A very nicely balanced cup of coffee. A little hint of acidity upfront providing some floral and soft fruit at the lighter roasts, balanced with a semi-sweet nutty chocolaty factor. Super light roasts risk a little grassy/herbal but it straightens out at a city+ (medium) and holds up as dark as you want to take it. The darker you go, the more body and edgy chocolate the cup will pick up, once you hit 2nd crack, expect some smoke and roasty tones to compliment the nutty/chocolaty factor.

A very fresh and tasty Brazil! Lighter roasts show lemon, floral & soft fruit contrasted by a nuttier (almond like) undertone, a sweet edged cup. The two combine for a hints of caramel, quite tasty for you light roast fans. Medium roasts are richer, more of a developed chocolaty tone and decently less nutty; mutes up the soury floral edge, retains a little hint of soft fruit as the cup cools. Fairly neutral tasting and very chuggable. A nice clean cup tasty from light to dark. Good body with a pronounced toasted walnut and baker’s chocolate undertone. A bit of acidity upfront at lighter roasts gives some stronger floral and slightly fruity contrast to the classic Colombian profile, smoother and more delicate than darker roasts.
Medium to dark roasts mute up a lot of the brighter & fruitier cup tones but will leave a nice and sweet edge to the stronger nutty and chocolaty dark tones. Wonderful layers of complexity to the fuller bodied more robust cup.

The aroma is floral and sweet like honey. A nice medium bodied, smooth & creamy cup of coffee with little stronger floral aspect, medium to low acidity. It does get a good lemongrass tone at lighter roasts with a soft fruit tone as the cup cools, crisper cup with a slight nutty tone. Turns much more chocolaty into the medium or dark roasts. The cup finishes with a pleasantly surprising spiciness. This is a savory cup of coffee with wonderful complexities.

Darker roasts will deliver a much stronger bakers chocolate tone with a smoky accent.

Nutty and chocolate tones dominate the cup profile, hints of a green tea like spice at lighter roasts. Smoky, slightly roasty tones poke out at the darker roasts. More nutty than chocolaty light-medium roasted, more chocolaty than nutty medium to dark roasted.

Medium to dark roasts are hard to tell as decaf, creamy with a retained sweeter edge , a little soft fruit tone that pops out and a little complimenting smoky tone if you hit 2nd crack.

Medium roasts cut out most of the lemony crispness and rid the cup of its herbal edge. Smooth and rich, medium bodied, with a more pronounced chocolate tone; a bit floral and sweet in the aromatics, adds to the drinking experience but doesn’t come through in the tastes. A very nice medium to dark roast decaf. Medium roasts are a much smoother cup, a little sweet edge, nutty, with a touch of chocolate. Has a little floral overtone that makes it a bit interesting. Fuller bodied with a richer chocolate tone closer to 2nd crack. Some smokiness at second crack or into but retains its smooth and rich character. Decaf Mexican is always one of my favorite beans to get a nice and strong chocolaty note in the decafs. Lower acidity and fuller bodied, pretty hefty in its semi sweet bakers chocolate tone at fuller roasts.

On the lighter roast spectrum there is a little jazzy citric note that presents the cup a little sweeter, on the darker roast spectrums it will have some roasty and smoky notes that we found quite pleasant.

Crisp, clean and sweet; this Ethiopian cup is a bit more delicate than most. Light to medium roasting recommended but a tasty cup from light to dark. Lighter roasts will have some decent brightness, lemony with some grapefruit like citric tones. A floral cup with some awesome hints of jasmine in the aromatics. The lighter tones pull some balance with the classic tea like chocolaty undertone, traditional darker notes from the Yirgacheffe region.Medium roasts really mellow out the acidity and reduce the citric/floral tone, creates a bit more body and a much more recognizable chocolaty factor. A very smooth, balanced and rich cup with exotic highlights. Darker roast burn out all the fruity and acidic notes, gets a little smoky roasty with strong bakers chocolate & spice tones.

A great super fresh and clean micro lot from our friends at Finca De Dios. Awesome prep, one can tell a lot of care went into these beans. A great medium to as dark as you want to go bean type. A tasty mix of tones, great from light to dark. The cup profile is mostly down the malty side but these beans have some awesome jazz.Medium roasting really pulls together a tasty treat but you can take it lighter or darker depending on personal taste preference.
Hints of floral mixing with smooth nutty & malty features. Will show some winy citric and fruit acidity in the light to medium roast spectrum but all in all a medium to low acidity brew with a medium body.
Smooth, clean and sweet edged, a cup we are more than willing to drink all day. Guatemalans almost always hold dark roasts nicely for adding a little sweet malty note to the smoky and roasty tones is a tasty mix.

