts, but you can still tell you have a nice Ethiopian with one sniff. Darker roasts touching or into second crack are real robust, strong and semi-sweet, more bakers-chocolate like with tea like spice in the aftertaste.

Best at light to medium roast levels but depending on personal taste, works nicely from light to dark. A crisp, clean, sweet and very floral cup (jasmine like), with some classic Yirgacheffe chocolate and tea-like spice contrast. Light roasts are delicate and pretty bright, accentuating the floral but also the herbal tea like components. Overall the acidity is medium and is perceived more as mandarin orange than sharp lemon; the sweetness is reminiscent of caramel, and as the temperature drops, a cocoa base is felt, adding more body. Subtle fruity notes (blackberry/sweet citrus) and a slight spice note; a silky medium body and a very clean finish with hints of honey and cocoa. A rich and expressive coffee in which, although there is fruit, the floral notes dominate with a tea-like character.

A wonderful example of a darker toned, lower acidity Ethiopian. We thought best from medium to dark roasts but it will still find fans at lighter roast points. Lighter roasts will have some buzzy acidity and just a hint of lemon/floral balanced with smooth and rich herbaceous spice notes. A bit more on the bergamot/dark-tea like Yirgacheffe profile. Medium roasts turn the herbaceous notes towards the chocolaty side moving the herbal/tea like tones to the aftertaste. A bit fuller bodied, lower acidity with complex darker tones. Dark roasts turn semi-sweet and even more chocolaty, the spice is readily noticeable and the body picks up a bit of a creamy factor, the roasty/smoky notes mix well with the darker toned profile of this bean but will not hold its sweet edge like most Ethiopians.

We found this cup best from medium to dark roasts. Great balance, pronounced malt like and nutty tones with just a splash of a winey crispness to keep it interesting. A classic Guatemala with an inviting, straightforward profile. Lighter roasts have a silky mouthfeel and medium body, a pronounced floral/citric brightness, leans toward orange zest. The core is nutty, down the almond alley, supported by a chocolate/caramel underpinnings that round the cup. Good to let light roasts setup a bit longer or risk a little herbaceous tone. Medium to dark roasts bring out the larger body and reduce the brighter characteristics, making the dominate taste malty and nutty tones, medium roasts will have a pinch of citric for balance, dark roasts will not. A sweet cup until you touch second crack, then turns a bit bittersweet. Best tasted hot: at higher temperature the floral and citrus notes shine; as it cools they soften and the almond–chocolate side comes forward, keeping good sweetness and a comforting feel.

Medium bodied with a smooth mouthfeel and a creamy texture; a hint of red fruit (cherry/strawberry) upfront, an accent that integrates with the sweetness, without becoming excessively bright or fruity. Upon cooling, the cup gains roundness and the cocoa becomes more present, leaving a neat finish with nutty/cocoa notes. A balanced, transparent, and very pleasant combination for everyday drinking.

Lighter roasts get a bit nutty with a little grassy caramel and slight hint of herbal spice, tasty but does not bring forth those awesome stronger chocolate notes that Haitian coffee is known for. As one progresses towards the medium roasts it develops a lot of sweet chocolaty, malty and smoky tones with just a little hint of floral acidity, a wonderful everyday drinker. Darker roasts touching 2nd crack have a surprisingly sweet edge to it and greatly accentuates the smoky/malty tones. Medium bodied, these beans as well as other Kona’s are mild cups comparatively to many other origins, be in for a delicate and tasty cup with layers of goodness.

Beautiful coffee, soft islandy acidity mixing with a cool caramel/nutty tone, little hints of soft fruit and a sweet edge. Light roasts (just after 1st crack) are pretty clean and tasty but more nutty, as one pushes darker the nuttiness turns a bit more caramel/chocolaty like but will mute up the more islandy floral/fruitiness. How much you like a sweet nutty tone will be the decider where to roast this one. Darker roasts add a lot of body and dark chocolate smokiness but burn out all the delicate soft fruit and acidity which pushed this cup well beyond average for JBM. This cups taste profile is along the same lines as the Flamstead operation with a bit less lemony acidity.

