Most would consider this a medium to dark roast coffee, but does have some jazz at lighter roast points. Darker toned, semi-sweet coffee with lower acidity and a fuller body. Filled with rich chocolate/nutty/herbal/spice like tones. Great depth of flavor without all that citric and fruity that often comes with higher rated cups these days.Lighter roasting promotes the more nutty/herbal, darker roasting chocolate & spice. Lighter roasting took 4-5 days after roasting to get tasty, medium to dark roasts were tasty from day 1.

A very fresh and tasty Brazil! Lighter roasts show lemon, floral & soft fruit contrasted by a nuttier (almond like) undertone, a sweet edged cup. The two combine for a hints of caramel, quite tasty for you light roast fans. Medium roasts are richer, more of a developed chocolaty tone and decently less nutty; mutes up the soury floral edge, retains a little hint of soft fruit as the cup cools. Fairly neutral tasting and very chuggable. A very fresh crisp and clean Colombian arrival. Good from light to dark but a nice solid medium roast was what won us over on this lot. Stronger more spicy cup profile. Lighter roasts have very crisp and clean acidity, a sweet lemony floral, with hints of a black tea like spice, some dry nuttier tones in the aftertaste. Just a little development past first crack is a good sweet spot for lighter roasting. Medium roasts are richer with less lemony floral, more traditional nutty/chocolate like tones and some lingering spice in the aftertaste. Darker roasts are full of bakers chocolate notes, more semi-sweet smoky with nutty accents. The spice still lingers on the tongue but the cup is dominated by the roasty and smoky tones.

The aroma of this coffee is very nice; sweet with with a little spice & floral notes. Best at a medium to borderline dark roast. Sweet upfront with a hint of crispness balanced with a stronger toasted walnut/chocolaty undertone. A little hint of acidity at the medium roast point really creates a nicely balanced cup with a broad flavor profile. Touching 2nd crack builds some body and will add some smoky and roasty notes that can compliment the classic Colombian profile.

Smooth with almost a brown sugar hint at a strong medium roast. Pretty much everyone will love this coffee, a great everyday drinker.

The cup finishes with a pleasantly surprising spiciness. Darker roasts will deliver a much stronger bakers chocolate tone with a smoky accent.

A very nice medium to dark roast decaf. Medium roasts are a much smoother cup, a little sweet edge, nutty, with a touch of chocolate. Has a little floral overtone that makes it a bit interesting. Fuller bodied with a richer chocolate tone closer to 2nd crack. Some smokiness at second crack or into but retains its smooth and rich character. Decaf Mexican is always one of my favorite beans to get a nice and strong chocolaty note in the decafs. A great medium to dark roast coffee: robust, fuller bodied, lower acidity and complex. Rich and smooth with nutty, chocolate, earthy and spice tones. On the lighter roast spectrum there is a little jazzy citric note that presents the cup a little sweeter, on the darker roast spectrums it will have some roasty and smoky notes that we found quite pleasant.

A great example of a top rated and clean Yirg coffee. Bright, citrus, floral and soft fruit versus a chocolaty spice note, a bit tea like at lighter roast points. Very dependent on roast, one can accentuate or hide the attributes of this cup depending on roast level. Washed Ethiopians are always way fun to play around with. Lighter quicker roasts are front loaded floral and citrus with a little hint of a chocolaty tone (pretty faint), dark roasts are hefty, a bit fuller bodied with strong bakers chocolate tone and some smokiness.

A great super fresh and clean micro lot from our friends at Finca De Dios. Awesome prep, one can tell a lot of care went into these beans. A great medium to as dark as you want to go bean type. Light roasts produce a lot of floral brightness and light fruit notes (almost reminiscent of a nice Costa) mixing with a subtle yet very sweet malty chocolaty note but can be a little more challenging to roast to a light roast – a great morning brew – darker roasts will produce more body similar to the Huehues – very clean non-roasty dark-roast beans – you get a lot of the sweet malty tones and very smooth even into 2nd crack – a very stand up bean at almost any roast level.