A lovely coffee. Low acidity, medium body with rich and robust darker tones ringing throughout the cup. Medium to dark roasts are where these beans shine. Lighter roasting without much acidity will leave the cup a bit nutty and lacking but clean. Starting at about a medium roast the cup builds a wonderful chocolate note with some smoky and malty overtones. A bit on the sweeter smoother side, a tasty treat. Darker roasts, close to touching 2nd crack and where the much more robust tones pop out of the cup, reminiscent of a nice Haitian cigar.

A great medium to dark roast coffee. Full bodied, low acidity, great mouthfeel, robust and strong coffee with hints of a exotic spice. Lighter roasts get a cool semi-floral sweet tone upfront but will pull more towards grassy caramel with a slight hint of herbal spice. As one progresses towards the darker roasts it gets much fuller bodied and creamy with clean chocolate/malt like tastes, a little hint of floral acidity at the full city roast level. A very clean, well balanced cup, best from medium to dark roast. Crisp acidity with a small hint of soft fruit comingle with a more chocolaty cup profile. Can be roasted from light to dark but our favorite was a nice medium roast, followed by the darker roast. Lighter roasts: the acidity is a bit citrus upfront but will quickly fade into a slight island fruit tone, balances with a little herbal/chocolate contrast. From a medium roast on, the acidity is very gentle and balanced with a smooth to rough chocolaty cup profile, milk chocolate before 2nd crack, bakers chocolate and smoky into 2nd crack. Medium bodied and lower acidity, these beans as well as other Kona’s are mild cups comparatively to many other origins, be in for a delicate and tasty cup with layers of goodness.

Indian Mysore Nuggets has been a favorite of Burman Coffee and customers for many years and this crop does not disappoint. The aroma is nutty, woody, and some slight smokiness. Many of the notes in the aroma come through in the flavor like walnuts and some smoke. There’s dark fruit, oak, licorice, and some vanilla spice, like a good dry red wine. The finish has a subdued brightness to it with just hints of lemon zest at lighter roast points. The body is medium to full depending on roast and brew. There’s a reason people keep coming back to this bean. It’s a smooth all around great stronger cup of coffee.

Pulls some molasses undertones as ones pushes into second crack roasts. Hints of slight smoky tone at darker roast.

A very nice fresh crop arrival. Full bodied with a creamy mouthfeel, low acidity and spot on tastes from a traditional Mandheling Sumatra; peat moss, smoky, chocolaty, fuller bodied and strong. A clean enough cup to get a decent medium roast, gives a smoother mouthfeel and has a bit of sweetness upfront, darker roasts will turn thicker but also edgier and promote the smokier semi-sweet side of the profile.

These awesome unroasted coffee beans are good from light to dark; at light roasts it will be pretty bright and full of citrus, a little front-loaded for most, Kenyan coffees can be pretty strong. It does have a hint of a chocolate & herbal spice, but it is pretty faint. Medium roasts bring the best balance to the cup accentuating the chocolaty tones and reducing the brighter notes just a hint. Darker roasts make that classic Kenya herbal tone pop right out and are much more down the potent bakers chocolate alley. Very clean with increasing body as the roast gets darker. A great balance between citrus, floral, herbal and chocolate. Easy to change the balance of these tones by roast level – a fun coffee to play around with.

A very clean, exotic and balanced cup of coffee. Kenyan coffees are known for their acidity and spice tones; this cup hit the classic Kenyan cup profile on the head without being overwhelming like some (very balanced in its tones). Not quite sizzling but a very noticeable lemony floral tone upfront at the light to medium roast points balanced with some herbal spice and fading into a nice chocolaty tone that lingers on the tongue. Light roasts will swing the balance towards the floral citric side, darker roasts more towards the jazzy bakers chocolate alley. Holds up into 2nd crack for you dark roast fans. Low acidity and strong bittersweet chocolate tones with the traditional Kenyan spice note that leaves a very smoky tone on the pallet.

Light roasts will work for some, but will come off a bit more dry nutty with a citric edge, the cup builds really nice chocolaty tones with a hint of caramel and floral as one pushes into the medium roast range, a cup everyone would like. Darker roasts get pretty bold and also bring out a stronger nutty tone balanced with smoky bakers chocolate, medium bodied and low acidity.