A wonderful batch of Terruno Nayarita great from light to dark roasts. This is one of the higher rated lots we have seen recently: crisp, clean and a bit brighter. Light roasts will highlight the higher rating but will be a little acidic for some. Medium roasts and very smooth and make for a great every day drinker. Darker roasts retain a very sweet edge but will produce a much flatter more potent cup. Lighter roasts have a hint of citric and a red-apple sweetness, supported by a gentle lemon/mandarin brightness that’s lively but not sharp. A light floral lift rides over a chocolate–caramel foundation; as the cup cools the tastes stay together showcasing the cleanliness, adds a soft hint of ripe stone fruit. Balanced, approachable, and versatile across brew methods. Medium roasts build up a bit of body, retaining just a hint of apple like acidity, pronouncing the smooth and nutty, chocolate like tones. Darker roasts get a bit roasty, but still have a nice and sweet edge, the most chocolaty cup profile assuming you don’t mind a bit of roasty/smoky to accompany it.

A very clean and fresh batch from Selva Negra. A little citric & floral acidity upfront, balanced with nice complex nutty & malty undertones. Light roasts are going to be a little front loaded with the brighter characteristics, a higher rated cup meaning one will notice some decent crisp acidity at the light-medium roasts. Will give great depth of flavor but may be a little sharp for some. Our favorite roast and a great everyday drinker was in the medium roast ballpark, builds more of a smooth and creamy cup with a sweet edge, reducing that perceived acidity to just a pinch. Turns much stronger, a robust cup most would say, into the darker roasts but shined nicely; fuller bodied with strong malty and smoky tones, still a sweeter edge to it which darker roast fans will love.

Great light to medium roast coffee. Although we have carried the San Felipe lot for years, having the Geisha separate this season has brought a ton of new tastes. East to tell the difference when compared to the other strains Selva Negra grows. Best at the light to medium roast level, these beans have a bit more acidity than anything else from Selva Negra. The cup is very floral and citric especially at lighter roasts. Not quite jasmine floral, a little more traditional citric, but very tasty; delicate and sweet edged. Where one can see the prime Geisha attributes is in the darker tones of the cup, black tea spice jumps right out. Light roasts are heavy on the citric and floral balanced just a touch of tea like spice with herbal overtones. Medium roasts are where most will want to shoot, defined tea like spice with some sweet crisp floral upfront. Lighter roasts are where this cup is best served and will be on the brighter side, good clean acidity, very sweet and floral, a bit of jasmine especially in the aromatics with clearly noticeable tea like spice. Those Geisha floral and spice notes popping right out especially at light roast points, a cup you Geisha fans will not want to miss. Careful with these beans, under or over roasting, although still likely to be a tasty cup, will greatly mute the unique attributes this cup can put off. Just a slight touch past first crack is what to shoot for.

A crisp, bright, clean and balanced cup. We thought it best light-medium roasted but quite tasty from light to dark. This is an awesome example of washed processed Panama coffee. A hefty full flavored cup: floral, citric and sweet tones contrasting with malty, nutty and rustic chocolate like tones. A hint of soft fruit can be found as the cup cools in the light-medium roast levels. Lighter roasts push the tones towards the more acidic side but these beans are clean enough to handle the lighter roasting, give it a longer setup time after roasting. Lighter roasts are the most jazzy roast point but may come off a little too acidic for some. Medium roasts are the best starting point for medium-low acidity fans, it balances the cup out nicely with traditional darker tones, a creamier body and mouthfeel. A wonderful mix of floral and malty/chocolaty without being too sour upfront. Darker roast get much heftier, good for the stronger coffee fans.

