Tea buds are basically the new growth, two small leaves form with a bud in the middle. These can only be hand picked in spring time and is very hard to do in bulk, usually the younger the leaves, the less bitter and more floral sweet the tea, the buds are an ultimate example of young leaves.

Good from light to dark, but to see the fruit notes shine, keep it in the light to medium ballpark. A bit of lemony citrus upfront that fades into a sweet red fruit tone, followed by a bit of nutty/herbal darker notes. The sweetness and fruitiness linger on the tongue. A longer setup help rid the lighter roasts of the more herbal qualities. Medium roasts are pretty bulletproof and well balanced, showing a little more of a potent nutty/chocolate undertone but no missing the fruitiness and slight citric. A good cup from light to dark but to showcase what makes these beans special, light to medium roasts will be the way to go. Similar to a nice Ethiopian, light roast points are very jazzy with stronger citric/floral acidity mixing with a little soft fruit tone, pulling some balance with a sweet edged nuttiness. With the mixing of red fruit and the more citric edge, it does make us think pink lemonade upfront, but knowing the strain while tasting does plant some descriptors. Some were more down the tart raspberry alley for tasting notes. Medium roasts get fuller bodied and smoother, good nutty/chocolate like undertones with less crisp citric/floral acidity. Darker roasts will kill most of the brightness but will retain a little hint of fruit as the cup cools. Great cup from light to dark! Smooth, sweet, rich and buttery textured. A very chocolaty cup with hints of floral acidity and a soft fruit tone. Overall, lower acidity and fuller bodied with some classic Colombian nutty tones in the aftertaste. A little spice in the cup creates wonderful depth of flavor. At lighter points you get some brighter and crisper tones, small hints of fruitiness combine with just a pinch of darker note, a balanced cup if you give it a longer setup, but can be a little bright if you drink it too soon. Medium to dark roasts are where you get the more classic Colombian cup, fuller bodied with more potent nutty/chocolaty tones, the fruitiness disappears but the cup retains a nice and sweet edge to it.

A very nice and clean Costa. Lighter roasts will show that classic Costa sweet floral acidity, a little bit on the lemony side balanced with a little dry nutty/chocolate undertone. As the roasting pushes more into the medium category, the cup develops a bit more body and reduced acidity levels giving a much smoother mouthfeel and more defined chocolaty factor. Creates a wonderful balance of tones. A little lighter floral, a little chocolaty/nutty, very pleasant drinker. Darker roasts hold up nicely as well, turn the cup more stronger and more bakers chocolate like, the roasty notes from darker roasting do compliment the cup. Much more of a chocolate bomb with slightly nutty accents.

A good balance of flavors that can accommodate anyone’s personal tastes, dependent on roast level. Lighter roasts are brighter, sweeter and more floral, balanced with hints of dryer, nutty undertones. Medium roasts had the best balance, smooth with a slight chocolaty edge and pronounced nuttiness in the aftertaste, just a hint of crispness to the cup. Medium to full-bodied and sweet, this is one robust cup of coffee. It has a lovely aroma of cinnamon and dark fruits with notes of incense—hints of dry herb and chocolaty spice with just a smidgen of traditional Sumatra peat moss/smokiness. Generally considered a fuller roast coffee, can get a bit grassy and light roast levels but blossoms into chocolate, spice and earth, at fuller roast levels. A very low acidity cup.

A great clean decaf coffee! Good from light to dark. Lighter roasting will show a little lemony crispness, rare for a decaf. Sweeter edged with a little herbal chocolate contrast. Medium roasts cut out most of the lemony crispness and rid the cup of its herbal edge. Smooth and rich, medium bodied, with a more pronounced chocolate tone; a bit floral and sweet in the aromatics, adds to the drinking experience but doesn’t come through in the tastes. Darker roasts are robust and strong, semi-sweet and very chocolaty with a roasty edge.

A very nice light to dark roast decaf. Lighter roasts are sweeter and more delicate, a little unique spice with a bit of nuttiness and just a pinch of floral. Medium roasts are a smoother cup, a little sweet edge, nutty, with a touch of chocolate. Has a little floral overtone that makes it a bit interesting. Fuller bodied with a richer chocolate tone closer to 2nd crack. Some smokiness at second crack or into but retains its smooth and rich character. Decaf Mexican is always one of my favorite beans to get a nice and strong chocolaty note in the decafs. Lower acidity and fuller bodied, pretty hefty in its semi sweet bakers chocolate tone at fuller roasts.

