Tea buds are basically the new growth, two small leaves form with a bud in the middle. These can only be hand picked in spring time and is very hard to do in bulk, usually the younger the leaves, the less bitter and more floral sweet the tea, the buds are an ultimate example of young leaves.

An awesome exotic Colombian, tasty from light to dark. Brighter, sweeter and thinner bodied than you average Colombian. Full of floral, soft fruit and chocolate like tones.
Lighter roasts will have strong citric floral notes with some red fruit highlights. Hints of chocolate herbal spice will pull a little balance between the light and dark tones. Light roasts will pop out the more exotic tones in these beans, they will get more classic Colombian character the darker you roast. Medium roasts are more balanced, reducing the stronger citric component, pronouncing the red fruit and bringing forth a thicker body with more traditional rich nutty & chocolaty Colombian tones. Darker roasts into 2nd crack are a little edgy, semi-sweet chocolate and spice tones will pack a punch, the roasty & smoky tones will compliment the darker tones nicely, a hint of a fruity tone can be found in the aftertaste but just a hint.

Colombian Premium Huila – Pacamara Natural Processed
Good from light to dark, but to see the fruit notes shine, keep it in the light to medium ballpark. A bit of lemony citrus upfront that fades into a sweet red fruit tone, followed by a bit of nutty/herbal darker notes. The sweetness and fruitiness linger on the tongue. A longer setup help rid the lighter roasts of the more herbal qualities. Medium roasts are pretty bulletproof and well balanced, showing a little more of a potent nutty/chocolate undertone but no missing the fruitiness and slight citric. Darker roasts worked very nicely for a natural processed, sometimes they get all sour and twangy, but being both a Colombia and Pacamara, the more robust body and nuttiness of these beans, with a chocolate and smoky overtone, balance very well. Add on a little sweet fruitiness in the aftertaste and one has a winning dark roast natural.

Sweet upfront with a hint of crispness balanced with a stronger toasted walnut/chocolaty undertone. A little hint of acidity at the medium roast point really creates a nicely balanced cup with a broad flavor profile. Touching 2nd crack builds some body and will add some smoky and roasty notes that can compliment the classic Colombian profile.

Costa Rica Premium – Cerro Buena Vista Micromill – Black Cherry Natural
This is a quality bean in and out, best served in the light to medium roast level. Lots of cool tones to play with in the roaster. Higher acidity, very sweet, with some floral tones popping out, just like a high rated Costa should be. A fruit forward offering with a little fuller body and creamy mouthfeel. Slight red fruit tone layer the tastes but most will pick it up as a grape skin like fruitiness when mixing with the higher acidity. All these lighter tones balance with some nuttiness than will lean on the chocolaty side, especially as/if you push the roast a little darker. Super light roasts lean the cup to lemony/floral and will be loaded with more citric lighter tones, not very balanced but punchy and clean. Darker roasts lean it towards nutty/chocolaty with more stout like features & fruity highlights. In the middle, one gets layers of all the lovely flavors in the cup. Crisp and clean lemony floral balanced with sweet and smooth chocolaty undertones than linger on the nuttier side. Hints of fruit will pop out but not hit you over the head.

A good balance of flavors that can accommodate anyone’s personal tastes, dependent on roast level. Lighter roasts are brighter, sweeter and more floral, balanced with hints of dryer, nutty undertones. Medium roasts had the best balance, smooth with a slight chocolaty edge and pronounced nuttiness in the aftertaste, just a hint of crispness to the cup. Medium to full-bodied and sweet, this is one robust cup of coffee. It has a lovely aroma of cinnamon and dark fruits with notes of incense—hints of dry herb and chocolaty spice with just a smidgen of traditional Sumatra peat moss/smokiness. Generally considered a fuller roast coffee, can get a bit grassy and light roast levels but blossoms into chocolate, spice and earth, at fuller roast levels. A very low acidity cup.

A great clean decaf coffee! Good from light to dark. Lighter roasting will show a little lemony crispness, rare for a decaf. Sweeter edged with a little herbal chocolate contrast. Medium roasts cut out most of the lemony crispness and rid the cup of its herbal edge. Smooth and rich, medium bodied, with a more pronounced chocolate tone; a bit floral and sweet in the aromatics, adds to the drinking experience but doesn’t come through in the tastes. A very nice light to dark roast decaf. Lighter roasts are sweeter and more delicate, a little unique spice with a bit of nuttiness and just a pinch of floral. Medium roasts are a smoother cup, a little sweet edge, nutty, with a touch of chocolate. Has a little floral overtone that makes it a bit interesting. Fuller bodied with a richer chocolate tone closer to 2nd crack. Some smokiness at second crack or into but retains its smooth and rich character. Decaf Mexican is always one of my favorite beans to get a nice and strong chocolaty note in the decafs. Lower acidity and fuller bodied, pretty hefty in its semi sweet bakers chocolate tone at fuller roasts.