Always one of our favorite Mexican coffees. Good from light to dark but our favorite was a medium roast. Medium to full bodied, medium to low acidity. Lighter roasting will promote a sweet citric edge balancing with a bit nutty/woody undertones. Has a hint of caramel after a couple days setup but risks keeping a little woody tone if too light. Medium roasts are pretty bullet proof, full bodied with rich chocolaty notes, a little nuttiness and vanilla like spice in the aftertaste. A clean cup with just a hint of citric crispness upfront. Darker roasts pick up a bit of roastiness but it compliments the very chocolaty profile, thick with no real hints of brightness. Nicaraguan Premium Selva Negra – Mirador Washed Processed
A very clean and fresh batch from Selva Negra. A little citric & floral acidity upfront, balanced with nice complex nutty & malty undertones. Light roasts are going to be a little front loaded with the brighter characteristics, a higher rated cup meaning one will notice some decent crisp acidity at the light-medium roasts. Will give great depth of flavor but may be a little sharp for some. Our favorite roast and a great everyday drinker was in the medium roast ballpark, builds more of a smooth and creamy cup with a sweet edge, reducing that perceived acidity to just a pinch. Turns much stronger, a robust cup most would say, into the darker roasts but shined nicely; fuller bodied with strong malty and smoky tones, still a sweeter edge to it which darker roast fans will love.

Nicaraguan Premium Selva Negra – San Felipe – Geisha Washed
Great light to medium roast coffee. Although we have carried the San Felipe lot for years, having the Geisha separate this season has brought a ton of new tastes. East to tell the difference when compared to the other strains Selva Negra grows. Best at the light to medium roast level, these beans have a bit more acidity than anything else from Selva Negra. The cup is very floral and citric especially at lighter roasts. Not quite jasmine floral, a little more traditional citric, but very tasty; delicate and sweet edged. Where one can see the prime Geisha attributes is in the darker tones of the cup, black tea spice jumps right out. Light roasts are heavy on the citric and floral balanced just a touch of tea like spice with herbal overtones. Medium roasts are where most will want to shoot, defined tea like spice with some sweet crisp floral upfront. Darker roasts turn a bit plain, still very drinkable but not much uniqueness.

A nice medium to dark roast more potent Nicaraguan offering. Medium to full bodied with just a little hint of acidity. Strong Medium roasts were our favorite with thicker more complex malty tones, a sweet edge, hints of herbal spice and almost no acidity, a good daily drinker being very smooth. Darker roasts produce a similar cup but turn it semi-sweet with complimenting smoky tones, not quite as smooth but has the heft many darker roast fans will love.

We thought it best right around a medium roast; balanced and sweet. Hints of sweet citric floral upfront comingle with smooth defined malt like tones, just the tiniest hint of a fruity factor in the aftertaste. Lighter roasts get much crisper, dominated with more floral citric fruit tones, lemony most would say but does still show a little malty undertone. Darker roasts cut out the more floral aspect of the cup and are very rich and smooth, more semi-sweet but still very malty, into second crack adds some complimenting smoky tones. Hard to find a bad roast point with these beans.

A clean, sweet and smooth cup of coffee one can drink all day long! A little fuller bodied at the light-medium roast level with a great balance between the lighter winy/floral notes & nutty/malty darker tones. Similar to Guatemalan coffee. Some acidity at lighter roasts but just a hint, medium to dark roasts would be marked as low acidity. As one pushes it into the medium roast range, the very sweet nutty tones come off a bit caramel like. Still plenty malty, it will linger on the tongue. Dark roasts turn pretty strong with the sweeter malty cup profile mixing nicely with smoky and roasty notes.

As one pushes the roast a little darker, the body increases, as the acidity and vegetal spice dissipated. Made for a very lovely daily drinker in the medium roast range; sweet, smooth & complex. Pushing the beans darker, the citric and floral acidity drops nicely to a crisp hint or none at all, the malty tones can turn quite robust as you approach or touch 2nd crack. Most would call it a pretty sweet chocolaty cup with a bit of spice. Very smooth cupping this year with no herbal tones or earthiness. Medium bodied with a sweeter edge, a cup almost anyone would enjoy. Kind of like a Sumatra coffee without all the earthy funk.

Medium to low acidity, the cup does have some jazzy more floral tones at the lighter roast points, but too light & it will be on the nutty/grassy side of things. Takes a little fuller roast to see the chocolaty side blossom. Medium roasts and beyond produce a smooth and rich cup, more chocolaty than nutty, pulls a dryer peanut brittle like tone (some may say hint of caramel), more peanut than brittle but we all thought it to be a good descriptor. Dark roasts turns the cup pretty chocolaty, retains the sweet edge and a couple tasters even noticed a little floral hint to it.

Wonderful aromatics accompany lighter roasts but could be a little too grassy/sharp for some. Medium roasts are more chocolaty, balancing with the spice nicely, less woody, more bold semi-sweet clove like spice. Darker roasts get smooth and creamy retaining those exotic spice notes to compliment the roasty and smoky darker chocolate cup.