Best from the lighter side of a medium roast to as dark as you want to go. A bit cleaner tasting but slightly less fruity than previous seasons. Lighter roasting presents some nice honey processed features: citric, floral, soft fruit with an almost oak/peat like finish, sweet & complex but does risk some underdeveloped tones if you nail it a little too light. Medium roasts were our favorite, still balanced and complex but will develop the traditional chocolate and smoky tones for which Dominican coffees are known for – to balance out those more exotic fruity and citric tones. Dark roast loses the more exotic acidity and fruity edge but turns very thick, nutty, semi-sweet chocolaty with smoky accents.

Stone and darker fruit, citrus & floral, and spiced chocolate tones are the main flavors one can see in this cup, either accentuated or muted depending on roast level. Nice jammy body will be seen in the medium to borderline dark roast mark. Very dependent on roast – lighter roasting gives much more of the citrus, red-fruit with just a hint of a spicy chocolaty factor, a much dryer finish. Darker roasts produce much more of a bakers chocolate cup with a hint of a strawberry like fruit note and good sweetness, far less acidic. A very enjoyable cup from light to dark.

Crisp, clean and exotic. Great aromatics: nothing like grinding a fresh Ethiopian with its floral, jasmine and spice notes to tickle your nose. Lighter roasts are filled with new crop acidity and floral notes, mostly citric but a little peachy soft fruit tone can be found. The balance of the cup comes from a semi-tea-like chocolate factor. I tend to think of it as chocolate spice notes but many tongues can pick up a little black tea note. Medium roasts have just a pinch of citric acidic, builds a thicker body and brings forth more of the chocolaty cup profile, reducing the acidity slightly. Darker roasts are always tasty for those who like fuller roasts. This is how they would traditionally serve these beans in Ethiopia. The Fresh Roast SR540 is the next generation in the SR family, a solid step forward on the most popular home coffee roaster. Easy to use, more versatile in its settings and a pinch larger batch size than its predecessor the Fresh Roast SR500.

Roast capacity for the Fresh Roast SR540 is slightly more than 4 ounces: 120 grams to be exact, or just like previous models, 4 scoops using the included measuring spoon.
This new coffee roaster model has an improved control panel. There are now nine levels of heat adjustment compared to the previously limited Low, Medium, and High settings. The fan also has nine levels of adjustment. All adjustments are made by pressing the knob and turning to change heat, fan, and time settings. It also features a new real-time air temperature measurement. A quick turn of the knob to the right will display current temperature.

Our buddy Jim at Terruno Nayarita created a mobile cupping lab system call Finca Labs. They are in action at coffee farms all over the world. He made these cool cupping bowls to go with the setup but they were too fragile to transport overseas, unfortunately lots of breakage, so it got booted out of the kits. Lighter roasts will accentuate the lemony floral tones of the cup, the chocolaty factor will be just a hint but noticeable and smooth, a bit of nuttiness will linger in the aftertaste not present in further roast levels. Medium roasts are very clean and balanced – not too acidic, not too bitter – sweet edged and will have wonderful mix of tones. A little higher acidity than average, balanced with some developing malt like tones. A bit acidic light roasted but easy to enjoy if you classically like lighter roasts. Blooms into a more traditional Guat. chocolaty cup as you push into the medium to dark roast levels. The darker you go the less winy and acidic the cup will taste. Around a medium roast, the perceived acidity drops and creates a rich, fuller bodied, chocolaty cup with a smooth and sweet edge. A hint of floral mixing it to keep it crisp. Dark roasts into second crack will work for you dark roast fans, a bit more stout like with low acidity with semi-sweet smoky/chocolate like notes.

A hint of caramel if you get lucky on the roast. A little higher acidity than the Hala Tree Extra Fancy Typica, but would still be considered a medium to low acidity coffee. The cup is best at the light-medium roast levels: clean, sweet and balanced.