Best from the lighter side of a medium roast to as dark as you want to go. A bit cleaner tasting but slightly less fruity than previous seasons. Lighter roasting presents some nice honey processed features: citric, floral, soft fruit with an almost oak/peat like finish, sweet & complex but does risk some underdeveloped tones if you nail it a little too light. Medium roasts were our favorite, still balanced and complex but will develop the traditional chocolate and smoky tones for which Dominican coffees are known for – to balance out those more exotic fruity and citric tones. Lighter roasts have a hint of floral/citric acidity with just a touch of sweet and delicate red fruit coming from the honey processing. A bit on the nutty/chocolaty side for its balance, starts as a dry nutty at very light roasts, turns more chocolaty as the roast gets darker.A little front loaded with the more acidic and fruity tones at traditional light roasts. Medium roasts have better balance between light an dark tones cutting out some acidity; smooth, rich and sweet edged. Dark roast loses the more exotic acidity and fruity edge but turns very thick, nutty, semi-sweet chocolaty with smoky accents.

Clean, bright, sweet with a very diverse flavor set. Stone and darker fruit, citrus & floral, and spiced chocolate tones are the main flavors one can see in this cup, either accentuated or muted depending on roast level. Nice jammy body will be seen in the medium to borderline dark roast mark. Very dependent on roast – lighter roasting gives much more of the citrus, red-fruit with just a hint of a spicy chocolaty factor, a much dryer finish. Darker roasts produce much more of a bakers chocolate cup with a hint of a strawberry like fruit note and good sweetness, far less acidic. A very enjoyable cup from light to dark.

Roast capacity for the Fresh Roast SR540 is slightly more than 4 ounces: 120 grams to be exact, or just like previous models, 4 scoops using the included measuring spoon.
This new coffee roaster model has an improved control panel. There are now nine levels of heat adjustment compared to the previously limited Low, Medium, and High settings. The fan also has nine levels of adjustment. All adjustments are made by pressing the knob and turning to change heat, fan, and time settings. It also features a new real-time air temperature measurement. A quick turn of the knob to the right will display current temperature.

Sweet with just a pinch of citric upfront, medium bodied, good mouthfeel, just a pinch of fruitiness and ends with a nice malty undertone. Lighter roast get a bit brighter and slightly more fruity but can risk a little grassy, medium roasts present great balance to the flavors and was very easy drinking, darker roasts retain a lot of sweetness and hefty malty tones, but will get pretty roasty/smoky. If drinking for drip/pour-over, medium roasts are where to go. If using for blending, espresso or cold brew, light or dark roasts can produce some really tasty results.

Sweet and clean, this is a stronger cup of a coffee! Just a bit of the classic Indo earthiness, I might link this coffee closer to an exotic Colombian than an Indo (which is way cool). Very nice rich chocolate tones (a little sweet malt/caramel as it cools) adds to the mix of delicate flavors present in this cup. A slight smoky aftertaste can be picked up at the darker roast points. This is a must try for anyone who likes a real full bodied complex cup of joe!

Unlike almost any other wet-hulled coffees, this is actually quite tasty at the light to medium roast levels. The jasmine aromatics shine at any roast point, but will be more delicate in taste, especially at fuller roast levels. No missing the co-ferment tones but comparatively to many co-ferment offerings, this has more delicate flavors, might be for its Jasmine instead of a more punchy fruit note. Light roasts have some sweet and clean lemon/citric and fruit tones right upfront that quickly fade into a nice jasmine kick. The tones balance nicely with a little earthy/herbal/cocoa dark tone that will compliment the jasmine. A semi-sweet cup overall with a ton of complexity. While piping hot, reminded me of jasmine tea, but with a fuller body, more creamy mouthfeel and a bit more kick in the aftertaste. Medium to dark roasts promote the more rustic dark chocolate roots from Indonesia and the wet-hulling, reducing the more citric/floral tones from lighter roasts. Gets a little hint of a barrel aged ferment complexity and highlights with the jasmine floral note.
