This coffee is grown in the high hills of the Kayanza region, at an altitude of over 2,100 meters, where the cool climate allows for slow ripening of the cherries. This naturally processed microlot is distinguished by a vibrant and jammy cup profile, offering a dense and rich body with prominent notes of red fruits such as strawberries and raspberries, complemented by floral nuances of lavender and hibiscus and a lingering, honey-like sweetness. Produced under the community-based and sustainable approach of the Long Miles Coffee Project, this bean is ideal for medium roasts that enhance its structural clarity and complex fruitiness without overpowering fermented flavors.

A wonderfully clean and complex Burundi coffee with a syrupy, honey-like sweetness that intensifies as the cup cools. Expect gentle stone-fruit and red apple notes upfront, soft floral hints (think jasmine and a touch of orange blossom), and a rounded cocoa and brown sugar finish. A hint of lingering herbal/tea spice in the aftertaste. Medium body, moderate acidity, and a lingering sweetness that never turns fermented or boozy. Brighter and more delicate at lighter roasts, where pear and citrus tones come forward; deeper and chocolatier as the roast progresses. An easy-drinking cup that’s nuanced enough to reward careful brewing.

Some good sweetness from its natural processing, a small hint of soft fruit as the cup cools. Reminds us of a less fruity Yemen coffee. Rustic chocolate, tea like spice, lower acidity and fuller bodied.

A very cool, very exotic cup of coffee. One can tell this is a slow dry natural processed coffee with its strong ripe red fruit tones upfront. Lighter roasting presents a ton of floral and fruit with an almost oak/peat boozy finish, very sweet with just a ton going on but does risk some underdeveloped tones with its two-toned roasting. Medium roasts were our favorite, still plenty wild but develop enough of the chocolate and smoky tones – which most Dominican coffees are known for – to balance all those more exotic fruity and citric tones. Darker roasts will burn out most of what distinguishes this cup, the washed processed handles those roast level much better; interesting and still exotic but strong and edgy, it will retain some fruity factor with very strong and less sweet, smoky, tobacco and bakers chocolate type notes.

A lovely slightly-exotic daily drinker. Light to medium roasts are preferred with our favorite roast being right in the middle of the cracks. Lighter roasts have a hint of floral/citric acidity with just a touch of sweet and delicate red fruit coming from the honey processing. A bit on the nutty/chocolaty side for its balance, starts as a dry nutty at very light roasts, turns more chocolaty as the roast gets darker.
A little front loaded with the more acidic and fruity tones at traditional light roasts. Medium roasts have better balance between light an dark tones cutting out some acidity; smooth, rich and sweet edged. Dark roast loses the more exotic acidity and fruity edge but turns very thick, nutty, semi-sweet chocolaty with smoky accents.

Refisa is a washed Grade 1 coffee from the emerging West Arsi region of Ethiopia, grown by smallholder farmers in the villages of Roricho, Bulga, and Solena at elevations up to 2,070 meters above sea level. Processed at SNAP’s Refisa Washing Station under the direction of Negusse Debela, this lot represents the best of what Nensebo has to offer. A region that, until recently, was sold simply under the broader Sidamo label, now earning its own distinct identity in the specialty coffee world. In the cup, Refisa delivers a clean, bright, and layered experience: floral notes of jasmine and coffee blossom at the forefront, complemented by lemon, mandarin, and peach, with a honey-like sweetness and a soft caramel finish that lingers beautifully. Versatile across roast levels but truly at its best kept light, this is a coffee that rewards patience both in the roast and in the cup.

A very cool washed Ethiopian from one of the more renowned mills. This Ethiopian cup is a super clean; an awesome example of a high end washed processed Ethiopian. Jasmine aromatics with wild more lemon/tropical fruit acidity, balanced with a chocolaty spiced undertone. Lighter roasts will have some citric acidity and a nice more tropical fruity factor balanced with a faint tea like chocolaty undertone. Medium roasts really mellow out the acidity and reduce the fruit tone but create a bit more body and a much more recognizable chocolaty factor. A very smooth, balanced cup with exotic highlights. Darker roast burn out all the fruity and acidic notes, gets a little smoky roasty with strong bakers chocolate tones.

A very clean and brighter cup, silky-smooth mouthfeel that shines from the first whiff of honey sweetness to the final sip of bolder spice. Best served at light-to-medium roasts. A brighter, full flavored cup with great depth of flavor. Upon first sip, one will see a vibrant burst of lemon/orange citric comingling with a slight red fruit, quickly balanced by a creamy cocoa undertone with a little gentle black-tea like spice in the aftertaste. Underlying notes of roasted nuts and cocoa anchor the profile. As the cup cools the acidity softens and a deeper chocolate note swells, yet the honey aromatics persist, making every temperature stage deliciously consistent.

Natural processed Mexican Veracruz from APG Coffee, a fourth-generation family exporter based in Coatepec. Grown between 900 and 1200 masl with Bourbon, Catimor, Caturra and Typica varieties, dried on raised beds for 15 to 20 days. Flavor profile of cacao nib, cherry, pistachio and strawberry. Good from light to dark roast but really shines at Full City, where the fruit of the natural balances with a round body and chocolate and toasted nut notes. Medium-low acidity, medium body, sweet finish. A solid pick for both light-roast fans chasing a fruity Mexican natural and dark-roast drinkers looking for a chocolaty, robust cup.

A good cup from light to dark, medium to full bodied with a touch of acidity. The lighter side of a medium roast was our favorite roast point. A hint of brightness and soft fruit balancing well with a malty undertone. Take it a little darker for a good daily drinker, turns it a bit smoother and richer. Darker roasts produce a hefty malt like tone with complimenting smoky tones, still on the sweeter side, not quite as smooth but has the heft many darker roast fans will love.

This is a natural processed lot that stands out not only for its taste, but its fascinating origin: the virgin highlands of the Jiwaka Province. Its cultivation takes advantage of one of the best-preserved Typica variety arabica genetics on the planet, a heritage from the early plantations introduced in the early 20th century. The production of this particular lot is made possible by Monpi Coffee and the Kindeng wet mill, where the finest cherries grown by local smallholders are meticulously sorted and sun-dried for a full month, taking advantage of the cool mountain climate. Beyond its deep background in sustainability, community support, and environmental preservation, this bean translates into an exceptionally sweet and wild cup of coffee; a product that, when roasted to a medium level, unfolds highly fruity notes, floral touches, and a citric acidity that is characteristic of old-world natural coffees.
