A wonderful decaf! Fruit forward and sweet, best between the cracks, a strong light roast (city+), to borderline dark roast (full city). Lower acidity, fuller bodied and sweet edged. One will get stronger fruity aromatics that come through in the cup tones, but refined and delicate compared to the aromatics, not a complete fruit bomb, but definitley cannot miss the fruitier aspect. The sweeter lighter tones balance out with a maltier undertone, creating a smooth and easy to drink treat.

Description

Laguna de Ayarza (Lake Ayarza) is a crater lake in the Santa Rosa department of Guatemala. It is known locally as Laguna Azul (Blue Lake). Lake Ayarza was formed around 20,000 years ago by a volcanic eruption. The lake has a surface area of 14km² and is located at 1,400masl. According to local legend, the true nature of the lake is far more mysterious. Some say it is connected to ocean, the actual depth is unknown and that an expedition to find the bottom ended in tragic failure. We do know Lake Ayarza is in a remote location and access is difficult. This means it has remained in pristine condition with only around 10 houses built around its edge.

The Swiss Water® Process uses pure green coffee extract and proprietary carbon technology to remove caffeine from  green coffee beans. Swiss Water® has specified the pore size of the carbon to match the caffeine molecule to ensure only the caffeine is trapped when the caffeine is captured from the green coffee extract. The Swiss Water® Process is certified organic and 100% chemical free.

Roasting Notes: A nice easy to roast decaf. We thought a medium roast fit it best but some will like it a little lighter, or darker. Watch for the expansion in bean size (1st crack), give it a little time to darker 1-2 shades and cool it out. Decafs can look a little darker then they are. Any signs of a shiny surface, would cool it out right away.