Medium roasting really pulls together a tasty treat but you can take it lighter or darker depending on personal taste preference.
Hints of floral mixing with smooth nutty & malty features. Will show some winy citric and fruit acidity in the light to medium roast spectrum but all in all a medium to low acidity brew with a medium body.
Smooth, clean and sweet edged, a cup we are more than willing to drink all day. Guatemalans almost always hold dark roasts nicely for adding a little sweet malty note to the smoky and roasty tones is a tasty mix.

A lovely coffee. Low acidity, medium body with rich and robust darker tones ringing throughout the cup. Medium to dark roasts are where these beans shine. Lighter roasting without much acidity will leave the cup a bit nutty and lacking but clean. Starting at about a medium roast the cup builds a wonderful chocolate note with some smoky and malty overtones. A bit on the sweeter smoother side, a tasty treat. Darker roasts, close to touching 2nd crack and where the much more robust tones pop out of the cup, reminiscent of a nice Haitian cigar.

Lighter roasts have a little cool lemony acidity upfront, with some soft fruit tones giving it some jazz, balanced with a dry earthy chocolaty herbal factor with some incense like spice. As you push into the medium roasts, it will get fuller bodied with a creamy mouthfeel cutting out the more lemony floral tones, turns the cup much more chocolaty and gives depth to the exotic spice notes. Darker roasts will turn more stout like and semi-sweet. At light roasts it will still have some brighter citrus qualities but will not pucker ones mouth. Kenyan coffees in general can be pretty strong. It has hints of chocolate, fruit & herbal spice along with the citrus and floral. Medium roasts bring the best balance to the cup accentuating the chocolaty tones and reducing the brighter notes just a hint. Darker roasts make that classic Kenya herbal tone pop right out and is more down the potent bakers chocolate alley. Very clean with increasing body as the roast gets darker. A great balance between citrus, floral, herbal and chocolate. Especially at lighter roasts, one will see a more citric style acidity, comingling with a green tea like spice, clean as a whistle, but may be a little sharp for some. Medium roasts bring a more potent chocolaty cup with some floral highlights, lingering spice in the aftertaste. Darker roasts get much thicker and semi-sweet, would put in on the bakers chocolate side of things with some soft fruit and spice lingering on the tongue, a little smoky if you go real dark.

A very clean, bright and balanced cup. Best at the light to medium roast levels. At lighter roasts; one will see sweet and strong citric tones comingling with chocolate and herbal darker notes, classic premium Kenya. As the cup sets up longer one can see some greater complexity pop out with hints of soft fruit, nutty and caramel like tones. Pushing into the medium roast levels, the thickness increases and the chocolate/herbal factor will be the dominate tone in the cup hiding much of the citric and floral. Hitting 2nd crack cuts out most of the citric and will turn the cup more bakers chocolate, increasing the strength, but loosing sweetness.

A nice tasting coffee from light to dark. We thought it best right around a medium roast for daily drinking but depending on what you like, holds up well lighter or darker. Light roasts one can see the linkage to Kenya; citric and floral upfront, a sweet edge, thicker chocolate/spice undertones, hints of caramel with a little setup in the aftertaste. Not as punchy as most Kenyan offerings, but along the same line of tastes. Medium roasts really mellow the cup. Smooth most would say, a bit more neutral with just a hint of the floral and spice seen at the lighter roasts. Reminded us of a cross between the Mysore Nuggets and a nice Costa Rican coffee. Great for daily drinking. Great daily drinker from medium to dark roasts. Good body and lower acidity, nice and strong semi-sweet malty tones with a hint of spice in the aftertaste. At the light to medium roasts it will show just a pinch of crispness and a hint of earth, not super citric but will leave a dryness to the tongue, a bit floral in its aromatics but not in the cup. Just before to touching 2nd crack gets rid of almost all signs of any acidity and adds some complimenting smokiness to the cup profile. A very smooth cup from a medium roast to just before 2nd crack. Into 2nd crack will get some edgy strength that dark roast fans will like.