We thought best from medium to dark roasts but works from light to dark. A clean, sweet and smooth daily drinking cup! A little fuller bodied at the light-medium roast level with a great balance between the slight winy/floral notes & nutty/malty darker tones. Similar to Guatemalan coffee. Some acidity at lighter roasts but just a hint, medium to dark roasts would be marked as low acidity. As one pushes it into the medium roast range, the very sweet nutty tones come off a bit caramel like. Still plenty malty, it will linger on the tongue. Dark roasts turn pretty strong with the sweeter malty cup profile mixing nicely with smoky and roasty notes.

Some acidity, which brings lemony and floral tones to the front end of the tastes, balances them with a sweet edged nutty/malty undertone, hints of a vegetal spice. As one pushes the roast a little darker, the body increases, as the acidity and vegetal spice dissipated. Made for a very lovely daily drinker in the medium roast range; sweet, smooth & complex. Pushing the beans darker, the citric and floral acidity drops nicely to a crisp hint or none at all, the malty tones can turn quite robust as you approach or touch 2nd crack. Lighter roasting will show hints of acidity, a sweeter almond/nougat/brown-sugar comingling with more herbal spice notes. Medium roasting gets the fuller body and more chocolate/malt with hints of spice. Darker roasting gets hefty bakers chocolate note with complimenting roasty-ness. Lower acidity cup overall but will show some crisp citric notes at lighter roasts, some floral characteristics as well. A little roasty/smoky tone into second crack but it will compliment the more chocolaty and nutty profile. A nice medium roast for drip brew, darker for espresso and cold brew. Lighter roasting will appeal to some for the sweet vs bold tones similar to African coffees.

Lighter roasting will show some stronger citric acidity comingling with stronger herbal notes, a hint of chocolate, good depth of flavors but will be a bit sharp and herbal for most. Medium roasting gets the fuller body and more chocolaty toned cup with a hint of spice, unlike the other two, this will still have a little hint of citric, leaving it a bit sweeter tasting. Darker roasting gets hefty bakers chocolate note with complimenting roasty notes, no signs of the brighter cup profile at lighter roasts. Although it’s the brighter of the PNG coffees, it has medium to low acidity comparatively to other origins.

A wonderful more chocolaty cup than shows some nuttiness. Lighter roasting will show just a pinch of citric, which provides nice depth of flavor but be a little careful ligher, too light will show some grassy/herbal tones. Medium roasts and beyond produce a smooth and rich cup, more chocolaty than nutty, pulls a peanut brittle like tone (some may say hint of caramel), not quite candy like, more peanut than brittle but we all thought it to be a good descriptor. Medium acidity with a citrus profile (more toward lemon) provides brightness without being overpowering. The cocoa base has a nutty undertone (nut/peanut butter) and a fruitier (citric) profile; in light roasts, blueberry notes may emerge along with a slight floral tone. Medium roasts achieve the best balance: soft citrus notes, spiced chocolate, and good structure; in dark roasts, the “baker’s chocolate” cocoa predominates, with a heavier aftertaste and very low acidity.

Gentle sweetness and medium citric acidity reminiscent of mandarin; very balanced profile. In lighter roasts, citrus-floral nuances with a slight herbal/vegetal undertone may emerge. With medium roasts, it becomes rounder with spiced chocolate; in dark roasts, “baker’s chocolate” cocoa predominates, with a heavier body and very low acidity. Medium roasts are where we thought it shined, just a small hint of citric sweetness upfront with a good balance of spicy chocolate notes, unique spice, more like the Indian coffees. Darker roasts get more like the Dominican with strong bakers chocolate and smoky tones, a hefty cup with very low acidity.

Medium to dark roast beans & a great daily drinker! This cup is very thick and creamy, filled with semi-sweet chocolate and nutty tones. A very easy to drink coffee. A hint of soft fruit can be seen at the light to medium roasts but pretty faint, not super noticeable until the cup cools. A bit of peppery spice at the darker roasts with some complimenting roasty and smoky tones. Lighter roasts will show some lemony acidity and can accentuate the fruitiness of the cup but often will come off a bit too dry. These beans are more about the creamy fuller bodied and smooth chocolate and nutty tones which will come out from medium roasts and beyond.