A very clean and fresh batch from Selva Negra. A little citric & floral acidity upfront, balanced with nice complex nutty & malty undertones. Light roasts are going to be a little front loaded with the brighter characteristics, a higher rated cup meaning one will notice some decent crisp acidity at the light-medium roasts. Will give great depth of flavor but may be a little sharp for some. Our favorite roast and a great everyday drinker was in the medium roast ballpark, builds more of a smooth and creamy cup with a sweet edge, reducing that perceived acidity to just a pinch. Turns much stronger, a robust cup most would say, into the darker roasts but shined nicely; fuller bodied with strong malty and smoky tones, still a sweeter edge to it which darker roast fans will love.

A nice medium to dark roast more potent Nicaraguan offering. Medium to full bodied with just a little hint of acidity. Strong Medium roasts were our favorite with thicker more complex malty tones, a sweet edge, hints of herbal spice and almost no acidity, a good daily drinker being very smooth. Darker roasts produce a similar cup but turn it semi-sweet with complimenting smoky tones, not quite as smooth but has the heft many darker roast fans will love.

Hints of sweet citric floral upfront comingle with smooth defined malt like tones, just the tiniest hint of a fruity factor in the aftertaste. Lighter roasts get much crisper, dominated with more floral citric fruit tones, lemony most would say but does still show a little malty undertone. Darker roasts cut out the more floral aspect of the cup and are very rich and smooth, more semi-sweet but still very malty, into second crack adds some complimenting smoky tones. A clean, sweet and smooth cup of coffee one can drink all day long! A little fuller bodied at the light-medium roast level with a great balance between the lighter winy/floral notes & nutty/malty darker tones. Similar to Guatemalan coffee. Some acidity at lighter roasts but just a hint, medium to dark roasts would be marked as low acidity. As one pushes it into the medium roast range, the very sweet nutty tones come off a bit caramel like. Still plenty malty, it will linger on the tongue. Dark roasts turn pretty strong with the sweeter malty cup profile mixing nicely with smoky and roasty notes.

Similar to the Sigri coffee these beans are pretty low acidity in the cup, very clean in its profile. Smooth, rich and chocolaty with some spice note accents. Most would call it a pretty sweet chocolaty cup with a bit of spice. Very smooth cupping this year with no herbal tones or earthiness. Medium bodied with a sweeter edge, a cup almost anyone would enjoy. Kind of like a Sumatra coffee without all the earthy funk.

Great from medium to dark roasts. The cup is fuller bodied and a bit creamier, lower acidity and rich. At lighter roasts, a little acidity can be found which brings small notes of nutty, caramel and floral tones but will have an earthier terroir. Anything even into the medium roast range is very chocolaty and smooth with just a pinch of a spice note. Darker roasts get a bit fuller bodied and roasty with some nice smoky accents.

A fresh arrival great from a medium to dark roast. A good daily drinker. Medium to low acidity, the cup does have some jazzy more floral tones at the lighter roast points, but too light & it will be on the nutty/grassy side of things. Takes a little fuller roast to see the chocolaty side blossom. Medium roasts and beyond produce a smooth and rich cup, more chocolaty than nutty, pulls a dryer peanut brittle like tone (some may say hint of caramel), more peanut than brittle but we all thought it to be a good descriptor. Dark roasts turns the cup pretty chocolaty, retains the sweet edge and a couple tasters even noticed a little floral hint to it.

This cup is nice and clean, a little fuller bodied and smooth with a sweeter edge. A great year for Peru coffees; the cup starts just a little citric, fairly low acidity only detectable at the lighter roast points, a little hint of soft fruit but mainly a pretty chocolaty cup profile with some nutty accents. Lighter roasts one can find a hint of caramel if you get lucky, and leans on the nuttier side, little citric will poke out. A nice medium roast will make anyone happy and provide good balance and smooth chocolate tones, low acidity – a good daily drinker. A nice and clean taste, good from light to dark. Mostly these beans will appeal to medium-dark roast fans but being an exceptionally clean cup, it has some lovely balance and is quite tasty at lighter roasts. Similar to its Indonesian cousins (except washed processed), it gets real hefty into the dark roasts promoting smoky and chocolaty tones with stronger spice notes. Lighter roasting it is more delicate and floral, slightly fruity with some detectable lemony crispness, sweet edged, medium bodied with hints of a chocolaty factor.
